Quality and sensory properties of HMR-type pork Tteokgalbi containing roasted garlic powder (볶은 마늘 분말을 첨가한 가정간편식(HMR)형 돈육 떡갈비의 품질 및 관능적 특성)

  • This study investigated the quality and sensory properties of Tteokgalbi containing various amounts of roasted garlic powder by measuring the proximate composition, color, pH, cooking yield, electronic tongue, and sensory evaluation. Samples containing 3% and 5% roasted garlic powder had lower moisture content than the control group (p<0.05), however, protein content was higher (p<0.05). The redness of samples containing 3% and 5% roasted garlic powder was significantly higher compared to the control (p<0.05). pH decreased significantly with increasing amounts of roasted garlic powder (p<0.05). Cooking yield exhibited an upward trend with increasing levels of roasted garlic powder. The intensity scales of saltiness, sourness, and umami of samples containing roasted garlic powder were stronger than those of the control. Samples containing 3% roasted garlic powder scored the highest flavor and overall acceptability. These results indicate that adding 3% roasted garlic powder can enhance the quality and sensory properties of pork Tteokgalbi.

  • A total of 129 surface(upto 30 cm depth) soil samples were selected from the profile samples collected during reconnaissance soil survey in 1967, for the determination of phosphorus absorption co-efficient. The distribution range for each soil association has been established. The physicochemical factors affecting the phosphorus absorption coefficient have also been examined. The following general conclusions can be drown: 1. In general, the phosphorus absorption coefficient of the soil association of presently arable land are lower than the soils which are not in cultivation. 2. The higher the cation exchange capacity of soils, the higher is the phosphorus absorption coefficient.   • Azotobacter vinelandii cell extracts and its variety of purified fractions with regard to their ability to form the redox state of the Shethna Flavoprotein (free radical form FPH.) were studied. A fluorescent flavoprotein (protein I) and a brown protein (protein II) were the most active proteins which were isolated in purified form. The free radical formation activity was substantially decreased during the purification and was completely lost upon storage in a week under nitrogen in a frozenstate. The presence of free flavin (FMN) with NADH enhanced the rate of free radical formation. The reaction of FMN and NADH was found to be catalysed by various cell fractions. A possible role of FMN as a substrate for free radical shethna flavoprotein was investigated. Slower reaction rate of $FMNH_2+Flavoprotein\;(FP){\to}FPH+FMN$ than $FMN+NADH{\to}FMNH_2$, accumulation of $FMNH_2$ ocurred which subsquently caused FPH.

  • This paper has been made for the soil micro-morphological study of Sirye series. The results are summarized as follows: 1. By high biological activity, soil materials are mixed. Pedotubules and Fecal pellets pedological features are formed by this activity. 2. There are no strong illuviation cutans. The formation of dirty cutans (new cutans) are due to sedimentation in furrow. 3. The relatively thick crystallization of goethite in plane voids are formed. 4. The lower parts of this soils are influenced by hydromorphology. 5. B3 horizon may be buried A horizon, containing the fragments of upper horizons.

Ossifying Epulis in a Thoroughbred Foal (더러브렛 망아지에서 발생한 골화성 치은종)

  • A 4-month-old female thoroughbred foal was presented with large mass on mandibular gingiva. The enlarged mass was firm and yellowish pink in color, and occupied the whole mandibular arcade. The filly could not close her mouth with her lips. Radiographs showed radioopaque mass under the mandible. The mass was surgically excised from mandible. Histopathologically, gingival mass was characterized by hyperplastic gingival epithelium, well vascularized collagenous stroma and large area of bony tissues. Based on the gross and histopathologic findings, this case was diagnosed as ossifying epulis in the mandibular gingiva. This is the first report of ossifying epulis in a thoroughbred horse in Korea.

Effect of Sulfer Containing Fertilizers on Grain Yield and Chemical Composition of Soybean (황함유 비료가 콩의 종실수량과 성분함량에 미치는 영향)

  • This experiment was conducted to investigate the effect of sulfur containing fertilizers on growth, yield and nutritive quality of soybean as affected by lime application at reclaimed soil. Lime application for neutralization requirements showed the effect of increased grain yield about 32% compared to the non application at newly opened land of red and yellow soil. In case of lime application, the sulfur containing fertilizers combined with super phosphate, ammonium sulfate, and gypsum increased the grain yield by 31%, 11%, and 3%, respectively. When lime was not applied, magnesium carbonate application increased the yield by 47%, super phosphate by 22%, and gypsum by 15%. The protein content of grain was higher at lime application than those of non lime application and was increased by the application of sulfur containing fertilizer. But lipid content was not affected by lime or sulfur application. From the above results obtained it was concluded that sulfur fertilizer effect under lime application was significant when combined with super phosphate or ammonium sulfate application. Magnesium carbonate or super phosphate application was the best combination with sulfur-containing fertilizer.

Management of Critical Control Points to Improve Microbiological Quality of Potentially Hazardous Foods Prepared by Restaurant Operations (외식업체에서 제공하는 잠재적 위험 식품의 미생물적 품질향상을 위한 중점관리점 관리방안)

  • The purpose of this study was to present management guidelines for critical control points by analyzing microbiological hazardous elements through screening Potentially Hazardous Foods (PHF) menus in an effort improve the microbiological quality of foods prepared by restaurant operations. Steamed spinach with seasoning left at room temperature presents a range of risk temperatures which microorganisms could flourish, and it exceeded all microbiological safety limits in our study. On the other hand, steamed spinach with seasoning stored in a refrigerator had Aerobic Plate Counts of $2.86{\pm}0.5{\log}\;CFU/g$ and all other microbiological tests showed that their levels were below the limit. The standard plate counts of raw materials of lettuce and tomato were $4.66{\pm}0.4{\log}\;CFU/g$ and $3.08{\pm}0.4{\log}\;CFU/g$, respectively. Upon washing, the standard plate counts were $3.12{\pm}0.6{\log}\;CFU/g$ and $2.10{\pm}0.3{\log}\;CFU/g$, respectively, but upon washing after chlorination, those were $2.23{\pm}0.3{\log}\;CFU/g$ and $0.72{\pm}0.7{\log}\;CFU/g$, respectively. The standard plate counts of baby greens, radicchio and leek were $6.02{\pm}0.5{\log}\;CFU/g$, $5.76{\pm}0.1{\log}\;CFU/g$ and $6.83{\pm}0.5{\log}\;CFU/g$, respectively. After 5 minutes of chlorination, the standard plate counts were $4.10{\pm}0.6{\log}\;CFU/g$, $5.14{\pm}0.1{\log}\;CFU/g$ and $5.30{\pm}0.3{\log}\;CFU/g$, respectively. After 10 minutes of chlorination treatment, the standard plate counts were $2.58{\pm}0.3{\log}\;CFU/g$, $4.27{\pm}0.6{\log}\;CFU/g$, and $4.18{\pm}0.5{\log}\;CFU/g$, respectively. The microbial levels decreased as the time of chlorination increased. This study showed that the microbiological quality of foods was improved with the proper practices of time-temperature control, sanitization control, seasoning control, and personal and surface sanitization control. It also presents management guidelines for the control of potentially hazardous foods at the critical control points in the process of restaurant operations.

A Study on the Forest Vegetation and Soil-environmental Factors Affecting the Water Quality of Iwonch on Stream (이원천 수질에 미치는 삼림식생과 토양환경요인)

  • Characterization of the analysis of forest vegetation, soil environmental conditions and water quality were performed from March 2003 to March 2007. The two basins were characterized by cultivated area (Kaesim reservoir) and mountain area (Jangchan reservoir), and divided into eleven small basins, where dynamics of pollutants, forest vegetation and soil environmental conditions were surveyed. The vegetation can be divided into 10 types by $Z\ddot{u}rich$-Montpellier school's method. Pearson coefficients between vegetation type and water quality were correlated with dissolved oxygen (DO) in the Quercus variabilis community at the 5% level and total phosphorus (TP) in the Larix leptolepis plantation at the 1% level. Especially total phosphorous and total nitrogen increased in small basins where the proportion of cultivated and residential area increased. The analysis of influences of pollutant discharge on water quality showed that pollutant charge was very low in forest land area ($Y_{T-P}$=-0.0017X+0.2215, r=0.16, $Y_{COD}$=- 0.0395X+8.5051 r=0.47). The soil types of western area were comparatively simple, but those of eastern area were complicated with regosols, red-yellow soils, lithosoles, etc. The pH, total solid (TS) and volatile substance (VS) of the forest and agricultural land soils collected in each site were 5.4~6.9, 75.8~80.2%, and 3.80%~5.80%, respectively. According to the analytical result of soil environmental conditions, heavy metal contents fell short to the mean value of natural conditions. Runoff amount (Y) and depth of topsoil (X) were negatively correlated, $Y_{ron}=-1.0088X_{top}+35.378$ (r=0.68). The correlation was much lower in up-stream but much higher in down-stream, because permeation into soil particle was larger on down-stream due to its more or less gentle slope. Pearson coefficients between soil pH and water pH were statistically significant at 1% level.

  • This paper deals mainly with the genesis and classification of the Jeonnam series. These soils have brown to dark brown silt loam and silty clay loam A horizon(strong brown or reddish brown where eroded). Argillic B horizons are dominantly red or yellowish red silty clay loam to silty clay with moderately developed subangular blocky structure and with thin clay cutans on the ped faces. The C horizons are strongly and very deeply weathered strong brown, yellowish brown, pale brown and reddish yellow silty clay loam and sandy loam granitic saprolite. Content of clay increases with depth to a maximum between 100cm. Percolating water seems to be responsible for transportation and oriented deposition of clay. Chemically, soil reaction is strongly acid to medium acid throughout the profile. The content of organic matter is 1 to 2 percent, and decreases regularly with depth. Base saturation is low, based on amount of extractable cations. Characterisltically the Jeonnam series are similar to Red-Yellow Podzolic soils of the United States and are similar to Red-Yellow soils of the Japan. In the writer's opinion the Jeonnam soils are classified as Red Yellow soils. According to USDA 7th approximation, this soil can be classified as Typic Hapludults and in the FAO/UNESCO World Soil Map as Helvic Acrisols.

Late Quaternary Stratigraphy of the Tidal Deposits In the Hampyung Bay, southwest coast of Korea (한국 서남해 함평만 조간대 퇴적층의 제4기 후기 층서 연구)

  • The late Quaternary stratigraphy of the tidal deposits in the Hampyung Bay, southwestern coast of Korea comprises 1) Unit III (nonmarine fluvial coarse-grained sediments), 2) Unit II (late Pleistocene tidal deposits), and 3) Unit I (late Holocene fine-grained tidal deposits) in ascending order. The basements of the Hampyung Bay is composed of granitic rocks and basic dyke rocks. These three units are of unconformally bounded sedimentary sequences. The sequence boundary between Unit I and Unit II, in particular, seems to be significant suggesting erosional surface and exposed to the air under the cold climate during the LGM. The uppermost stratigraphic sequence (Unit I) is a common tidal deposit formed under the transgression to highstand sea-level during the middle to late Holocene.
