Comparison of Sorption Characteristics of Red Pepper Powders with Their Seeds Mixing Ratio (고추씨 혼합비율에 따른 고추가루의 흡습특성 비교)

  • The sorption characteristics of red pepper powders in terms of mixing ratio of seeds to red pepper powders were investigated at various relative humidities and temperatures as storage conditions. At lower relative humidity below 43% RH, the sorption equilibrium was easily reached regardless of mixing ratio, whereas at higher relative humidity above 75%, the powders gained moisture rapidly, resulting in the color change to brown. At extremely lower RH below 33%, decoloration occurred in red pepper powder. The moisture contents of monolayer value for red pepper powders without seeds were ranging from 5.88% to 7.35% inversely proportional to the temperature. The moisture contents of monolayer value decreased with increase of mixing ratio of seeds.

Characterization of Water Sorption for Defatted Soybean Hydrolysates (탈지대두분해물(脫脂大豆分解物)의 흡습특성)

  • Soybean hydrolysate (SHT) was prepared from defatted soybean by hydrolysing with papain and ${\alpha}-amylase$ and water sorption isotherms were determined as a function of proteolysis degree. The moisture content and B.E.T. value of SHT at a certain water activity $(A_w=0.80)$ increased lineraly with increasing degree of proteolysis. However, they changed drastically above 70% proteolysis. The water holding capacity of 78% SHT was similar to that of sorbito. The results indicate the increase of water sorption capacity is due to the release of polar groups through hydrolysis. Mizrahi equation generally gave the best fit for isotherms of SHT. Storage stability of intermediate moisture foods containing $5{\sim}10%$ SHT increased considerably, although some favorable characteristics decreased.

  • Dried soymilk residue(SMR) which was prepared by washing with ethanol and acetone, followed by drying at $60^{\circ}C$ was investigated for its sorption characteristics and the relationship between moisture content and water activity when it was mixed with wheat flour. During storage at $20^{\circ}C$ and various RH, an excess sorption phenomena was observed for solvent treated and dried SMR before equilibrium reached. A simple equation of log(dw/dt)=b log t+log a, where t is storage time(hr) and w is %$(H_2O)$ was drived for sorption or desorption rate of dried SMR at RH range of 12%-92%. From sorption isothermifigure, the moisture content(Mi) could be calculated from water activity by the equation of Mi=b Aw+a. The proposed equation was proved to have better fitness than those of the Smith isotherm equation or Lang and Steinberg equation for the mixture of dried SMR and wheat flour.

  • In this study, we have evaluated the water absorption phenomenon of photoresist dry film, which is commonly used to build circuits on PCB (Printed Circuit Board) by photolithography, by using ATR-FTIR (Attenuated Total Reflectance-Fourier Transform Infrared). We have firstly observed significant change in fracture mode of dry film with respect to temperature and humidity, which we assumed the material transition from ductile to brittle. Secondly, we have established the process of absorption test for determining the diffusion coefficients of water into the dry film both with gravimeter and ATR-FTIR. We have successfully calculated the diffusion coefficients for each environmental conditions from the results which we achieved by gravimeter and ATR-FTIR. Compared to the gravimeter which is a conventional method for absorption test, the ATR-FTIR method in this study has been found to be very easy to use and have the same accuracy as gravimeter. Moreover, we are expecting to use the ATR-FTIR as an appropriate method to study the absorption phenomena related to any kinds of solvent and polymer system.

Water Absorption Properties of Low Dielectric SiOF Thin Film (저유전율 SiOF 박막의 흡습 특성 연구)

  • 저유전율 층간절연물질인 불소첨가 SiO$_{2}$박막을 ECR(electron cyclotron resonance) Plasma chemical vapor deposition 법으로 성막하였다. SiOF박막의 증착은 SiF$_{4}$/O$_{2}$의 가스유량비를 변수로하여 0.2에서 1.6까지 변화시켜 증착하였고, 이때 마이크로파 전력은 700W, 기판온도는 30$0^{\circ}C$에서 행하였다. 증착된 SiOF박막의 흡습특성을 알아보기 위하여 Fourier transformed infrared spectroscopy(FTIR)을 이용하여 분석한 결과, 가스유량비 (SiF$_{4}$O$_{2}$)가 0.2 에서 1.6으로 증가하였을 때 Si-Ostretching피크의 위치는 1072$cm^{-1}$ /에서 1088$cm^{-1}$ /로 증가하였으며, Si-F$_{2}$피크는 가스유량비가 1.0이상에서 나타나기 시작하였다. 또한 가스유량비가 0.2에서 0.8까지 변화하여 증착한 시편은 Si-OH 피크가 관찰되지 않았지만 가스유량비가 1.0이상(11.8at.% F함유)의 시편의 경우 Si-OH 피크가 관찰되어 내흡습성이 저하되고 있음을 확인할 수 있었다.

  • The sorption characteristics of red pepper powder stored at various relative humidity and temperature were studied. At low relative humidity below RH 57%, the sorption equilibrium was easily attained, whereas at higher relative humidity above RH 75%, the powder was browned by higher equilibrium moisture content. The moisture content of monolayer value for the powder was ranging from 11.32% to 12.13% with temperature. First order regression equation of equilibrium moisture content for relative humidity was determined.

  • The sorption characteristics of pearled, cutted and pressed barleys stored for 360 hours at $20^{\circ}C$ and various relative humidites were analyzed. The adsorption rate at RH above 57% was the greatest in pearled barley and the lowest in cutted barley. The desorption rate at RH below 44% was in the decreasing order of pearled, pressed and cutted barleys. From the sorption rates an empirical equation was proposed. which can be used for the estimation of moisture content of three barleys at arbitrary storage time and RH.

  • Seven varieties of soybeans(Paldal, Danyeob, Jangbaek, Baegun, Jangyeob and 2 cultivars of Local 1 and Local 2) were investigated to compare the sorption characteristics during storage of various relative humidities. The sorption isotherm curve determined at RH range of $33{\sim}92\;%$ and $4^{\circ}C$ and $25^{\circ}C$ showed that moisture contents of soybeans was higher at $4^{\circ}C$ than those values at $25^{\circ}C$ for overall water activities of 0.33{\sim}0.92$. The Paldal was the highest moisture content at $4^{\circ}C$ while that value of Baegun was the highest at $25^{\circ}C$. The change in moisture content with storage time was expressed by log(dw/dt)=b log(t)+log a and the value of (dw/dt)${\times}10^3$ was decreased logarithmically. The Paldal was comparatively the highest initial absorption rate and the value of -b in seven varieties decreased as the relative humidity increased from 33 % to 92 %.

  • Sorption properties of corn starch(CS) and Soy protein isolates(SPI) in plastic films packaging were investigates for binary system. The mixture were sealed in plastic films of low density polyethylene(LDPE), oriented polypropylene(OPP) and LDPE/OPP coated film and packaging effect on the changes of moisture sorption during storage at $40^{\circ}C$ were studied. The following results were obtained. The water vapor permeability of material films was $32.6g/m^2/24hrs(below\;g)$ for 0.02mm LDPE film, 14.01g for 0.04mm LDPE film, 7.30g for 0.02mm OPP film, 3.37g for 0.04mm OPP film and 4.869 for 0.02mm LDPE/0.02 mm OPP confine film at $40^{\cire}C$ 90%RH, therefore the OPP film was more effective than LDPE film on the resistance of relative humidity. And the OPP film packaging sealed mixture of food samples was also more elective then LDPE film, having same thickness for increase of water vapor permeability during storage at $40^{\cire}C$. A general increase in sorption rate was found more in SPI than CS in the packaged mixtures.
