Cooling and Storage Characteristics of Milled Rice by Different Cooling Storage Methods (냉각저장방식에 따른 백미의 냉각 및 저장특성)

  • This study was conducted to analyze the cooling and the quality characteristics of milled rice stored in the forced air-blast type using thermo -electric semiconductor and in the still-air type chambers using refrigeration system with refrigerant(R-22). Cooling rates of milled rice in the forced air-blast type and in the still-air type chambers were $0.30\;^{\circ}C/hour$ and $0.21\;^{\circ}C/hour$, respectively. And the temperatures of cooling air and of milled rice at different positions in the forced air-blast type chamber showed severer change than those in the still-air type chamber. During storage of milled rice in the forced air-blast type and still-air type chambers for 14 weeks, there was no significant difference in the quality characteristics, such as b value and fat acidity of milled rice, and overall sensory quality of cooked rice. But the quality characteristics of milled rice stored in room temperature chamber($25^{\circ}C$) as control decreased very rapidly compare to those stored in the cooling chambers. In aspect of fat acidity of milled rice, 6 weeks was the limitation for the safe storage in room temperature.

Effect of Mugwort Powder and Fish Oil Addition on the Fatty Acid of Chicken Meat (쑥 분말과 어유의 첨가가 계육의 지방산 조성에 미치는 영향)

  • This study was conducted to investigate the influence of dietary mugwort and fish oil on meat quality of chicken. Broilers were randomly assigned to one of four dietary treatment: 1) Control (commercial feed) 2) T1 (commercial feed supplemented with 3% mugwort powder) 3) T2 (commercial feed with 4% fish oil) and 4) T3 (commercial feed with 3% mugwort powder and 4% fish oil). They were fed the experimental diets for five weeks and slaughtered. After that, the meat samples were vacuum packaged and stored at $4{\pm}1^{\circ}C$. The meat quality were analyzed for meat samples stored over a period of 0, 5, 10 and 15 days. The major fatty acids found in chicken meat were oleic acid, palmitic acid, linoleic acid, stearic acid. However, the fatty acid was not significantly different between control and treatment groups (p>0.05). Palmitoleic acid, EPA, DHA contents were higher in T3 treatment group than the control. The TBARS (thiobarbituric acid reactive substances) of all treatments significantly increased during the storage periods (p<0.05). The TBARS of the thigh was rather higher than that of the breast. The WHC (water holding capacity) of breast and thigh were significantly increased in both control and treatment groups during storage (p<0.05). WHC of the breast was rather higher than that of the thigh. The drip loss was tended to increase during the storage periods (p<0.05).

Effects of Dietary Supplementation of Mulberry Leaves Powder on Chicken Meat Quality Stored during Cold Storage (뽕잎 분말의 첨가 급여가 계육의 냉장저장 중 품질에 미치는 영향)

  • This study was investigated the effects of supplementation diets with mulberry leaves powder on pH, TBARS (thiobarbituric acid reactive substance) and VBN (volatile basic nitrogen) heating loss, WHC (water holding capacity), and drip loss of chicken meat. One hundred sixty broiler were fed diets for five weeks containing 0% mulberry leaves powder (Control), 1% mulberry leaves powder (T1), 2% mulberry leaves powder (T2), and 3% mulberry leaves powder (T3). At the end of this experiment, broiler were slaughtered, and stored at $4^{\circ}C$ for 10 d. As storage time increased, all treatment groups resulted in increased pH, TBARS, VBN and drip loss (p<0.05). The TBARS and VBN were significantly decreased by the supplementation of mulberry leaves powder compared to the control (p<0.05). T3 results in much better TBARS and VBN than other treatment groups. Especially, T3 was significantly (p<0.05) more effective in improving self life compared to other treatment groups. Heating loss and drip loss were no significantly different among treatment group. In conclusion, these data indicate that supplementation of 3% mulberry leaves powder were most effective in decreasing TBARS and VBN.

Favorable Condition for Mycelial Growth of Tricholoma matsutake (송이균 배양을 위한 균사생장 조건)

  • The main objectives of this research were to study the cultural and nutritional characteristics of Tricholoma matsutake and to establish its liquid culture system. The optimum growth of T. matsutake was observed in HA and TMM agar media. Similarly highest growth was observed in PDB and TMM liquid media. The optimal temperature for the mycelial growth was $25^{\circ}C$. The most suitable carbon source was dextrin among 12 different carbon sources tested. Yeast extract and peptone were best nitrogen sources among 17 different sources tested. The optimum mineral salts were $Fe_{2}(SO_{4})_{3}{\cdot}H_{2}O$ and KCl among 9 different sources tested. Shaking culture gave higher mycelial growth compared to stationary culture. Similarly, optimum medium amount for shaking culture was 100 ml per 250 ml flask. The highest mycelial growth was obtained when $5{\sim}7$ mycelial discs were inoculated in 100 ml of medium and incubated for $8{\sim}9$ weeks, respectively. The highest proportion of mycelial growth was observed at 40 : 1 ratio of medium to inoculum volume in 8 l air-lift fermenter.

Estimation of Daily Sewage and Direct Runoff for the Combined Sewer System of Gunja Experimental Drainage (군자 시험배수구역 합류식 하수관거시스템의 일일하수량 및 직접유출량 산정)

  • A localized torrential rainfall and flash floods which are more frequently occurred by extraordinary atmospheric phenomena and rising sea surface temperature require more hydrological data collecting and analysis for small watershed. Urban watershed hydrological data monitoring system is needed because of big flood potential damage and lack of urban watershed hydrological data. Therefore, Urban Flood Disaster Management Research Center operates small experimental catchments(Sinnae1, Gunja, and Children's Park) observing and analyzing hydrological data(rainfall, stage, and discharge). In this study, the discharge of combined sewage for Gunja experimental drainage is analyzed with weekly data and day of the week data. Through several analyses in analyzing the urban runoff characteristics and managing the urban sewage system, direct runoff is calibrated and verified by the estimated values of rainfall-runoff model(SWMM).

Changes in Quality Parameters of Tomatoes Harvested at Different Mature Stages during Storage (수확시의 숙도에 따른 저온저장 중 토마토의 품질인자의 변화)

  • This study was conducted to investigate the effect of mature stages on quality of Rafito tomatoes (Lycopersicon esculentum Mill.) during storage at low temperature. Tomatoes grown in greenhouse were harvested at three different mature stages (turning, pink, and red), packaged with a 30-${\mu}m$-thick polyethylene film, and then stored at 5 and $10^{\circ}C$, respectively. The changes in firmness, soluble solids content (SSC), titratable acidity (TA), colour, lycopene content, decay, and chilling injury were measured on a weekly basis. After three weeks of storage, chilling injury and decay were found to have individually occurred at 5 and $10^{\circ}C$, respectively. As there was little change in quality at $5^{\circ}C$, it was concluded that red tomatoes could maintain their good quality for two weeks. The normal postharvest ripening was inhibited in the turning and pink tomatoes during storage at $5^{\circ}C$. The turning and pink tomatoes showed improved quality after two-week storage at $10^{\circ}C$. In particular, the turning fruits showed the highest firmness throughout the storage period. Furthermore, the red colour, SSC/TA, and lycopene content of the turning fruits reached the same levels as with the red fruits after two-week storage at $10^{\circ}C$. These results suggest that red tomatoes should be stored at $5^{\circ}C$ to inhibit decay, and that the optimum temperature for early-harvested tomato (turning and pink) is $10^{\circ}C$ for the ripening process after harvest.

Irradiation Preservation of Korean Shellfish (방사선(放射線) 조사(照射)에 의한 한국산(韓國産) 패류(貝類)의 품질보존(品質保存)에 관(關)한 연구(硏究))

  • Pacific oyster, hard clam and mussel were irradiated at doses up to 0.5 Mrad, the optimum dose rather than the maximum permissible was sought for in each species and post-irradiation storage characteristics studied at $0^{\circ}\;and\;5^{\circ}C$. No shellfish meat irradited at doses as high as 0.5 Mrad produced any adverse odor. However the organoleptic quality of each sample irradiated at lower doses was superior to those irradiated at the higher during the early storage period. The optimum dose was determined to be 0.2 Mrad for Pacific oyster and mussel and 0.1 Mrad for hard clam. By irradiating at the optimum dose, the storage life of Pacific oyster cculd be extend from less than 14 days to 35 days at $0^{\circ}C$ and from only 3 days to 21 days at $5^{\circ}C$. A similar storage extension was observed with mussel. The storage life of hard clam was extended from 7 days to 14 days at $0^{\circ}C$ and from 3 days to 12 days at $5^{\circ}C$. The hard clam meats were particularly susceptible to tissue softening by irradiation; an earlier onset and more extensive softening were observed with increasing dose.

Effects of Growth and Flowering on Orostachys japonicus A. Berger by Nitrogen Fertilization (질소 시비량이 바위솔의 생장과 개화에 미치는 영향)

  • Shoot weight of Orostachys japonicus should determine its profitability. The study was carried out to measure the effect of nitrogen (N) fertilization level (0, 5, 10, 20kg/10a) on its growth, morphological characters, and flowering. Night-break treatment of 2 hours at midnight were done since Aug. 25 when afterward samples were taken every 4 weeks to Nov. 16. Growth, morphological and flowering related characters were measured from each sample. Plant height, inflorescence length, number of leaves including bracts and stem diameter were decreased with increased N levels. Leaf and bract, floret, shoot and total dry weights as well as withering rate showed similar response to the above morphological characters. Florets were less formed with increased N levels but were not flowered due to the night-break treatment, meaning that N fertilization had little effect on its growth and anthesis of the florets.

Acetylcholinesterase Inhibitory Effect of Green Tea Extracts According to Storage Condition (저장 조건에 따른 녹차 추출물의 acetylcholinesterase(AChE) 저해 효과)

  • Acetylcholinesterase (AChE) inhibitors, which enhance cholinergic transmission by reducing the enzymatic degradation of acetylcholine, are the only source of the compound that is currently approved for the treatment of Alzheimer's disease (AD). In these experiments, the concentration samples of green tea extracts were 100, 500, and 1,000 ${\mu}g$/mL. Among them, the highest concentration (1,000 ${\mu}g$/mL) of fresh green tea extracts showed the most potent inhibitory effect on AChE by reducing more than 40% of enzyme activity, and in a concentration-dependent pattern. In addition, we examined the effect of other storing conditions on AChE inhibition. In order to maintain storage for 3 months, the materials were held at the certain storing conditions of temperature (room temperature, 4 and $-20^{\circ}C$) and for water activity (0.81, 0.69, and 0.23). In these storing conditions, the difference in temperature did not contribute to the AChE inhibitory effect. Our presented data showed that the AChE inhibitory effect was affected by the concentration of green tea extract and by water activity (0.81). These results suggest that green tea may serve as a potential dietary source of AChE inhibitor.

Studies on the Effects of Various Treatments on the Tuber Formation of Potatoes (각종처리가 감자 괴경형성에 미치는 영향)

  • To study the effects of temperature, day length, and various plant growth regulator treatments on the tuber formation of Irish cobbler, this experiment was carried out with 2 combinations of day-length and temperature and 11 kinds of growth regulator, including GA, and their combinations. For the tuber formation, low temperature-short day condition played decisive role, and exceeded the effects of growth regulators. 4 times foliar application of 10 ppm GA resulted marked elongation of stolon but did not inhibit the tuber formation even under high temperature longday condition.
