Comparison of Physicochemical Properties and Antioxidant Activities between Lentinula edodes and New Cultivar Lentinula edodes GNA01 (표고버섯(Lentinula edodes) 및 표고버섯 신품종 이슬송이버섯(Lentinula edodes GNA01)의 이화학적 특성 및 항산화 활성 비교)

  • The new cultivar Lentinula edodes, which is named 'Lentinula edodes GNA01', was bred by mating strains isolated from 'L26' and 'Kyoungwon9015' obtained from Sammyungjin Research Institute, Fujian, China. L. edodes GNA01 does not have stipes like L. edodes, although it generally has a similar spherical shape. Moisture and crude protein contents of L. edodes GNA01 were lower than those of L. edodes. Meanwhile, L. edodes GNA01 contained higher levels of crude ash, crude lipid, crude fiber, and carbohydrates than L. edodes. The ${\beta}$-carotene content ($19.05{\mu}g/100g$) of L. edodes GNA01 was about three times higher than that of L. edodes. In addition, vitamin D content ($118.53{\mu}g/100g$) of L. edodes GNA01 was more than twice that of L. edodes. L. edodes GNA01 was a good source of mineral elements, with K and Mg contents of 2,277.50 mg/100 g and 203.15 mg/100 g, respectively. The major fatty acids of L. edodes GNA01 were C16:0 and C18:2, and L. edodes GNA01 had the highest linoleic acid (C18:2) content of 1,087.66 mg/100 g. Total phenol content of L. edodes GNA01 was 12.52 mg GAE/g, and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activities and ferric reducing antioxidant power (FRAP) values of L. edodes GNA01 were lower than those of L. edodes at all concentrations. However, DPPH radical scavenging activities and FRAP values of L. edodes GNA01 were above 80% and 0.9 at a concentration of 10 mg/mL, respectively.

Effects of Lentinus edodes Extract on the Loperamide-induced Constipation in Rats (표고버섯 추출액이 loperamide로 유도된 변비에 미치는 영향)

  • The preventive effect of Lentinus edodes extract (LE) against constipation was studied in rats. Rats were pretreated with LE contained in drinking water at the concentration of 10%, 20% and 40% over 30 days. Constipation was induced by subcutaneous injection of loperamide (4 mg/kg/day) 3 days prior to sacrifice. Treatment of loperamide resulted in decreases in the number and wet weight of fecal pellets, and increase in the number of fecal pellet in the distal colon and cecocolon weight. In contrast, the number and wet weight of fecal pellets were increased, and the number of fecal pellet in the distal colon and the cecocolon weight were decreased in LE-pretreated groups compared to the loperamide-treated group. Blood parameters such as white blood cell, red blood cell, hemoglobin, hematocrit, platelet, mean corpuscular volume, mean corpuscular hemoglobin and mean corpuscular hemoglobin concentration, and serum alanine transaminase, aspartate aminotransferase and alkaline phosphatase activities, and blood urea nitrogen and creatinine values were not significantly different between the groups. In addition, LE (0.5 mg/mL) increased spontaneous contractile activity, which was reduced by atropine or loperamide in isolated rat ileum. Theses results suggest that the improvement of constipation symptoms in LE-pretreated rats resulted from a stimulatory effect of LE on intestine contractile activity.

Analysis of Climatic Factors during Growing Period of High-Quality Oak Mushroom(Lentinus edodes(Berk) Sing) (고품질 표고 생산 지역의 버섯 생산기간중 기후 분석)

  • Oak mushroom(Lentinus edoes(Berk) Sing) is one of the most important edible mushrooms, and its production has been rapidly increased due to nutritional and medicinal effects. In this study, climatic factors during the growing period of high-quality oak mushroom were analyzed and environmental factors affecting the quality of oak mushroom were discussed. Three places(Changheung, Puyo and Wonj) as mass producing areas of high-quality oak mushrooms and the 15 days of the growing period in 1997-1998 were selected. Major climatic factors for analysis were average air temperature, average relative humidity, ranges of daily air temperature, relative humidity, and wind speed. During the period, th daily average air temperature was $7~20^{\circ}C$ with the diurnal air temperature($7~20^{\circ}C$) and nocturnal air temperature($0~-2^{\circ}C$). The relative humidity ranged between 50 and 70% with the range of daily relative humidity(40~60%). Wind velocity was 1~4m.$s^{-1}$, From the results, it is concluded that the growing environmental conditions for high-quality oak mushroom differed from the optimum conditions for the high productivity of oak mushroom; environmental conditions such as wide ranges of air temperature and relative humidity, low humidity and wind speed might affect the emergence of high-quality oak mushroom.

Quality characteristics and antioxidant activities of rice cookies added with Lentinus edodes powder (표고버섯 분말을 첨가한 쌀 쿠키의 품질 특성 및 항산화 활성)

  • This study was conducted to investigate the effect of Lentinus edodes powder on the quality characteristics and antioxidant of rice cookies. The cookies for this experiment was made by 3 main ingredients including rice powder, flour, Lentinus edodes powder. The proportion of rice powder was fixed to 50% for the total amount of ingredients. The amount of reminded 2 ingredients (flour and Lentinus edodes powder) were varied. The amount of flour was decreased up to 38%, and the addition of Lentinus edodes powder was increased to 4%, 8% and 12%. Density of the dough, hardness, total polyphenol content, DPPH free radical scavenging activity, and reducing power increased with increasing Lentinus edodes powder content. Moisture content, pH of the dough, spread factor, loss rate, leavening rate, and L values of the cookies were decreased with increasing Lentinus edodes powder content. The result of consumer acceptance test revealed that there were no significant differences in smell, taste and overall acceptability, while the preference of color decreased as the amount of Lentinus edodes powder increased. To sum up, the cookies with 12% Lentinus edodes powder can produced the best results in terms of quality and antioxidant potential.

Development of an apple/pear pomace fermented with Lentinus edodes Mycelia (사과/배 부산물 및 표고버섯균사체를 이용한 발효물 개발)

  • The purpose of this study was to investigate the possibility of enhancing the functional compounds in apple and pear pomace (APP) by fermentation with mycelia from the mushroom Lentinula edodes. A 30% (w/v) APP with added rice bran and Biji was fermented with L. edodes at $24^{\circ}C$ and 80% humidity. The cellulase and pectinase activities in the fermented APP (FAPP) were higher than those in the non-fermented control. In addition, the physiological activities of the FAPP, including DPPH, ABTS radical scavenging, and SOD-like activity, as well as the total polyphenol and ${\beta}-glucan$ contents were higher than those in the control. FAPP treatment significantly reduced LPS-induced nitric oxide (NO) levels in Raw 264.7 cell. Therefore, FAPP treatment was considered to more effectively suppress cell injury caused by inflammatory cytokines through inhibition of LPS-induced NO production. These results suggest that the levels of functional components in APP can be increased by fermentation with this mushroom mycelium. However, further studies are needed before it can be used as a functional material.

Prediction of Oak Mushroom Prices Using Box-Jenkins Methodology (Box-Jenkins 모형을 이용한 표고버섯 가격예측)

  • Price prediction is essential to decisions of investment and shipment in oak mushroom cultivation. But predicting the prices of oak mushroom is very difficult because there are so many uncertain factors affecting the demand and the supply in the market. The Box-Jenkins methodology is one of strong tools in price prediction especially for the short-term using historical observations of time series. In this paper, the Box-Jenkins methodology is applied to find a model to forecast future oak mushroom prices. And out-of-sample test was conducted to check out the prediction accuracy. The result shows the high accuracy except for market disturbance period affected by unexpected weather change and reveals the usefulness of the model.

  • 표고버섯은 특이한 향과 육질, 약효성분 때문에 오래 전부터 식용으로 애용된 임산물이다. 표고버섯은 원래 한국, 중국, 일본에서만 자생하던 극동지역 특산물로서 미국, 유럽 등지에서는 발견되지 않았으나, 현재는 전 세계에서 광범위하게 인공재배 되고 있다. 표고버섯에 포함되어있는 수용성 다당류인 렌티난(lentinan)은 종양세포인 Sarcoma-180의 생장을 저해하는 항암효과가 있는 것으로 알려져 있다(최 등 1995). 또한 여러 종류의 유리 아미노산이 들어 있고 열량이 낮은 반면, 비타민과 식이섬유 등이 풍부한 영양식품이다(황 1983). 그러나 버섯은 함수율이 높고 조직이 연약하여 저장하기 어렵고, 부패되기 쉽기 때문에 수확 후 단시일 내에 생버섯으로 판매하거나, 통조림 또는 건조가공하고 있지만, 후자가 일반적이다(하 등 2001).   • 표고버섯의 재배는 농촌 부업뿐만 아니라 농한기의 노동력 이용면에서 유리하고, 영양학적으로 혈압강하물질, 빈혈치료물질, 제암물질 등이 함유되어 있음이 밝혀져 영양식품, 또는 건강식품으로 그 진가를 더욱 평가받게 되었으며 주로 동양에서 많이 소비되었으나 서양에서도 소비가 증가하여 수요는 날로 증가하고 있어 표고재배 사업의 전망은 매우 밝다(이, 1982). 그러나 아직까지 고품질 버섯의 생산이나 버섯의 상품성을 높이기 위한 연구들은 미흡한 실정이다. 국내의 표고버섯은 생산량의 50% 이상이 건조되어 유통되므로 표고버섯의 건조특성에 관한 연구는 필수적이며 특히 건조 뿐 아니라 가공 및 저장의 가장 기초적인 자료로 이용되는 평형함수율에 관한 명확한 구명이 요구된다. Studies on Mixing Conditions of Sub-ingredients of Kimchi Tablet by Response Surface Methodology (반응표면 분석에 의한 김치 타블렛 부재료의 혼합조건 연구)

  • Optimal mixing renditions of sub-ingredients(citron, apple, carrot and mushroom) for preparation of kimchi tablet were investigated by response surface methodology. Hardness of kimchi tablet was low with the addition of 0.75 g carrot powder but increased as increasing of mushroom amount. Hue angle of kimchi tablet was 83 ∼86 degree when the amount of citron, apple, carrot and mushroom was lower than 0.5 g. Solubility in artificial bile acid of kimchi tablet was not affected by the addition of carrot and was high in the group with 1.0 g mushroom added and the group with 0.75 g apple added. Flavor of kimchi tablet was better as increasing of the amounts of apple and carrot added. The results of investigating the effects of independent factors on each response variable showed that only carrot affected on the hue angle of tablet and other sub-ingredients not affecting on response variable. Therefore, carrot, apple and mushroom could be added in a wide range of concentration around 0.75 g.

Production of Lentinus edodes Mycelia in Submerged Culture and It's Hypoglycemic Effect in Diabetic Rats (표고버섯 균사체의 생산과 당뇨 유발 흰쥐에 대한 혈당강하 효과)

  • The optimum conditions for the production of Lentinus edodes mycelia and it's hypoglycemic effect was studied. Optimum pH and temperature for the production of mycelia in shaken flask culture were 5 and $30^{\circ}C$, respectively, for 24 days cultivation. Culture period for maximum production of mycelia (8.13 g/l) in 5-l jar fermenter cultivation was shortened as much as 6 days compared to shaken flask culture. The mycelial dose of 5 % proved almost equally effective in lowering the plasma glucose, total cholesterol, and triglyceride level as much as 23.0, 20.7, and 27.1%, respectively. The values of alanine transaminase and aspartate transaminase were also estimated and exhibited a substantial reduction (29.6 and 34.3%, respectively) in activity after the administration of dried mycelia.
