Reduction in bitter taste and quality characteristics in pickled bitter melon (Momordica charantia L.) by different pretreatment conditions (전처리 조건에 따른 여주(Momordica charantia L.) 초절임의 쓴맛 감소와 품질평가)

  • This study was performed to investigate the reduction in bitter taste and quality characteristics by pretreatments (brining; 1, 5% and blanching; 1, 3 min) in pickled bitter melon, respectively. We prepared picked bitter melon samples at 1%-1 min, 1%-3 min, 5%-1 min, 5%-3 min. Total polyphenol and total flavonoid contents were found to be the highest in 5%-1 min at $14.23{\pm}0.40mg\;CE/g$ (dry) and $4.46{\pm}0.10mg\;RE/g$ (dry), respectively. L-ascorbic acid level was the highest in control samples. Arginine and glutamic acid were increased by brining and blanching. ABTS and DPPH radical scavenging activity were found to be the highest at $43.60{\pm}0.40$ and $44.88{\pm}0.20%$ at 5%-1 min, respectively. ${\alpha}-glucosidase$ inhibitory activity was the highest at 5%-1 min. The a value was statistically different, whereas L and b values were similar among different pretreatments. Hardness in pretreated samples was decreased as compared to that in the control. Among sensory evaluations, 'color' did not indicate any statistical difference, while 'texture', 'bitterness preference' and 'overall preference' increased with pretreatments, and 'bitter intensity' decreased.

Quality characteristics of distilled spirits by different nuruk-derived yeast (누룩 유래 효모의 종류에 따른 증류주의 품질 특성)

  • This study aimed to select a yeast strain for optimizing the quality of distilled spirits. The brewing and distilling properties of 4 KFRI (Korea Food Research Institute) yeasts (Y88-4, Y98-4, Y172-6, Y192-4) and 2 industry yeasts (C1, C2) were compared. For investigating the possibility of using these strains on an industrial scale, diverse analytical methods were applied to assess parameters associated with distilled spirit quality such as alcohol content, pH, total acidity, and soluble solid content. After 11 days of fermentation, the alcohol strength obtained using six yeast strains reached 13.9-16.4% (v/v), while pH was 3.9-4.0, and total acid was 0.40-0.52%. To compare GC-MSD Volatile flavor components, all the distilled spirit samples were diluted to 20% (v/v) alcohol strength. Seven fusel alcohols, 26 esters, 2 acids, and 3 miscellaneous compounds were detected in the distilled spirits. Y88-4 had the most abundant volatile flavor component and scored the highest overall preference in sensory evaluation. After analyzing the various properties of yeasts, strain Y88-4 was finally selected as the best strain for producing distilled spirits.

Growth of Red-leaf Lettuce and Changes in Soil Solution Chemical Properties of Coir-dust Containing Root Media Influenced by Application Rates of Pre-planting Fused-Superphosphate (코이어 더스트 혼합상토에 용과린의 시비수준에 의한 적축면 상추의 생장과 근권부 화학성 변화)

  • This research was conducted to investigate the influence of various levels of fused superphosphate as pre-planting fertilizer on the growth of red-leaf lettuce and changes in the chemical properties of the soil solution in three root media, namely coir-dust plus expanded rice hull (8:2, v/v; CD+ERH), carbonized rice hull (6:4; CD+CRH), or ground and aged pine bark (8:2; CD+GAPB). The amounts of fused superphosphate (FSP) incorporated into the three root media during formulation were controlled from 0 to $6.0g{\cdot}L^{-1}$ in $1.5g{\cdot}L^{-1}$ increments. The root media containing fertilizers were packed into 300 mL plastic pots and seedlings of red-leaf lettuce at the 3rd leaf stage were transplanted. After transplanting, the crops were fed with a solution of neutral fertilizer ($100mg{\cdot}L^{-1}$). The growth of red-leaf lettuce was investigated 5 weeks after transplanting and soil solutions were extracted and analyzed every week for pH, EC, and concentrations of macro-nutrients. The elevation of application rates of FSP in the three root media resulted in better growth, and the crops grown in CD+ERH and CD+GRPB had greater fresh and dry weights than those in CD+CRH when compared among the treatments of equal amounts of FSP. The pH and $PO_4{^{-3}}$ concentrations in the soil solution of CD+CRH at 3 weeks after transplant were in the ranges of 4.0 to 4.8 and 20 to $100mg{\cdot}L^{-1}$, respectively. These were lower pH and higher $PO_4{^{-3}}$ concentrations than those in CD+ERH and CD+GAPB. The $K^+$ concentrations were higher in CD+CRH than those in the other two root media, and the elevation of FSP application rates resulted in higher $Ca^{+2}$, $Mg^{+2}$ and $SO_4{^{-2}}$ concentrations in soil solution of the three root media. The $NO_3$-N concentrations in soil solution rose continuously during crop cultivation, implying that the leaching percentage was elevated. The soil solution EC varied, showing the same tendencies as the $NO_3$-N concentrations. The above results indicated that the CD+ERH and CD+GRPB media performed better than CD+CRH, and optimum application rates of FSP in the three root media were 4.5 to $6.0g{\cdot}L^{-1}$ for pot cultivation of red-leaf lettuce.

A Study on Dose-Response Models for Foodborne Disease Pathogens (주요 식중독 원인 미생물들에 대한 용량-반응 모델 연구)

  • The dose-response models are important for the quantitative microbiological risk assessment (QMRA) because they would enable prediction of infection risk to humans from foodborne pathogens. In this study, we performed a comprehensive literature review and meta-analysis to better quantify this association. The meta-analysis applied a final selection of 193 published papers for total 43 species foodborne disease pathogens (bacteria 26, virus 9, and parasite 8 species) which were identified and classified based on the dose-response models related to QMRA studies from PubMed, ScienceDirect database and internet websites during 1980-2012. The main search keywords used the combination "food", "foodborne disease pathogen", "dose-response model", and "quantitative microbiological risk assessment". The appropriate dose-response models for Campylobacter jejuni, pathogenic E. coli O157:H7 (EHEC / EPEC / ETEC), Listeria monocytogenes, Salmonella spp., Shigella spp., Staphylococcus aureus, Vibrio parahaemolyticus, Vibrio cholera, Rota virus, and Cryptosporidium pavum were beta-poisson (${\alpha}=0.15$, ${\beta}=7.59$, fi = 0.72), beta-poisson (${\alpha}=0.49$, ${\beta}=1.81{\times}10^5$, fi = 0.67) / beta-poisson (${\alpha}=0.22$, ${\beta}=8.70{\times}10^3$, fi = 0.40) / beta-poisson (${\alpha}=0.18$, ${\beta}=8.60{\times}10^7$, fi = 0.60), exponential (r=$1.18{\times}10^{-10}$, fi = 0.14), beta-poisson (${\alpha}=0.11$, ${\beta}=6,097$, fi = 0.09), beta-poisson (${\alpha}=0.21$, ${\beta}=1,120$, fi = 0.15), exponential ($r=7.64{\times}10^{-8}$, fi = 1.00), betapoisson (${\alpha}=0.17$, ${\beta}=1.18{\times}10^5$, fi = 1.00), beta-poisson (${\alpha}=0.25$, ${\beta}=16.2$, fi = 0.57), exponential ($r=1.73{\times}10{-2}$, fi = 1.00), and exponential ($r=1.73{\times}10^{-2}$, fi = 0.17), respectively. Therefore, these results provide the preliminary data necessary for the development of foodborne pathogens QMRA.

Studies on the Palatability and Texture of Korean Rice Cultivars for the Cooked-rice Processing (가공밥 제조를 위한 밥의 식미 및 식감특성 평가)

  • Palatability and texture analysis of nine Korean rice cultivars were investigated to select the most appropriate rice variety for the cooked-rice processing. The rice cultivars studied consisted of Samkwang, Seonpum, Wolbaek, Andabyeo, Dasan-1, Ilpum, Haiami, Jungsanggold and Chindle. They revealed the moisture, protein, amylose and starch contents of 10~12, 5~6, 12~19, and approximately 90%, respectively. Among the evaluated rice varieties, WB exhibited the lowest amylose content (12.7%) and Jungsanggold the next (17.2%). In the rapid-visco analyzer test, Jungsanggold, Chindle, Wolbaek and Seonpum revealed a low value of final and setback viscosities than other varieties. Using a toyo meter analyzer, Chindle, Haiami, Samkwang were selected as having high toyo palatability values, while Dasan-1, Wolbaek and Andabyeo revealed low values. Toughness and adhesiveness of all nine cooked rice varieties were highest in Jungsanggold, Chindle and Ilpum. Also, palatability of cooked rice was highest in the following order: Chindle (80.03) > Samkwang (76.21) > Jungsanggold (74.08). The results of this study suggest that Chindle may be effectively used to produce processed cooked rice.

Investigation and Analysis of Hazards for Cultivation Environment to Establish the Good Agricultural Practices(GAP) of Soybean (콩 GAP 모델 확립을 위한 재배환경의 위해요소 조사 및 분석)

  • Soybean farms in Changnyeong were selected for hazard analysis to establish the Good Agricultural Practices (GAP) model of soybean, and physical, chemical(heavy metal) and biological(sanitary indications, foodborne pathogens) hazard analysis for cultivation environment (soil, water) was carried out. First, bow which is able to be mixed in soil and water was confirmed as physical hazard. Levels (Cd:0.01~0.103, Cu:0.001~6.036, As:0.006~3.045, Hg:ND~0.041, Pb:0.003~3.952, $Cr^{+6}$:0.007~0.496, Zn:0.001~66.500, Ni:0.003~18.010) of heavy metals in soil and water were appropriate for GAP criteria. In biological hazard, APC and coliform in soil were detected at the levels of $6.0{\pm}0.3$ and $3.6{\pm}1.6$ log CFU/g, and levels of water were $3.5{\pm}0.7$ and $1.9{\pm}0.7$ log CFU/mL, while E. coli wasn't detected in all sample. However, coliform in water wasn't appropriate for criteria, and E. coli O157 was detected about 22% in some farms, so it needs ways to prevent contamination by human and animals excrements. In conclusion, it needs proper management to prevent cross-contamination of hazards although physical and chemical hazard level were appropriate for GAP criteria while biological hazard wasn't.

Pseudo Image Composition and Sensor Models Analysis of SPOT Satellite Imagery for Inaccessible Area (비접근 지역에 대한 SPOT 위성영상의 Pseudo영상 구성 및 센서모델 분석)

  • The paper presents several satellite models and satellite image decomposition methods for inaccessible area where ground control points can hardly acquired in conventional ways. First, 10 different satellite sensor models, which were extended from collinearity condition equations, were developed and then behavior of each sensor model was investigated. Secondly, satellite images were decomposed and also pseudo images were generated. The satellite sensor model extended from collinearity equations was represented by the six exterior orientation parameters in $1^{st}$, $2^{nd}$ and $3^{rd}$ order function of satellite image row. Among them, the rotational angle parameters such as $\omega$(omega) and $\Phi$(phi) correlated highly with positional parameters could be assigned to constant values. For inaccessible area, satellite images were decomposed, which means that two consecutive images were combined as one image, The combined image consists of one satellite image with ground control points and the other without ground control points. In addition, a pseudo image which is an imaginary image, was prepared from one satellite image with ground control points and the other without ground control points. In other words, the pseudo image is an arbitrary image bridging two consecutive images. For the experiments, SPOT satellite images exposed to the similar area in different pass were used. Conclusively, it was found that 10 different satellite sensor models and 5 different decomposed methods delivered different levels of accuracy. Among them, the satellite camera model with 1st order function of image row for positional orientation parameters and rotational angle parameter of kappa, and constant rotational angle parameter omega and phi provided the best 60m maximum error at check point with pseudo images arrangement.

Media Scholars and Power: The politicized intellectuals hanging on the dangerous rope (언론학자와 권력: 정치화된 지성의 위험한 줄타기)

  • Media scholars take a lion stake in power circle. Not only do they take a part in media policies but seize prestigious positions like board members in Korea Communication Commission(KCC). Unfortunately, though, little has been known about who they are, what qualifications they have, and whether they meet public interests. This paper attempts to unveil the mechanism of those politicized intellectuals who are specialized on the media. Two categories divided into 'representative' and 'expertise' are employed for this purpose. On the one hand, the representative means the degree of committment into such public services as participation in conferences or non-profit organizations. On the other hand, the number of research articles, books and projects belong to the expertise. Evaluation levels consist of 'excellence, good and average' were allocated to those scholars who are(were) in 'Power Hole,' where decision makings come into being. Some interesting observations were made though this study. First of all, such criteria as representative and expertise vaguely suggested by the laws were hardly fit into those intellectuals, Rarely did they commit into public service let alone showing vigilance in academic activities. Secondly, both ideological loyalty and political activities in line with the government had much to do with taking such positions. Thirdly, not surprisingly, it showed that to graduate from Seoul National University and have Ph.D. degree from U.S.A. was one of the most essential factors. In final, most of them were very good at taking advantage of the press in way of boosting their publicity. To attend at policy making processes either in form of board members or advisers is inevitable for media experts. However, as shown in this study, such qualification of public service and academic eagerness shouldn't be underestimated. Academic integrity not selling intelligence solely for private interests needs to be protected as well. The authors hope this study to provide a valuable opportunity to establish a kind of ethical standards in participating into politics.

  • Race and ethnicity are important factors which influence the elderIy's residential adjustment behaviors, although it is unclear whether this reflects influences unrelated to race and ethnlcity. Culturally, the norm of family supportoften obseved among various minority ethnic groups is likely to provide flexible family suppof for the elderIy. Economically, the life-long hardship ofminority groups is likely to force them to maintain extended family living arrangements simply to reduce expenses via economies of scale. Thecontroversy about the economic need versus the cultural prescription forextended living arrangements remains unresoIved because it fails to articulatethe meaning of family supports among many disadvantaged groups.This study aims to test previous economic and cultural arguments, byexamining ethnic differences iu the eiderIy's responsiveness to their health andeconomic problems. Two hypotheses about cultural influences on the elderly's resideutiai adjustment are examined. First, do elderly minorities receive famiiysupporis for longer periods when they are poor if economic and health status\ulcorner Second, do elderiy minorities receive family supports more often when their health status declines\ulcorner Using the Longitudinal Suvey on Aging from 1984 to 1990. this study employs Markovian multi-state life tables, and discrete and contonuous competing hazard analyses for the transition in living arrangements. The main results provide substantial evidence against the cultural resource thesis. Elderly minorities experience more frequent transition between living alone and living with relatives than white elderly persons when group differences in the extent of mortality and insititutionalization are controlled. The shorter timf of living alone among elderly monorities stems from their greater likehood of joining relatives as well as greater mortality and attrition rates than elderly whites. Coresidence of elderly whites with their relatives is more likely to occur in response to their needs for health care than of elderly whites. it implies that instability. not flezibility. characterrizes elderly minorities living arrangements.

Quality changes of dried persimmon based on storage conditions (농가별 저장조건에 따른 건시의 품질 특성 변화)

  • The purpose of this study is to present the results as basic data for establishing proper storage conditions and distribution conditions of actual farms at point of increasing concern about hygiene and palatabiltiy of consumers to food. In this study, three farmhouses of dried persimmons prepared using different storage conditions were selected in Sangju (Korea). The dried persimmons were stored for 90 days. Changes in temperature and humidity were measured with a temperature and humidity recorder under each storage condition, and physicochemical analysis and sensory evaluation were performed. The average temperatures of farmhouse A, B and C were approximately $-22--23^{\circ}C$, $-19--18^{\circ}C$ and $-25^{\circ}C$ respectively. The humidities of A, B and C were 62-63%, 59-60%, and 66-67%, respectively, and the moisture contents of all farmhouses increased during the storage period, with farmhouse B showing the most rapid increase. Free sugars increased, except for those from farmhouse C. Persimmons from farmhouse B showed the greatest changes in chewiness and hardness. The values of $a^*$ and $b^*$ were significantly decreased in persimmons from farmhouse B, and the color difference value of farmhouse B was dramatically increased. Sensory evaluation showed that the color preference tended to decrease compared with the initial value. Only farmhouse B showed decreased overall acceptability. Moreover, farmhouse B had the highest storage temperature and lowest humidity. Therefore, our results showed that storage at a low temperature and high humidity was important for manufacturing high-quality dried persimmons.
