A Study on Preservation of Chicken Products (계육의 보존성에 관한 연구)

  • This study was carried out to improve the preservation and the functionality of chicken legs. Three precipitation solutions of common solution(A), herb solution(B) and herb solution containing chitosan(C) were prepared. The chicken legs were treated with A, B and C solution, respectively, during 4 hours. And the chicken legs treated with each solution were stored at $7^{\circ}C$ for 8 days. The quality changes of each groups were examined by pH, total bacteria, VBN(volatile basic nitrogen) values and sensory evaluation. The pH values of three groups were not different. Chicken legs treated with C solution showed the lowest VBN values and total bacteria cell count and the highest sensory scores in color and flavor.

Effect of Ginger and Soaking on the Lipid Oxidation in Yackwa (생강즙 및 집청이 약과의 지방산화에 미치는 영향)

  • Effects of added ginger juice in Yackwa on the sensory quality and the lipid oxidation were studied. Also effects of soaking on the lipid oxidation were examined. There were no significant differences between Yackwa without adding ginger juice and ones with adding ginger juice on texture, shape, color. However, Yackwa, with ginger juice more than 1 tea spoon(1.5) of ginger juice per 1 cup of flour, was better than one without ginger juice on taste, flavor and overall acceptibility. Added ginger juice showed the antioxidant effect during frying in oil and storage at room temperature. The higher the amount of ginger juice was added, the slower of lipid oxidation was resulted in Yackwa. Yackwa soaked in syrup or in honey showed lower lipid oxidation than one without soaking during storage at room temperature. The antioxidant effect of soaking in honey was higher than one of soaking In syrup.

Quality Properties of High Calcium Fish Paste Containing Anchovy (멸치를 함유한 고칼슘 어묵의 품질 특성)

  • Fish paste containing anchovy (FPA) was prepared, and its quality was evaluated by determining calcium content, color, textural properties, and sensory attributes. The calcium content of FPA increased with an increasing amount of anchovy powder. The anchovy powder in the FPA tended to decrease lightness (L), and redness (a), but increased yellowness (b) for the Hunter color values. All test samples of 3 mm thickness had good flexibility, and did not break even after a 4-fold increase in applied stress. The FPA containing 20% anchovy showed the highest values in strength, hardness, and adhesiveness. For overall acceptance in the sensory evaluation, the FPA containing 5% anchovy was not different than the non-added control. These results suggest that anchovy can be applied to fish paste products for the purpose of high quality and functionality.

Antimicrobial Characteristics Against Spoilage Microorganisms and Food Preservative Effect of Cinnamon (Cinnamomum cassia Blume) Bark Extract (계피추출물의 부패미생물에 대한 항균특성과 식품보존효과)

  • The development of natural food preservatives instead of chemical synthetic food preservatives is world wide inte-rest. Authors already investigated that cinnamon bark extract revealed antimicrobial activity against general spoilage microorganisms of food especially its acitivity was stronger against molds than against bacteria. In this paper, authors examined the mirobial flora from the spoiled fish meat paste products and also checked the possibility of cinnamon bark extract food preservative for prolong the shelf life of the fish paste product and breads. The predominat bacteria was Bacillus sp. as about 98% of the total microorganisms isolated from unpacked or packed spoiled fish meat paste products. While molds and yeast are not detected from the vacuum packed products. The MIC(minimum inhibitory concentration) of cinnamon bark extract against the isolated spoilage bacteria and molds was 160~640$\mu\textrm{g}$/$m\ell$ and 40~80$\mu\textrm{g}$/$m\ell$, respectively. When the diluted cinnamon bark extract (the extract : ethanol=1 : 3) was sprayed on the surface of fried fish meat paste product, molds growth was delayed by 2 days at room temperature. The shelf lifes of sandwich and glutinousrice bread which surface sprayed with the diluted extract(1 : 1) was extended by 5 and 7 days, respectively.

Development of Natural Antioxidants Stable at Frying Temperatures (고온에서 안정한 천연 항상화제 개발)

  • The addition of antioxidants to fats and oils is one of the most effective ways to prevent oxidation of lipids. The popularity of natural antioxidants has increased because of the possible toxicity of synthetic antioxidants. Common natural antioxidants, tocopherols, retard oxidation at ambient temperatures, but they are ineffective at retarding oxidation at frying temperatures. The need for the development of novel natural antioxidants which are effective at frying temperatures is obvious. Sterols present in vegetable oils and certain herbal plant extracts have been reported to have antioxidant properties. Some sterols have been shown to retard thermal changes at frying temperatures. All the sterol effective at preventing oxidation at frying temperatures have an ethylidene group in their side chain. These effects can be explained by the hypothesis that sterols with a structure that allows them to react with lipid free radicals to form relatively stable free radicals are effective as antioxidants. Quality of Fried Fish Paste Prepared with Sand-lance (Hypoptychus dybowskii) Meat and Propolis Additive (프로폴리스 첨가 양미리 연육 튀김 어묵의 품질특성)

  • We made sand-lance meat paste containing 0.1-0.5% propolis to improve the quality of the product. The quality characteristics were analyzed by the acid value, peroxide value, volatile basic nitrogen, pH, viable cell count, and sensory evaluation. The fried sand-lance meat paste made with added propolis had a lower acid value, peroxide value, and volatile basic nitrogen content after frying compared to the control prepared with potassium sorbate. The antioxidant and antispoiling effect of propolis on the fried fish meat paste increased with the amount of propolis added. The fried sand-lance meat paste made with 0.2% added propolis was very acceptable. In addition, the bitter taste of the sand-lance meat paste containing 0.2% propolis was blocked by adding 2% sweet amber powder to the paste.

  • 차요테(Sechium edule L.)는 중앙아메리카와 멕시코 남부가 원산인 박과 채소로 찜, 볶음, 튀김, 수프, 샐러드로 활용되는 아열대 채소다. 어린 순은 양념으로 무치거나 볶아서 나물로 이용되고, 열매는 샐러드, 수프, 볶음, 절임 등으로 이용된다. 동양에서는 뿌리채소로 이용되는 무(Raphanus sativus L.)와 유사하게 활용되고 있기도 하며, 인도네시아에서는 칠리 소스, 기름 등에 볶아 먹거나, 삶아서 양념을 찍어 먹기도 한다. 영양학적으로 열매에는 엽산, 비타민 C, 비타민 B6, 구리(Cu), 마그네슘(Mg) 등 미네랄이 풍부하며, 특히 칼륨(K)이 많이 함유되어 있다. 생태적으로 아열대지역에서는 다년생이지만 우리 나라에서는 일년생으로 취급하여, 봄에 정식하여 가을철에 개화되며, 늦가을에서 초겨울까지 열매를 수확한다. 본 연구는 중부지방에서 차요테 열매의 수확량이 줄어들지 않으면서, 차요테의 어린 순을 수확할 수 있는 재배기술을 개발하기 위하여, 2017년에 이어 2018년에도 동일한 처리로 시험을 수행하였다. 시설하우스에서 $2{\times}3m$ 간격으로 2018년 2월 9일부터 4월 21일까지 15일 간격으로 6회 파종하였고, 처리별로 발아시, 발아기, 발아전, 초장, 엽수, 엽록소함량, 어린순 수확량 등을 조사했다. 4차 처리구인 3월 23일 파종의 경우 발아시(최초 발아일)는 파종 후 4일이 소요되어, 1차 처리구 2월 10일 파종 보다 18일 빨랐고, 발아기(40% 발아)는 파종 후 10일로 24일 빨랐으며, 발아전(80% 발아)은 파종 후 16일로 25일 정도 더 빨리 발아되는 경향이었다. 정식 후부터 6월 하순까지 어린순 생산량은 4차 파종 시 773 g주$^{-1}$로 1차 파종 785g주$^{-1}$와 차이가 없을 정도로 생육이 좋았지만, 5차 파종 및 6차 파종의 경우 생산량이 저조하였다. 따라서, 하반기 과실 생산량을 추가적으로 조사하고, 어린순 생산량과 비교하여 중부지역 차요테의 최적 파종시기를 정할 수 있을 것으로 판단되었다.

  • The antioxidative effects of Rhus javanica $Linn{\acute{e}}$ ethanol extract (RE) with or without some synergists were determined by measurement of POV and TBA of oil in ramyun and potato flake fried in palm oil or lard. RE with ascorbic acid and with tocopherol significantly increased the oxidative stability of ramyun. The results obtained from sensory evaluation were similar to those of POV and TBA values. RE with phosphoric acid and with ascorbic acid retarded the oxidation of potato flakes fried in palm oil or lard during storage.

Functional Evaluation of Fish Cutlet Batter Made from the Extracts of Hiziki Hizikia fusiformis Fig Fruit Ficus carica and Pear Pyrus pyrifolia (톳(Hizikia fusiformis), 무화과(Ficus carica) 및 배(Pyrus pyrifolia)의 혼합 추출물을 이용한 생선커틀릿용 튀김옷의 기능성)

  • This study determined the optimal mixing ratio of functional materials to enhance the functionality of batter for fish cutlets. An optimal mixing ratio of the hiziki Hizikia fusiformis, fig fruit Ficus carica L. and pear Pyrus pyrifolia Niitaka extracts (HFP extract) of 3:1:1 was found. The physicochemical properties of the mixture were as follows: total phelonic contents of $1187.29{\pm}41.55mg/L$, 1,1-diphenyl-2-picryhydrazyl (DPPH) radical scavenging activity of $61.50{\pm}2.33%$, ascorbic acid content of $23.68{\pm}0.02g/100g$, ${\beta}-carotene$ content of $51{\pm}3.92{\mu}g/100g$, and sugar content of $12.7{\pm}0.1Brix^{\circ}$. A mixture of the extract, Korean herbal powder, and wheat flour was prepared as the fish cutlet batter. The fish cutlet prepared with the batter had a hardness of $166-202g/cm^2$ and Hunter's color scale values L of $31.14{\pm}2.1$ to $34.62{\pm}1.3$, a of $-4.89{\pm}0.21$ to $-2.26{\pm}0.19$ and b of $-20.65{\pm}2.65$ to $28.93{\pm}3.14$. The FRAP (ferric reducing antioxidant power) and VBN (volatile basic nitrogen) of the fish cutlets were measured to evaluate functionality and determine the optimal mixing ratio for cold storage at $-12^{\circ}C$, $-18^{\circ}C$, and $-24^{\circ}C$. The optimum mixture ratio of extracts /Korean herbal powder/ wheat flour was 1:6:3.

Texture Properties of Surimi Gel Containing Shiitake Mushroom (Lentinus edodes) (표고버섯 함유 어묵의 물성 특성)

  • The effects of shiitake mushroom (Lentinus edodes) on texture properties of surimi gel were investigated. Surimi gels containing 0, 5, 10, 15, and 20% (w/w) of shiitake mushroom were prepared, and then color, rheological properties, and sensory evaluation were analyzed. Increasing the amount of mushroom in the fish paste tended to decrease the lightness in Hunter color value, but to increase the redness and yellowness. All test samples with 3 mm thickness had good flexibility and did not break even after 4 times folds. The sample containing 20% mushroom showed the highest values in strength, hardness, gumminess and brittleness. In sensory evaluation, the higher amounts of mushroom obtained favorite score in color and flavor, and 10% mushroom sample had the best score in overall acceptance. These results suggest that shiitake mushroom can be applied to fish paste for the purpose of high quality.
