Chemical compositions and texture of Allium senescens that is one of Korean indigenous culinary herbs were analyzed. The contents of carbohydrate and calorie were higher than those of Chinese chive. Proline, glutamine, valine, leucine and threonine were the major total amino acids in white and green portions of Allium senescens leaves. Methionine and cysteine were identified in white and green portions of Allium senescens leaves. The values of sodium and iron in Allium senescens were lower than in Chinese chive. Trace amount of selenium was also detected in Allium senescens leaves. The C$_{20:5}$ and C$_{20:6}$ were identified in leaves of Allium senescens. As a result of Rheometer analysis and sensory evaluation, texture of Allium senescens was more tender than that of green portion of Chinese chive leaves.

This study was carried out to investigate the changes on the components of salted eggplant(shikibu) during storage. The contents of total and reducing sugars were decreased during storage, and the tendency of decrease was lower in the salted eggplants of vacuum packing storage than in the salted eggplants of rice bran immersion storage. The contents of acetic and malic acid were higher than other organic acids. The content of acetic acid was increased during storage, but malic acid was decrease. The major amino acid were valine, leucine, aspartic acid, glutamic acid. The content of essential amino acids was increased during storage. Aspartic acid, alanine, cystine and proline were high content of free amino acids. The contents of phosphoserine, taurine, Y-aminoisobutyric acid and hydroxyproline were higher than others. Posphoserine content was decreased during storage, but Y-aminoisobutyric acid was increased to 5 times of fresh eggplant at 20 days of storage.

Levels of minerals, vitamin, amino acids, fatty acids and chemical compositions were determined in the fleshy parts that are used for food. The moisture, crude protein, crude lipid, crude ash and carbohydrate contents of masou salmon were $73.6{\pm}0.4$, $17.7{\pm}0.3$, $3.3{\pm}0.2$, $1.3{\pm}0.1$ and $4.1{\pm}0.2%$, respectively. Potassium was the highest followed by phosphorus, calcium and sodium. The vitamin C and E levels in masou salmon were 600 and $200\;{\mu}g/100\;g$, respectively. Sixteen amino acids were detected and essential amino acids among them are threonine, valine, methionine, isoleucine, leucine, phenylalanine, lysine, arginine, and histidine. Oleic acid was the most abundant fatty acid in masou salmon and polyunsaturated fatty acids were EPA, DHA, linoleic acid, $\alpha$-linolenic acid, $\gamma$-linolenic acid and arachidonic acid. These results may offer a scientific basis for the commercial use of masou salmon.
The effect of nuruks and crude amylolytic enzyme on free amino acid and volatile components of brown rice vinegar prepared by static cultures was investigated. Five groups consisted of AV (100% nuruk without crude amylolytic enzyme), BV (75% nuruk; 25% crude amylolytic enzyme), CV (50% nuruk; 50% crude amylolytic enzyme), DV (25% nuruk; 75% crude amylolytic enzyme) and EV (100% crude amylolytic enzyme without nuruk). Free amino acid content in AV vinegar (132.06 mg%) was lower than the others (184.56-191.22 mg%). Acetic acid, 3-methyl butyl acetate, acetoin and isoamyl alcohol were major volatile components as analyzed using gas chromatography-mass spectrometry after headspace solid-phase microextraction. Acetic acid in AV and EV samples represented 67.56% and 55.53% of total GC peak area, respectively. E-nose provided different patterns in each case showing variation in sensory properties.
The various components of sigumjang were analyzed according to fermentation time. Aerobic bacteria were increased with fermentation time. Yeasts and molds were increased until 3 days after fermentation and then not changed. Six free sugars, 3 volatile organic acids and 6 non-volatile organic acids were detected. The content of free amino acids was $1,407.9{\sim}3,053.9\;mg%$. Glutamic acid was most abundant component among the amino acids, followed by phenylalanine, arginine and valine. The ratio of essential amino acid was $34.4{\sim}37.0\;mg%$. The content of mineral was $12,966.7{\sim}13,864.5\;mg%$. Potassium was the most abundant in quantity among the minerals in sigumjang except sodium which was added artificially. The principal fatty acids were linoleic acid, palmitic acid and oleic acid. The ratio of unsaturated fatty acids was $76.3{\pm}1.1%$. As a result of sensory evaluation, the highest score was obtained 3 to 5 days after fermentation.

Acid hydrolysates of cocoon was gained by acid hydrolysis of 2 N HCl, 11$0^{\circ}C$, 48 hours, neutralization and desalting from the cocoon. The amino acid compositions of acid hydrolysates of cocoon were glycine 43.25%, alanine 34.39%, serine 10.05% and valine 2.44%. The contents of essential amino acid was 10.05%. Food efficiency ratio of acid hydrolysates of cocoon group was equal to the reference protein, casein. Liver weight, GOT, GPT activity, serum albumin and serum total protein level of rats were not significantly different among the experimental groups. Therefore, the protein acid hydrolysates of cocoon is not of high quality. When the rat fed with high cholesterol, high lipid, and high sucrose diet was administered with 5% acid hydrolysates of cocoon, its plasma lipids concentration of acid hydrolysates of cocoon was favorably affected: its triglyceride was decreased, and the level of phospholipid and HDL cholesterol were increased. There was also an unfavorable effect: the levels of LDL cholesterol and total cholesterol went up. Therefore, the acid hydrolysates of cocoon is not a good protein food source, but is can be used a cosmetic, medical, or packing material. Further research will reveal how it will affect or improve plasma lipid.
We investigated changes in doenjang quality upon addition of rice fermented with Poria cocos mycelium. Sensory evaluation showed that rice addition to 15% (w/w) was optimal. The content of free amino acids was 1,899.17 mg% in doenjang fermented for 90 days with P. cocos mycelium. The rice contained seven essential amino acids: leucine, valine, phenylalanine, isoleucine, lysine, threonine, and methionine. The levels of essential amino acids increased after fermentation with P. cocos mycelium. Vitamin A (7.47 RE/100 g), Vitamin D (0.45 mg/100 g), and Vitamin E (5.73 mg/100 g) were detected in the experimental preparation but not in the control. In terms of electron-donating ability, the highest scores were 73.8% (in a water extract) and 76% (in an ethanolic extract) of doenjang fermented with P. cocos mycelium. Nitrite-scavenging ability was higher in the ethanolic extract than in the water extract of rice fermented with P. cocos mycelium.
This study evaluated the qualitative properties of lotus root (Nelumbo nucifera) peels as food materials. Proximate composition, sweetness, pH, total acidity, color, mineral, fatty acid, free sugar and organic acid contents of preprocessed lotus root were measured. Crude moisture, protein, and total fiber contents of non-peeled treated Lotus roots were higher than those of peeled treated lotus roots (p<0.05). Lightness and yellowness of color were reduced by peeling process, whereas redness increased (p<0.05). The mineral contents of Mg, Ca, Fe and Na were higher in non-peeled lotus roots, whereas peeled treated lotus root showed higher K contents (p<0.05). The major fatty acids were palmitic, oleic, linoleic and linolenic acids. The total free sugar content of non-peeled lotus roots was higher than that of peeled treated lotus roots (p<0.05). Glucose content was not significantly different, whereas fructose, sucrose, and maltose contents were significantly different. The organic acid and free amino acid contents were higher in peeled lotus roots (p<0.01).

The purpose of this study was to investigate the characteristics of beef jerky adding of many kinds of saccharides and three levels of green tea powder. Color and hardness were increased with the addition of green tea powder while tenderness was decreased. Moistureness Gf beef jerky added honey was higher than that of sugar, oligo saccharide. In color, the lightness was decreased with increasing concentrations of green tea Powder. Redness and yellowness values were increased. In measurement of texture, hardness were increased with the addition of green tea powder. The hardness of beef jerky by adding of honey appeared to be higher than that of sugar, oligo saccharide. Gumminess and brittleness were increased with the addition of green tea powder while springness was decreased. Springness in addition of 3% green tea powder was higher than control. The beef jerky added with 3% green tea powder and sugar had good overall perference.
A study on the amino acid composition of raw frozen krill, and krill solubles manufactured in forms of paste and powder has been carried out. The raw frozen krill was thawed, chopped, mixed and homogenized with same amount of water. The mixture was autolyzed or hydrolyzed by tile addition of $0.2\%$ pronase-p, a commercial proteolytic enzyme, to the weight of the raw frozen krill at $45^{\circ}C$ for 4 hours. After a thermal inactivation of enzymes at $95^{\circ}C$ for 15 minutes, the autolysate and the hydrolysate were centrifuged and filtered through gauzes, respectively, and then tile lipid layer in the supernatant was removed, The autolysate and the hydrolysate were finally concentrated under reduced atmospheric pressure in a rotary vacuum evaporator at $45^{\circ}C$ for 1 hour to produce the krill solubles in form of paste. The powdered krill solubles were prepared by the addition of $5\%$ starch to the autolysate and hydrolysate and by means of concentration in the rotary vacuum evaporator at $45^{\circ}C$ for 30 minutes and a forced air drying at $58^{\circ}C$ for 3 hours with a air velocity of 3m/sec. Among the amino acids in raw frozen krill, glutamic acid, lysine, and aspartic acid showed high values in quantity and then followed leucine, alanine, arginine, glycine and proline. The qnantity of histidine was very small and that of cystine was only in trace. The krill solubles in forms of paste and powder prepared by autolysis and hydrolysis with pronase-p revealed almost the same patterns in amino acid composition as in raw frozen krill. In case of free amino acids, a large quantity of it in raw frozen krill consisted of lysine, arginine, proline, alanine and leucine. The quantities of cystine, histidine and glutamic acid were, in contrast, very small. In the soluble krill paste prepared by autolysis, lysine, leucine, threonine and alanine existed in large quantities among the free amino acids and cystine, aspartic acid and histidine existed in small quantities. The contents of almost all of the free amino acids ill soluble krill paste perpared by hydrolysis with pronase-p were increased slightly as compared with those in soluble krill paste prepared by autolysis. In this product, the contents of cystine, histidine and serine were very low and lysine, leucine, arginine and proline were the dominant group in quantities among the free amino acids. The krill solubles in forms of paste and powder were not inferior to whole egg in the view point of its essential amino acid composition.
