천연염료로서 복숭아나무 전정가지의 이용성 (Utilization of Pruning Branch of Peach Tree as a Natural Dyeing Material)

  • 복숭아나무 전정 과정에서 발생하는 부산물인 절지의 천연염료로서 이용성을 조사하였다. 복숭아 가지 추출물로 견과 면직물을 염색한 결과 견직물의 표면색은 매염제에 따른 차이가 있는 가운데 무염색포에 비해 색차(${\Delta}$값)가 11.63에서 30.86까지 나타났다. 면직물은 무매염시 17.71에서 황산철 매염시 40.41로 견직물 보다 염색성이 좋은 것으로 나타났다. 매염제에 따라서는 소석회와 가성소다 매염시 a값이 높게 나타났으며, 황산구리와 명반, 식초 매염시는 b값이 높게 나타났다. 세탁을 3회 실시한 뒤 표면색을 조사한 결과 매염제에 따른 차이는 다소 있었으나 전체적으로 무염색구와의 사이에 색차가 줄어든 것으로 나타나 세탁 견뢰도는 다소 약한 것으로 나타났다. pH가 다른 수세액에 의한 수세 및 일광처리 후 표면색의 변화를 조사한 결과처리 전후간에 차이가 적어 pH에 대한 견뢰도 및 일광 견뢰도는 비교적 좋은 것으로 나타났다.

덕태산(전북 진안)의 관속식물상 (Floristic Study of Mt. Deoktaesan, Jinan, Jeonbuk)

  • 덕태산(1,113 m)은 전라북도 진안군의 백운면과 장수군의 천천면에 걸쳐 위치해있다. 조사지로 덕태산과 선각산을 비롯한 인근을 선정하였으며, 조사는 2015년도 3월부터 10월까지 총 12일에 걸쳐 실시하였다. 결과의 정확성을 위해 꽃, 열매, 포자 등의 생식기관을 지닌 개체를 수집해 증거 표본으로 활용하여 관속식물목록을 작성하였다. 조사 결과 확인된 관속식물은 108과 341속 525종 4아종 65변종 14품종 총 608분류군으로, 한반도 관속식물의 약12.45%에 해당한다. 한반도 특산식물은 은사시나무, 키버들, 병개암나무, 제주큰물통이, 참개별꽃 등 15분류군의 분포가 확인되었다. 이 중 은사시나무, 섬초롱꽃, 개나리 3분류군은 식재된 것으로, 이를 제외한 12분류군이 조사지역에 자생하는 것으로 확인되었다. 산림청에서 제시한 희귀식물목록집에 의거한 멸종위기종(CR)은 백운기름나물 1분류군, 취약종(VU)은 백작약과 식재에 의한 모감주나무, 가시오갈피 3분류군, 약관심(LC)종은 너도바람꽃, 태백제비꽃, 섬초롱꽃 등 6분류군이 분포하는 것이 확인되었다. 환경부 지정 특정식물종에는 V등급1분류군, IV등급3분류군, III등급12분류군이 각각 조사되었다. 이중 IV등급 식물인 당마가목과 고로쇠나무는 각각 선각산 능선부, 덕태산 북사면 계곡부에 자생하는 것이 확인되었다.

In vivo protein expression changes in mouse livers treated with dialyzed coffee extract as determined by IP-HPLC

  • Background: Coffee extract has been investigated by many authors, and many minor components of coffee are known, such as polyphenols, diterpenes (kahweol and cafestol), melanoidins, and trigonelline, to have anti-inflammatory, anti-oxidant, anti-angiogenic, anticancer, chemoprotective, and hepatoprotective effects. Therefore, it is necessary to know its pharmacological effect on hepatocytes which show the most active cellular regeneration in body. Methods: In order to determine whether coffee extract has a beneficial effect on the liver, 20 C57BL/6J mice were intraperitoneally injected once with dialyzed coffee extract (DCE)-2.5 (equivalent to 2.5 cups of coffee a day in man), DCE-5, or DCE-10, or normal saline (control), and then followed by histological observation and IP-HPLC (immunoprecipitation high performance liquid chromatography) over 24 h. Results: Mice treated with DCE-2.5 or DCE-5 showed markedly hypertrophic hepatocytes with eosinophilic cytoplasms, while those treated with DCE-10 showed slightly hypertrophic hepatocytes, which were well aligned in hepatic cords with increased sinusoidal spaces. DCE induced the upregulations of cellular proliferation, growth factor/RAS signaling, cellular protection, p53-mediated apoptosis, angiogenesis, and antioxidant and protection-related proteins, and the downregulations of NFkB signaling proteins, inflammatory proteins, and oncogenic proteins in mouse livers. These protein expression changes induced by DCE were usually limited to the range ± 10%, suggesting murine hepatocytes were safely reactive to DCE within the threshold of physiological homeostasis. DCE-2.5 and DCE-5 induced relatively mild dose-dependent changes in protein expressions for cellular regeneration and de novo angiogenesis as compared with non-treated controls, whereas DCE-10 induced fluctuations in protein expressions. Conclusion: These observations suggested that DCE-2.5 and DCE-5 were safer and more beneficial to murine hepatocytes than DCE-10. It was also found that murine hepatocytes treated with DCE showed mild p53-mediated apoptosis, followed by cellular proliferation and growth devoid of fibrosis signaling (as determined by IP-HPLC), and subsequently progressed to rapid cellular regeneration and wound healing in the absence of any inflammatory reaction based on histologic observations.

지방의 종류가 돈육 Patty 의 품질 특성에 미치는 영향 (Lipid Type Effects on the Quality Characteristics of Pork Patties)

  • This study was carried out to investigate the effect of lipid type on the physicochemical properties and sensory score of pork patties. The samples consisted of pork patties containing 20% pork fat (PP), 20% olive oil (OP), and 20% soybean oil (SP). The surface color, water holding capacity, increased rate in thickness, decreased rate in diameter, rheological properties, pH, VBN content and TBARS value were determined for the pork patties as the physicochemical properties: the sensory scores were also evaluated. The $L^*$ value for PP was the highest, and the lowest for OP among the samples (p<0.05). For the $a^*$ value OP was the highest among the samples, and the $b^*$ value of OP was lower than that of the PP (p<0.05). The water holding capacity and increased rate of thickness were higher for PP than for OP and SP (p<0.05). The cooking loss and decreased rate of diameter of PP were lower than those of OP and SP (p<0.05). The hardness and springiness of OP and SP were higher than those of PP, and SP had the highest chewiness among the samples (p<0.05). However, cohesiveness and gumminess were not different among the samples. The pH of SP was the highest among the samples, and the TBARS value of OP was lowest (p<0.05). The VBN contents were not different among the samples. The amounts of raw color for OP and SP were higher than that of PP (p<0.05). The raw aroma was not different among the samples. Also, roasted aroma and taste were not different among the samples, but the tenderness, juiciness, and palatability of SP were the highest among the samples (p<0.05).

고등학생의 영양 관련 문제점 분석 및 영양 교육 프로그램 개발 ( I ) - 영양교육 목표 설정을 위한 식생활 문제점 분석 - (Problems Analysis Related to Nutrition and the Development of Nutrition Education Programs for High School Students( I ) - A Study Centered on Analyzing Problems of Dietary Life for Nutrition Education Goal Setting -)

  • The objectives of this study were to analyze nutrition-related problems and to develop the nutrition education programs for high school students A survey was conducted with 500 students in the second grade level at high schools in Daegu who differed in socio-economic characteristics. In addition, body composition analysis was accomplished by the Inbody 3.0. The developed questionnaires were distributed and 481 questionnaires were collected with a 96.2% of response rate. Statistical data analysis was completed using SPSS WIN(ver.12.0) for descriptive analysis, reliability analysis, factor analysis, t-tests and $X^2$-tests. We first analyzed students' problems related to nutrition and environmental factors. In a question addressing skipping breakfast, only 11.5% answered they "do not eat" breakfast. In regards to BMI, the male students' degree of obesity was higher. Second, we analyzed living environments, which greatly influence dietary behavior. For the snacks-related categories, most of the students liked bread, cake and other snacks. When they chose the snacks, they mainly considered taste. There were significant difference among the males and females(p<.01) in terms of snacks intake habits, where 43.1 % of the males answered they snack "occasionally" and 43.4% of the females answered they snack "according to how they feel". In the case of beverages, the males consumed significantly more(p<.001). Based on their regional groups, the area A group preferred milk and milk products, and the area B group preferred soft drinks. As for the time of beverage intake, 77.6% of the females answered "with snacks", which was significantly higher than 61.4% of the males(p<.001), 12.2% of the males drank beverages after exercise. For late snacking, 68.0% of the male students and 71.1 % of the female students consumed late snacks. Most of them preferred bread, cake and other snacks. The reasons for taking a late snack were "when I feel hungry" by 61.8% of the males which was higher than the females(p<.001), 23.6% of the females consumed late snacks "impulsively". Ideally, in order to improve the food habits of high school students effective and practical nutrition education programs that consider gender and regional school group, should be carried out.

가열 돈육 Patty의 이화학적 및 관능적 특성에 영향을 미치는 적포도주의 첨가 효과 (Effect of Addition of Red Wine on the Physicochemical Properties and Sensory Score of Cooked Pork Patty)

  • The aim of this study was to investigate the effect of the addition of red wine on the physicochemical properties ana sensory score of cooked pork patties. The samples consisted of the pork patty without red wine(control), and 1, 3 and 5% red wine(RWP-1, 3 and 5, respectively). There were no significantly differences in the moisture$(58.1\sim58.7%)$, crude protein$(15.9\sim16.3%)$ crude fat$(23.2\sim23.7%)$, and crude ash$(2.7\sim2.9%)$ contents, and the Hunter's $a^*-value(0.2\sim0.6)$, cooking loss$(16.5\sim19.2%)$, VBN$(11.9\sim15.6mg%)$, total bacterial count($(11.9\sim15.6mg%)$ Log cfu/mL), hardness$(3,193\sim3,336\;dyne/cm^2)$, springiness$(75.8\sim79.7%)$, cohesiveness$(47.8\sim52.1%)$, gumminess$(489\sim509kg)$, chewiness$(183\sim209g)$ and strength $(1,144\sim1,199g)$ between the pork patties. Of the pork patties the $L^*$ value of the control and the b value of RWP-5 were the lowest(p<0.05). The pH and TBARS value of RWP-5 were the lowest of all the pork patties. The flavor of RWP-5 was superior to that of the other pork patties, and the taste, texture, juiciness and palatability of RWP-3 and RWP-5 were superior to those of the control and RWP-1. In conclusion, the addition of 5% red wine was most suitable for enhancing the physicochemical properties and sensory score of pork patties.

한국 농정(農政)의 철학적 분석과 새로운 패러다임(paradigm)의 설계 (A Philosophical Analysis and Design of a New Paradigm of the Rural Policies in Korea)

  • In the situation of rapid industrialization based on the lopsided development of economy since 1960, Korean rural society has faced a crisis of disruption. As a result, the civilian government has tried a few actions to change the circumstance. However, it is said that the coral polices were not satisfactory. Those who were concerned with the rural problems of these days argue that it is necessary to adopt new policies and further to change the policymakers` philosophies concerning the matter. The arguments are certainly based on the beliefs that the sound policies come from the sound philosophies. This study aims to analyze the existing rural polices and their policymakers` philosophies and to design of a new paradigm. For the purpose, this study was set there specific objectives: First, to overview the moor points of Quantitative Utilitarianism of Jeremy Bentham and the Social Justice Theory of John Rawls, the contrasting frameworks of the moral philosophies; Second, to trace the major or trade of the rural policies since 1960s in Korea; Third, to analyze the policymakers` philosophies reflected on the rural policies; Fourth, to design a new paradigm of the rural policies. This study mainly adopted descriptive method based on the various source of government and non-government statistics, white papers and other researches. The major findings of this study may be summarized as follows: 1. The historical epochs of the rural policies in Korea was divided into the periods: (1) An organizational and institutional establishment for self-reliance of main crops and the New Village Movement $(1969{\sim}70)$; (2) An initiation of `open-door` policies to the foreign farm products $(1970{\sim}80)$; (3) Completion of the UR meetings and the recommendations of the Rural and Fishery Development Commission (1980-present). 2. It was found that the philosophical foundations of coral policies were directly reflected from the utilitarianism of the national development. Under the philosophy it was the modem sector of economy that was to spearhead the national development, and the rural sector was situated to the peripheral position and hardly in the spot-light. Therefore, it may be said that the present situation of the rural society was largely rooted in the model of economic development. 3. As a new direction of the coral policies, many studies were focussing on the NTC (non-trade concerns) functions of agriculture for the present and future society. The researchers argue that the cost of protecting and supporting agriculture and rural society may be higher than that of the burden which the nation should be bear in the case of failure of agriculture. Although it tray be true, however, it should be noted that the argument is another type of utilitarianism which prevailed in the past. As a philosophy of rural policies, utilitarianism is straight forward and persuasive, however, it has also limitations in terms of relativism in broad sense or social justice in specific manna. 4. This study suggests to set the philosophical foundations of rural policies on the basis of Rawl`s Theory of Justice mentioned earlier. It emphasizes the inviolability of social justice which was neglected for the national benefits timing the period of development dictatorship in 1960s and 1970s. The principles of social justice for coral people were identified as twofold; (1) The principle of the t equal liberty; (2) (a) Difference principle, (b) The principle of fair equality of opportunity.

강원 지역 일부 여대생 중 골밀도 정상군과 위험군의 식품섭취빈도법을 이용한 식품과 영양소 섭취 상태 비교 (Evaluation of Food and Nutrient Intake by Food Frequency Questionnaire between Normal and Risk Groups according to the Bone Mineral Density of Female College Students Residing in Gangwon Area)

  • The purpose of this study was to examine the relationship between bone density and dietary intake for college women in their twenties. This study was performed on 160 female college students residing in Gangwon-do. It was conducted using ultrasound measurement of calcaneus bone density, anthropometric checkup and food-frequency questionnaires (FFQ) comprising 94 kinds of commonly consumed foods. Subjects were divided into two groups according to the T-score of bone density: a normal group (n = 113 persons, T-score ${\geq}1$) and a risk group (n = 47, T-score < 1.0). The average age of the subjects was 20.17 years and there was no significant difference between the two groups. Body weight and body fat percentage of the normal group were significantly higher than those of the risk group. The mean daily energy intake of the normal group was significantly higher than that of the risk group. Also, protein, fat, vitamin A, niacin, vitamin B6, folate, calcium, phosphorus, sodium, potassium, iron and zinc intake for the normal group were significantly higher than for the risk group. For the intake of the commonly consumed foods (or dishes) listed in FFQ, the mean daily intake amount of loaf bread, rice cake, potatoes, spicy beef soup, cucumber, seasoned spinach perilla leaves, crown daisy, stir-fried mushroom, sea mustard, beef rib, ham, chicken, mackerel, common squid, drink type curd yogurt, oriental melon and chocolate in the normal group was significantly higher than in the risk group. While, the mean daily intake of ramyun (instant noodle) and carbonated beverage by the normal group was significantly lower than that of the risk group. In conclusion, 20 something female college students showed a higher rate (26.9%) of the bone mineral density risk group (osteopenia or osteoporosis). For the risk group, the levels of nutrient and food intake were lower than in the normal group. Therefore, the bone density risk group needs to increase their nutrient intake and diet quality by increasing the intake of various foods. In addition, they should decrease the intake of foods, which are negative for skeletal health such as instant noodles and carbonated beverages.

간장첨가량을 달리하여 제조한 저염 새송이 버섯장아찌의 품질 및 관능특성 (Quality and Sensory Characteristics of Low-salt Fermented King Mushroom(Jjangachi) Added with Different Amounts of Soy Sauce)

  • 본 연구의 목적은 새송이 버섯을 이용하여 제조한 장아찌의 품질 및 관능특성을 조사하는 것이다. 새송이 버섯을 이용한 장아찌의 수분 함량은 대조군이 72.80%로 가장 높았고, J4가 64.46%로 가장 낮았다. 색도 중 L값은 대조군이 72.80으로 가장 높았고, J4가 31.71로 가장 낮았다. a값과 b값은 이와 반대되는 경향을 나타냈다. 당도, 염도는 대조군이 가장 낮았고, J4가 가장 높았다. pH는 3.67로 대조군과 J1이 가장 낮은 값을 나타냈고, J4가 3.87로 가장 높은 값을 나타냈다. 관능평가 중 정량적 묘사분석 결과, 갈색의 정도, 간장향, 짠맛은 J4가 가장 높았고, 대조군이 가장 낮게 평가되었다. 새콤한 냄새와 새콤한 맛은 대조군인 가장 강하게 평가되었고, J4가 가장 약하게 평가되었다. 기호도 검사 결과 중 향은 대조군이 2.73으로 가장 낮게 평가되었고, 외관, 맛, 텍스처, 전체적인 기호도에서는 간장 25% 첨가군인 J3이 가장 좋게 평가되었다. 이상의 결과로 볼 때, 간장 첨가로 인해 새송이 버섯장아찌의 기호도가 대체적으로 좋게 평가되었으며, 장아찌의 제조 시 간장의 첨가비율이 25% 일 때 기호도가 상승되는 것을 알 수 있었다.

홍삼, 복분자, 석류를 첨가한 노니 혼합음료의 개발과 품질특성 (Formulation and Quality Characteristics of Noni Beverages Mixed with Red Ginseng, Rubus Coreanus and Pomegranate Extracts)

  • 본 연구는 노니(Noni)에 10% 물을 첨가한 Noni 90, 1% 홍삼(NG), 4% 복분자(NR), 5% 석류(NP)와 5%석류와 4% 복분자를 첨가한 NPR의 음료를 개발하여 이화학적 성분과 품질 특성을 분석하였다. 열량, 단백질과 총식이섬유소 함량은 NR, NP, NPR이 높았다. 총당의 함량은 NG, NPR이 유의적으로 높았다. 지방, 콜레스테롤, 포화지방은 불검출 되었다. 칼슘과 나트륨 함량은 NG, 철은 NG, NR, NPR가 유의적으로 높았다. pH는 NG와 NP, 당도는 NP와 NPR에서 유의적으로 증가하였다. L값과 b값은 NG, NP, NR이 낮아졌으며, a값은 NG, NR의 경우 증가하였다. 일반세균수는 0/ml이었으며, 대장균군과 대장균 0157:H7는 모두 음성이었다. 관능검사 결과 색은 NPR, 맛과 전체적인 조화도는 NG, NR, NP 혼합음료가 유의적으로 높았다. 신맛, 단맛, 향미는 노니원액과 혼합음료 간에 유의적인 차이가 없었다. 입에서 느끼는 질감은 NP와 NPR이 유의적으로 높았다. 이상의 결과와 같이 노니 원액이나 희석액 보다는 홍삼, 복분자, 석류를 첨가한 혼합음료가 바람직하다.
