Optimization Study for the Production of 6-Shogaol-rich Ginger (Zingiber officinale Roscoe) under Conditions of Mild Pressure and High Temperature (가압조건에서 생강 유래 6-shogaol 변환을 위한 가열 조건 최적화)

  • Under optimized condition mild pressure in combination with specific temperature for heat treatment transform the 6-gingerol into 6-shogaol. The purpose of this study was to optimize the conditions used for heat treatment under pressure for increasing 6-shogaol content in ginger (Zingiber officinale Roscoe). A central composite experimental design was used to evaluate the effects of application temperature ($70-130^{\circ}C$) and temperature-holding time (95-265 min) on the transformation of 6-shogaol. The experimental values were shown to be in significantly good agreement with the predicted values (adjusted determination coefficient, $R^2{_{Adj}}=0.9857$). 6-Shogaol content increased as the application temperature and temperature-holding time increased. By analyzing the response surface plots, the optimum conditions of heat treatment (temperature and time) for increasing 6-shogaol content were found to be $127^{\circ}C$ and 109 min, respectively. Under these optimal conditions, the predicted 6-shogaol content was 3.98 mg/g dried ginger. The adequacy of the model equation for predicting the optimum response values was effectively verified by the validation data.

Simultaneous Determination of Synephrine and N-Methyltyramine in Orange Fruit and Juice from Korean Market by UPLC-FLD (UPLC-FLD를 이용한 국내 시판 오렌지 및 오렌지 주스 중 시네프린 및 n-메틸티라민 동시분석)

  • An accurate and sensitive analytical method was established for the simultaneous determination of synephrine and n-methyltyramine contents by ultra-performance liquid chromatography (UPLC) with a fluorescence detector (FLD). A 70:30 (v/v) mixture of 10 mM sodium dodecyl sulfate (SDS) and acetonitrile was used as the mobile phase. The coefficient of correlation ($r^2$) was 0.9999 for both synephrine and n-methyltyramine, and their limits of detection (LOD) were 0.02 and 0.01 mg/kg, respectively. The percentage recoveries for synephrine and n-methyltyramine were 96.4% and 100.9%, respectively, from bitter orange (Citrus aurantium) samples. The synephrine and n-methyltyramine contents were 38.07-118.21 mg/kg and 0.27-0.56 mg/kg, respectively, in the orange fruit samples, while they were 14.61-120.39 mg/kg and up to 3.34 mg/kg, respectively, in the tested commercial orange juice samples. The differences in synephrine and n-methyltyramine content between orange fruit and commercial orange juice were not significant (p<0.05). These results suggest that UPLC-FLD can be applied to develop an analytical method of quality control for commercial orange juice.

Inheritance of Fruit Ripening Time in Oriental Pear (Pyrus pyrifolia var. culta Nakai) (동양배 과실 숙기형질의 유전분석)

  • To improve the breeding efficiency of oriental pear, heritability, correlation and frequency distribution of fruit ripening date were analyzed using 4,035 seedlings obtained from 15 families between 13 parental cultivars. Although variation of fruit ripening time was higher in most early-ripening parental cultivars than in late-ripening parental cultivars, according to analysis of average, standard deviation, and coefficient of ripening variation for ten years, fruit ripening time obtained from all parental cultivars was inherited narrower and more stable variation than others fruit trait, with 0.92-3.41 in coefficient of variation. The heritability of fruit ripening time was calculated to be over 0.8 in almost all crosses and average fruit ripening time of seedlings from cross combinations could be predicted based on that of the parental cultivars due to its superior heritability relative to other fruit traits. The average ripening time was earlier than the mid-parental value in families obtained from cross combinations using at least one late-ripening cultivar as parent, indicating that the early-ripening trait was more likely to be dominant compared to the late-ripening trait. By contrast, average ripening time was clustered in families of crosses not only between mid-season and early-season cultivars, but also between mid-season and mid-season cultivars. There was highly significant relationship (at 0.68) between mid-parental and progeny mean fruit ripening time. The correlation between fruit ripening time and fruit weight was also highly positive and thus, the mid-parental fruit ripening time could be a potent criterion for indirect selection of fruit weight.

Antibacterial and Rinsing Activities Against Potentially Harmful Bacteria in Rice during Rice Flour Production (쌀가루 제분용 백미 내 잠재적 위해 세균에 대한 살균 및 세척 효과)

  • Rice can be the contaminating with soil-borne bacteria. Furthermore, the contaminated bacteria can be grown during immersion process for produce wet-milled rice flour. Therefore, disinfectants can be added during the immersion process. Antibacterial activities of the natural disinfectant, fermented rice spent water (FRSW), and the chemical disinfectants, chlorine dioxide (CD) and sodium benzoate (SB), were respectively determined when added in pure cultures of target bacteria such as Salmonella typhimurium, Escherichia coli, and Bacillus cereus or when added to immersion water in the immersion process. In addition, rinsing effects for removing bacteria were determined when rice was rinsed with water before and after the immersion process. Antibacterial activities were rapidly increased as increasing amounts of the disinfectants are added to the pure cultures of the target bacteria. Antibacterial activity of CD was the most effective among the three tested disinfectants when added to the pure cultures of the target bacteria, respectively. Those of the same disinfectants were increased when they were increasingly added to the immersion water. However those of the disinfectants were less effective when added to the immersion water. On the other hand, rinsing effects for removing bacteria were the most effective when rice was rinsed only with water without the immersion process. Collectively, rinsing rice with water only was more effective than using disinfectants in the immersion water during rice flour production.

Preparation of Instant Powdered Soup Using Oyster Wash Water and Its Characteristics (굴 세척액을 이용한 인스턴트 분말 수프의 제조 및 특성)

  • To utilize oyster cannery processing waste water effectively, this study was carried out to prepare instant powdered soup using oyster wash water. Instant powdered soup from oyster hot-water extracts (HWE) was prepared by mixing oyster spray-dried hot-water extracts (15 g) with table salt (5 g), cream powder (19 g), milk replacer (12 g), wheat flour (20 g), corn flour (15 g), starch (5 g), glucose (7.5 g) and onion powder (1.5 g). In preparing instant powdered soup from oyster wash water (OWW), powder from oyster spray-dried wash water instead of the spray-dried hot water extracts, was added and other additives were added in proportion to those in the HWE. The OWW consists mainly of carbohydrates (71.1%). It was not different from the instant powdered soup from hot-water extracts. The volatile basic nitrogen, vaible cell counts, coliform group of instant powdered soup from oyster wash water contains 29.4 mg/100g, $4.6{\times}10^4\;CFU/g$, <18 MPN/100g, respectively and its water activity has 0.246. So it was a hygienically safe and conservable instant food. The main fatty acid of OWW was 16 : 0 and 18 : 1n-9. Its chemical score of protein was 59.4% and its main inorganic matter was iron. According to a sensory evaluation, in contrast to the HWE, the OWW had a slightly lower aroma but better taste. It was concluded from the above chemical and sensual evaluation that the oyster wash water can be used as a flavor enhancer for instant powdered soup.

Effects of ${\beta}-glucan-enriched$ Barley Fraction on the Lipid and Cholesterol Contents of Plasma and Feces in Rat (보리 ${\beta}-glucan$ 농축획분 섭취가 흰쥐 혈장과 변의 지질 및 콜레스테롤 함량에 미치는 영향)

  • Cholesterol-lowering effects of ${\beta}-glucan-enriched$ barley fraction were investigated in rats fed 0.5% cholesterol and barley as a fiber source. Male rats of Sprague-Dawley strain were divided into six groups and fed different diets for 5 weeks: normal (cholesterol-free), control (cellulose 5%), fiber-free, and three groups containing ${\beta}-glucan-enriched$ barley fractions. Although plasma cholesterol and triglyceride levels were not significantly different among different diet groups, ${\beta}-glucan-enriched$ barley fraction-fed groups had higher HDL-cholesterol concentrations than the cellulose control group after 5 weeks of experiment. The fecal excretion of cholesterol and triglyceride was significantly increased by barley diets. Fecal concentrations of cholesterol and triglyceride in cellulose control group were 38.2 and 2.6 g/day, respectively, whereas those of barley-fed groups were $52.4{\sim}59.2$ and $6.8{\sim}9.5$ g/day, respectively, during the experimental period.

  • Due to popularization of the wireless Internet and mobile devices the infrastructure of the ubiquitous environment, where users can get information whatever they want anytime and anywhere, is created. Therefore, a variety of fields including the education studies methods for efficiency of information transmission using on-line and off-line contents. In this paper, we propose the Mixed Mobile Education system(MME) that improves educational efficiency using on-line and off-line contents on mobile devices. Because it is hard to input new data and cannot use similar off-line contents in systems used additional tags, the proposed system does not use additional tags but recognizes of-line contents as we extract feature points in the input image using the mobile camera. We use the Scale Invariant Feature Transform(SIFT) algorithm to extract feature points which are not affected by noise, color distortion, size and rotation in the input image captured by the low resolution camera. And we use the client-server architecture for solving the limited storage size of the mobile devices and for easily registration and modification of data. Experimental results show that compared with previous work, the proposed system has some advantages and disadvantages and that the proposed system has good efficiency on various environments.

A Personalized Product Recommendation Agent on Mobile Internet (무선인터넷 환경에서의 개인화상품추천에이전트)

  • 본 논문에서는 무선인터넷 환경에 적합한 개인화된 상품추천에이전트를 제안한다. 기존에 유선인터넷상의 많은 개인화 추천시스템에서는 초기 사용자 모델링을 위해 사용자에게 수많은 질의를 하고 응답을 요구하였다. 그러나 이러한 방식은 무선인터넷 환경에서 정보 전송량에 따른 높은 사용요금을 고려할 때 적용하기 힘든 방식이다. 본 제안 시스템은 사용자의 Social data률 이용하여 사용자를 비슷한 연령과 성별 그룹으로 나누고, 해당 그룹에서 구매율이 높은 상품을 우선 제시한 후, 사용자 행동을 모니터링 하여 암시적(Implicit)피드백을 통해 프로파일을 생성함으로써, 번거로운 질의-응답 과정 없이도 초기 사용자 모델링을 수행할 수 있다. 프로파일 생성 이후에는 이를 기반으로 하여 사용자몰 유사한 취향을 가진 그룹으로 다시 군집화한 후 협력적 추천을 하게 되며, 프로파일에는 해당 상품의 최종 카테고리명과 키워드를 수집함으로써, 상품의 브랜드와 규격정보를 반영한 추천이 가능하다. 또한 추천 상품과 사용자의 구매데이터와의 비교를 수행하여 사용자가 해당상품을 구매하였을 경우, 상품에 대한 취향정보는 그대로 유지하고 관련 상품을 추천하되, 구매한 상품이 중복 추천되지 않도록 하였다. 시스템 평가를 위해 프로토타입을 구현하여, 다수의 사용자에게 시스템을 이용하며 관심품목을 체크하도록 하였고. 추천횟수가 반복되며 히트율이 증가하는 결과를 통해 시스템의 학습속도와 성능을 평가하였다. 그리고 쇼핌몰에서 구매경험이 있는 사용자의 기존 구매데이터와 Social data를 이용한 초기 제시상품을 역으로 비교하여 오랜 시간과 비용 발생 없이도 초기 프로파일 생성의 유효성을 증명하였다. 포함하는 XML 질의에 대해서도 웹에서 캐쉬를 이용한 처리가 효율적임을 확인하였다.키는데 목적이 있다.RED에 비해 향상된 성능을 보여주었다.웍스 네트워크상의 다양한 디바이스들간의 네트워크 다양화와 분산화 기능을 얻을 수 있었고, 기존의 고가의 해외 솔루션인 Echelon사의 LonMaker 소프트웨어를 사용하지 않고도 국내의 순수 솔루션인 리눅스 기반의 LonWare 3.0 다중 바인딩 기능을 통해 저 비용으로 홈 네트워크 구성 관리 서버 시스템 개발에 대한 비용을 줄일 수 있다. 기대된다.e 함량이 대체로 높게 나타났다. 점미가 수가용성분에서 goucose대비 용출함량이 고르게 나타나는 경향을 보였고 흑미는 알칼리가용분에서 glucose가 상당량(0.68%) 포함되고 있음을 보여주었고 arabinose(0.68%), xylose(0.05%)도 다른 종류에 비해서 다량 함유한 것으로 나타났다. 흑미는 총식이섬유 함량이 높고 pectic substances, hemicellulose, uronic acid 함량이 높아서 콜레스테롤 저하 등의 효과가 기대되며 고섬유식품으로서 조리 특성 연구가 필요한 것으로 사료된다.리하였다. 얻어진 소견(所見)은 다음과 같았다. 1. 모년령(母年齡), 임신회수(姙娠回數), 임신기간(姙娠其間), 출산시체중등(出産時體重等)의 제요인(諸要因)은 주산기사망(周産基死亡)에 대(對)하여 통계적(統計的)으로 유의(有意)한 영향을 미치고 있어 $25{\sim}29$세(歲)의 연령군에서, 2번째 임신과 2번째의 출산에서 그리고 만삭의 임신 기간에, 출산시체중(出産時體重) $3.50{\sim}3.99kg$사이의 아

  • In this paper, we describe our experience in the design and implementation of the SMART file system to handle multimedia workload. Our work has three design objectives: (ⅰ) efficient support for sequential workload, (ⅱ) avoiding disk fragmentation, (ⅲ) logical unit based file access. To achieve these three objectives, we develop a file system where a file consists of linked list of Data Unit Group. Instead of tree like structure of the legacy Unix file system, we use single level file structure. Our file system can also access the file based upon the logical unit which can be video frame or audio samples. Data Unit Group is a group of logical data units which is allocated continuous disk blocks. At the beginning of each Data Unit Group, there exists an index array. Each index points to the beginning of logical data units, e.g. frames in the Data Unit Group. This index array enables the random access and sequencial access of semantic data units. SMART file system is elaborately tailored to effectively support multimedia workload. We perform physical experiments and compare the performance of SMART file system with EXT2 file system and SGI XFS file system. In this experiment, SMART file system exhibits superior performance under streaming workload.

The Effect of Servant Leadership of Sports Administrator on Job Satisfaction and Organizational Citizenship Behavior (체육행정가의 서번트 리더십이 직무만족과 조직시민행동에 미치는 영향)

  • The purpose of this study was to find the effect of servant leadership of sports administrator on job satisfaction and organizational citizenship behavior to provide effectiveness management. To accomplish this research objective, as the subjects 333 employees were selected who working at 3 branches of Korea Sports Promotion Organization and Korea Olympic Committee. As for data processing, this research made a frequency analysis, exploratory factor analysis, correlation analysis confirmatory factor analysis, and structural equation model analysis were utilized. The results using structural equation model indicated that servant leadership had directly positive effect on job satisfaction. and servant leadership had directly positive effect on organizational citizenship behavior. In addition, job satisfaction had directly positive effect on organizational citizenship behavior. The implications of the study suggest that sports organization administrator should strengthen servant leadership to build up effectiveness management.
