Transfer Rate of Cross Contamination of Listeria monocytogenes between Pork Meat and Workers' Hands during Pork Meat Processing (포장돈육 가공공정 중 돈육과 작업자 손과의 Listeria monocytogenes의 교차오염 전이율)

  • This study was performed to determine the transfer rates of each foodborne pathogen from pork meat packaging during the processing. We analyzed the transfer rate of Listeria monocytogenes from contaminated pork meat to worker's hands (wearing polyethylene gloves, PEG; cotton gloves, CG; and bare hands), cutting boards and knives, and vice versa. Transfer rate of CG 100.00% was higher than that of bare hands 2.513% and PEG 1.511%. In particular, when wearing Co, the transfer rate from the CG to bare hands with CG was 0.08%. Also, the range of transfer rates from contaminated pork meat to cutting board and knife was 0.352-3.791%. In contrast, transfer rates from the workers' hands (with PEG/CG and bare hands) to cutting board, knife, and pork meat ranged from 0.001 to 0.141%. There was a lower transfer rate from workers' hands than from pork meat. These findings indicate that use of PEG could effectively reduce or prevent the cross-contamination compared to CG and provide important information concerning the consecutive transfer of L. monocytogenes during food processing.

Prioritization of issues and challenges to increase mushroom export (버섯 수출 확대를 위한 당면과제의 우선순위 도출)

  • The trade deficit in mushrooms has continued to increase in recent years. This study explored major issues and challenges faced by the mushroom industry to increase export, and to prioritize the current issues and challenges based on their relative importance. 11 major issues and challenges in the mushroom industry were highlighted in focus group interviews. Best-worst scaling analysis prioritized these major issues and challenges, and questionnaire surveys were completed by 31 mushroom industry experts. The results revealed that strengthening the mushroom quality and price competitiveness were the main priorities, followed sequentially by a diversification of the overseas export markets and stabilization of the domestic mushroom price.

  • The characteristics of anthocyanin pigments extracted from cherry(Prunus serrulata L. var. spontanea Max. Wils.) were investigated at the various conditions, such as light, temperature, organic acid, metal ion and pH. The pigments were fairly stable under the sunlight during the 20 days storage period at room temperature. The pigments covered with the Al-foil, as well as red, blue, green and yellow films, were very stable at pH 2.5. The high thermal stability (over the 64% at $115^{\circ}C$, 30 min) of the pigments in the dark at pH 2.5 was also found. In the presence of organic acid, the hyperchromic effect of red color was greatly increased in the dark at $25^{\circ}C$. Addition of metal ion, such as $Na^+,\;K^+,\;Mg^{2+},\;Ca^{2+}\;and\;Mn^{2+}$, was contributed on the stability in color at pH 2.5 throughout 20 days storage period in the dark at $25^{\circ}C$. However, $Cu^{2+}\;and\;Fe^{3+}$ caused the rapidly degradation of pigments, and $Al^{3+}$ converted red color to blueish violet. The hyperchromic effect of the red color increased, as pH decreased. Therefore, these results indicated that cherry anthocyanin pigments might be used as the potential sources of natural red colorant for foods.

Chemical Characteristics of Plastic Film House Soils in Chungbuk Area (충북(忠北) 지역(地域) 시설재배(施設栽培) 토양(土壤)의 화학적(化學的) 특성(特性))

  • The salt accumulation, and chemical properties of 90 samples of the plastic film house soil in the area of Cheongju and Chungju were surveyed. Soil textural distribution of soil samples was 30% for sandy loam, 27% for loam and 43% for silty loam. Percentage distribution of electrical conductivity(EC) of surface soil was 23% below $2dS\;m^{-1}$, 30% for $2{\sim}4dS\;m^{-1}$, 25% for $4{\sim}6dS\;m^{-1}$ and 22% over $6dS\;m^{-1}$. Salt affected soil, which EC was higher than $4dS\;m^{-1}$, covered nearly 50% of all field surveyed. However subsoils(20~30cm) below $2dS\;m^{-1}$ was 68%. Salts in plastic film house soil was accumulated by increasing the cultivation period. After 5 years of cultivation electrical conductivity in plastic house soil was generally higher than $4.47dS\;m^{-1}$ in EC that was 2.8~5.6 times higher than that in the field soil in the outside of plastic film house. As the result of temporary removal of plastic film cover from the house during the rainy summer season, salt content in soil was decreased from $3.54{\sim}7.36dS\;m^{-1}$ to $0.71{\sim}2.92dS\;m^{-1}$ in EC due to the desalinization by runoff and percolating water. Contents of $NO_3-N$, $SO_4-S$ and Cl in plastic film house soil were 2.5. 7.0 and 3.4 times higher than those of open field respectively.

Yield Response of NPK Fertilizers and Soil Fertility Status of Farmers' Field for Peanut (땅콩재배지(栽培地) 토양(土壤)의 특성(特性)과 삼요소(三要素) 시비반응(施肥反應))

  • Three field experiments were conducted to define the optimum levels, yield responses and fertilization efficiencies of NPK fertilizers on peanut and survey on fertility status of 150 farmers` peanut fields was carried out for 3 years. The range of optimum rates of N, $P_2O_5$ and $K_2O$ fertilizers on peanut were 5.2-9.0, 6.4-21.0, 8.5-15.0kg/10a, respectively. The effect of NPK application were 23, 8, 16% and production efficiencies of each kg of NPK fertilizers were 6.0, 1.8, 3.4 kg, respectively. The optimum nutrient contents in soil were 250 ppm for available $P_2O_5$ and 0.8 me/100g for exchangeable K including applied ones. Available soil nutrient contents of farmers' peanut fields were mostly below the optimum range for upland soil.

Identification of issues and requirements for prioritizing the development of the mushroom industry in Korea (버섯산업 발전을 위한 개선과제의 우선순위 분석)

  • The purpose of this study was to identify sector-wise issues that need to be improved for the overall development of the mushroom industry and to prioritize these tasks based on an analysis of the current state of this industry in Korea. To this end, we classified the domestic mushroom industry into four sectors: production, processing, marketing, and export and distribution, and identified major tasks for the improvement of each of these sectors. A total of eleven issues that could be improved were selected, including three each in the production, marketing, and export and distribution sectors, and two in the processing sector. An analytical hierarchy process (AHP) was utilized to identify the issues in each sector that would need to be handled on a priority basis. A questionnaire-based survey was also conducted to gain relevant insights and suggestions from 32 experts in this industry. The present study is significant because it highlights sector-wise priority areas that could be supported by policies and legal measures for the overall development of the mushroom industry.

  • This study was conducted to obtain basic information for soil improvement in flower crop cultivating greenhouse soil through survey on the chemical and physical properties of greenhouse soils. Total of 85 Flowcultivating farms were surveyed and analysis was done on the soil characteristics, amounts of chemical fertilizer and soil amendmentuse. The result are as follows: In soil properties of flower cultivating greenhousees, silt clay loam was 51%and 68% of the surveyed soils had good drainage condition. Ground water table was over 90-120cm which was optimum range for flower cultivation. Flower cultivating farms had problem with accumulation of fertility. Nitrate nitrogen was accumulated in Gypsophila paniculate farms and available phosphorus, and exchangeable postassium were significantly higher in greenhouse soils about 2 times than in open field soil. Application amount of chemical feltilizers in greenhouses were nitrate 211,phosphorus 135, and potassium 132kg/ha, respectively. Amount of organic matter used in greenhouse were high in order of cattle manure> compost> organic fertilizer> poultry manure> swine manure and their application amounts were69, 103, 32, 20, and 43 MT/ha, respectively.

Production of Transgenic Orchardgrass Overexpressing a Thermotolerant Gene, DgP23 (내열성 유전자 DgP23을 도입한 형질전환 오차드그라스의 생산)

  • To develop transgenic orchardgrass (Dactylis glomerata L.) resistant to high temperature, a thermptolerance gene, DgP23, was introduced into orchardgrass using Agrobacterium - mediated transformation method. PCR and Southern blot analyses using genomic DNA showed specific DNA band on agarose gel and hybridization signal on X- ray film in transgenic orchardgrass harboring the recombinant DgP23 gene, but not in the wild type and empty vector control plants. RT-PCR and Southern blot analyses using total RNA also showed specific DNA band and hybridization signal. Transgenic orchardgrass did not showed ny morphological aberration both in the green house and field cultivation. Thermotolerance of transgenic plants was not detected in laboratory test. but may detected in field test.

Inhibition of Foodborne Pathogens on Polystyrene, Sausage Casings, and Smoked Salmon Using Nonthermal Plasma Treatments (비열 플라즈마 처리를 이용한 polystyrene, 소시지 케이싱, 그리고 훈제연어에서의 식중독균 저해)

  • The effects of nonthermal plasma treatments against Salmonella Typhimurium, Escherichia coli O157:H7, and Listeria monocytogenes living on polystyrene (PS), sausage casings, and smoked salmon were investigated. Inoculated PS, casings, and salmon were treated with nonthermal plasma generated with helium (5 L/min) or with both helium (5 L/min) and oxygen (100 mL/min) at 60 Hz and 30 kV/cm for 2, 5, or 10 min. S. Typhimurium exhibited the highest sensitivity to the helium-used treatment. The greatest reduction (3.9${\pm}$0.8 log$CFU/cm^2$) was observed with L. monocytogenes on PS after the treatment with the mixed gas for 5 min. The treatment with the mixed gas inhibited L. monocytogenes on casings and salmon by 0.5${\pm}$0.3 log$CFU/cm^2$ and 1.0${\pm}$0.3 log CFU/g, respectively. Different treatment times did not result in different reductions of L. monocytogenes on both casings and salmon. The types of treatment gas and material of contamination need to be considered for evaluating the antimicrobial effects of nonthermal plasma treatments.

Evaluation of the Properties of an Environment-Friendly De-icing Agent Based on Industrial By-Products (산업부산물을 활용한 친환경제설제의 특성평가)

  • A huge amount of de-icing agent is sprayed during winter to promote traffic safety in cold regions, and the quantity of de-icing agent sprayed has increased each year. The main ingredients in commonly used de-icing agents are chlorides, such as calcium chloride($CaCl_2$) and sodium chloride(NaCl). While calcium chloride is mostly used in Korea and sodium chloride is usually used in the U.S. and Japan, all de-icing agents include chloride ions. The chlorides included in sprayed calcium chloride-based de-icing agents have severe adverse effects, including the corrosion of reinforcing steels through salt damage by infiltrating into road structures, reduced structural performance of pavement or damage to bridge structures, and surface scaling, in combination with freezing damage in winter, as well as water pollution. In addition, the deterioration of paved concrete road surface that occurs after the use of calcium chloride-based de-icing agent accelerates the development of visual problems with traffic structures. Therefore, the present study was performed to prepare an environment-friendly liquid de-icing agent through a reaction between waste organic acids and calcium-based by-products, which are industrial by-products, and to analyze the properties of the de-icing agent in order to evaluate its applicability to road facilities.
