A cross-sectional epidemiologic study was conducted to evaluate vitamin C nutritional status by assessing dietary intake and blood vitamin C level and to identify the relationships between dietary vitamin C intake, serum vitamin C level and blood lead level in Korean lead workers. The study population was 118 lead workers from two battery manufacturing factories and 63 non-lead-exposed controls. A food consumption survey was conducted by the 24-hr recall method to determine the dietary vitamin C intake level. The anthropometric measurements, blood collection, and survey were performed between September and November, 2000. Blood lead levels and serum vitamin C levels were measured using an atomic absorption spectrometer and high performance liquid chromatography, respectively. Vitamin C nutritional status of Korean lead workers was lower than that of the control group, in terms of both dietary intake and the biochemical index: the mean daily dietary intake level of vitamin C of lead workers was 65.9mg (94% RDA), while that of controls was 132.6mg(189% RDA) ; and the serum vitamin C status of lead workers (0.10mg/dl) was significantly lower than that of controls (1.08mg/dl ; p<0.001). Both dietary vitamin C intake and serum vitamin C levels showed a significant negative correlation with blood lead level (p<0.001), which indicates that strategies of dietary management to promote the health of Korean lead workers should focus on promoting the vitamin C intakes of individuals.
This study examined the lifestyle factors, dietary attitudes, food habits, and dietary nutrition intake of college students before and after nutrition education. A total of 44 college students were recruited and a questionnaire survey was conducted. Dietary nutrient consumption was obtained from the one day 24-hr recall. Scores on 'Concerns about health (p<0.05)', 'Regular exercise (p<0.01)', and number of steps (p<0.001) were significantly higher after-training. The dietary attitude (31.3 vs. 33.7, p<0.01) and food habits (53.5 vs. 59.7, p<0.01) were significantly higher after-training. The scores on 'Eating a lot of food that I want to eat is more important than nutrition (p<0.01)', 'I am interested in information on nutrition and health (p<0.01)', 'Have three meals a day (p<0.01)', 'Have breakfast regularly (p<0.01)', 'Drink milk every day (p<0.001)', 'Have fruits every day (p<0.05)', and 'Apply nutrition knowledge to daily life (p<0.001)' were significantly higher after-training. Among the nutrients intakes, the protein (p<0.05), vitamin C (p<0.01), and calcium (p<0.001) were significantly higher after-training. Nutrition education improved the lifestyle factors, dietary attitudes, food habits, and dietary nutrition intakes.

To assess the food intake and diet quality of preschool children in Pusan, dietary survey was conducted with 176 subjects using 24hr recall method. Diet quality was assessed by food group pattern, dietary diversity score(DDS), dietary variety score(DVS), and dietary frequency score(DFS). The total number of food items consumed was 307. The foods consumed most frequently were rice, Korean cabbage kimchi, milk and green onion. When investigating the consumption pattern of major six food groups, 38.1% of subjects consumed all six groups. Food group was missed in order of fruit(41.5%), sweet(19.9%), dairy(16.5), vegetable(4.5%) and meat(1.7%). The mean values of DDS, DVS, and DFS were 5.16, 13.82, and 16.07 re spectively. Persons who had higher DDSs also had higher DVSs(p<0.001). DDS, DVS and DFS correlated positively with NAR(nutrient adequacy ratio) and MAR(mean adequacy ratio) significantly. Associations between the NAR of most nutrients and MAR with DVS and DFS were higher than those between the NAR of most nutrients and MAR with DDS. People with DDS of above 6 or DVS of above 16 or DFS of above 21 met two thirds of recommended dietary allowance for nutrients. Based on the result of the food group intake, the food intake of subjects was not adequate, especially the fruit and dairy groups. When assessing the dietary quality of subjects using DDS, DVS and DFS, many people appeared not to have a desirable food intake.
There are many concerns about the smoking among adolescents. Smoking status, smoking habit and dietary habit of high school students were studied using anonymous questionnaires. One hundred fifteen of 380 students(30.3%) have experienced smoking and 58.3% of them initiated it in the middle school, mostly because of the curiosity. The most plausible reasons for smoking were for stress reduction and feel bored. The students who smoked cigarettes were not likely to eat properly and their dietary habits were generally inadequate. The smoking group had less consideration of food balance, more skipping breakfast, more irregular meal time, less snack, and less frequent intake of vegetables. Also one-day dietary records obtained from 24hr recall showed less diverse food intake in smoking students. Considering the risk of poor eating behavior in smoking, nutritional care should be taken to emphasize as well as the smoking prevention and health programs, and more attention needs to be given to the relationship between smoking and the attitude and the behavior of smoking students toward their health, including proper eating habits. Since the results revealed that the majority of smoking students had previously attempted or thought about quitting to smoke, proper support programs that are more comprehensive and not temporal need to be developed.
This study is to investigate consequent nutrient intake status, influence of body mass index(BMI), and fat distribution on the silk amino peptide(SAP) and dietary fiber supplementation. During 2 months of this research (January to March, 2002), 45 women aged 20yr – 30yr (average age 24.6yr) were selected as subjects. Nutrient intake was investigated by questionnaire, 24-hr recall method. Antropometric assessments of the subjects were investigated by SBIA method(Segmental bioimpedance assay, In body 3.0). The results are as follows: mean body weight 57.7kg, mean body height 161.9cm mean BMI 22.0, and mean food habit score was 8.47. Defecation frequency was increased by dietary fiber supplementation. Frequency of pain during defecation was significantly decreased by dietary fiber supplementation (p<0.01). Feeling of residual feces was significantly improved by dietary fiber supplementation(p<0.001). Status of energy and carbohydrate intakes significantly decreased after dietary fiber supplementation(P<0.05). Body fat and WHR(waist hip ratio) significantly decreased after dietary fiber supplementation(P<0.001), and percent body fat was decreased by dietary fiber supplementation, significantly(P<0.05). Above results of this study show that dietary fiber-added routine diet improves defecation condition, and lessens body fat, percent body fat without losing body muscle. Especially, declination of abdominal fat and WHR were notable. That meant decreased risk factor.
Iodine-rich seaweed soup has been traditionally supplied to postpartum women in Korea. This dietary habit might introduce over-intake of iodine above the recommended requirements, and might provoke postpartum thyroid dysfunction. Although the response to excess iodine intake is highly variable, goiter, hyperthyroidism, hypothyroidism, and thyroiditis could follow the daily intake of 1,500$\mu\textrm{g}$ of iodine. A few studies are available concerning iodine toxicity in Korea. The purpose of this study was to investigate the relationships between the dietary intake of iodine and thyroid function change as well as the incidence of postpartum thyroiditis. One hundred and thirty-seven postpartum women who had experienced normal deliveries were studied. Dietary intake of iodine and excretion concentration of iodine in breast milk and maternal urine were measured . Serum T$_3$, T$_4$, TSH, anti-thyroglobulin antibody, and anti-microsomal antibody were anlayzed 1 week before delivery and 1, 6, 12, and24 weeks after delivery. Iodine intake was analyzed by one-to-one interviews using 24-hr recall and a food frequncy questionnaire. The result showed that the intake of dietary iodine before delivery and 1 and24 weeks after delivery were 483$\mu\textrm{g}$/day, 3367$\mu\textrm{g}$/day, and 1069$\mu\textrm{g}$/day, respectively. The concentration of iodine in urine at the first week after delivery was 63$\mu\textrm{g}$/dL, and 23.9$\mu\textrm{g}$/dL in breast milk . The levels of serum T$_3$ and T$_4$ before delivery were 2.01ng/mL and 11.49$\mu\textrm{g}$U/dL, respectively, showing that the levels were gradually dropping to normal values after delivery. Positive serum anti-thyroglobulin antibody and anti-microsomal antibody appeared in 3 cases. After a 24 week follow-up period , 6 women(10.3%) experienced cases of postpartum thyroiditis, 5 of which were cases of hyperthyroidism and one of which was a case of hypothyroidism. These figures of postpartum thyroiditis are similar to those of other countries.
The purpose of this study was to develop a semi-quantitative food frequency questionnaire (SQ-FFQ) for subjects aged 50yr and over and to evaluate the validity of this SQ-FFQ. Dietary intake was assessed using SQ-FFQ that included 98 commonly consumed flood items selected from the results of the Korean Health and Nutritional Survey, 1998. Subjects (n = 2,660) aged 50yr and over were recruited from 7 metropolitan cities and 8 small cities. Each subject was interviewed using this SQ-FFQ developed in our laboratory and 24hr-recall method. Excluding incomplete data, Data from 1,149 subjects were used in this validity study. The nutrient intakes assessed by this SQ-FFQ were validated by comparing with the results from 1 day 24-hour recalls. Pearson's correlation coefficients between two methods were 0.71, 0.64, 0.53, and 0.43 for energy, carbohydrate, protein, and fat, respectively for all subjects. Spearman's correlation coefficients were higher than those of Pearson's correlation coefficients. Kappa values for energy, carbohydrate, protein, and fat were 0.79, 0.72, 0.70, and 0.64, respectively. The percentage for misclassification of the lowest quartile into the highest quartile or vice versa was 1.25-1.39% for all nutrients. Therefore, this SQ-FFQ seems to be useful in assessing the nutritional status of the middle-aged and elderly subjects in Korea.
In the Health Promotion Law proclaimed on January 1995, nutritional improvement at national level was emphasized and designated as one of the jobs to be carried out by local governmnets. With such a situational necessity, we conducted a dietary survey along with an anthropometric measurement, biochemical assessment and questionnaire analysis on general characteristics of the students from 3 junior higher schools in Seoul area. About 300 students had participated in the study and the data from only 139 students, 28 boys and 111 girls, with complete report of dietary intake were subjected to analysis, comparison and discussion. Fasting blood samples were drawn and analyzed for hemoglobin, hematocrit and total cholesterol. Dietary intake was monitored by 1-day 24hr recall +2-day food record. In general, the average intake of nutrients for most of the subjects were above RDA for korean of that age except for 2 nutrients namely, vitamin A and calcium, of which average intake corresponded to 46-69% of RDA. In addition to this kind of nutritional imbalance, there were several other factors of nutritional problems such as skipping breakfast, overeating at dinner and frequent eating of snacks. As the best countermeasure for these kinds of nutritional problems, more detailed campaign and prractical nutrition education for these adolescents are necessary. Only through proper education and guidance for them, the healthy and intellectual man power could be guaranteed for the forthcoming 21st century.
This study was designed to estimate mean daily iron intake and its bioavailabi- lity and to assess nutrition knowledge for 144 pregnant women in the last trimester. Serum ferritin concentration was analyzed to estimate their iron stores. Dietary intakes of iron(heme iron and nonheme iron), the amounts of MPF(meat, poultry and fish) and ascorbic acid were assessed by modified 24-hr recall method. The food frequency questionnaire was used to assess subjects usual food consumption patterns. The mean value of serum ferritin was $21.3\pm{15.2ng/ml}$ and 26.4% of the pregnant women had a serum ferritin level <12ng/ml(i.e. depleted iron stores). The mean daily intake of total orin in the pregnant women was 56.5%(17.0mg) of RDA and heme iron intake was 0.94mg which was 5.5% of total iron intake. Total absorbable iron calculated by the method of Monsen was 2.41mg and bioavailability of dietary iron was 2.41%. Food frequency test score of meats group was positively correlated(r=0.443) with the bioaavailability of dietary iron. The mean score on the nutrition knowledge test of subjects was 12.76(out of a possible 20 points). These results indicate that the nutritional iron status may be improved by increasing either the amount of iron in the diet or its availability.

This study was carried out to assess the food habit index of the long-lived elderly who were aged over 85 years living in Ganghwa-gun. A survey was conducted during December 2003. Dietary nutrient intake data was obtained through the 24-hr recall method. The subjects were 96 (32 males, 64 females) aged people and divided into three groups based on food habit index scores. Such as group A: good $16\∼20$, group B: fair $11\∼15$, and group C: poor $5\∼10$. The three groups of the subjects were 90.7 years of age and $21.3\;kg/m^{2}$ of BMI on average. Healthy eating index scores of the subjects were $9.4\%$ in group A, $54.2\%$ in group B and $36.5\%$ in group C. Their level of education were lower and their levels of living standards tended to have been middle and lower of the middle class. The percentage of living together with their families or spouses in all groups were over $60.0\%$ and the rates of the subjects who have responsibility for their meal preparations were also very high in all groups. Most subjects tended not to drink nor smoke, and spend $8\~10$ hours for their sleep. The percent of number of diseases in group A was lower than in groups B and C. Their dietary habits such as taking three meals a day regularly have shown that they have good eating habit in general. There was a positive correlation between the eating behaviors and nutrient intakes. The protein, animal protein, fat, PUFA, vitamin E, vitamin $B_{2}$, niacin, P and K intaks in group A were significantly higher than that of the groups B and C. For group A of good food habits aged had no sufficient intake of Ca and vitamin A than the Korean RDA and long-lived elderly of group C in Ganghwa areas had worse nutrients intakes, especially Ca, vitamin A, vitamin $B_{2}$ and vitamin E.
