Antioxidant, Tyrosinase Inhibitory, and Anti-proliferative Activities of Gochujang Added with Cheonggukjang Powder Made from Sword Bean (작두콩 청국장 첨가 고추장의 항산화, tyrosinase 저해 및 암세포 증식 억제 효과)

  • This study aimed to examine the antioxidant, tyrosinase inhibitory, and anti-proliferative activities (A549, G361, HT-29, and MDA-MB-231) of fermented gochujang (made from sword bean cheonggukjang powder (SBC) for 90 days. Gochujang was prepared by adding 0 (SBC 0), 2 (SBC 2), 5 (SBC 5), 8 (SBC 8) and 10% (SBC 10) levels with SBC, and all experiments were measured at diluted levels of 20, 50 and 100 times. The antioxidant activity and tyrosinase inhibitory effect demonstrated that SBC 10 increased approximately 1.2 and 1.1 times compared with SBC 0, respectively, at diluted levels of 50 and 100 times. The anti-proliferative effects of A549, G361, and HT-29 presented that SBC 10 were 2.8, 1.1, and 8.9 times higher compared with SBC 0, respectively, at diluted levels of 50, 20, and 100 times. In the case of MDA-MB-231, SBC 10 was 3.7 times higher compared with SBC 5 at diluted level of 20 times. As a result, we confirmed that SBC gochujang was improved for physiological activities and anti-proliferative effects.

Quality Characteristics of Kochujang Added Medicinal Herbs (한약재를 첨가한 고추장의 품질특성)

  • This study was to develope health promoting and better quality of Kochujang. Three kinds of medicinal plants, Angelica acutiloba (AA), Akebia quinate decaisne (AQ), Caragana chamlagu (CC) were extracted with water. Hanbang Kochujang was prepared by adding water extracts of medicinal hem to the ingredients of Kochujang. Quality characteristics of Hanbang Kochujang were evaluated by its water content, color and sensory evaluation during storage at $5^{\circ}C$: and $20^{\circ}C$ for 90 days. Moisture contents of Hanbang Kochujang before storage were $33\~38\%$ and increased to $48\~51\%$ at the end of storage. Color values(L, a and b) of Hanbang Kochujang were decreased as the progress of storage period at $5^{\circ}C$ and $20^{\circ}C$. Redness (a) values of Hannbang Kochujang with Akebia quinate decaisne (KAQ) and Caragana chamlagu (KCC) were lower than that of control Kochujang (KC) during storage at $20^{\circ}C$(p<0.05). Yellowness(b) values of Hannbang Kochujang with Caragana chamlagu (KCC) was lower than that of control Kochujang (KC) during storage at $5^{\circ}C$(p<0.05). From sensory evaluation, preference was higher in Hanbang Kochujang (KAA, KAQ and KCC) stored at $20^{\circ}C$ than that stored at $5^{\circ}C$ during 60 and 90 days of storage. Sensory evaluation scores of color, sweet taste and overall preference were the highest in Hanbang Kochujang added Caragana chamlagu (KCC) during storage at $5^{\circ}C$ and $20^{\circ}C$ for 90 days (p<0.05).

Fabrication of Biomass Based Polyethylene Furoate Nanofiber by Electrospinning (전기방사법을 이용한 바이오매스 유래 polyethylene furoate 나노섬유 제조에 관한 연구)

  • Nanofibers have attracted significant interest in many industrial fields because their high surface area and porosity. In addition, the continued use of petrochemical based polymers has caused the depletion of oil resources and accelerated the greenhouse effect by the emission of carbon dioxide. Therefore, biomass-based polymer has become a very important environmentally friendly alternative. In this study, nanofibers were fabricated by an electrospinning process using biomass based PEF(polyethylene furoate) prepared by the polymerization of 2,5-furandicaboxylic acid and ethylene glycol. Furthermore, the electrospun nanofiber was strongly affected by various parameters, such as the solvent, polymer concentration and electric field. In conclusion, nanofibers with an average fiber diameters of 200 - 700 nm could be prepared at polymer concentration of 15 wt% using HFIP, and their fiber diameter increased with increasing electric field.

Preparation of Semi-Dried Jellyfish and Its Stability during Storage (해파리 반건품의 제조와 저장안정성)

  • To investigate the possibility of processing semi-dried jellyfish and to examine its keeping quality, the factors such as moisture content, pH, volatile basic nitrogen (VBN), viable cell counts, color value and texture were analyzed. For processing of the semi-dried product, optimum conditions of drying temperature and drying time were $25^{\circ}C$ and 90min, respectively, under 60 $\pm$ 5% of relative humidity and 2 m/sec of air blast speed. The shelf-life of the products, vacuum-packing method in nylon/polyethylene/linear low density polyethylene (0.015/0.045/0.040 mm) laminated film bag was at least 6 weeks during storage at 4$^{\circ}C$, while that of air packaged one was at least 4 weeks. In case of 2$0^{\circ}C$ storage the shelf-life of the products was at least 3 weeks in both air and vacuum packaged ones.

  • The types and processing characteristics of traditional non-alcoholic beverage and their historical backgrounds were surveyed through the old literatures published from the 8th century to 1940. A total of over 70 different names of beverages were found in the literature. They were classified into 10 groups according to their processing methods and quality characteristics; Sunda (green tea), Yusada (tea analog with/without green tea), Tang (boiled herb extract), Jang (lactic acid fermented rice beverage), Suksu (rice tea), Mium (cereal gruel), Misik (roasted cereal powder), Sikhe (sweet rice beverage saccharified with malt), Sujonggwa (ginger-fruit drink) and Hwachai (fruits drink). In the old literatures, there was non exist clear distinction between Jang, Tang, Chong and Tea. Lactic acid fermented rice beverage seemed to be a common drink in Silla and Koryo periods (AD. 600-1400), but disappeared afterwards and completely forgotten today. Other beverages are maintained until today with almost identical methods of preparation as described in the literatures written in the 18th century.

Fabrication, Magnetic and Magnetoresistive Properties of Bi-Doped Lanthanum Manganites (Bi 첨가 란탄 망가나이트의 제조, 자기 및 자기저항 특성)

  • Bi-doped lanthanum magnetics $(La_{0.67-x}Bi_xCa_{0.33}MnO_3(x\;=\;0,\; 0.04,\; 0.1,\; 0.2))$ samples have been prepared by standard ceramic process. The crystallinity and microstructures of the samples have been investigated by x-ray diffractometry and optical microscopy, respectively. The magnetic and magnetoresistive properties of the samples have been measured by vibrating sample magnetometery and van der Pauw method, respectively, at the temperatures ranging of 100 K~300 K with applied magnetic field of 0.4~0.5 T. Good crystallinity and high Curie temperature (275 K) have been obtained for the Bi-doped samples with small dosage (x = 0.04, 0.1) even they were sintered at 120$0^{\circ}C$, which is about 20$0^{\circ}C$ lower than normal sintering temperature of 140$0^{\circ}C$. The Bi-doped samples with the small dosage showed lower relative electrical resistivity and higher magneto-resistive ratio compared to the undoped sample in the most temperatures measured. The Bi-doped samples also exhibited large magnetoresisitve ratio (maximum of 15% for x = 0.1) at room temperature even under a weak magnetic field of 0.4 T.

Electrohydrodynamic Spray Drying Using Co-axial Nozzles for Protein Encapsulation (단백질 캡슐화를 위한 동축 이중 노즐을 사용한 전기분무건조법)

  • Spray drying is an effective and stable process, which has been widely used to produce pharmaceutical powders. In the traditional spray drying process, it was not quite easy to control the aggregation and the size of particles. Particularly, the preparation of polymeric particles was relatively hard compared to the preparation of food and pharmaceutical ingredients, typically organic materials of small molecular weights. In this study, modification of a conventional spray dryer was tried to use electrical charge and co-axial nozzles to prepare polymeric particles. Poly(ethylene glycol) and poly (D,L-lactide-co-glycolide) were used as the inner polymeric materials, and lactose as the outer shell materials. The results showed that electrohydrodynamic spray-dried particles had a relatively uniform size and particle morphology, and the aggregation of particles could be suppressed compared to the conventional spray-dried particles. The electrohydrodynamic spray-dried powders consisted of spherical particles of $2{\sim}5{\mu}m$ diameters.

The Study on Manufacture of PACl(Polyaluminum Chloride) from Water Treatment Plant Sludges (정수장 슬러지(Alum Sludge)로부터 PACl(Polyaluminum Chloride) 응집제 제조에 관한 연구)

  • Sludge produced from water treatment plants contains plenty of aluminum due to addition of coagulants, polyaluminum chloride(PACI) which has been widely used in most of water treatment plants. however. the whole of PACI is imported from other countries. In this research. the effective methods for recycling PACI from sludge of water treatment plants were developed and evaluated. Aluminum chloride hexahydrate($AlCl_3{\cdot}6H_2O$) was obtained by sparging HCl gas aluminum extracted from sludge using hydrochloric acid (HCI). This aluminum chloride hexahydrate was solidified by decomposition at $180^{\circ}C$. and dissolved in water to produce PACI. The optimum extraction rate was obtained at the condition of 10 minutes of reaction time. $105^{\circ}C$ of reaction temperature. 27.65%(W/W) of HCI concentration. The KS experiment proved that manufactured aluminum chloride hexahydrate was 98.7% degree and the recycled PACI coagulants agreed with the KS standard. The optimum temperature of decomposition was $180^{\circ}C$ and the basicity of the PACI was decided upon the extent of decomposition The compared experiments between purchased coagulant and manufactured coagulant presented that both coagulants had same performance for turbidity, DOC, $UV_{254}$ absorbance. and chlorophyll-a.

Synthesis of stable colloidal zirconia sol by adsorption of polyvinyl alcohol (PVA 흡착에 의한 안정한 콜로이드 지르코니아 졸의 합성)

  • A stable suspension with a colloidal $ZrO_2$ particle was prepared by an adsorption of PV A and investigated to the effects of PV A on the dispersion and particle growth within suspension. With a suspension added the optimum concentration of PYA (about 500 ppm in this study), it was shown the property of a stable sol due to the formation of adsorbed PV A layer on surface and the reduction of an agglomeration among the particles. Most of nucleation in colloidal $ZrO_2$ were occured in the early stage of hydrolysis reaction and the plate-like monoclinic $ZrO_2$ particle were grown with an aging time. The rate of particle growth and yield for a reaction were decreased with an addition of PV A. The compact prepared from well- dispersed suspension by an addition of PV A was contained the homogeneous particle arrangement and pore distribution.
