Quality Characteristics of Brown Rice Dasik Prepared with Pollen Powder (화분 분말을 첨가한 현미다식의 품질 특성)

  • To enhance the quality of traditional Dasik, pollen Dasik containing brown rice flour fortified with 5, 10, 15 and 20% pollen powder were prepared, and their physicochemical properties were evaluated. Pollen Dasik possessed higher amount of mineral such as K and Ca than brown rice Dasik. The L value of pollen Dasik decreased with increasing pollen powder compared to brown rice Dasik, while the b value of pollen Dasik was increased with increasing pollen powder compared to brown rice Dasik(p<0.05). Hardness of pollen Dasik decreased with increasing amounts of pollen compared to the brown rice Dasik(p<0.05). Sensory evaluation on pollen Dasik preparewd with over 10% pollen showed the highest sensery evaluation value in overall preference.

Sulphate Effects on Lime and Chemical Additives Stabilized Soils (생석회와 화학 첨가제 혼합토에 대한 황산염의 영향)

  • It has been recently reported that the presence of sulphate causes abnormal volume changes in lime-stabilized soils. Volume changes in lime-stabilized soils can take place due to sulphate compounds such as ettringite. Sulphate compounds caused a variety of serious geotechnical hazards such as swelling pressure and damages to light structures and pavements. This paper discusses the influence of sulphate on the soil specimens treated with quicklime and chemical additives. The physical and mechanical characteristics were studied by means of laboratory tests. The results showed that the presence of sulphate treated soil reduced the shear strength of the lime treated soils and increased the swelling properties. SEM and XRD results indicated that the presence of sulphate producted needle-like crystals such as ettringite. Moreover, the role of needle-like crystals in specimen was probably related to the swelling properties.

Influence of Temperature and PAA(PolyAcrylic Acid) Solution in the Formation of Calcium Carbonate Crystal (탄산칼슘결정 생성에서 온도와 PAA 영향)

  • Crystal mean size and shape change of calcium carbonate crystal was investigated by the temperature change and addition of PAA solution in the soda process. At low temperature($30^{\circ}C$, $60^{\circ}C$), calcite particles were made by. But at high temperature($80^{\circ}C$), aragonite particles were made by. At $30^{\circ}C$ and $80^{\circ}C$, Crystal shape were not changed by adding PAA solution. At moderate temperature($60^{\circ}C$), aragonite was obtained by adding PAA aqueous solution. Crystal shape was changed by adding PAA molecules. The higher concentration of PAA solution is, the more aragonite particles were observed. Incase of calcite and aragonite, mean size of calcium carbonate crystals were increased by higher molecule weight and higher concentration of PAA solution. But in the shape change region, the molecule weight of PAA was the main parameter of increasing mean crystal size.

Comparison of Retention of Calcium Carbonate and Mechanical and Optical Properties of Sheets in Various Retention System (여러 가지 보류시스템에서 탄산칼슘의 보류와 종이의 기계적·광학적 특성의 비교)

  • In this paper, we investigated the retention amounts(ash contents) according to the addition amounts of retention aid and calcium carbonate and compared the mechanical and optical properties of sheets under the same ash content. As the addition amounts of retention aid increase, the retention of calcium carbonate, that is, ash contents of sheets increase in all retention system. In this case, the sheets included ash content as already expected is produced by adjusting the addition amounts of retention aid and calcium carbonate. Tensile index, burst index, tear index, internal bonding strength of sheets straightly decrease as the ash content of sheets increases. Especially, in the same ash content, all sorts of strength are high in compozil system, low in dual polymer system. Opacity increases along with according to the increase of ash content, and is high in hydrocol system, the worst in dual polymer system. In equal opacity, the strength of paper decreases compozil, hydrocol, and dual polymer system in order. But to judge she superiority or inferiority of retention aids, it should consider the various factors such as the optimum production and process conditions besides the retention amounts of filler and the sheet strength.

Electron Microscopical Observation of Transglutaminase-treated Ultra High Temperature Milk Sedimiment (Transglutaminase로 처리한 초고온 살균유 침전물의 전자현미경적 관찰)

  • Ultra high temperature treated (UHT) skim milk and colloidal calcium phosphate-free skim milk were treated with microbial transglutaminase (TGase), ultracentrifuged at various rates, lyophilized, and observed for morphological properties with a scanning electron microscope (SEM). UHT skim milk showed small holes of associated micelles at lower centrifugal rates, and became thick and irregular, and fine particles were associated regularly at higher centrifugal rates. When UHT skim milk with TGase was incubated for 1 hour, casein micelles aggregated and broadened as centrifugation rate increased. When UHT skim milk with TGase was incubated for 8 hours, casein micelles were associated irregularly to large aggregates and widened. Colloidal calcium phosphate-free skim milk with TGase incubated for 1 hour and separated by two-step centrifugation showed aggregated lump, while the milk incubated for 8 hours with TGase was associated with broadened, compact, and regular layers as the centrifugation rate increased. Such phenomena were caused by heat treatment, protein crosslinking reaction catalyzed by TGase and conformational changes of casein molecules, and could be dependent on reaction time, temperature and ultracentrifugation rate.

Effect of Aspartic Acid and Lysine on Polymorphism of Calcium Carbonate Crystal Formed by Gas-Liquid Reaction (기액반응에서 형성된 탄산칼슘 결정의 다형성에 미치는 Aspartic acid와 Lysine의 영향)

  • Crystallization of calcium carbonate were performed by adding aspartic acid and lysine into $CaCl_2$ solution for understanding biomineralization in gas-liquid reaction of $NH_4HCO_3$ and $CaCl_2$. Proportion between calcite and vaterite of calcium carbonate crystals was identified by changing conditions such as reaction time, addition amount of aspartic acid, lysine, $CaCl_2$, and $NH_4HCO_3$. FT-IR(Fourier Transform Infrared spectroscopy) instrument was used to perform analysis of vaterite ratio. Under the condition of $NH_4HCO_3$ 10 g and no additive, an increase of vaterite crystal changed to a decrease around 0.15 M $CaCl_2$. Then it largely increased at 0.25 M $CaCl_2$, after vaterite proportion was rising again at 0.20 M $CaCl_2$. In contrast to that, vaterite crystal continuously decreased to 0.2 M $CaCl_2$, and increased from 0.25 M $CaCl_2$ with 20 g $NH_4HCO_3$. Vaterite crystals were observed to be a maximum after 2days with lysine addition, but $CaCO_3$ vaterite crystals showed minimum with aspartic acid.

  • $NaHCO_3$, $CaCl_2$ 용액 중 전착프로세스에 의해 환경친화적인 탄산칼슘 막을 형성시킴은 물론 이와 같은 용액 중 염화마그네슘의 첨가를 통해 $Mg^{2+}$의 농도를 조절함으로써 탄산칼슘 전착막의 결정구조를 제어할 수 있었다. 여기서는 특히 상기 용액 조건 중 합성 온도의 변화가 탄산칼슘 막의 석출속도, 석출량 및 결정구조 등에 어떤 영향을 미치는지 검토함으로써 이들 막에 대한 전착 설계에 유효한 지침을 제시하였다.

  • The highest fresh weight of Agaricus bisporus was obtained at pH 7.5 of casing soil. Above or below this pH level, the yields were significantly reduced. Stimulatory effect of calcium on the mycelial growth depended upon pH of casing soil, In neutral or slightly alkaline soil, the stimulatory effect was increased. The effects of supplementing calcium carbonate or hydrated lime to casing soil were assumed not only the influence of pH of casing soil, but also stimulatory effect of calcium ion on mycelial growth of A. bisporus.

Effects of Deletion of Ca Supplement (limestone) on Growth and Beef Quality in Hanwoo Finishing Steers (한우 비육후기 사료에 칼슘 첨가제(석회석) 제거가 성장 및 육질특성에 미치는 영향)

  • A study was conducted to determine the effects of feeding a diet containing no Ca supplement (limestone) during the late finishing period on growth, marbling and serum 1,25-dihydroxy vitamin $D_3$ level in Korean native cattle. Twenty-four steers (20${\sim}$24 mo of age) were divided into two groups of 12 each: one group assigned to a control diet (concentrates containing 2.5% limestone) and the other to a diet containing no calcium supplement. They were allowed to have free access to diets (concentrates and orchard grass hay) and water during the entire feeding period (223 d). Serum $Ca^{2+}$, Ca and P concentrations were not influenced by diets, but serum 1,25-dihydroxy vitamin $D_3$ concentrations determined 2 or 6 mo after the beginning of feeding the experimental diets were higher (P<0.01) in steers fed the diet without Ca supplement than in those fed the control diet (78.3 vs 51.7 and 80.3 vs 51.1 pg/mL, respectively). Steers fed the diet without Ca supplement tended to have a higher intake of concentrates, but a lower intake of hay, compared to those fed the control diet. Average daily gain was higher (P<0.05) in steers fed the diet without Ca supplement than in those fed the control diet. Feeding the diet without Ca supplement remarkably (P<0.01) increased the marbling score (5.1 vs 2.2) and the muscle (M. longissimus dorsi) fat content (10.2 vs 6.7%) with a concomitant decrease in moisture content (67.6 vs 70.4%), compared to feeding the control diet. Ribeye area was increased (77.2 vs 82.8 $cm^2$) with the diet without Ca supplement, compared to the control diet (P<0.05). Meat color, pH and water-holding capacity in longissimus muscle were not different between the two groups. The Warner-Brazler Shear (WBS) force of the longissimus muscle was slightly (P=0.08) lower in steers fed the diet without Ca supplement than in steers fed the control diet (2.9 vs 3.2 kg/1.27-cm diameter core). Sensory evaluation showed that feeding the diet without Ca supplement slightly (P<0.05) improved tenderness (4.9 vs 4.5) and flavor (4.9 vs 4.6), compared to feeding the control diet, but juiciness was not affected by diets. Results showed that deletion of Ca supplement from finishing diets is beneficial, increasing growth and marbling partly through an increased energy intake and induced 1,25-dihydroxy vitamin $D_3$ synthesis that may increase intracellular $Ca^{2+}$ concentration and in turn fat synthesis.

Effect of Anchovy Treated with Ethanol, Citric Acid and Dietary Calcium Supplements on Calcium Metabolism in Rats (주정과 구연산 및 식이성 칼슘소재를 처리한 멸치분말이 흰쥐의 칼슘대사에 미치는 영향)

  • This study was performed to investigate the effect of ethanol and citric acid-treated anchovy, caseino-phosphopeptides (CPPs), calcium lactate, and calcium phosphate as dietary calcium supplements on calcium metabolism in rats for 5 weeks. Experimental animals were randomly assigned to five treatments with 15 heads of SD male rats (mean body wt. of 100 g) in each group. The experimental diets were as follows; dried large anchovy powder (C) as control, ethanol+citric acid group (EC), ethanol+citric acid+cpps group (ECC), calcium lactate group (CL) and calcium phosphate group (CP), which were formulated with commercial semi-purified Chow diet, while maintaining the same level of calcium in all diets (1%) groups. The weight gain of EC group was significantly higher than ECC, CL and CP groups (p<0.05), food efficiency (FER) was not different. In vitro and in vivo calcium absorption rates of ECC group treated with citric acid and CPPs were 20.4 and 28.4%, respectively, and the highest among the experimental groups (p<0.05). The blood glucose levels of CL group (105.7 mg/dL) was significantly higher than control group (98.5 mg/dL). In terms of serum lipids, total-cholesterol concentration of EC group (75.1 mg/dL) was significantly higher than CP group (65.6 mg/dL) and triglyceride concentration of CP group (33.5 mg/dL) was the lowest (p<0.05). ALP activity and 057 level were not different among experimental groups. The serum calcium concentration of control group (C) was the lowest among groups (p<0.05). The femur weight of CP group was the lowest (p<0.05) and the femur length of ECC group is the longest (P<0.05). The bone density of CP group $(0.1116\;g/cm^2)$ was the lowest while ECC group $(0.1149\;g/cm^2)$ was the highest, and the bone density was increased by added CPPs. These data demonstrated that ECC group significantly increased in vitro and in vivo calcium absorption rate, serum Ca level, and the length and bone density of femur.
