Recognition of food allergies and dietary attitudes in Jeonnam elementary school students (식품 알레르기와 식생활 태도 인식 - 전남지역 일부 초등학생을 대상으로 -)

  • The purpose of this study is to investigate the recognition of food allergies and dietary attitudes in elementary school students. For the food allergy symptoms, they responded 'skin trouble' 63.6% the most. For the causing foods of allergies, they responded, 'I don't know the causing foods' 33.5%, 'I was diagnosed' 51.0%, 'I was treated' 63.9%, and therefore 'I restricted foods' 53.5%, due to 'I restricted foods through hospital diagnosis' 40.5% the most. For family history, 67.9% responded the family history matters. 70.3% responded the seasons would not affect to the symptoms. 64.1% responded the cause of food allergy is specific foods. For allergy solution, they responded, 'I don't use any treatment' 42.8% the most. For effective treatment, they responded, 'I restricted causing foods' 45.1% the most. Recognition of food allergies by food allergy experience showed a significant difference in the items such as 'have heard or known about food allergies'(p<.001), 'whether participated in consultation and training'(p<.001), 'problems of growing children when putting limits on causing foods'(p<.001), 'interests in getting information about food allergy'(p<.001), 'feeling the needs of allergy education about careful foods'(p<.01), 'wish for schools to be educated'(p<.01). Dietary attitudes by food allergy experience showed a significant difference in reason of unbalanced diet(p<.001).

The Fast Foods Consumption Patterns of Secondary School Students in Busan Area (부산지역 중.고등학생의 패스트푸드 이용실태 조사)

  • The purpose of this study was to examine the fast food consumption patterns of secondary school students in Busan. Secondary school students in Busan area were asked in a survey about their perception and attitudes towards fast food (n=968, response rate: 92%). Most respondents answered that they consume fast food once a month because it is fast, easily accessible and tasty. Although they perceived fast food as unhealthy and less nutritious, they were less aware of its effect on their eating patterns: a clear indication of their limited knowledge on dietary impact. The more knowledgeable respondents were about nutrition and health, the less likely they were to choose fast food over other meals. However, respondents who had little or no knowledge about the nutritional factors of fast food accounted for 43.1%. Our study suggests that development of effective nutrition and health education is crucial to adolescent population. This study will enable educators to plan more effective strategies for improving the dietary knowledge of the adolescent population.

Influence of Product Similarity between Parent Brand and Extended Brand on Extended Product Evaluation - Focus on Franchise Brand - (모브랜드 제품-확장브랜드 제품간 유사성이 확장제품평가에 미치는 영향 - 프랜차이즈 브랜드를 중심으로 -)

  • This study scrutinizes the similarity difference between parent brand product and extended brand product of franchise business and its effect on the attitude toward extended brand product. Results showed that the similarity difference is appeared according to product extended. The cognitive attitude and the behavioral attitude toward similarity difference are also appeared to be different as high in product similarity leads to high in both cognitive and behavioral attitude. The result also showed that the food similarity compare to the technological similarity has higher impact on attitude. These study results provided a significant insights in brand extension strategy of franchise business.

  • 최근 세계적으로 코로나바이러스가 유행 중인 가운데, 우리나라는 인구 밀집도가 높은 곳이 많아 연쇄 감염이 일어나기 쉽고 특히 식당이나 카페 같은 장소는 불가피한 음식 섭취, 환기되지 않는 실내 공간 등의 이유로 바이러스에 취약하다. 사람들은 코로나 감염 가능성이 큰 사람이 밀집된 장소를 피하고, 비교적 사람이 적은 곳을 선호한다. 하지만 방문하고자 하는 매장에 사람이 얼마나 있는지 확인하는 과정은 번거롭다. 또한, 인기 있는 매장의 경우 코로나바이러스와 무관하게 이용객이 많아 방문 시에 대기해야 하는 불편함이 있다. 이러한 불편함을 해결하기 위해 본 논문에서는 안드로이드 기반 스마트폰 앱을 이용하여 방문하고자 하는 매장에 인원수를 실시간으로 확인할 수 있는 실시간 객체 인식 알고리즘, 앱의 구현 내용을 소개하였다.

  • 포화된 미국의 외식시장과는 대조적으로 한국의 외식시장은 도입기에서 성장기로의 전환을 맞이하고 있다. 이러한 변화속에서 미국의 외식브랜드들은 한국에 진출하여 다양한 변화와 모험을 겪으면서 다수는 성공적인 전략을 통하여 국내에 입지를 굳혔으며 그렇지 않은 기업들도 있었다. 이러한 현상들은 Porter의 경쟁 전략을 통하여 설명되어질 수 있다. 이는 초창기 미국 브랜드의 국내시장 진출전략이 어떠한 배경으로 수행되었는지를 이해할 수 있으며 또한 최근에 국내에서 빠른 성장세를 보이고 있는 전문 커피숍 시장의 변화에서도 설명되어질 수 있다. 그러나 초기 패밀리레스토랑의 도입배경과 전문 커피숍의 경우는 커피 시장의 세분화정도, 비즈니스 파트너 선택의 기준, 커피 상품과 일반음식과의 소비자들의 다른 인식 등의 몇 가지 다른 점이 있다는 것을 간과해서는 안될 것이다.

Perceptional Dimensions and Patterns of Korean Traditional Food and Culture - Comparisons Between Yanbian and Korean Housewives - (한국전통음식과 식생활 문화에 대한 인식차원 및 유형 - 연변 조선족 주부와 한국 주부에 대한 비교적 접근 -)

  • The purpose of this study was to identify the dimensions and patterns of the perception of Korean traditional food and to find the determinants of the patterns between Korean and Yanbian housewives, taking food culture into account. Data were factor and cluster analyzed, and the results revealed two and three different dimensions and patterns for Yanbian and Korean housewives respectively. Descriptive statistics showed that perceptional patterns are likely to vary depending on cultural background of Korean traditional food. Similarities and differences in perceptional patterns between Yanbian and Korean housewives are discussed, and future implications for food as well as nutrition specialists and food marketers are provided.

Preference for Korean Food and Satisfaction of Dormitory Foodservice by Chinese Students Studying at Mokpo National University (중국유학생의 한식 메뉴 선호도 및 기숙사 급식만족도 - 목포대 일부 재학생을 대상으로 -)

  • The preference and satisfaction for Korean food by Chinese students studying at Mokpo National University of Korea were surveyed. The students (n=167) were 53.9% males, 58.1% Korean residents for 6 months and 47.9% in healthy condition. The recognition of Korean food was highly light taste ($3.36{\pm}0.95$) and the preference of Korean food materials was in the order of beef (46.7%), hairtail fish (28.7%), baechu (24.4%), tangerine (49.1%), milk (38.9%) in each food category. Eating habits were feeling of hunger on reason for eating (43.1%), moderate satiety degree for a diet (58.7%), no time for reason to skip diet (48.5%), family for impact factor of eating habits (55.1%) and irregular diet time for the problem of eating habits (40.1%). The recognition of Korean food menu was in the order of baechukimchi, bulgogi, ggakdugi, samgyupsal, ddeokbokki, galbitang, and gomtang; the preference order was bulgogi, doejigalbijjim, soegalbijjim, dakgalbijjim, samgyupsal, galbitang, and dakdoritang. The recognition and preference of Korean food menu were significant in bibimbap, tteokguk, doenjang jjigae, kimchi jjigae, ddeokbokki, japchae, baechukimchi, and ggakdugi (p<0.001), as well as jeonbokjuk, bibimguksu, soegalbijjim, doejigalbijjim, dakgalbijjim, saengseonmaeuntang, gomtamg (p<0.01), hobakjuk, bulgogi, and dakdoritang (p<0.05). The actual dormitory foodservice was twice daily (47.3%), <10~20 min for diet time (65.3%). The reason for using university foodservice was compulsory diet (37.1%) whereas the reason of not using university foodservice was tastelessness (45.5%); kimchi was the most leftover (27.5%). According to foodservice quality attribute, the importance and satisfaction were the highest in hygienic part. Foodservice quality attribute was significant between importance and satisfaction in all items except location of facilities foodservice (p<0.001).

Korean Traditional Food Perception and Cultural Aspect of Korean Mongolian Housewives (몽골 조선족 여성의 한국전통음식에 대한 인식 유형)

  • The purpose of this study was to identify the perceptional dimensions and patterns of Korean traditional food and to find the determinants of the patterns. Data were collected from 305 Korean housewives living in Mongol, and were factor and cluster analyzed. The results revealed two different dimensions and patterns i.e., high involved vs. low involved groups. Descriptive statistics showed that perceptional pattern types are likely to vary depending on socio-demographic and cultural background of Korean traditional food. Similarities and differences in perceptional patterns between high and low involved groups of Korean Mongolian are discussed, and future implications for globalization of Korean traditional food culture are provided.

A Survey on the Perception of the Four Characteristics of Some Korean Dishes among Korean Children and Adolescents (${\cdot}$${\cdot}$고등학생의 한국 전통음식의 선호성 인식에 대한 연구)

  • This study was carried out to examine the relationship between various characteristics of Korean traditional dishes such as preference, function, occurrence and preparation, with children and adolescents' characteristics such as general characteristics and health status and health attitudes. Elementary school students had desirable health attitudes as measured using the subjectively perceived level of health status and purpose of meals. There were significant relationships between some characteristics and health concerned behaviors, which included the extent of eating healthy diets, the intake of nutritional supplements and the application of nutritional knowledge. We found out that there were significant positive correlations among four characteristics of traditional dishes and the preference for those dishes was more positively correlated with occurrence and preparation than with function. The effects of the subjects' characteristics on preference for traditional dishes differed in various ways.

A Study on College Students' Perception and Preference of Korean Traditional Foods in Taejon (대전지역 대학생들의 한국 전통 음식에 대한 인식 및 기호도 조사)

  • This study was undertaken to investigate college students' perception and preference of Korean traditional foods during November in 1994. 493 students in Taejon area were asked to fill out the questionaires. The collected data were analyzed by SAS package. The average height and weight were 173.04 cm, 64.46 kg for male and 161.73 cm, 49.33 kg for female. Students living their own home were 48.8% and self-lodging students were 30.2%. Male have a meal for hunger and female for pleasure (p<0.002). They choose their foods based on the taste (84.6%) and nutrition (8.2%). 85.5% of students prefer Korean traditional foods. Most students think that the Korean traditional foods should be succeeded and developed. However, they want the taste of Korean traditional foods to be changed for their preference. Kimch'i is the most favorate fermented foods. The fermented fish products and jang-atchi are the most unfavorate ones. They don't like too salty taste and strong smell of the Korean fermented foods.
