An Integrated Assessment of Green Environment on Urban Space (도시공간의 통합적 녹지환경 평가)

  • The purpose of this study is to assess the green environment on urban space and to suggest the sustainable green space planning. The study area is Dalseo-gu which has the biggest spatial imbalance of green space among 7 districts of Daegu. Three functions such as nature-ecological, environment-control, and usage function were established for assessing the green environment. For the assessment step of nature-ecological function, 'green connectivity' and 'animal movement' were used. Also,'thermal environment' and 'temperature decrease' were utilized in terms of environment-control function and 'green space's service supply' were utilized in terms of usage function. According to the results of integrated assessment, the green rich zone(Grade I) was 44.8% of total area in Dalseo and this zone was distributed along the southern forest of Mt. Ap and Mt. Biseul and the northern forest of Mt. Gung and Mt. Waryong. On the other hand, the green broken zone(Grade IV) was located in the residential areas of Gamsam and Jukjeon and the residential and industrial areas of Wolseong 1 and Jincheon and this zone was 5.5% of total area. The findings from this study can be used as the plan criteria for construction and distribution of green space in urban master plan.

Effects of Gamma Radiation arid Methyl Bromide Fumigation on Quarantine Pest and Quality of Asian Pears (감마선 및 Methyl Bromide처리가 배 과실의 검역해충과 품질에 미치는 영향)

  • As an alternative to methyl bromide (MeBr) fumigation for the control of quarantine pests of pears (Pyrus pyrifolia cv. Niitaka), the effect of gamma irradiation (0.5~3 kGy) was comparatively investigated. Insects found in the pears were identified Tetranychus urticae Koch and Panonychus ulmi Koch, which were of quarantine importance. These insects were easily destroyed by MeBr even one day after fumigation. Whereas irradiation at 0.5~2 kGy was not enough to reach the mortality, even if 3 kGy showed the same mortality as MeBr after 17 days of treatment. Respiration of pears was stimulated by both increased doses of irradiation and MeBr fumigation. The rates of surface blackening and core browning were accelerated by MeBr rather than higher doses of irradiation. While the changes in flesh firmness and surface color were more apparent in irradiated samples at above 2 kGy than MeBr. There were negligible differences in the contents of titratable acidity, acetaldehyde and ethanol by the treatment conditions except for 3 kGy-irradiated group. Sensory evaluation showed that mere than 1 kGy was the threshold to induce the significant changes in quality of pears.

Quality Characteristics of Fermented Wild Grass Juice (산야초 발효액의 품질 특성)

  • The quality characteristics, enzyme activity, and antioxidative activity of fermented wild grass juices were investigated during fermentation and ripening for 6 months. Fermented wild grass juice was prepared from wild grasses (Oenothera biennis, Portulaca oleracea, and Rhus verniciflua) and sugar. Wild grasses and sugar mixed at the same ratio (1:1, w/w) and ripened at $20^{\circ}C$ for 3 months after fermentation for 3 months at $20^{\circ}C$. The $^{\circ}Bx$ of all fermented wild grass juices (FWGJ) decreased during fermentation. The pH of all FWGJ decreased gradually during fermentation and did not show any significant difference during ripening. Viscosity of FWGJ increased during fermentation but decreased during ripening periods in all tested samples. Total viable cell of FWGJ decreased after fermentation for 1 month, whereas lactic acid bacteria were not detected during fermentation. Enzyme activity was lower than 1 unit during fermentation and ripening period in all tested FWGJ samples. Enzyme activity of commercial FWGJ (Acanthopanax sessiliflorum, Oenanthe javanica, Plantago asiatica L., Platycodon grandiflorum, Orostachys japonicus A.) showed lower activity of 1 unit following invertase, cellulase, and amylase activity.

Effects of Anti-Microbial Materials on Storages of Low Salted Doenjang (항균물질을 첨가한 저식염 된장의 저장성)

  • The effect of additives on the quality of low salted doenjang was investigated during storage. Amylase activity gradually decreased during storage and protease activity decreased after four weeks. The number of yeast was lower in the mustard or ethanol added groups without a difference in bacterial count. The L- and b-values decreased gradually during storage with lower total color difference (${\Delta}E$) in garlic added doenjang. Gas production was reduced in the ethanol or mustard added groups. Titratable acidity and acid values were low in the ethanol and ethanol-garlic added ones. A reducing sugar content was higher in the groups with added additives. Ethanol decreased to the largest extent in mustard added doenjang. Amino-type nitrogen decreased in ethanol added doenjang, whereas ammonia-type nitrogen was low in the ethanol or mustard added groups. The taste, flavor, and overall acceptability of doenjang were significantly higher in the ethanol or garlic added groups than in the other groups.

pH and buffering capacity in some commercial fermented milks (일부 시판 유산균 발효유의 pH와 적정산도)

  • Objectives : The aim of this study was to evaluate the pH and buffering capacity in some commercial fermented milks in Korea. Methods : The study was carried ouf from June to August, 2012. In 35 liquid type, 79 condense-stirred type and 71 condense-drink type fermented milks, available on the market, pH and buffering capacity were measured. Titration(with NaOH) was used to determine the buffering effect of each fermented milk. They were titrated with 1 M sodium hydroxide, added in 0.1 milliliters increments, until the pH reached about 5.5 and 7.0. Results : The average pH of tested fermented milks was $4.08{\pm}0.27$. The average pH values of fermented milks were $3.64{\pm}0.22$ in liquid type, $4.14{\pm}0.12$ in condense-stirred type, and $4.22{\pm}0.17$ condense-drink type. The average buffering capacity (pH 5.5) of tested fermented milk was $2.40{\pm}0.54$. The average buffering capacity (pH 5.5) of liquid type fermented milk was $2.37{\pm}0.33$, condense-stirred type fermented milk was $2.77{\pm}0.46$ and condense-drink type fermented milk was $2.01{\pm}0.42$. The average buffering capacity (pH 7.0) of tested fermented milks was $4.00{\pm}0.87$. The average buffering capacity (pH 7.0) of liquid type fermented milk was $3.11{\pm}0.36$, condense-stirred type fermented milk was $4.78{\pm}0.55$ and condense-drink type fermented milk was $3.58{\pm}0.59$. Conclusions : The average pH of tested fermented milks in this study was lower than pH 4.5. The type of fermented milks was an important factor for selection of fermented milk which is related with enamel erosion.

  • ABS1'RACT-Comparative effects of gamma irradiation and ethylene oxide treatment on the sterilization, and physicochemical and sensory quality of dried marine products(shrimp, anchovy) were investigated. Population of mesophilic total bacteria, aerobic spores and tolerant bacteria of samples were $10^{3}-10^{7}/g,\;10^{7}\;to \;10^{4}/g\;and\;10^{2}\;to\;10^{6}/g$, respectively. Coliforms and molds were found only in dried shrimp as $10^{2}/g$. Mesophilic total bacteria, aerobic spores and acid tolerant bacteria were reduced by over 2 to 4 log cycles with irradiation of 5 to 7 kGy and they were completely sterilized by irradiation dose of 7 to 10 kGy. $D_{10}$ value of mesophilic total bacteria of samples ranged from 1.53 to 2.73 kGy. Coliforms and molds were sterilized at 5 to 7 kGy irradiation but ethylene oxide treatment proved insufficient to eliminate the microorgainsms. An optimum dose of irradiation was less detrimental than ethylene oxide treatment to phpicochemical properties of the samples, such as the pH, TBA value, TMA-N, amino acids, minerals and color difference. Sensory quality after three months of storage showed that the overall acceptability of irradiated sample was higher than that of the non treated control as well as ethylene oxide treated samples.amples.

Effect of Pre-wilting Time on the Change of Moisture Content and Its Silage Quality at Different Harvest Stages of Whole Crop Oat (수확시기별 예건시간에 따른 귀리의 수분함량과 사일리지 품질변화)

  • This study was carried out to establish the optimum pre-wilting time for the high-quality silage production of whole crop oat. Plants were harvested for three time at intervals of 10 days after heading (DAH) and silage production was conducted after the pre-wilting treatment of 0, 4, 8 and 32 hours, respectively. Results showed to attain a proper moisture content for profitable silage production, which was an optimal content for making silage, by pre-wilting oat for 4 hours after harvest at either 20 days after heading or harvesting 30 DAH(days after heading). As the feed value of silage, the processing of proper moisture contents showed that crude protein contents were high and the entire feed value showed higher than others. High content of lactic acid and the low content of acetic and butyric acid showed on 60~65% the moisture conditions of silage. There was desired that whole crop oat was pre-wilting on 4 hours and harvested at about 20~30 DAH and after that, even if harvesting at once, it was judged that it could produce good quality silage.

Mycelial Culture Conditions of Lepista nuda and Extracellular Enzyme Activity (민자주방망이버섯(Lepista nuda) 균사체 배양조건 및 효소활성)

  • The culture condition and medium composition for the enhanced mycelial growth of Lepista nuda DGUM 26501 were investigated. The optimal temperature and pH for the mycelial growth were $24^{\circ}C$ and $7.0\~8.0$, respectively. The partial pressure of oxygen for the enhanced mycelial growth was more than $10\%\;O_2$. When Czapek-Dox medium was used as a minimal medium, manitol and xylitol were very good carbon sources. Organic nitrogen sources were better than inorganic ones for mycelial growth. As the nitrogen source tested, com steep liquor, soytone and protease peptone were the best as a source of organic nitrogen sources. When ammonium phosphate as phosphorus sources was used, the enhanced mycelial growth was shown. Nicotinic acid was proved to be the most appropriate source of vitamin. After the mycelia of L. nuda DGUM 26501 was cultivated at $24^{\circ}C$ for 10 days in LNM broth (pH 7.0), the activities of extracellular enzyme were determined. The specific activity of $\alpha-amylase$ was much higher than those of other enzymes. However, little or no enzyme activities of $\beta-glucosidase$, CMCase, laccase and lipase were found.

Effect of Blanching Condition on the Quality of Carrot Juice (Blanching 조건이 당근쥬스의 품질에 미치는 영향)

  • Investigations were conducted on the effects of different blanching solutions and time on tile quality of carrot juice to minimize undesirable changes in color, taste and flavor of raw carrot. Juice yields were 65.9% in raw juice(RJ), 51.7~55.3% in juice by blanching in water(JBIW) and 44.6% in juice by blanching in acetic acid solution(JBIA). pH of JBIW was 6.12~6.37, similar to RJ, while that of JBIA was 4.85. Soluble solid was in the decreasing order of RJ, JBIW and JBIA. Turbidities of JBIW for 1 min and JBIA for 5 min after 3 day storage at $4^{\circ}C$ were maintained by 94% compared to the original juice. Only 44~46% of $\beta-carotene$ was extracted from carrots during pressing, and f-carotene was extracted to a greater extent than $\alpha-carotene.$ Sensory evaluation indicated that JBIW for 1 min was superior to nth and commercially available juice in overall acceptance.

Accumulation of the Conjugated Linoleic Aacid (CLA) in Tilapia ( Tilapia nilotica) Fed Diets on Various Levels of CLA (CLA (Conjugated linoleic acid) 급이수준에 따른 역돔의 CLA 축적량)

  • Effects of conjugated linoleic acid (CLA), known as an effective anticarcinogen in several animal models, on the tilapia were investigated. The CLA was made from safflower oil by alkaline isomerization method. Isomers in CLA such as cis-9, trans-11 and trans-10, cis-12 occupied over $80\%$, and other isomers was below $20\%$. In experiment, 250 fishes (average weight is 32 g) were divided into 15 fishes per five treatment and triplicate group for 8 weeks: control, $1\%$ CLA, $2.5\%$ CLA, $5.0\%$ CLA, and $10\%$ CLA diets. Daily growth rate and feed coefficiency were measured every week. The most effective diet for the growth rate and feed coefficiency of tilapia was $1.0\%$ CLA diet group. Every two weeks, sampled and determined the contents of CLA in the muscle and liver, After 8 weeks, $1.0\%$ and $10.0\%$ of CLA fed group accumulated the CLA as 41.3 and 180.9 mg/g of fat in their muscle respectively, Also, n-9 and n-3 fatty acid (FA) compositions were almost not changed in the muscle and liver. But n-6 fatty acid was changed according to the contents of fed CLA. The $1.0\%$ CLA fed group was shown the highest contents of n-6 FA and the $10.0\%$ CLA group was shown the lowest contents of n-6 FA.
