Storage Quality of Minimally Processed Onions as Affected by Seal-Packaging Methods (포장방법에 따른 신선 편의가공 양파의 저장품질 변화)

  • The effects of packaging methods on the storage quality of minimally processed (prepeeled) onions were investigated to determine the optimal packing design. Various packaging treatments used for modifying headspace atmospheres included two passive MAP using LDPE and PP films, two active MAP using a gas mixture of 20% $O_2/10%\;CO_2/balance\;N_2$ and an ethylene scavenging sachet, and moderate vacuum packaging (MVP). The quality attributes of onion samples were evaluated periodically in terms of flesh weight loss, color of cut surface, decay ratio, microbial counts, and sensory properties during storage at $10^{\circ}C$ for 28 days. Packaging methods did not significantly influence surface color, weight loss, and microbiological populations of mesophiles, psychrotrophs, and lactic acid bacteria. They did, however, affect sensory characteristics as well as decay occurrence. Results indicated that seal-packaging with a gas-permeable plastic film under a mild vacuum condition could retain better onion quality in terms of microbial decay and visual sensory aspects as compared with the other packages.

Effects of Vacuum Container on the Storability of Leftover Tofu (진공용기를 이용한 포장두부의 개봉 후 저장성 연장)

  • Commercial tofu was cut and re-packed in a vacuum container, an airtight container and an open tofu tray in an effort to assess the effects of vacuum containers on the shelf life of leftover tofu. The re-packed tofu were stored at $5^{\circ}C$ and $25^{\circ}C$ for the enumeration of total bacteria and coliforms. We also measured changes in color, pH, and opacity. The vacuum retarded the bacterial growth under $10^5$ CFU/mL for up to 12 days at $5^{\circ}C$. The color of the tofu was unaffected by the container type at both storage temperatures, whereas the pH and opacity of the immersion solution were altered less profoundly by storage in the vacuum container at $5^{\circ}C$. However, we noted no significant differences in bacterial growths, pH, and opacity among container types at $25^{\circ}C$. The results of this study showed that the usage of vacuum containers may be a favorable method for the preservation of tofu under refrigerated conditions.

Status of Packaging Materials for Frozen Foods and Analysis of Temperature Changes inside Packaging Materials during Frozen Process (냉동식품용 포장재 현황 및 냉동 과정 중 포장재 내부 온도 변화에 관한 연구)

  • This study analyzed various packaging materials and types for frozen foods and the effects of packaging materials on temperature changes during frozen process. Pouches with different film thickness were prepared and placed in an IQF freezer, then the temperature inside pouches measured using a deep thermometer. The most common types of primary packaging for frozen foods in the market was plastic pouches with polyethylene or polyamide/polyethylene multilayer materials. The temperature change inside of packaging was delayed with film thickness increased. As the size of packaged food increased, the temperature change inside the food was slowed down. In addition, the pouches with air inside took more time to reach $-30^{\circ}C$ compared to pouches with less air during frozen process. This study provides information on packaging materials and types for frozen foods and preliminary data of temperature change by different types of packaging.

Quality changes in ready-to-eat hamburg steak depending on the packaging methods during chilled storage (포장 방법에 따른 즉석섭취형 함박스테이크의 냉장저장 중 품질 변화)

  • Changes in the various quality characteristics of hamburg steak depending on the packaging methods were investigated during storage at $5{\pm}1^{\circ}C$ for up to 15 days. Three packaging treatments including vacuum packaging (VAP), air-containing packaging (AC), and oxygen scavenger packaging (OS) were applied in this experiment. The initial total aerobe bacteria counts were identical at 2.3 log CFU/g in all treatments, but the growth rate of total aerobe bacteria in the AC samples was significantly faster than the VAP and OS samples during storage. The changes in the TBA and VBN values over the storage time showed that lipid oxidation and protein spoilage developed fastest in the AC sample, followed by OS and then VAP samples. The instrumental color and texture profiles were not significantly differ between treatments during storage (p>0.05). After 12 days of storage at $5^{\circ}C$, evaluation of the samples' sensory attributes showed that the AC samples had become unmarketable with a score of less than 5.0 points for all sensory properties, whereas the VAP and OS samples were still marketable.

Quality Characteristics of Minimally Processed Sweet-pumpkin during Storage (최소가공 단호박 (Cucurbita maxima Duchesne) 제품의 저장 중 품질 특성)

  • The objective of this study was to investigate the effect of browning inhibitor and vacuum packaging on minimally processed sweet pumpkin. The browning inhibitor were lo/e of ascorbic acid, citric acid, NaCl, MgCl$_2$and their combination. For the minimal processing, sweet pumpkin was sliced and strip-cut followed by dipping in the solution of browning inhibitor. Effective browning inhibitors fer slice sweet pumpkin were ascorbic acid, NaCl and MgC1$_2$, and those fer thin strip were combination and ascorbic acid. The hardness of minimally processed sweet-pumpkin repeated increasing and decreasing and decreased in the final of storage. However the change pattern of hardness was different according to cutting method. Magnesium chloride treatment was generally high grade on sensory characteristics. Sweet pumpkin treated with citric acid was distinguished on carbon dioxide generation and oxygen exhaustion.

Preparation of Seasoned and Semi-dried Horse Mackerel by Cold Air Drying and Quality of Its Product during Partially Frozen Storage (냉풍건조에 의한 전갱이 조미 반건품(半乾品)의 제조 및 빙결점 동결 저장 중 품질안정성)

  • An attempt was made in this study to investigate the possibility of processing seasoned and semi-dried horse mackerel (Tracharus japonnicus) and to examine its keeping quality, by analyzing the factors such as water content, pH, volatile basic nitrogen, viable cell count, peroxide value, color value and sensory evaluation. For processing of the seasoned and semi-dried product, optimum conditions of drying temperature and drying time were $20^{\circ}C$ and 4 hr, respectively, under $50{\pm}5%$ of relative humidity and 2 m/sec of air blast speed. The shelf-life of the products, vacuum-packaging method in nylon/polyethylene/linear low density polyethylene $(0.015/0.045/0.04\;{\mu}m)$ film bag, was 42 days during storage at $-3{\pm}0.5^{\circ}C$, while that of unpackaged one was only 28 days.

Natural antibrowning treatments on fresh-cut apple slices (천연 갈변방지제를 이용한 최소가공 사과 절편 개발)

  • A comprehensive study to evaluate the relative antibrowning activity of 5 known natural juices was conducted. Among the juices tested, rhubarb juice showed the highest inhibitory activity on apple browning (${\Delta}L=0.47$ & ${\Delta}E=1.8$ after 6 storage days at $4^{\circ}C$). Even 50% diluted rhubarb juice was very effective in controlling apple discoloration, showing very limited change in Hunter's L and E values. No significant difference in apple slices browning was observed with respect to the packaging material (LDPE or nylon/PE). However, gas composition inside package was closely related to apple browning.

Effects of Storage Methods and Periods on Root Hardness and Content of Saponin in Platycodon grandiflorum Radix (저장방법과 기간이 도라지 뿌리의 경도와 사포닌함량 미치는 영향)

  • The research was conducted to provide basic information for store temperature which were low and room temperature and packing methods which were vacuum, packing and nitrogen of 3 year-old Platycodon grandiflorum. We investigated hardness and content of saponins, 1) platycodin D3, 2) polygalacin D and 3) deapioplatycodin D, in Platycodon grandiflorum and hardness of Platycodon grandiflorum, which were reduced by increasing storage period and decreased with increasing storing temperature, respectively. The packed storing method was better than others storing methods in low temperature. The high root hardness was significantly related with storing temperature and methods. The content of saponins in Platycodon grandiflorum, i.e., platycodin D3 and polygalacin D were reduced during storing period, however, the content of deapioplatycodin D was increased during storing period.

Effect of Gamma Irradiation on the Protein Solubility, Purge Loss and Shear Force of Beef (감마선 조사가 우육의 단백질 용해성, 수분손실 및 전단력에 미치는 영향)

  • Post mortem bovine muscle. semitendinosus was used to investigate the effects of gamma irradiation on physicochemical properties. The muscle was cut into pieces of 2 cm in thickness and packaged with 2 different methods; vacuum-packaged and air-packaged. The packaged samples were irradiated at designated doses of 0, 1, 3 and 5 kGy by Cobalt-60 irradiator. Muscle protein solubility, purge loss, composition and contents of free amino acids, and shear force were observed during storage at $4^{\circ}C$. We found no significant differences in the purge loss and the contents of free amino acids. Muscle protein solubility slightly increased depending upon the increase of the dose. The decrease of shear force by gamma irradiation was observed. Therefore, it is considered that meat quality can be improved by gamma irradiation.

Effects of Gamma Irradiation on Pigments of Beef (감마선 조사가 한우육의 색소에 미치는 영향)

  • Effects of gamma irradiation on pigments of beef was investigated by determination of the Hunter's color values and pigments such as myoglobin, metmyoglobin and oxymyoglobin after gamma irradiation up to 5 kGy in air or vacuum package for 7 days. 'L' and 'b' values increased but 'a' value decreased with the elapse of the storage period. But, 'L', 'a' and 'b' values of irradiated beef were lower than non-irradiated beef. Myoglobin decreased but oxymyoglobin and metmyoglobin increased with the elapse of the storage period. Myoglobin decreased but oxymyoglobin and metmyoglobin increased with gamma irradiation up to 5 kGy. In regard to packaging methods, vacuum package did not affect pigment of the beef as did air package.
