Quality Characteristics of Yanggeng Prepared by Different Ratio of Pumpkin (늙은 호박의 혼합비율을 달리하여 제조한 호박양갱의 품질 특성)

  • This study was performed to investigate the quality characteristics of yanggeng prepared with different ratios of pumpkin. Yanggeng was prepared with three concentrations of pumpkin paste, 87% (sample A), 90%(sample B), and 93%(sample C), to which was added agar, sugar, millet jelly and salt. Proximate composition, Hunter's color, texture profile analysis and sensory evaluation of yanggeng were examined. Lightness of pumpkin yanggeng increased with increasing pumpkin content. In the texture profile analysis, the hardness, cohesiveness and springiness of sample A were significantly higher than those of the other products. The gumminess of sample C was the highest, followed in order by A and B. The tendency of the pumpkin yanggeng to fracture increased with decreasing pumpkin content whereas the elasticity decreased. In the sensory evaluation, the color and taste scores of sample B were significantly higher than those of A and C. Also the overall acceptability of sample B was the highest of the three products.

Physicochemical and Sensory Evaluation of Cured and Short-Ripened Raw Hams During Storage at 10 and 25°C (단기 숙성 생햄의 저온 및 실온저장 과정 중 물리화학 및 관능학적 품질 특성 변화)

  • Twenty pork loins were processed for manufacturing raw hams according to a short-ripening procedure including dry-and wet-curing for 1 week each, followed by ripening for 2 weeks. Raw ham cuts were vacuum-packaged and stored in darkness at 10 and $25^{\circ}C$ for 90 days, and their physicochemical and sensory quality characteristics were investigated. The sodium chloride content of raw hams stored at 10 and $25^{\circ}C$ was maintained at approximately 5.1% throughout storage at either temperature. No significant changes in water, crude protein, crude fat and ash contents were observed in all samples regardless of storage temperature and storage length. Thiobarbituric acid and volatile basic nitrogen values increased continuously during the storage period. The changes in physicochemical characteristics including pH, water activity texture lipid oxidation and protein degradation, and sensory attributes appeared to be more pronounced at $25^{\circ}C$ than at $10^{\circ}C$ over the storage period. At prolonged storage periods, a significant quality loss in the aspect of texture changes including hardness, brittleness, elasticity, cohesiveness, gumminess, and adhesiveness was observed (p<0.05). Based on sensory evaluation scores, It appeared that vacuum-packaged raw ham cuts stored at 10 and $25^{\circ}C$ were not acceptable after 75 and 45 days, respectively.

Determination of Rheological Properties of Surimi Gels and Imitation Crab-leg Products by Stress-Relaxation Test (시판 어묵 및 게맛살의 변형력완화 실험을 통한 유변학적 특성)

  • The purpose of this study was to investigate the rheological properties of surimi gels and imitation crab-leg products by stress-relaxation test and to examine the correlations between stress-relaxation parameters and T.P.A. parameters. The linear viscoelasticity of surimi gels and imitation crab-leg products was observed in the range of the strain of $5{\sim}20%$ at cross-head speed 2.4 mm/sec. The average tensile forces of surimi gels and imitation crab-leg products were similar, 370.4 g and 436.4 g, respectively, but surimi gels showed higher relaxation time and viscous component (17256.1 sec, $1.357{\times}10^{10}$ poise) than those of imitation crab-leg products (6110 sec, $0.519^{\ast}10^{10}$ poise). Estimated tensile force of each exponential term in relaxation test was highly related with hardness, gumminess and chewiness of T.P.A (r=0.93, 0.93, 0.95, p<0.01), the relaxation time of each exponential term was rrelated with cohesiveness (r=0.89, p<0.01) of T.P,A. and the elastic component of exponential term with gumminess, chewiness and hardness (r=0.92, 0.94, 0.93. p<0.01) of T.P.A.. The viscous component of exponential term was related with cohesiveness (r=0.83, p<0.05) of T.P.A.. The degree of texturization was negatively related with the relaxation time and viscous component (r=-0.92, -0.96, p<0.01).

Development of the Structural Condition Evaluation Technique for Asphalt Pavements Using Falling Weight Deflectometer Deflections (Falling Weight Deflectometer 처짐값을 이욤한 아스팔트 포장체의 구조적 상태 평가기법 개발)

  • The objectives of this paper are to develop the structural condition evaluation technique using Falling Weight Deflectometer deflections and propose the structural condition criteria for asphalt pavements. To figure out correlation between surface deflections and critical pavement responses, the synthetic database has been established using the finite element pavement structural analysis program. A regression approach was adopted to develop the pavement response model that can be used to compute the stresses and strains within pavement structure using the FWD deflections. Based on the pavement response model, the procedure for assessing the structural condition of pavement layers was proposed in this study. To validate the condition evaluation procedure for asphalt pavements, the FWD test, dynamic cone penetrometer test, and repeated triaxial compression test were conducted on 11 sections of national highway and 8 sections of local road. Test results indicate that the tensile strain at the bottom of AC layer and AC elastic modulus were good indicators for estimating the stiffness characteristics of AC layer. For subbase layer, the BDI value and compressive strain on top of the subbase layer were appropriate to predict the structural capacity of subbase layer. The BCI value and compressive strain on top of the subgrade were found to be good indicators for evaluating the structural condition of the subgrade. The evaluation criteria for structural condition in asphalt pavements was also proposed in this paper.

Fabrication and Characteristics of CFRC(Carbon Firber Reinforced Carbon Composites) Fabricated with Carbon Fiber and Coal Tar Pitch Matrix (석탄계 핏치를 결합재로한 탄소/탄소 복합재의 제조 및 특징)

  • In this research, we attempt to fabricate an excellent CFRC(Carbon Fiber Reinforced Carbon), which has good thermal and mechanical properties, with 8H/satin woven fabric prepreg, high modulus and high strength type continuous carbon fiber and raw coal tar pitch(RCTP) matrix or THF soluble fraction(THFSP) matrix which has good graphitizability. Green bodies were fabricated with hot press molding technique and CFRC samples were made after carbonization, impregnation, recarbonization and graphitization steps. For the purpose of characterization of the physical properties, SEM, polarized light microscope, TGA were observed, and tested flexural strength, modulus and ILSS. After heat treating the THFSP matrix up to $2300^{\circ}C$, the value of $C_0$/2 was 3.380$\AA$, which is analogous to the structure of natural graphite and the value of 2$\theta$ is $26.276^{\circ}$ approached to the Bragg's angle of natural graphite. As a result of TGA to test the high temperature air oxidation, the THFSP matrix, graphitized up to $2300^{\circ}C$, exhibited the best air oxidation resistance. And mechanical properties were increased up to 65~70% as fiber volume fraction increased. Because of the good orientation graphitizability, the fracture surface of THFSP matrix CFRC is very good.

Crustal Structure of the Continent-Ocean Zone around the Middle Eastern Part of Korean Peninsula Using Gravity Data (중력자료를 이용한 한반도 중부 대륙-해양 지역의 지각구조 연구)

  • There have been few geophysical studies on the crustal structure of the continent-ocean zone around the middle eastern part of Korean peninsula, because of the lack of database in both land and ocean. The area for the study on the internal crustal structure using gravity data is bounded by the latitude of 37$^{\circ}$-38"N and longitude of 128$^{\circ}$-132$^{\circ}$E. WCA correction is applied to shipborne gravity data to integrate with gravity anomalies obtained on land. The high frequency components of the shipborne gravity data which are considered as the noise on survey track are effectively removed by means of correlating with satellite gravity data. The corrected shipborne free-air gravity anomaly is integrated with the Bouguer gravity anomaly on land under the same condition. The integrated gravity anomaly is divided into four areas for power spectrum analysis. The depths of Moho discontinuity increases gradually from inland to Ulleung basin. As the result of modeling based on power spectrum analysis, Moho discontinuity depth is about 33-35 km in the continental zone of Korea and 18-28 km at the continental margin. Such structural character is well elucidated in changing gravity data around Ulleung basin. The depths of Moho discontinuity in the southern ocean of Ulleung-island is 16--17 km, which is much lower than in the land. The result of crustal structure modeling in this study is similar to that computed by prior seismic exploration around this area.

Induction of Soft Tunic Syndrome by Water Temperature and Physiological and Histological Responses of the Sea Squirt, Halocynthia roretzi (수온에 의한 멍게(Halocynthia roretzi)의 물렁증 유도와 생리 및 조직학적 반응)

  • In this study, we investigated the changes in the physiological and histological traits of a sea squirt (Halocynthia roretzi) with the emergence of the soft tunic syndrome induced by the water temperature control (6, 9, 12, 15, 18, 21, 24 and $27^{\circ}C$). It was observed that the induction rate of the soft tunic syndrome was highest at $15^{\circ}C$, but lowest at $24^{\circ}C$. Based on the tunic color condition and contraction strength, the whole process were classified into 4 stages as S0, S1, S2 and S3. Interestingly, there were significant differences in oxygen consumption and filtration rate were observed during S0-S3. The most distinctive aspects were change of blood cell composition at stage S3, whereas multi-vacuole cell ratio was decreased by 1/2 and morula cell ratio expanded about 10 times during S0-S3. Further, change of organ structure started following the syndrome such as degeneration of epithelial cells, microfilaments, increment in hemocytes and damage in muscle fiber have been detected in tunic, siphon, branchial sac, body wall musculature and pyloric gland. Briefly, our study results indicated that the normal physiological functions of the sea squirt can be affected due to the soft tunic syndrome induced by water temperature.

Physicochemical Properties of Dextran Produced by Leuconostoc mesenteroides SM according to Concentration of Yeast Extract and its Modulation of Rheological Properties (효모 추출물 농도에 따른 Leuconostoc mesenteroides SM에 의해 생산된 dextran의 물리화학적 특성 및 물성개량)

  • Dextran was produced by $Leuconostoc$ $mesenteroides$ SM with various contents of yeast extract and its rheological properties were modulated, via an addition of hydroxypropyl methylcellulose (HPMC) of different viscosities. The conversion yield reached 90% after adding 3% yeast extract, which remained constant, thereafter. The acidity of the cultures was approximately 1.4 and 0.9% after fermentation for 24 h at 25 and $30^{\circ}C$, respectively. The total dextran content (107.3 g/kg) was the highest in the presence of the 3% yeast extract. Under the same conditions, the consistency, viscous modulus (G"), and elastic modulus (G') of the cultures were $37.6\;Pa{\cdot}s^n$, 38 Pa, and 50 Pa, respectively. The rheological properties of the culture were changed drastically by the fortification with HPMC of higher concentration and viscosity. The addition of 10% HPMC (4,000 cp) resulted in a significant increase in G" to 1,950 Pa. Furthermore, adding HPMC to a viscous culture resulted in a remarkable increase in both hardness and firmness.

An Analytical Solution of Dynamic Responses for Seabed under Coexisting Fields of Flow and Partial Standing Wave with Arbitrary Reflection Ratio (흐름과 임의반사율을 갖는 부분중복파와의 공존장하에서 해저지반내 동적응답의 해석해)

  • An analytical solution of dynamic responses for seabed in finite and infinite thicknesses including shallow has been developed under flow and partial standing wave with arbitrary reflection ration coexisting field at a constant water depth condition. In the analytical solution, a field was simply transited to a coexisting field of progressive wave and flow when reflection ratio was 0 and to a coexisting field of fully standing wave and flow when reflection ratio was 1. Based on the Biot's consolidation theory, the seabed was assumed as a porous elastic media with the assumptions that pore fluid is compressible and Darcy law governs the flow. The developed analytical solution was compared with the existing results and was verified. Using the analytical solution the deformation, pore pressure, effective and shear stresses were examined under various given values of reflection ratio, flow velocity, incident wave's period and seabed thickness. From this study, it was confirmed that the dynamic response of seabed was quite different depending on consideration of flow, which causes changing period and length of incident and reflection waves. It was also confirmed that dynamic response significantly depends on the magnitude of reflection ratio.

The developed analytical solution is compared with the previous results and is verified. Using the analytical solution the deformation, pore pressure, effective and shear stresses of seabed are examined under various given values of flow velocity, incident wave period and seabed thickness. From this study, it is confirmed that the seabed response is quite different depending on consideration of flow, which causes changing period and length of incident and reflection waves.
