Physiochemical Characteristics of Corn Starch during the Alkali Gelatinization (알칼리 호화에 따른 옥수수전분의 특성)

  • In this report, we discussed the physiochemical characteristics of corn starch during the alkali gelatinization process. Here, solubility and the amounts of eluted polysaccharides and amyloses increased in proportion to the amount of alkali added. The X-ray diffraction patterns and DSC thermogram showed that in the early stage of alkali gelatinization, crystallinity of the starch granules was disrupted as compared with heat gelatinization. This resulted in the eluted amylose content, while granule sizes were hardly changed in the alkali treated corn starch. The endotherm peak in the DSC thermogram shifted toward a higher temperature region as the degree of gelatinization increased, suggesting that the retained starch granules were more compactly crystallized during alkali gelatinization than during the heat process. Thus, we concluded that during the alkali gelatinization of corn starch, the disruption of weak particles would occur first, before swelling of the granules.

Gelatinization Properties of Waxy Black Rice Starch (찰흑미 전분의 호화 특성)

  • This study was investigated to examine gelatinization properties of waxy black rice starches. X-ray diffraction patterns in raw starches showed traditional A type of cereals. The crystalline regions of both black rice and Shinsunchalbyeo starches disappeared when temperature increased to $65^{\circ}C$ where the crystalline regions of two starches changed to amorphous ones. Scanning Electron Microscope showed that granule type of Shinsunchalbyeo starch was more collapsed compared to that of black rice starch heated at 6$0^{\circ}C$. Gelatinization in both samples completed when samples were heated at 63$^{\circ}C$. The results by Differential Scanning Calorimetry (DSC) revealed that gelatinization patterns were similar in both samples. In Rapid Visco Analyzer examination, there was no difference in peak viscosity, breakdown, final viscosity and setback between Shinsunchalbyeo and waxy black rice starches.

Fatty Acids, Amino Acids and Thermal Properties of Specialty Rice Cultivars (특수미 품종의 지방산과 아미노산 조성 및 열적 특성)

  • The compositions of fatty acid and amino acid of specialty rice which includes colored rice (Heugjinju, Jeugjinju, Josangheugchalbyeo), flavored rice (Heughyangmi, Hyangmi1), and giant embryo rice (Keunnun) were determined and compared to those of regular rice (Ilpumbyeo, Whaseonchalbyeo). Major fatty acids were linoleic acid (C18:2) and oleic acid (C18:1), which were composed of 75~80% of total fatty acids. Major amino acids were glutamic acid and aspartic acid in most cultivars but Jeugjinju in which cysteine (169.61 nmol) and GABA (129.32 nmol) were the most abundant amino acids. Thermal properties measured by differential scanning calorimeter (DSC) revealed that the enthalpy (${\Delta}H$) for starch gelatinization was the highest in Josangheugchalbyeo and Whaseonchalbyeo. It suggests that the starch structure of waxy rice could be more crystallized compared to non-waxy rice, and also that amylopectin could have more impact on starch gelatinization than amylose. The on-set and complete temperature for starch gelatinization were higher in colored rice of Heugjinju and Jeugjinju, and regular rice of Whateonchalbyeo.

Effect of Phosphate on Rheological Properties of Gelatinized Rice Starch Solution (인산염이 쌀 전분 호화액의 리올로지에 미치는 영향)

  • Rheological properties of gelatinized rice starch solutions (5%) were examined with a Brookifield viscometer. Gelatinized rice starch solutions showed pseudoplastic flow having yield stress, i.e., Binghamplastic flow behavior. The yield stress of gelatinized rice starch solutions was reduced by the phosphate. Phosphate increased the pseudoplasticity of gelatinized nonwaxy rice starch solutions. but decreased that of gelatinized waxy rice starch solution. The yield stress of gelatinized nonwaxy rice starch solutions held for one hour at $90^{\circ}C$ was slightly decreased, but that of waxy starch solution was reduced by 10-fold. Phosphate reduced the yield stress for both gelatinized nonwaxy and waxy rice starch solutions. Phosphate decreased the consistency index, but did not affect the flow behavior index of the gelatinized rice starch solutions.

  • The effects of steeping on the physicochemical and gelatinization characteristics of glutinous rice flour and its starch were studied. Steeping conditions were 1 day at 25"C,7 days at 2iC and 7 days at 35"C. Crude protein, lipid and ash content were decreased br steeping. It was observed with scanning electron microscopy that endosperm cell wall of glutinous rice flour was diminished by steeping. Although morphology of the glutinous rice starch granules was not affected, the size was decreased by steeping. Density and water binding capacity(WBC) of glutinous rice flour and its starch were changed by steeping. X-ray diffraction pattern of glutinous rice starch was A type and was not affected by steeping. Swelling power of glutinous rice flour and its starch was increased but solubility was decreased by steeping. In Brabender amylographic examination, peak viscosity of untreated glutinous rice flour was very low and increased enormously by steeping resulting in the similar Brabender viscosity pattern to its starch. The gelatinization temperature examined by X-ray diffractometry was lowered by steeping. And the degree of gelatinization under the conclusion temperature increased with increasing of steeping Period and temperature.mperature.

  • The reological properties of commercial corn starch solutions at various concentrations($4{\sim}9%$) and temperatures($30{\sim}60^{\circ}C$) were investigated. The rheological behavior of corn starch solutions was illustrated by Herschel-Bulkley equation and exhibited pseudoplastic behavior with yield stress. The degree of pseudoplasticity of starch solution increased as the starch concentration increased but was independent on temperature. Apparent viscosity and yield stress of starch solutions were exponentially dependent on concentration and temperature. The critical concentrations for sol-gel transition and for the onset of close-packing of the starch granules were $6.22{\sim}6.52%\;and\;2.68{\sim}2.78%$ respectively.

  • Gelatinization properties of heat-mositure treated potato and sweet potato starches were investigated. Water-binding capacity of starch was increased by heat-mositure treatment, which was more pronounced in sweet potato starch. Blue value was not affected by the treatment. Amylograph viscosities were decreased by heat-mositure treatment, which was more pronounced in potato starch. Critical concentration of NaOH for gelatinization of starch increased as moisture level increased. Gel volume of starch upon KSCN gelatinization was higher in potato starch. Gelatinized starches showed Binghamapseudoplastic behavior. Consistency index and yield stress were drastically decreased upon heat-moisture treatment.

  • 감자전분의 수분함량에 따라 가열하는 동안 전분의 점탄성 성질의 변화를 조사한 결과 전분의 농도가 증가할수록 더 높은 storage modulus (G#)와 loss modulus (G@) 값을 보여주었으며, 호화개시온도 및 호화최대값을 나타내는 온도는 전분농도에 따라 낮은 온도로의 이전을 보여주었다. 20%의 감자전분과 옥수수전분을 비교한 결과, 옥수수전분은 $68^{\circ}C$, 감자전분은 $60^{\circ}C$에서의 호화개시온도를 나타내었으나, G#와 G@값은 옥수수전분이 높게 나타났고 이와 같이 서로 다른 호화개시온도, 호화정도 및 그 최대값을 나타내는 온도변화는 아밀로즈/아밀로팩틴의 함량과 전분 입자의 크기에 따른 것으로 여겨진다. 감자와 옥수수 전분을 각각 3%씩 첨가하여 만든 생선단백질 젤의 파손강도를 측정한 결과 전분들을 첨가한 단백질 젤이 무첨가한 젤보다 더 강하게 나타났으며, 옥수수 전분의 첨가가 감자전분 첨가보다 더 강한 젤의 강도를 나타내었다 혼합비를 달리 첨가하여 만든 겔을 응력완화현상을 측정한 결과 감자 및 옥수수 전분을 첨가한 경우는 초기순간응력, 평형응력 뿐만 아니라 전체적인 응력의 증가현상이 일어났으나 3요소 일반화된 Maxwell 모형으로 분석한 결과는 감자 전분과 옥수수전분에 의한 탄성을 (elastic modulus) 상승효과는 첨가농도의 의존성을 보여 주었다.

Effects of Sikhe dietary fibers on the Rice Starch gelatinization and Retrogradation properties (식혜식이섬유가 쌀전분의 호화와 노화 특성에 미치는 영향)

  • The gelatinization and retrogradation properties of rice starch added with dietary fibers from sikhe were investigated. The pasting temperature and setback of starch measured by using a rapid visco analyzer were increased by the addition of the fiber, whereas the peak viscosity, trough viscosity, end viscosity, breakdown and consistency were lowered. The onset temperature of starch measured by a DSC was increased, but the enthalpy of gelatinization of the starch was decreased as the addition of fiber increased. The melting peak temperature of the retrograded starch gels was 41∼46$\^{C}$ as measured by a DSC. The melting enthalpy of the control retrograded starch gel was increased while storing for 1, 3 and 7 days at 4$\^{C}$, but that of containing sikhe fiber showed no differences.

  • Gelatinization and retrogradation properties of modified starches which were prepared by steeping sweet potato at $40^{\circ}C$ for 2, 4, 7 and 10 days were investigated. The peak temperature of gelatinization and enthalpy of untreated starch by DSC were $53.9^{\circ}C\;and\;1.32\;cal/g$, respectively, but those of modified starch were increased by steeping. In gelatinization by alkali, starches with 2, 4 and 7 day steeping showed higher viscosities than untreated starch, whereas the viscosities of starches with 10 day steeping decreased. The clarities in paste decreased during storage in all starches and decreased in starches with steeping. The degrees of retrogradation by ${\alpha}-amylase-iodine$ method were higher in starches with steeping than untreated starch. The enthalpy of retrograded starches by DSC increased by steeping except 4 day steeping starch. The sweet potato extract containing sugar inhibited the retrogradation of starch paste and the degree were higher in residual starches than in untreated starch.
