Residual Characteristics of Methyl Bromide and Hydrogen Cyanide in Banana, Orange, and Pineapple (수입과실류(바나나, 오렌지, 파인애플)를 대상으로 Methyl Bromide (CH3Br)와 Hydrogen Cyanide (HCN) 훈증소독 처리 후 약제 잔류 특성)

  • Fumigant, methyl bromide which is used in most countries for plant quarantine, has been designated and under control as ozone depleting substance. For developing alternative chemicals for methyl bromide, many countries have been intensifying their capacity. This study was carried out to investigate the residue patterns of hydrogen cyanide which is commonly used for plant quarantine. Hydrogen cyanide was treated onto the orange, banana, and pineapple at recommended and double doses and then sampling was done at 1 and 3 day after fumigation treatment. Residue of hydrogen cyanide was found safe because average residue levels on orange, banana, and pineapple after 3 days of fumigation treatment were $0.57{\pm}0.05$, $0.21{\pm}0.17$, and $0.41{\pm}0.08$ ppm, which were lower than the MRLs of Korea (5 ppm), Japan (5 ppm), USA (50 ppm), and Canada (25 ppm). Hydrogen cyanide are expected to be used as alternative chemicals for methyl bromide fumigant for orange, banana, and pineapple.

Comparison of Physicochemical Properties and Physiological Activities of Commercial Fruit Juices (시판 과일주스의 이화학적 특성 및 기능성 비교)

  • In this study, the physicochemical and physiological activities of 10 different commercially available juices (apple juice-A: cloud type; apple juice-B: clear type; blueberry juice; grape juice-A; grape juice-B; orange juice-A; orange juice-B; pineapple juice; pomegranate juice; and tomato juice) were investigated. The average pH, titratable acidity, Brix, and reducing sugar were 3.57, 0.57%, $13.1^{\circ}Brix$, and 57.58%, respectively. The total polyphenol and flavonoid contents were within the ranges of 98.29-878.12 ug/mL and 23.82-156.63 ug/mL, respectively, and pomegranate juice showed the highest content, followed by blueberry juice and apple juice-A. In the DPPH radical scavenging assay, apple juice-A, grape juice-A, and pomegranate juice exhibited the highest activity (greater than 90%) while orange juice-B, pineapple juice and tomato juice showed the weakest. The tyrosinase inhibitory effect was highest in apple juice-A, followed by orange juice-A and blueberry juice. The reducing power was highest in pomegranate juice and lowest in pineapple juice and grape juice-A. The antioxidant activity by reducing power was highly correlated with the total polyphenol content.

Study on the Preparation of Kochujang with Addtion of Fruit Juices (과즙을 첨가한 고추장제조에 관한 연구)

  • In order to improve qualities of kochujang, various fruit juices such as apple, orange, pineapple and grape were added to the raw material of kochujang instead of the part of water. It was apparent in the kochujang with pineapple juice that organic acids originated from fruit juices increased titrable acidity and decreased pH. Free sugars and organic acids in the kochujang that was fermented during three months were degraded or might be used by microorganism after ten months of fermentation. Kochujang with grape juice showed relatively dark color, which had a good agreement with the changes of Hunter a-value. Sensory evaluation test about tastes, flavor and color showed that the kochujang with pineapple juice was preferred to others.

Preparation of Soluble Silk Peptides by Food-grade Proteinases (효소 분해에 의한 가용성 실크 펩타이드의 제조)

  • Enzymatic hydrolysis of silk fibers were investigated for the preparation of soluble silk peptides by ten food-grade proteases from Bacillus, Aspergilius, and plant sources. Silk fibers were dissolved for 1 hr in a 2:1 cosolvent (50% $CaCl_2$: ethanol) by heating at $90^{\circ}C$. The silk solution was filtered to remove Impurity particles and desalted for 50 hours by a dialysis process to remove the used cosolvent. When the silk hydrolysis was performed at $45^{\circ}C$ for 2 hours, most proteases from Bacillus and Aspergillus generated large amounts of insoluble aggregates. On the contrary, proteases from plant sources produced much less aggregates during prolonged incubations and also exhibited high hydrolysis activities. In regards of the solubility and broad molecular sizes of produced silk peptides, Bromelain was finally selected and applied for the enzymatic hydrolysis of silk fibers.
