The purpose of this work was to study the relationships between dietary intake and serum lipid profile in 293 adult subjects (mean age: $45.9{\pm}0.7$, men: 163, women: 130) who visited health promotion center. The anthropometric and biochemical blood indices were measured, and nutritional intakes were assessed using a food frequency questionnaire method. The subjects were divided by three groups in accordance with a standard for treating hyperlipidemia; those who had blood cholesterol levels above 240 mL/dL or triglyceride levels above 200 mL/dL were put into the risk group (Risk), while those with blood cholesterol levels below 200 mL/dL and triglyceride levels below 150 mL/dL were put into the control group (Control). Subjects who were between the two groups in terms of blood cholesterol and triglyceride levels were put into the borderline group (Borderline). Risk group showed significantly higher body mass index, body weight, waist circumference, and fat content compared to control group. The levels of calorie, carbohydrate, fat, and protein intake were significantly higher in the risk group than control group. There were significantly positive correlations between dietary calorie, carbohydrate, fat, and protein intake and blood triglyceride concentration. The blood HDL-cholesterol concentration had negative correlation with carbohydrate intake. These results suggested that overeating may be one of important factors affecting hyperlipidemia in Korean adults.
Spikelet number and its components of rice plant are closely associated with nitrogen accumulation and biomass production during panicle formation stage. To elucidate this relationship and also compare the differences of the sink formation efficiency among cultivars, spikelet number, its components, nitrogen content, nonstructural carbohydrate content, and plant dry matter were investigated under 5 nitrogen levels with two split application methods and shading treatments by using three rice varieties. The nitrogen amount in shoot at panicle initiation stage and at 15 days after panicle initiation showed significant positive correlation with primary rachis branches per square meter, and that at 15 days after panicle initiation and at heading stage with secondary rachis branches per square meter, Primary and secondary rachis branches per square meter showed positive significant correlation with the shoot dry weight at panicle initiation stage and at 15 days after panicle initiation stage, respectively, The amount of degenerated secondary rachis branches and spikelets per square meter showed significant negative correlation with the dry weight and nonstructural carbohydrate increase of stem during 15days after panicle initiation, and the contents of nonstructural carbohydrate at 15 days after panicle initiation. Spikelets per unit area showed significant positive correlation with nitrogen amount in shoot and shoot dry weight at heading stage. The sink formation efficiency expressed as the spikelet number produced by the unit amount of nitrogen in shoot at heading stage was higher in Nampoongbyeo than Choocheongbyeo and Hwaseongbyeo. Sink formation efficiency was negatively correlated with the dry weight increase of shoot and stem during reproductive stage. but not significantly with that of leaf in all varieties. Sink formation efficiency was not significantly correlated with nonstructural carbohydrate, but was significantly negatively correlated with structural carbohydrate increase during reproductive stage.
To collect the basic data for the use of major softwood and hardwood vinegar, the chemical compositions were analized. In softwood vinegar the phenolic compounds derieved from lignin and extractives are vanillin, guaiacol, 3-methylphenol, acetoguaiacone, 1,2-benzenediol, ethylguaiacol, pyrocatechol. The compound derived from carbohydrates is 2-hydroxy-3-methyl-2-cyclopenten-1-one. The isolated compounds are the most in the phenolic fraction, and in the vinegar of Pinus koraiensis. In hardwood vingar 2-methoxyphenol, 2,6-djmethoxyphenol, 1-(4-hydroxy-3-methoxyphenyl) -ethanone, 3-methoxy-4-hydroxybenzylalcohol, 1-(4-hydroxy-3,5-dimethoxy-phenyl)-ethanone are the compounds derived from lignin and extractives. 2-hydroxy-3-methyl-2,4-cyclopen-1-one, methyl-4-t-butyl-2-furoate are the major compounds derived from the decomposition of carbohydrates. Many different kinds of compounds are analized in the neutral, phenolic and acidic fraction of hardwood vinegar The amount and kinds of compounds in hardwood vinegar are more higher than those of softwood than in softwood.
Many enzymes catalyze a primary reaction and/or secondary reaction. Dextransucrase usually synthesizes dextran from sucrose as a primary reaction. The secondary reaction of dextransucrase is the transfer of glucose from sucrose to carbohydrate accepters. We have reacted dextransucrase from Leuconostoc mesenteroides B-742CB with sucrose and pullulan as an acceptor under different reaction conditions; various concentrations of pullulan, enzyme, sucrose and different pHs and temperatures of reaction digests. The yield of modified pullulan was 57%(<${\pm}$5%) of theoretical under the reaction condition of pH 5.2, temperature 28$^{\circ}C$, 0.37% of pullulan, and 0.l U/$m\ell$ of dextransucrase. Modified products were more resistant against the hydrolysis of pullulanase and endo-dextranase than those of native pullulan. The positions of glucose substitution in the modified products were determined by methylation followed by acid hydrolysis and analyzed by TLC. The products were modified by the addition of glucose to the position of C3, C4, C6 free hydroxyl group of glucose residues in the pullulan.
A strain YB914 was isolated from soil as a producer of the extracellular xylanase, which catalyzes the hydrolysis of oat spelt xylan. The strain YB914 was identified as Streptomyces sp. on the basis of its morphological, cultural and biochemical properties. The xylanase of culture filtrate was the most active at $55^{\circ}C$ and pH 5.5, and retained 80% of its maximum activity at the range of pH 4.5~7.0. In order to optimize the culture medium for xylanase production, ingredients of G.S.S medium were replaced by several carbohydrates. The carbohydrates such as oat spelt xylan, corn cob xylan, wheat bran and lactose increased the xylanase productivity of Streptomyces sp. YB914. However, xylanase production was greatly repressed by galactose or arabinose. The maximum xylanase productivity was reached to 48 U/mL in the modified medium containing 1% oat spelt xylan and 1.5% lactose.
