강원연안 홍조 지누아리사촌(Grateloupia acuminata, Rhodophyta)의 양식

  • 홍조 지누아리류(Grateloupia spp.)는 독특한 향과 감촉을 가진 유용 해조류로서 강원도 지역에는 옛부터 식용으로 널리 이용되어 왔다. 그러나 산업적 생산량이 자연상태의 생물량에 한정되어 있어서 지역적 한계를 벗어나 그 우수한 풍미를 일반화시키지 못하고 있다. 본 연구에서는 강원도 연안에서 채집한 지누아리사촌(Grateloupia acuminata)의 사분포자체를 조직배양하여 재생체를 유도하고, 이로부터 사분포자를 얻어 배양조건에 따른 포자의 발아와 생장 경향을 파악하였다. 양식에 사용된 종묘는 사분포자로부터 얻은 배우체의 유엽으로서 이의 바다양성을 통하여 대량 양식의 가능성을 파악하고자 하였다.   • 액젓은 어류, 패류, 어류의 내장 등에 소금을 가하여 부패균의 번식을 억제하고, 어패류 자체의 효소와 외부 미생물의 효소작용으로 육질을 분해시킨 후 걸러서 만든 독특한 맛과 풍미의 발효식품이다. 액젓은 숙성과정을 통하여 단백질이 폴리펩타이드 형태를 거쳐 다시 펩타이드에서 정미성분인 아미노산으로 분해되게 된다. 액젓의 주된 역할은 천연 조미의 역할이고 그 맛의 결정 요인은 저분자 질소화합물이라 할 수 있으나 핵산 관련 물질 중 맛의 주성분인 IMP는 숙성기간이 지남에 따라 분해되기 때문에 많은 영향은 미치지 않을 것으로 보여진다. Comparison of flavor in Sesame Oil Prepared with Korean and Chinese sesame (국산 참깨와 중국산 참깨로 제조한 참기름의 풍미 비교)

  • This study was carried out in order to compare flavor of sesame oils prepared with Korean and Chinese sesame. There were no significant differences in the fatty acid composition, sesamin and tocopherol content of Korean and Chinese sesame oils. The color of Korean sesame oil was darker than that of Chinese sesame oil. It seemed that of Chinese sesame oil by analysis of aroma characteristics. Sensory evaluation showed that the acceptability of Korean sesame oil was higher than that of Chinese sesame oil in ordor test, whereas there were no significant differences between the acceptability of Korean sesame oil that of Chinese sesame oil in seasoned cucumber test.

  • 본 연구는 차는 잎 자체가 가지고 있는 상쾌한 향과 차 제조과정 중에 생성되는 독특한 향으로 인하여 기호식품으로서 뿐만 아니라 체내의 생리활성 작용이 탁월하기 때문에 기능성식품으로서 수요가 증가되고 있다. 차의 풍미는 차 생산지의 토양, 기후, 품종, 제조방법 등 여러 요인에 의하여 영향을 받으나 제일 중요한 것은 제조방법으로 차의 산화효순에 의한 발효정도에 따라 차의 향과 맛, 체내작용 등에 차이가 있다. 국내산 반발효차 및 발효차는 수입된 우롱차와 홍차와는 차별화된 은은한 향과 깊은 맛을 지니며, 기호도가 매우 높다.

  • 젓갈은 전통적인 저장발효식품으로 어패류의 육질, 내장 및 생식소 등을 원료로 하여 염장하였을 때 육자체에 함유된 자가소화효소와 젓갈 중의 미생물이 분비하는 효소작용에 의하여 원료 물질이 분해되면서 독특한 풍미를 갖게 된다(Park et al., 1996). 창란젓갈은 명태의 위와 창자를 원료로 하여 만든 젓갈로, 식염 함량이 8%이하의 저염양념젓갈의 형태로 제조되고 있으며 거의 전 과정이 정치 상태에서 진행되기 때문에 염장 및 숙성 시간이 오래 걸릴 뿐만 아니라 용기 상하간에 품질 편차가 커서 제품이 균일하지 못하다. Effects of dry aging on physicochemical properties of beef cattle loins (건조숙성에 따른 육우 등심의 이화학적 특성에 미치는 영향)

  • This study investigated the quality change in dry aged beef cattle loins (temperature: $3{\pm}1$, lative humidity: $75{\pm}5%$, period: 14 days), compared to non-aged beef cattle loins (control). The water content of dry aged loins was lower than that of the control (p<0.001). The fat content, protein content, pH value, and redness in dry aged loins were higher than in the control. Moreover, dry aging significantly improved the water holding capacity and cooking yield of beef cattle loin (p<0.001). The shear force of dry aged loins was significantly lower than in the control (p<0.01). The flavor, tenderness, juiciness, and overall acceptability of dry aged loins were higher than in the control according to sensory evaluation. Therefore, dry aging can improve the quality properties of beef cattle loins.

Effect of Angelica plant powder on the Quality Characteristics of Batter Cakes and Cookies (백련초 분말을 첨가해 제조한 반죽형 케이크와 쿠키의 품질 특성)

  • This study evaluated the effect of the substitution of flour with Angelica plant(Bakluncho) powder on the characteristics of batter cake and cookies. The specific volume of batter cake was increased significantly with increasing content of Angelica plant powder, but hardness was decreased slightly. The specific volume of cookies didn't show significant difference, and the width detennined by the water content in the dough was decreased with increasing content of Angelica plant powder. The L value in the crust and crumbs of the cake was significantly the largest value in the control group. The a and b values were the highest in the 5% substituted sample group. The L, a and b values of the cookies also showed the same pattern. According to the sensory evaluation of cakes and cookies, the scores of flavor, color, and texture were raised by the addition of Angelica plant powder. The acceptance tests of cakes and cookies showed a higher overall acceptability than those of the 1% and 3% substituted samples.

Volatile flavor components of Dioscorea japonica (참마의 휘발성 풍미성분)

  • An attempt was made to derermine the volatile flavor components of Dioscorea japonica. Essential oils from roots of the samples were isolated by simultaneous steam distillation-extraction(SDE) method using diethyl ether as solvent. Concentrated samples were analyzed by gas chromatography(GC) and combined gas chromatography-mass spectrometry(GC-MS). Fifty nine volatile flavor components, including 35 hydrocarbons, 5 aldehydes, 1 ketone, 9 alcohols, 2 esters, 3 acids and 4 miscellaneous ones were confirmed in the young roots of Dioscorea japonica. Forty two components, including 23 hydrocarbons, 2 aldehydes, 7 alcohols, 1 ester and 8 acids and 1 miscellaneous one were confirmed in the roots of mature stage. ${\sigma}-3-Carene$ and dodecanoic acid were regarded as the most abundant components in young and mature roots repectively. The profile of volatile flavor components was markedly different in young and mature roots of Dioscorea japonica.

Effects of Barley Bran on the Quality of Sugar-Snap Cookie and Muffin (보리 도정 겨의 첨가가 쿠키와 머핀의 품질에 미치는 영향)

  • The effects of barley bran substitution on the quality of sugar-snap cookie and muffin were investigated using physical tests and sensory evaluation. Barley bran contained 29.04% starch, 16.23% protein, and 8.57% lipid. They were formulated by substituting the flour with the barley bran of 0, 10, 20, and 30%. Increasing levels of barley bran substitution reduced cookie spread, lightness, top grain scores and other sensory qualities. Cookies with 10% barley bran substitution, however, were not significantly different from the control cookies in sensory characteristics, and cookies with 20% barley scored well above the minimum acceptance level of 5 on a 9-point scale. Although the barley bran decreased muffin volume and had a deleterious effect on crumb grain, muffins with 10% bran had acceptable sensory properties. The physical and sensory results indicated that barley bran could be added to cookie and muffin at replacement levels up to 20% without a large adverse effect on cookie and muffin quality.

  • Soy yogurt beverage (SYB) was prepared from defatted soybean flour and flavor, effect of stabilizers on sedimentation and change of acidity and cell concentration during storage of SYB were investigated. The flavor of SYB rated significantly different and slightly inferior to milk yogurt although flavors added to SYB improved the acceptability. The curd in SYB precipitated greatly during the first 24 hours of storage. The sedimentation of curd was reduced by the addition of CMC of 0.4% or PGA of 0.1%. SYB can be kept at $5^{\circ}C$ for 48 days without significant change in viable cell count of lactic acid bacteria. pH, titratable acidity and viable cell count of SYB was significantly changed for 48 days at $25^{\circ}C$. Some of SYB samples were contaminated by yeast and mold.
