  • Effects of kimchi lactic acid powder (KL) on weight reduction and lipid-lowering activities were studied using rats fed high fat diet. Spraque Dawley (40 rats) were fed 20% (w/w) high fat diet far 8 weeks to induce obesity and divided equally into normal diet (ND), high fat diet (HFD), and 10 and 20% KL-added groups. Body weight of HFD was 150% (p<0.01) of ND, while those of HFK10 and HFK20 decreased by 13 and 15% compared to HFD, respectively (p<0.01). Amounts of visceral fats for HFK10 and HFK20 were decreased by 42 and 48% compared to that of HFD (198% of ND), respectively (p<0.01). B had greater effect on reducing visceral fats than body weight. Plasma triglyceride (155%), cholesterol (129%), and LDL (161%) concentrations of HFD, which had been significantly increased compared to ND, dropped by 26, 9, and 8% (p<0.01) in HFK10, and 35, 17, and 33% (p<0.05) in HFK20, respectively. Decreased HDL by high fat diet was re-increased by KL supplementation. KL showed lipid-lowering and liver-protecting effects in liver possibly by interrupting lipid absorption in the intestine either by absorbing lipids in their cell walls or degrading them rapidly. Increased excretion of TG and cholesterol in feces of HFK10 and HFK20 indicates KL might have similar role to dietary fiber.

  • We have investigated the intestinal functions and hypolipidemic effects of resistant starch (RS) in rats. Experimental groups were CON (cooked starch 45% + RS 7%), RSIO (cooked starch 35% +RS 10%), RS20 (cooked starch 25%+RS20%), and RS30 (cooked starch 15%+RS 30%). The weight gains during experimental period were slightly decreased by intake of resistant starch and the weights of epididymal fat pad were lower in resistant starch intake groups than in CON, although the difference was not significant. In intestinal functions, water contents of fecal, transit time and colon cell proliferation were affected by resistant starch. Plasma total lipid and triglyceride concentrations were significantly decreased, dose-dependently, by resistant starch intake. Conclusively, it is important to intake resistant starch in order to decrease plasma lipids and to improve intestinal functions.

  • It was investigated whether a combination of PPARα activator fenofibrate and swimming exercise (H/F/S) would have a beneficial synergistic effect on improving inflammation of white adipose tissue compared to the single prescription of fenofibrate (H/F) and swimming exercise (H/S) in male mice that fed high fat diet. The body weight, weight of white adipose tissue and total cholesterol levels in the serum increased in mice-fed high fat diets (H) compared to mice-fed low fat diets (L). Compared to H, both H/F and H/S decreased these. These levels reduced by fenofibrate were more effectively reduced by the combination of fenofibrate and swimming exercise (H/F/S). As a result of examining the expression of inflammatory cytokines genes and fatty acid oxidation genes in white adipose tissue, H increased compared to L, both H/F and H/S decreased compared to H, and H/F/S decreased further compared to H/F. Thus, this study revealed that the combination of fenofibrate and swimming exercise in male mice fed high-fat diet suppresses inflammation of white adipose tissue caused by obesity through promoted fatty acid oxidation more effectively than the fenofibrate alone, and suggested a practical way to improve inflammation of adipose tissue caused by obesity.

  • Nonalcoholic fatty liver disease (NAFLD) is accumulation state of fat in liver cells without excessive alcohol intake, and it has been studied that is closely related to obesity. The purpose of this study is to identify risk factors for NAFLD and may prevent or to manage risk factors. This study was in progress for six months (2011 May 1 to October 31), of the 83 people who underwent abdominal ultrasound 11 people eventually were selected. Research results was as follows : First, the decreased body weight and body mass index (BMI), and the second, a decrease of the deepening of fatty liver in ultrasound diagnosis, and the third, steady movement reduces the deepening of fatty liver regardless of calories. Thus, the implication of this research is that long-term exercise programs have positive effects in the treatment of fatty liver.

  • Enzymatically modified isoquercitrin (EMIQ) is a mixture of quercetin glycodsides consisting of isoquercitrin and its ${\alpha}-glucosylated$ derivatives containing one to seven additional linear glucose moieties. The aim of this study was to assess whether or not EMIQ attenuates high-fat diet (HFD)-induced body weight gain and changes in plasma indices of obesity in mice. Male C57BL/6N mice were fed chow diet, HFD, and HFD containing 1.2% EMIQ for 10 weeks. EMIQ significantly (P<0.05) reduced body weight gain (-21%), total visceral fat-pad weights (-31%), and plasma levels of triglycerides (-17%), total cholesterol (-19%), and free fatty acids (-26%) in HFD-fed mice. EMIQ significantly increased protein kinase A (PKA) expression in the epididymal adipose tissue of HFD-fed mice. Expression of adipogenesis-related genes significantly decreased, whereas expression of fatty acid oxidation-related and thermogenesis-related genes increased in epididymal adipose tissue of EMIQ-fed mice compared with HFD-fed mice. These results suggest that the protective effects of EMIQ against HFD-induced adiposity in mice appear to be associated with PKA-mediated signaling cascades involved in adipogenesis, fatty acid oxidation, and thermogenesis in adipose tissue.

  • In this study, we investigated whether the combined administration of berberine (BBR) and silibinin (SBN) was effective in improving hyperlipidemia and anti-obesity efficacy using a high-fat diet (HFD)-fed obese mouse model. HFD-induced obese mice were supplemented with the BBR and SBN combination (BBR-SBN) along with the HFD administration for 8 weeks. During the experiment, body weight, food intake, and levels of total cholesterol, triglyceride and high-density lipoprotein (HDL)-cholesterol were analyzed. Consumption of HFD in the mice caused rapid increases in body weight and the levels of total cholesterol and triglycerides compared to the normal control (NC) group. However, supplementation of BBR-SBN in these obese mice significantly reduced body weight gain and suppressed the levels of total cholesterol and triglyceride with the increment of HDL cholesterol level. In the HFD-fed group, abdominal fat weight was significantly increased and the adipocytes within the epididymal adipose tissue were found to have expanded sizes compared to the NC group. However, in the BBR-SBN group, the sizes of the adipocytes were comparable to those of the NC group and abdominal fat weight was significantly reduced. Moreover, the deposition of giant vesicular fat cells in liver tissues seen in the HFD-fed group was considerably reduced in the BBR-SBN group. These results suggest that the BBR-SBN combination tends to have synergic potential as an anti-obesity agent by significantly reducing body weight gain as well as lowering serum lipid levels and thus improving anti-obesity efficacy in HFD-induced obese mice.

  • The aim of this study was to develop muffins in which corn bran fiber was substituted 10, 30, 50 or $70\%$ for fat and the quality characteristics were compared with a full-fat counterpart. The volume and height of muffin was highest in control and decreased with increasing corn bran fiber content, but no difference in weight was observed (p<0.05). The incorporation of corn bran fiber in the product lowered lightness and redness values but decreased yellowness values. The mechanical texture parameters including hardness, springiness, gumminess and brittleness increased with increasing corn bran fiber levels. Scanning electron microscope showed that the size of air cells was decreased with increasing corn bran fiber levels. Sensory analysis yielded muffin with $30\%$ substitution of butter with corn bran fiber was considered to be as acceptable as control.

  • Doenjang is a traditional korean fermented soybean paste made from meju (fermented soybean), which are fermented by diverse microorganisms including Bacillus subtilis and molds such as Rizopus, Mucor, and Aspergillus species The purpose of this study was to investigate the antiobesity effect of the black soybean doenjang (Korean fermented soybean pastes) in C57BL/6 mice. The anti-obesity effect was determined by measuring the release of adiponectin, leptin and adipogenic transcription factors by using reverse transcription-polymerase chain reaction and western blot. Weight gain was significantly reduced in the mice fed high fat diets (HFD) plus black soybean doenjang (HBD) compared to HFD mice. The HBD were also effective in improving the lipid profile. They significantly decreased the levels of serum triglyceride and cholesterol. In addition, they had a significantly down regulated impact on antiobesity factors; leptin level and increased adiponectin level. Also, mRNA and protein expression of two adipogenic transcription factors, SREBP-1c and $PPAR-{\gamma}$, in high fat with black soybean fed mice were markedly down regulated. These results indicate that the black soybean doenjang potentiates an anti-obesity effect by modulating lipid metabolism, thereby inhibiting adipogenic transcriptional activation.
