Oxidative Stability of Tallow Heated by Different Frying Conditions (튀김조건에 따른 가열 우지의 산화안정성)

  • The oxidative stability of tallow heated was studied by different frying condition (temperature 130, 150, and 180$^{\circ}C$;heating time, each 10hours per day, total 240hrs). Changes of physicochemical parameters such as acid value, peroxide value, iodine value, dielectric constant, content of polar components and polymer, refractive index, smoke point, viscosity and color changes in tallow heated were also measured. Acid value, dielectric constant, refractive index, viscosity, and content of polar component and polymer increased as the tallow was heated longer, whereas iodine value and smoke point decreased and peroxide value was increased and decreased repeatedly. These parameters changed to a greater extent as the heating temperature went up. The color became darkened with the increase of red and yellow values during heating. The decree of coloration was proportional to heating temperature.

소규모 업소용 HACCP 표준 관리 기준

  • ${\bigcirc}$ 본 업소는 어묵류(튀김어묵, 찐어묵, 구운어묵)을 생산하는 식품제조 가공업소로서 총 5명의 인원이 어묵류 15개 제품을 생산하여 매출액은(약 00원)이며 주도 대형 유통판매업소에 판매하고 있다. ${\bigcirc}$ 본 업소의 어묵은 연육, 농산물 등과 식품첨가물을 배합 성형 후 가열 등의 공정을 거쳐 생산된 제품으로, 원료 취급과정에서의 오염이나 불충분한 가열, 교차오염 등으로 식중독균(병원성대장균, 황색포도상구균 등)과 원료 및 제조과정에서 이물(금속 등)이 혼입될 수 있으며, ${\bigcirc}$ 이로 인한 주요클레임 발생사례는 최근 3년간 관계당국으로부터 대장균군 검출 3건, 소비자클레임 2건이 있었다. - 연도별 주요 클레임내용은 '08년도에는 대장균군 검출 3건, '09년도 튀김어묵에서 날벌레 이물 검출 1건, '10년도에는 찐어묵에서 철수세미 1건 이었다. ${\bigcirc}$이러한 위해발생을 사전에 예방하기 위해 중점관리해야 하는 공정은 가열공정으로 판단되며, 금속등의 이물혼입 또한 중점적으로 관리할 필요성이 있다. ${\bigcirc}$ 본 업소에서 생산하는 어묵류(튀김어묵, 찐어묵, 구운어묵)는 가열공정에서의 가열온도와 시간을 각각 설정하여 CCP 1로 관리하고 있으며, 품온이 $85^{\circ}C$이상으로 유지될 수 있도록 2시간마다 모니터링하고 한계기준 이탈여부를 기록하도록 하고 있다. ${\bigcirc}$또한 금속검출공정을 CCP 2로 관리하여 2mm${\varphi}$ 이상의 금속이물 혼입여부를 상시 확인하고 있으며, 금속검출기의 정상 작동여부를 4시간마다 모니터링하고 기록하도록 하고 있다. ${\bigcirc}$종합적인 공정 및 일반위생관리를 위해 개인위생 상태 냉동, 냉장고 온도 확인 등 총 29개 항목에 대하여 정기적 점검(매일 17, 주간 4, 월간 4, 분기 1, 연간 3)을 실시하고 있으며, ${\bigcirc}$따라서 지속적인 모니터링을 통해 미흡사항의 원인으로 파악하고 문제점 제거를 위해 체계적이고 지속적인 관리가 필요하다.

Antioxidant Activity of Kalopanax pictus Leaf Extract and Its Effects on the Quality Characteristics of Fried Pork Skin (음나무 잎의 항산화 활성 및 돈피 튀김의 품질 특성에 미치는 영향)

  • Antioxidant activities of ethanol extracts from Kalopanax pictus leaves (KPL) were investigated $in$ $vitro$. Total polyphenols, flavonoids and ferric reducing/antioxidant power (FRAP) values of KPL extracts were $75.9{\pm}6.1$, $59.0{\pm}6.7mg/g$, and $0.3{\pm}0.0mmol\;Fe^2/g$, respectively. KPL extracts showed robust DPPH radical scavenging activity. In addition, the quality characteristics of fried pork skin treated with KPL extracts were also evaluated. Fried pork skin was produced containing KPL extracts at 0, 0.25, 0.5, and 1.0%, respectively. The hardness and TBARS values regarding fried pork skin treated with KPL were reduced by the addition of KPL extracts, whereas collagen content was increased compared to the control. These results suggest the possibility of manufacturing fried fork skin with KPL extracts for the improvement of quality.

Phygicochemical Properties and Sensory evaluation with Doughnut of Yam (Dioscorea batatas) in Korea (한국산 긴마(Dioscorea batatas)의 물리화학적 특성 및 Doughnut에 대한 관능 검사)

  • In an attempt of develop composite flours, Korea yam (Dioscorea batatas) was investigated in terms of the physicochemical properties and sensory evaluation with doughnut. Yam had 76.10% of water, 18.63% of carbohydrate, 4.03% of crude protein, 0.27% of fat, 1.02% of ash and 17.20% of starch. Compositions of the free sugar in yam flour were glucose, fructose and sucrose, which of amounts was about 30% respectively. The major free amino acids of yam were Serine, Arginine & Alanine, which consisted of 70.3% of the total free amino acids. Most amino acids of yam were Glutamic acid, Aspartic acid & Arginine which consisted of 47% of total amino acids. As the amount of yam flour in doughnut was increased the oil absorption rate was lower. In the sensory evaluation, control and 10% flour group did not show any significant difference in all category of sensory characteristics.

  • For the effective utilization of anchovy as a food source, processing conditions of expanded anchovy snack and monolayer moisture content of the products were investigated. Ground anchovy was mixed with 50% of wheat flour, 2.5% of NaCl and 3.0% of onion. The mixture were rolled, cut, dried and finally deep-fried with soybean oil. When 50% of wheat flour was mixed with ground anchovy, expansion rate showed the highest value among the treatments and organoleptic quality of the product was also high. Dried base with 6.4% of moisture content showed the maximum expansion rate and good crispness and brittleness when fried at $200^{\circ}C$. Monolayer moisture content of the expanded products was calculated as 2.77% by BET equation.

High Performance Size Exclusion Chromatographic Analysis of Polymerization Products in Used Frying Oil (High Performance Size Exclusion Chromatography 를 이용한 튀김유의 중합체 분석)

  • A simple and rapid method, based on separation of a flying oil into monomeric, dimeric and oligomeric triglyceride by means of high performance size exclusion chromatography on Ultrastyragel column (500 A), is proposed for evaluation of the quality of used frying oil. The relative area of the monomeric triglyceride was decreased with frying time increase, however, the decrease rate was significantly reduced by treatment of a composited powder (porous rhyorite/citric acid 40/56/4). This measurement showed good linear relationship with change in polar component measurement. There were no significant differences between the slopes of regression lines in both treated and non-treated frying oil system for relationship between monomeric triglyceride and polar component. By this method, it was found that a frying oil habe to be discarded if the content monomeric triglyceride decreased to 71%, which was corresponed to 27% polar component.

Effects of Ultrasonic Treatment Time on the Quality and Palatability of fried Chicken Meat (초음파 처리시간이 튀김 계육의 품질 및 기호성에 미치는 영향)

  • This study was carried out to investigate the effect of ultrasonic treatmeat time on the quality and palatability of fried chicken meat. Moisture content, U-10 treatment (chicken meat treated by ultrasonification for 10 minutes) of breast and leg were lower than those of the control, protein contents were not different between samples. Fat content was higher with increasing ultrasonic treated time. Frying loss of ultrasonic treated breast and leg were lower than those of the control, water holding capacity of ultrasonic treated breast and leg were higher than those of the control with increasing ultrasonic treated time. Rheological textures between control and ultrasonic treated samples were not different. L* value(lightness) between control and ultrasonic treated samples were not different, but L* values of breast were higher than those of the leg. And a* value(redness) was not effect by ultrasonic treatment, but a* value of leg were higher than those of the breast. Amino acid composition has included many glutamic acid, aspartic acid, lysine, leucine and arginine. Oleic acid and linoleic acid occupied beyond 50% of fatty acid composition. And taste, texture, juiciness and palatability improved with increasing ultrasonic treated time.

Studies on the Properties and Frying Performance of Domestic Rice Bran Oil (국산(國産) 미강유(米糠油)의 성상(性狀)과 튀김적성(適性)에 관(關)한 연구(硏究))

  • Properties and frying performance of domestic rice bran oil were studied. For this purpose, the analyses on the following characteristics were performed and their comparison with the characteristics of soybean oil was made: fatty acid composition, glycerides, composition, acid value, specific gravity, color, petroleum ether insoluble oxidized fatty acid, viscosity, smoke point, foam test, and water solubility. The results were as follow: 1) Fatty acid composition of domestic rice bran oil by gas chromatography was same as perviously reported, and similar to the fatty acid composition of the rice bran oil in foreign countries. Also the glyceride composition of domestic rice bran oil was analyzed by the methods of TLC, column chromatography, and high performance liquid chromatography. The results were monoglyceride ranged from one to four percent; diglyceride 30-30% and triglyceride 66-80%. Consequently, the composition was proven completely different from that of the other edible oils. 2) The high contents of mono-glyceride in rice bran oil resulted in high values of specific gravity and water-solubility respectively. However, high contents mono glyceride and diglyceride indicated little affection to changes of acid value, color, petroleum ether insoluble oxidized fatty acid, and smoke point on frying. 3) Because of low contents of linoleic acid, domestic rice bran oil was estimated stable on frying, whereas soybean oil was easily polymerized. 4) A serious foaming and low smoke point on Frying in domestic rice bran oil were caused by its impurities. It seems that monoglyceride and diglyceride had little relation with foaming and smoke point. 5) Oils with serious foaming and low smoke point on frying caused a substantial quality loss in terms of flavor and appearance of fried materials.

  • As the recent change of multiformity and taste in clination in eating habit culture is yearly in creasing foods used oil and fats. Because the frying food is especially important snack , it's safty is very essential. In order to know the safty and harmfulness of frying oil and fats. The 20 kinds samples were purchased chicken fried food shops around the north of seoul and kyunggi. The acid value, iodine value, peroxide value, TBA value, fatty acid, carbonyl value, and smoke point of deep fat fried oils were analyzed. Results of analyzed, A company of deep fat frying oil showed stability state and C company and B company of deep fat frying oil is acidification to turned. But D company of deep fat frying oil showed quite a bit acidification progressived of used hydrogenated oil.

Changes in the quality characteristics of cricket (Gryllus bimaculatus) under various processing conditions (가공조건에 따른 귀뚜라미의 식품학적 품질 특성 변화)

  • Crickets have been used as crude drug for treating fever and hypertension in East Asia. This study was carried out to investigate the quality characteristics such as the microbial and nutrient contents of crickets (Gryllus bimaculatus) prepared with various processing conditions for use as food. These conditions included the lyophilization process (LP), hot-air process (HP, $90^{\circ}C$ for 7 hr), roasting process (RP, $160^{\circ}C$ for 40 min), and frying process (FP, $180^{\circ}C$ for 30 sec). The total bacterial population of the crickets was 5~7 log CFU/g, but Coliform and E. coli were not detected. The major fatty acids in all the samples were palmitic acid (C16:0), oleic acid (C18:1), and linoleic acid (C18:2). The level of polyunsaturated fatty acids was highest (63.55 g/100 g) in the LP-processed crickets. As for the amino acid content, the glutamic acid level was highest in all the samples, and the RP and FP decreased by 12.01% and 53.88%, respectively, compared to that of the LP. The mineral contents were highest in the LP-processed crickets. Hg was detected at about 1.0 ppb in all the samples, but its level was lower than the residue tolerance level in the Korean Food Code. Such conditions should be considered to better understand the quality characteristics of crickets in food processing.
