Effect of a Refrigerator with LED on Functional Composition Changes and Freshness Prolongation of Cabbage (냉장고의 LED부착이 양배추의 선도 연장에 미치는 영향)

  • A LED (light emitting diode) was attached inside the cold $(4^{\circ}C)$ compartment of a home refrigerator to investigate a possible effect on freshness prolongation of cabbage over 10 d of storage. The LED increased chlorophyll synthesis, inhibited vitamin C degradation and increased the content of phenolics, compared to values measured in cabbages stored in an identical refrigerator without the LED. In the refrigerator with the LED, the color of cabbage leaves remained green for a period fourfold longer than that seen in a conventional refrigerator. Vitamin C content was twice that of a conventionally stored cabbage, and phenolic consent was 14% higher in the LED-illuminated vegetables.

  • Recently, Google MedeiaPipe presents a novel approach for neural network-based hair segmentation from a single camera input specifically designed for real-time, mobile application. Though neural network related to hair segmentation is relatively small size, it produces a high-quality hair segmentation mask that is well suited for AR effects such as a realistic hair recoloring. However, it has undesirable segmentation effects according to hair styles or in case of containing noises and holes. In this study, the energy function of the test image is constructed according to the estimated prior distributions of hair location and hair color likelihood function. It is further optimized according to graph cuts algorithm and initial hair region is obtained. Finally, clustering algorithm and image post-processing techniques are applied to the initial hair region so that the final hair region can be segmented precisely. The proposed method is applied to MediaPipe hair segmentation pipeline.

발아현미의 품질특성

  • 발아현미란 적당한 온도와 수분, 산소 등을 공급해 현미의 싹을 1~5 mm까지 발아시킨 것으로 현미의 영양과 기능을 극대화시키면서 식미는 현미보다 훨씬 부드러운 쌀이다. 발아현미 등 발아곡식이 주목받기 시작한 것은 1993년 독일의 한 식품연구소에서 곡식의 발아시 발아전에는 없던 새로운 영양성분이 생겨나거나 증가한다는 연구발표가 계기가 되었다. 현미에는 식물성 섬유질을 비롯한 각종효소, 비타민, 미네랄 등 영양소가 다량 함유되어 몸에 좋다는 것은 널리 알려진 사실이다. 그러나 현미가 갖는 뛰어난 효능에도 불구하고 백미를 주식으로 하고 있는 이유는 현미의 조리가 어렵고 부드럽게 씹히지 않고 꺼칠하여 식미가 떨어지기 때문이다. 이러한 현미의 문제점을 개선하여 풍부한 영양을 고루 섭취하고 간편한 취사와 부드러운 조직감으로 식미 기호도를 높인 발아현미가 등장하였다. 따라서, 찹쌀과 멥쌀 발아현미에 대한 영양성분과 품질특성을 조사하여 발아현미밥 및 가공제품 개발에 대한 기초자료로 제시하고자 한다. 4$0^{\circ}C$에서 20시간 발아시킨 찹쌀 발아현미(수분함량 15.45%)와 멥쌀 발아현미(수분함량 15.02%)의 품질 특성중 amylose 함량은 각각 4.9%, 17.9%, 환원당은 4.91%, 2.28%, 유리당은 찹쌀 발아현미가 glucose 0.42%, sucrose 0.15%, maltose 0.27%이고 멥쌀 발아현미가 glucose 0.59%, sucrose 0.50%, maltose 0.24%였다. 찹쌀과 멥쌀 발아현미의 색차값은 각각 L값 60.30, a값 2.12, b값 23.52과 L값, 59.51, a값 3.15, b값 23.04이다. 호화도는 1.67%, 5.21%이고, 조직감중 hardness는 7.53 kgf, 8.93 kgf로 멥쌀 발아현미가 높았다. 찹쌀 발아현미의 아밀로그램 특성은 호화 초기온도가 42$^{\circ}C$였으며, breakdown값은 94, set back값은 -48이었으며, 멥쌀 발아현미의 특성은 호화 초기온도가 7$0^{\circ}C$였으며, breakdown값은 0, set back값은 123이었다. 비타민 E 함량은 찹쌀 211.79 $\mu\textrm{g}$/kg, 멥쌀 310.59 $\mu\textrm{g}$/kg이고, 총식이섬유 함량은 4.21%, 3.17%이다. 발아현미 원곡간의 향기패턴은 차이가 나지 않았으며 발아현미 제조 후 찹쌀, 멥쌀 모두 이취 성분은 거의 없었다. 발아현미의 절단 내면 미세구조를 관찰한 결과 찹쌀 발아현미 cell이 멥쌀 발아현미보다 작았으며, 표면 구조도 찹쌀 발아현미가 더욱 조밀하였다.

Quality of Wet Noodle Prepared with Wheat Flour and Mushroom Powder (버섯분말을 첨가한 생면의 품질특성)

  • Wet noodles were prepared with wheat flour and mushroom powder (oyster and oak mushrooms), and effects of added mushroom powders on dough rheology and wet noodle quality were examined. Particle size distribution of mushroom powder ranged from 0.04 to $500\;{\mu}m$, which was different from that of wheat flour. The initial pasting temperature in amylograph, and the water absorption and the dough development time in farinograph increased with the increase of mushroom powder. The peak and final viscosities in amylograph, and dough stability in farinograph decreased with the increase of mushroom powder. Decrease of L value and increase of a and b values were shown with the increase of mushroom powder in wheat flour-mushroom powder composite as well as wet noodles. The cooked weight and volume of cooked noodles were decreased, but the turbidity of soup were increased with the addition of mushroom powder. Most of texture parameters (hardness, cohesiveness, chewiness and cutting force) of cooked noodles decreased with the addition of oyster mushroom powder, but increased with the addition of oak mushroom powder. From the result of sensory evaluation, wet noodles containing 3% oyster mushroom powder and 5% oak mushroom powder were rated as high quality wet noodles.

Effect of Dying Method on the Quality of Red Pepper(Capsicum annuum var. longum) (건조방법이 고추의 품질에 미치는 영향)

  • It was aimed to find out an efficient method of drying hot pepper, of which powder is used as one of the main ingredients in Korean dish preparation including Kimchi. Before sun or heat drying fruits harvested were horizontally cut into three pieces punched with an auger of 4 mm in diameter, or used as the whole fruit. Various drying methods were used including sun drying, drying under a plastic house, sun drying after heat drying for 5 hours at $70^{\circ}C$, $80^{\circ}C$, or $90^{\circ}C$, heat drying only at $50^{\circ}C$, $60^{\circ}C$, or $70^{\circ}C$, and changing temperature of $70^{\circ}C$, $5hours+60^{\circ}C$ until coplete dry, $80^{\circ}C+60^{\circ}C$, or $90^{\circ}C+60^{\circ}C$. The results are summarized as follows. With sun drying of the whole fruit, in required about 10days to reach the satisfactory level of dryness as indicated by its moisture content of below 10% in general. In case of heat drying combined with sun drying, it required 5 to 7 days. For cut fruits, it required 1 or 2 days less than for whole or pinholed fruits until drying. Under heat of alternation temperature drying, cut fruits also dried 15-20 hours earlier compared with whole of pinholed fruits. There were not significant differences for the recovery rate of the fruit with various drying methods. The occurrence of white fruits, which are caused by one of physiological disorders during drying, and rotten fruits was reduced with the cut fruit drying. The damages were very high with the PE house drying, but very little with the heat drying.

  • Conventional method of PHC pile head cutting work has several challenges with regard to safety, convenience, productivity, and quality. To address such problems, a prototype of the all-in-one attachment-based PHC pile cutting robot is developed(Yeom, 2018). The Primary objective of this study are to develop a final prototype of all-in-one attachment-based PHC pile cutting robot and to analyze technical feasibility and field applicability of final prototype. According to the technical feasibility and field applicability analysis result, at least 74.2% of the respondents are selected positive answer about technical feasibility of the final prototype, at least 66.6% of the respondents are selected positive answer about field applicability of the final prototype. It is expected that when deployed onsite, the final prototype can not only increase the practical use but also improvement the work safety and productivity of work at the PHC pile head cutting job site.

Changes of Physicochemical and Sensory Characteristics of Korean Pickled Cucumber with Different Preparation Methods (담금 방법을 달리한 오이지의 숙성 중 특성 변화)

  • This study was investigate to see the effects of preparation methods on the physicochemical and sensory characteristics of cucumber preserved with salt. The preparation methods were brining the cucumbers in 10 % NaCl solution (boiled, method A), 205 NaCl solution (boiled, method B) an d20 % NaCl solution (cool to $25^{\circ}C$ after boiling, method C). The cucumber preserved with boiled solution and high salt concentration showed slow fermentation rate. The rate of salt penetration during brining of cucumber preserved with salt increased. The green value of cucumber preserved with salt by method B was lower than by method A and C. The cutting force of cucumber preserved with walt measured by texture analyzer showed a rapid increasing rate during initial brining periods. As a result of the sensory evaluation for cucumber preserved with salt, there were significant differences in most of characteristics between the samples at 5% level. The cucumber preserved with salt in boiled 10% NaCl solution (method A) showed the highest scores in most of the characteristics.

Modified Atmosphere Packaging of Minimally Processed Cut Garlic (최소가공된 절단 마늘의 환경기체조절포장)

  • There is a need in food industry to store minimally processed garlic for long time to have it be used just at the time of demand for final product processing. Optimal modified atmosphere packaging is expected to slow down the quality change extending its storage life. In order to find optimal packaging conditions, plastic films of different gas permeability properties (low density polyethylene (LDPE) $30{\mu}m$, polyolefin $50{\mu}m$ (PD 900), polyolefin $20{\mu}m$ (PD 941)) were used for packaging 400 g of minimally processed garlic. Perforated LDPE packages were prepared as control. The packaged products were stored at $1{\pm}1^{\circ}C$ for 52 days. Package treatments were compared in weight loss, decay, surface color, hardness and soluble solid content. While control package had normal atmosphere of air, LDPE, PD 900 and PD 941 packages attained internal concentration of $O_2$ 4.6% / $CO_2$ 12%, $O_2$ 0.9% / $CO_2$ 21% and $O_2$ 0.5% / $CO_2$ 13% after 45 days, respectively. Control packaging had rapid weight loss with high mold decay and great surface color change in 45 days. In PD 900 film packages of lowest gas permeability, the fresh-cut garlic could be stored without mold decay for 52 days. Except control packaging, there were no significant differences in surface color, hardness and soluble solid content among package treatments.

Quality Characteristics of Cheonan Shingo Pear and Freeze-dried Pear Snack (천안 신고배의 품질 특성 및 이를 이용한 동결건조 배 스낵 제품 개발)

  • The evaluated physicochemical and sensory properties of freeze-dried Shingo pears(Pyus pyritolia Niitaka), cultivated at Cheonan city, prepared using different sugar concentration of blanching solution we evaluated. Sliced Shingo pears(5 mm and 7 mm thickness) were blanched in sugar solution(0, 3, 5, 7, 10%) and freeze-dried to make dried fruits snack. The firmness of the pear snack sliced in 7 mm portions was greater than the pear snacks sliced in 5mm pieces. However in sensory evaluation, pear snacks sliced in 5 mm portions showed higher scores. pH and titratable acidity showed no significant difference in the blanching process. Concentration of total phenollic compound in fresh pear was 3.7 mg% but freeze-dried pear snacks showed higher values at 15 mg%. Sensory evaluation tests showed that the scores for texture decreased as the thickness of the snack and sugar concentration of blanching solution increased; however the score increased(p<0.05). Color intensity and overall acceptability scores were highest in pear snacks sliced in 7 mm pieces and blanched with 7% sugar solution.

Drying of Agricultural Products by the Flat-plate Solar Collector with Rock-piled Heat Storage Medium (Rock-pile식(式) 집열기(集熱器)를 이용(利用)한 농산물건조(農産物乾燥)에 관(關)한 연구(硏究))

  • The performance of the flat-plate solar collector with rock-pile thermal storage medium and the drying characteristics of rough rice and red pepper by use of natural air and of supplementary heated air by the solar drier were studied. The thermal efficiency of the flat-plate solar collector was average 25.4 percent and the overall heattransfer coefficient of the collector was approximately $38.13kJ/hr.m^2^{\circ}C$. The flat-plate collector was able to supply the supplementary heated air which was about $7^{\circ}C$ higher than the ambient air temperature during the daytime and about $3^{\circ}C$ higher than during the night. For rough rice drying of grain moisture content front 24.5 to 14.5%, it took 18 days in the natural air system, 12 days in the tubular solar collector and 10 days in the flat-plate solar collector. For red pepper drying from it's moisture from 81.0 to 15.0%, 68 hrs required under conventional sun drying system, but 38 hrs in tubular solar collector and 36 hrs in the flateplate solar collector. The changes of capsanthin and capsaicine content were investigated at various drying system, and little difference was found among the drying system.
