The effect of calcium concentration and temperature on the gelation of Aigeok Polysaccharide (Aigeok polysaccharide의 겔화에 미치는 칼슘농도와 온도의 효과)

  • The influence of temperature and calcium concentration on the gelation kinetics of purified Aigeok system has been investigated by small deformation oscillatory measurement. DE(degree of esterification) of the present sample was indicated of low methoxyl Aigeok polysaccharide by FT-IR. The calcium induced gelation of Aigeok has been studied. Both moduli reached the saturation value during the period of experiments. Rate constant increased with increasing calcium concentration, however above 4.08 mM calcium chloride caused a sudden drop in gel strength. The experimental result that the decrease in gel strength at high calcium concentration was seems to be phase separation or competitive inhibition between calcium ions. The storage and loss shear moduli decreased with increasing temperature. The rate constant of Aigeok system remarkably dropped above $35^{\circ}C$. Thus hydrogen bonding is prior to hydrophobic interaction for Aigeok molecule.

칼슘락테이트가 반죽발효와 빵의 품질 및 저장성에 미치는 영향

  • 다슬기분말(PSB)과 그 회분(ASB)으로 제조한 칼슘락테이트(PCaL 및 ACaL)를 0.5%씩 첨가한 반죽의 발효와 빵의 품질 및 저장성에 미치는 영향을 조사하였다. 반죽의 pH는 4.85~4.98로 ACaL.PCaL.대조군의 순으로 나타났다. 반죽의 부피와 빵의 loaf volume index는 대조군이 높았고 ACaL 첨가군이 낮았으며, pH를 5.50으로 조정하여 제조한 반죽의 부피와 빵의 loaf volume은 대조군과 큰 차이를 보이지 않았다. PCaL 및 ACaL을 첨가한 빵의 Ca함량은 29.4~29.7 mg/100 g-f.w로 대조군의 13.0 mg/100 g-f.w에 비하여 높았으며, 첨가군의 미량 무기질로 Mg, Fe, Zn이 0.03~0.98 mg/100 g-f.w 범위로 검출되었다. 빵의 L$^{*}$ 값은 대조군과 실험군의 유의적인 차이가 없었으며, a*값, b*값은 PCaL 첨가군이 가장 높아 황갈색을 띄었다. 빵의 hardness, gumminess는 대조군$^{\circ}C$ 실온에 두면서 저장한 결과 대조군은 3일째부터, ACaL 첨가군은 5일째부터, PCaL 첨가군은 6일째부터 곰팡이가 번식하였다.

Prevention of Dental Erosion Due to the Use of Calcium and Fluoride When Ingesting Lactic Acid Bacteria Fermented Milk (유산균발효유 섭취 시 칼슘과 불소 사용에 따른 치아부식증 예방효과)

  • The purpose of this study was to determine the incidence of dental erosion according to the type of lactic acid bacteria fermented oil and to identify a method for preventing dental erosion. For the lactic acid bacteria fermented milk, liquid fermented milk, condense-stirred type fermented milk, and condense-drink type fermented milk were used, and bovine tooth specimens used in the experiment were used. As a method to prevent dental erosion, the method of adding calcium to the lactic acid bacteria fermented milk, the method of applying high and low concentrations of fluoride to the teeth before exposure to the lactic acid bacteria fermented milk, and the method of applying these two methods together were measured to measure the preventive effect of dental erosion. As a result of immersing the specimen in the experimental beverage, the surface hardness of liquid fermented milk decreased the most. When comparing the difference in surface hardness before and after prophylaxis care, the Ca 2% group and the NaF 0.05%+Ca 0.5% group showed no significant difference from the negative control group, confirming that it is an effective method for preventing dental erosion. However, considering the change in taste and the stability of ingredients, a method of adding calcium at a low concentration rather than adding a high concentration of calcium is proposed. Therefore, it is recommended to use low-concentration calcium and low-concentration fluoride together to recognize the possibility of dental erosion when ingesting lactic acid bacteria and to prevent dental erosion caused by it.

Calcium Absorption Acceleration Effect on Phosphorylated and Non-phosphorylated Peptides from Hoki (Johnius Belengeri) Frame (민태 Frame 단백질 유래의 인산화 및 비인산화 펩타이드가 체내 칼슘 흡수에 미치는 영향)

  • In order to utilize protein hydrolysate produced from hoki (Johnius Belengeri) frame among many different fish processing wastes, hoki frame peptide (PHFP) and phosphorylated hoki frame peptide (PHFP) were prepared, and their calcium absorption accelerating effects were investigated in comparison to control and casein phosphopeptide (CPP). In in vitro experiment, HFP and PHFP inhibited calcium phosphate formation as high as 1.5-fold and 2.5-fold, respectively, comparing to control, In addition, the inhibition rate of calcium phosphate precipitation as increasing concentrations of HFP and PHFP was risen and was similar to that of CPP at 2.0 mg/ml of PHFP concentration, In in vivo experiment using the rats, the groups fed HFP and PHFP indicated significantly increased calcium content in the femur. In particular, the calcium content in the small intestine of the rat fed PHFP was higher than that of control group by approximately $60\%$.

A Study on the Bioavailability of Calcium in Eggshell Powder Fortified Ramen in the Growing Rats (성장기 쥐에서 난각분 강화라면의 칼슘 이용성에 관한 연구)

  • This study has investigated the bioavailability of calcium in eggshell powder (ESP) fortified ramen. Wean-ling SD rats were maintained for 2 weeks on 0.05$\%$ low calcium diet then assigned randomly to one of 5 groups. Animals were provided for 4 weeks one of 3 different experimental diets containing 0.15$\%$ calcium as $CaCo_{3}$, NFDM, or ESP fortified ramen. Two control groups were fed either 0.05$\%$ calcium or general ramen containing 0.08$\%$ calcium. The body weight, diet intake, food efficiency ratio (FER), bone growth, calcium contents of bones, and apparent absorption were measured. Experimental results show that regardless of calcium sources 0.15$\%$ calcium groups increased body weight, weight and length, calcium content, and the strength of two bones (tibia and femur) significantly compared to 0.05$\%$ calcium group. The apparent absorption rate of calcium also showed similar results supporting the bioavailability of ESP fortified ramen is not inferior to either NFDM or $CaCO_{3}cdot$ The results indicate that ESP fortified ramen is a proper mediate for calcium fortification in Korea.

The Effects of Supplemental Bacterial Phytase to the Calcium and Nonphosphorus Levels in Feed of Laying Hens (산란계 사료 내 칼슘 및 무기태 인 수준에 따른 Bacterial Phytase 급여 효과)

  • This study was conducted to identify the correlation of bacterial phytase ($Transphos^{(R)}$) to the calcium level in feed. Of all 21-week-old 720 HyLine brown laying hens, 2 birds of similar weight were placed on each individual cage. The experiment was conducted by $3{\times}2{\times}3$ factorial design with including 3 different levels of phytase (0, 300, and 1,000 DPU/kg), 2 different levels of calcium (3.5% and 4.0%), and 3 different levels of no NPP addition 0% (0.095 NPP), 0.5% (0.185% NPP), and 1.0% (0.275% NPP). The feeding trial maintained the ME level of 2,800 kcal/kg and 16% for crude protein. The diet was fed ad libitum and 17 hours of lighting was provided throughout the experimental period. Egg production seemed to increase, in the 300 DPU of bacterial phytase added group and the cracked egg tended to reduce in Transphos added group. The egg productivity between treatment groups did not show significant difference by dietary calcium level, whereas non NPP added group (0.095% NPP) was found to be low compared to NPP added groups (P<0.05). The highest mean egg weight and the highest daily egg mass were detected in 300 DPU phytase added group. Although the mean egg weight was significantly higher in treatment groups fed with 3.5% calcium containing feeds (P<0.05), daily egg mass was no among treatment groups. The mean egg weight and daily egg mass were the lowest in non NPP added group (0.095% NPP) compared to other treatment groups (P<0.05). The feed intake showed similar pattern regardless of the bacterial phytase and calcium levels in the diet. However, the treatment groups fed diets containing NPP level of 0.275% and 0.165% showed significantly higher feed intake than the group fed with 0.095% NPP (P<0.05). Although the feed conversion was not affected by calcium and NPP levels in the diet, the most improved result was obtained from 300 DPU phytase added group (P<0.05). The eggshell breaking strength and thickness increased as dietary calcium level increase the level of calcium increases in diet. The treatment groups fed diet containing 0.275% and 0.165% NPP revealed to show improvement in eggshell breaking strength and yolk color index compared to the NPP non added (0.095% NPP) treatment group. The result of the present study suggests that the appropriate level of microbial phytase is 300 DPU and at this level, tricalciumphosphate supplementation in feed can be reduced to 40% of NRC recommendation. Higher calcium level in feed fail to show synergistic effect by adding microbial phytase.
