Effect of Addition of Various Mesh Sifted Powders from Safflower Seed on Quality Characteristic of Yangeng (입도별 홍화씨 분말 첨가가 양갱의 품질에 미치는 영향)

  • Safflower Yangengs were prepared with composite dried powder of small red bean(Phaseolus radiatus L.) containing various ratios of safflower(Carthamus tinctorius L.) seed powder sifted through 20, 35, 45 and 60 mesh size and kinds of mixed water, their cooking characteristics were evaluated. Water content and water activity of cooked products were increased as the content and sieve mesh number of safflower seed powder increasing from 5%, 20 mesh to 20%, 60mesh, respectively. Color values of yangeng were increased in green tea extract mixed water. Rheological properties of yangengs were measured by compression test with texture analyzer, as results, hardness and fracturability increased that were shown in high content and high mesh number sifted safflower seed powder, but adhesiveness and springiness decreased, respectively. From the sensory evaluation test for yangeng, sensory scores were good scores in more mesh number sifted powder addition, especially overall acceptance, texture and fracturability. The 45mesh and 15% powder added yangeng was noted as having high sensory scores and preferable acceptability in sensory evaluation.

  • This study was carried out to investigate the effect of safflower powder on the characteristics of kimchi. Quality indexes were pH, titratable acidity, reducing sugar content, microbial counts, and sensory evaluation. Safflower powder enhanced the decrease in pH and increase in titratable acidity during fermentation at l0$^{\circ}C$, and the changes were more conspicuous until 15 days. Stabilized levels in pH was attained, but steady increase in titratable acidity was shown after that time. Microbial loads of total and lactic acid bacteria showed a faster stationary phase for kimchi samples with safflower powder than control. Control was better scores in sensory evaluation, but there were no significant differences in aroma and taste except sample with 3% safflower powder.

  • The therapeutic effect of safflower seed powder on experimental osteoporosis in the rat induced by ovariectomy was evaluated. Thirty Sprague-Dawley rats were ovariectomized at the age of 12 weeks. Seven weeks postovariectomy, rats were divided into two groups: control and safflower seed powder treated group. Five animals from each group were sacrificed at the following time points: 1, 3, and 5 weeks. Scanning electron microscopic observation and morphometric analysis of the tibiae epiphysis showed that the administration of safflower seed powder significantly prevented reduction of cortical bone width and bone volume compared with the control group. In conclusion, safflower seed powder contains something that prevent bone loss due to estrogen deficiency, and was effective in preventing the osteoporotic decrease of bone mass.

Effect of Hot Water Extract Powder from Safflower (Carthamus tinctorius L.) Seed on Quality of Noodle (홍화씨 열수추출 분말 첨가가 국수의 품질에 미치는 영향)

  • Quality of noodle processed by addition of hot water extract powder from roasted safflower seed (RSHE) was investigated. Proximate compositions of RSHE was 4.70% of moisture, 32.63% of crude Protein, 6.52% of crude fat, 15.62% of crude ash and 40.53% of carbohydrate. There was no significant difference (p<0.05) in hunter's color value between noodles with and without RSHE. The ‘L’vague of noodle processed by addition of powder from roasted safflower seed (RSP) was very low and significantly different (p<0.05) from other products. With the increase of RSHE addition, the volume and weight of cooked noodles increased (R$^2$=0.9688). The breaking force of dry noodle decreased with the increase of RSHE addition. In the mastication test of cooked noodles, max. weight, strength and hardness increased with the increase of RSHE addition. Dry noodle with 0.3% and 0.5% RSHE recorded high rank, but that with RSP recorded the lowest rank in score of appearance and color by sensory evaluation. The noodle processed with 0.3∼0.5% RSHE showed high sensory quality.

  • Safflower has been cultivated in Korea and thought to have excellent effects on bone in oriental medicine and folk remedy and has been taken for a long time. Safflower is thought to be helpful for the development and sustenance of bones according to the result of recent assay of its components. Otherwise, any reliable experimental data have not been suggested so far. We have carried out this study to examine the prophylactic effects of safflower-seed-powder on the prevention of osteoporosis induced by the ovariectomy 12 Weeks-old Sprague-Dawley rats weighing about 230 g was kept in the experimental condition and used in this study. Animals were taken 0.3 g of safflower-seed-powder once a day for 1, 3, 5, and 7 weeks after ovariectomizing both ovaries and observed the fine structure of tibia. Tissues were fixed with traditional SEM preparation methods and decalcified for 10 hours with 10% nitric acid and dehydration, drying, and gold-coating were followed by the routine procedures and observed with scanning electron microscope (Hitachi, S-450). Loss of bone was started just after ovariectomy and thickness of bone from the medullary cavity to the compact bone was reduced and the extension of medullary cavity was serious in the control group of 7 weeks. Experimental groups taken safflower-seed-powder showed similar findings from 1 week to 7 weeks. These results suggest that the safflower-seed-powder is thought to be efficient for the prevention of osteoporosis owing to the deficiency of female sex hormone.

  • Safflower (Carthamus tinctorius L.) is a thistle-like annual plant mainly grown in dry hot climates as an oilseed or birdseed. Traditionally, the oil has mainly been sold in the health food market because it is unsaturated having high linoleic and oleic acid levels. With increased health consciousness in recent years, the oil quality has become a more general health issue. This study was designed to understand whether safflower seed powder has positive effects on the fracture healing in rats. Simple transverse fracture of rat fibula was made with a rotating diamond disc saw. The histologic changes of rats were observed with a scanning electron microscope. The fractured fibulae showed a complete fusion at the fracture site in the 4th to 5th week after a simple transverse fracture. Administration of safflower seed powder facilitated the speed of histologic changes without affecting qualitative changes. These results suggest that safflower seed powder nay have substances that help the fracture healing process.

Effects of Dietary Safflower Seed Powder and Chitosan on Hatching Egg Production and Eggshell Quality in Aged Egg-type Breeder Hens (홍화씨 분말 및 키토산의 사료 내 첨가가 종란 생산성 및 후기 난각질에 미치는 영향)

  • This experiment was conducted to investigate the effects of dietary safflower seed (SFS) powder and chitosan on hatching egg production and eggshell qualify in aged egg-type breeder hens. A total of four hundred 54-week-old Hy-Line Brown breeder hens were divided into five the groups and fed experimental diets either with addition of 0.25 and 0.50% SFS powder or 0.10 and 0.20% chitosan or devoid of all for 6 weeks. There were no significant differences in feed intake and laying performances among the groups. The rate of sellable egg in the groups fed diets containing SFS powder or chitosan was significantly increased compared to that of control (P<0.05), irrespective of dose-dependent manner. The addition of SFS powder or chitosan significantly improved the eggshell strength (P<0.01). Eggshell thickness was also significantly increased in the groups 134 diets containing chitosan as compared with that of control (P<0.01). Fertility and hatchability of egg set were significantly improved by dietary chitosan that those of control (P<0.05). ike contents of tibial Ca and P were significantly increased in the groups fed diets containing 0.5% SFS powder, 0.1 and 0.2% chitosan as compared with those of control. The levels of blood estrogen, calcitonin and parathyroid hormone were not affected by the dietary treatments. The overall results indicated that the proper use of some feed additives such as safflower seed powder and chitosan might provide means of improving eggshell quality and reproductive performances in aged egg-type breeder hens.

  • Anti-wrinkle Effect of safflower (Carthamus tinctorius L.) seed extract (CTSE) was evaluated by determination of the anti-oxidation, collagen synthesis and elastase inhibition in normal human fibroblast. CTSE showed anti-oxidation and collagen synthesis ability as much as or greater than other phytoestrogenic compounds such as genistein or resveratrol. Consistent with collagen synthesis promotion, CTSE also showed inhibitory effect on elastase activity. In the human skin irritation test, 0.2% CTSE did not show any adverse effect. These results demonstrate that CTSE can be useful as an anti-wrinkle cosmetic ingredient.

Physicochemical Properties of Ground Pork with Safflower (Carthamus tinctorius L.) Seed during Refrigerated Storage (홍화씨가 분쇄돈육의 냉장 중 이화학적 품질에 미치는 영향)

  • This study was carried out to investigate the effect of safflower seed powder on the physicochemical characteristics of ground pork during refrigerated storage. Three types of ground pork were evaluated: 20% pork fat added (PF, control), 10% pork fat and 10% added safflower seed powder (PFS), and 20% added safflower seed powder (SS). The pH increased during storage, but decreased after 10 days of the storage (p<0.05). The pH was lower in PFS and SS than that in PF after 10 days of storage (p<0.05). The TBARS (2-thiobarbituric acid reactive substances) values increased with longer storage period (p<0.05), and those of PF, PFS and SS were 1.186, 0.686 and 0.577 mg MA/kg, respectively, after 10 days of storage. The $L^*$ values for external color of PF and PFS decreased (p<0.05), but that of SS was not significantly different after a longer storage period. The $a^*$ values decreased (p<0.05), but the $b^*$ values were not significantly different with longer storage period. The $L^*$ values for internal color of PFS and SS decreased (p<0.05), but that of PF was not significantly different with longer storage period. The $a^*$ value of PF decreased (p<0.05), but that of SS increased with longer storage period. The $b^*$ value decreased (p<0.05), but those of PFS and SS were not significantly different with longer storage period. Water holding capacity decreased with longer storage period, and that of SS was the highest (p<0.05). Cooking loss of PFS and SS was not significantly different with longer storage period, and that of PF was the highest (p<0.05). The reduction in diameter of the samples was not significantly different with longer storage period, and that of PF was the highest (p<0.05). Hardness and chewiness of samples increased, but springiness and cohesiveness decreased with longer storage period (p<0.05). Replacing animal fat with safflower seed powder was effective and may be useful as an innovative meat product.
