냉면소스 제조공정의 표준화를 통한 품질향상 연구

  • 최근 소득수준의 향상과 여성의 사회진출로 인해 우리의 식생활도 많은 부분이 사회화되고 있다. 즉 완전조리식품과 반조리식품이 급격히 증가하고 있다. 기존의 인스탄트식품이 저가격, 반건강 특성으로 생각되어진 반면 최근 고가의 건강 지향적인 반조리식품으로 변화하고 있다. 이러한 경향은 식품가공기술 및 식품포장기술의 향상과 사회적요구에 부합된 결과로 사료된다. 이에 대표적인 경우가 다양한 소스류의 상품화 경향이다. 본 연구개발 사업에서 이루어지는 냉면소스도 가정에서 하기에는 번거롭고, 건강지향적 식생활로 메밀의 수효가 증가하여 냉면의 소비가 증가하리라 생각된다. 현재 시판되고 있는 기존의 몇몇의 제품들이 있기는 하나 제조공정, 보존상태 등에서 많은 문제점이 있다. 따라서 문헌 통하여 기존제품의 배합비를 조사하고, 냉면소스 배합비의 최적화를 위해 10여차례에 걸쳐 20종류의 소스에 대하여 배합비의 변화와 관능검사에 의해 배주스, 양파, 겨자, 마늘, 설탕, 물엿, 소금, 미원, 참기름, 고춧가루, 진간장, 생강즙, 식초, 파인애플로 구성된 소스를 개발하였다. 개발된 소스의 pH, 당도, 염도, 색차를 측정하여 관능검사의 결과와 비교 검토하였고, 식품재료의 차이에 의한 맛의 변화를 보정하기 위한 근거로 사용하였다. 저장성 검사를 위해 일반세균과 대장균을 검사하였다. 그 결과는 다음과 같다. 소비자들의 기호에 맞는 냉면소스를 개발하기 위해 다양한 식품의 배합을 시도하여 상품성이 있을 것으로 판단되는 recipe를 완성하였고, 일반인(주부)들을 상대로 한 호감도 조사에서도 좋은 성적을 나타내었다. 시료를 1주간격으로 한달간 실험한 결과 쇠고기가 들어 있는 제품을 제외하구 대장균은 검출되지 않았으며 일반세균은 위생법의 허용치내에 있었다. 쇠고기가 있는 제품은 가격상승과 저장성에 문제가 있어 이를 제하고 최종적인 레시피를 결정하였다.있었다. 그러나 식이 섭취상태와의 관련성은 나타나지 않았다. 이상에서 생활습관이 신체계측치 및 혈중 지질 농도와 일부 상관을 보이는 것을 알 수 있었으며, 건강위험 요인도 관찰할 수 있었다. 고지혈증은 심혈관계질환의 주요한 위험 인자로 알려져 있으며, 그 유발 요인에는 여러 환경적인 요인과 식이 요인이 있다. 또한 생활습관은 영양소의 섭취량에도 영향을준다. 이처럼 식이 요인과 생활습관은 단독 혹은 상호 영향을 주게 되므로 고지혈증 및 심혈관계질환을 개선하려면 식사요법과 생활습관 교정을 병행하여야 한다. 고지혈증의 원인 중의 하나로 지적되고 있는 음주와 흡연은 상호 유도작용이 있으므로 금연이나 절주를 하고자 할 경우 두가지를 동시에 자제해야 효과적일 것으로 생각된다. 폐경후 여성들에게 발생 빈도가 높은 심혈관질환의 위험요인인 고지혈증을 예방하고자 하는 노력은 폐경후 여성들의 삶의 질적 향상을 위해서도 매우 중요하다. 또한 균형식 섭취와 운동을 통해 혈중 지질 수준을 건강하게 유지하고, 비만으로의 이행을 방지함으로써 심혈관계질환을 예방하도록 하여야겠다.료보다 절반이하 수준이었다. A Study on the Ordering Status of Traditional Landscape Design Service in Cultural Heritage (문화재의 전통조경설계용역 발주실태 연구)

  • This study identified the scale that traditional landscape design has taken up by analyzing a total of 1037 services for design of cultural heritage that had been ordered by the government agencies from 2018 to 2020, and has drawn characteristics of traditional landscape design focusing on major cases. The results are as follows. First, the number of order cases for traditional landscape design has shown differences annually in the services of design of cultural heritage, but the design amount has been found to have the similar average annually, which confirmed that the same level has been maintained each year. It was found that the number of cases of traditional landscape design requiring responsibilities or participations of landscape engineers for 3 years in the entire design had a high proportion of approximately 26%. Second, the traditional landscape design has required professional knowledge and experiences of landscape engineers that could not be replaced by the business operator for design of cultural heritage consisting of architects. The expertise has been shown differently depending on types of construction. First, the topographical design for the work to build a foundation has required understanding of ground shapes and its elevations and professional knowledge on calculation of the amount of the earth work and the remains maintenance technique etc. The plantation design has required basic knowledge on growth characteristics of trees and the environment for growth and understanding of the vegetation landscape of the past. Meanwhile, the design for traditional pavement and traditional landscape structures and facilities has required the expertise on traditional materials that are different from the modern ones and their processing and construction methods. The understanding of changes to water paths and ecosystem, the principles of fluids, and characteristics of each type of fluid was essential for the design for the ecological landscape work including the maintenance of a water system such as rivers etc. As such, the traditional landscape design has a scale accounting for approximately one fourth of the entire cultural heritage design and requires the expertise differentiated from other fields. This improves the provisions of the current law on limiting the actual design, suggesting the need for the establishment of a traditional landscape design company so that all traditional landscape designs can be carried out by landscape engineers.

  • The external unbonded strengthening offers advantages in speed and simplicity of installation over other strengthening techniques. Unlike externally bonded steel plate or carbon fiber sheet, surface preparation of the concrete for installation of high-tension bar is not required and installation is not affected by environmental conditions. Anchoring pin or anchoring plate are installed at the end of beam to connect the high-tension bar to concrete beam. The deviator are used in order that supplementary external bars would follow the curvature of the tested beam. A set often laboratory tests on reinforced concrete beam strengthened using the technique are reported. The main test parameters are the section area of strengthening bar, the depth of deviator and the number of deviators. The paper provides a general description of structural behavior of beams strengthened using the technique. The test result of strengthened beam are compared with those from a reference specimen. It is shown that the reinforcing technique can provide greater strength enhancements to unstrengthened beam and that the provision of deviator enhances efficiency. The ultimate moment of specimen with two deviators was higher than that of specimens with one deviator. It is also shown that the external bars enhance strength of beams in shear.

Evaluation of Surface Moisture Content of Liriodendron tulipifera Wood in the Hygroscopic Range Using NIR Spectroscopy (근적외선 분광분석법을 이용한 백합나무 목재의 섬유포화점 이하 표면함수율 평가)

  • For efficient use of wood, it is important to control moisture of wood in processing wood. Near-infrared (NIR) spectroscopy can be used to estimate the physical and chemical properties of materials quickly and nondestructively. In this study, it was intended to measure the moisture contents on the surface of wood using NIR spectroscopy coupled with multivariate analytic statistical techniques. Because NIR spectroscopy is affected by the chemical components of the specimens and contains signal noise, a regression model for detecting moisture content of wood was established after carrying out several numerical pretreatments such as Smoothing, Derivative and Normalization in this study. It shows that the regression model using NIR absorbance in the range of 750~2,500 nm predicts the actual surface moisture content very well. Near-infrared spectroscopy technique developed in this study is expected to improve a technology to control moisture content of wood in using and drying process.

Restoration of Earthenware & Porcelain Cultural Assets using 3D Printing (3D 프린팅을 이용한 토기·자기 문화재 복원 연구)

  • Cultural assets restoration is being considered highly as a practical way to extend the lifespan of damaged cultural assets and re-highlight their value. However, restoration process has been mostly dependent on the manual work involving the experience and skill of a person performing restoration, thereby requiring much time and effort. In recent, it became possible to apply a method allowing restoration to be performed more accurately and easily according to the material characteristics and shape of cultural assets. Namely, it is to use a method of printing out the 3D shape data computed in computer as real object by using 3D printer for the restoration that has been performed manually. The missing part of a cultural asset is computed into computer data first and is printed out by using 3D printer to undergo a simple shaping process. The result of 3D printer application showed that repetitive output and shape and figure revision of digital data were possible, and it was possible to improve the degree of completedness of restoration through test output using various types of restoration materials using various materials. For the purpose of verifying the possibility of applying 3D printer to restore missing part of earthenware, two pieces of modern reproductions, namely, the Seven Treasure Incense Burner and Earthenware with Wagon Wheel Decoration, were artificially damaged. The restoration result showed that compared to manual work, it showed better effectiveness in curtailing work time and reproducing accurate shape. On the other hand, secondary manual work was slightly needed for detailed binding and to vividly express surface texture.

수삼 내부의 자기공명영상 특성

  • 최근 NMR, MRI, x-선 등 전자파의 기술이 발전되면서 이들을 이용하여 내부품질을 검출하는 보다진보된 연구가 수행되고 있다. 관련 연구로는 자기공명영상을 이용하여 내공수삼 및 정상수삼의 내부를 촬영하여 T$_1$, T$_2$의 값을 측정하여 내부조직의 이상유무를 추정하였고, 또한 MRI에 의해 수삼의 내부품질 뿐만 아니라 연근 판정 가능성을 검토하는 등 많은 연구가 수행되고있다. 이 연구에서는 MRI 시스템을 이용하여 수삼의 내부단면 영상을 획득하여 내부결함 유무를 검출하고, 또한 동일한 수삼을 대상으로 홍삼 제조 후 내부품질의 변화 특성을 조사하고자 수행하였다. 공시재료는 충북 음성에 있는 인삼연초연구원에서 4~6년 근 된 수삼을 이용하였고, 시험 장비로는 국내 MRI 생산 전문 업체인 ISOL Tech. Co.에서 개발한 의료용 장비인 CHORUS 1.5T(자속밀도 1.5 Tesla)를 이용하였다. 슬라이스 두께/간격은 5mn/5mn, 촬영 단면수는 15장/시료, 영상영역(FOV)은 180mmx90mm, image size는 256$\times$128 pixels 그리고 TR/TE는 각각의 이완상수별로 500/13(Tl), 4,000/63(T2) 및 2,200/21(Pd)에 대한 단면영상을 얻었다. 5개의 수삼을 동시에 뇌두에서 뿌리 쪽으로 MR 단면영상을 획득하였다. 이완상수 T$_1$, T$_2$, Pd에 대해서 MR 영상을 획득하였으며, 총 15장의 단면 영상 중 내부 상태를 가장 잘 식별 할 수 있는 영상을 조사한 결과 T$_1$과 Pd에서 촬영한 영상에서는 내부상태가 잘 나타났으나, T$_2$에서 얻은 영상은 영상의 손실이 많이 발생되었다. 한편, T$_1$에 대해서 뇌두에서 뿌리쪽으로 가면서 각 위치에 따라 수삼 내부의 부패된 영상이 나타나 이에 대한 판정은 가능한 것으로 나타났다. 2000년도와 2001년도에 각각 수확.저장된 수삼을 부위별로 단면영상을 MRI로 측정하고, 그 시료를 인삼연초연구원(음성시험장)에서 홍삼으로 제조한 후 수삼 상태에서의 내부품질과 홍삼으로 제조된 후의 내부품질 변화를 조사하였다. 총 20본의 수삼을 MRI 시스템으로 영상을 획득하였고, 모든 시료에 대해서 내부조직의 상태를 관찰하였다. 수삼의 수분함량은 뇌두로부터 1cm부위를 절단하여 조사하였고, 수삼조직은 절단시 단면의 달관 조사에 의한 성적이며 홍삼품질은 제조삼의 조직상태를 절단하여 육안판별로 검사하였다. 총 20본의 수삼 중 정상은 16본 이었고, 이들은 홍삼으로 제조된 후 내공 내백 등이 혼재되어 나타났으며 정상수삼이 정상홍삼으로 나타난 경우는 5본이었고, 내백은 5본, 내공은 6본으로 조사되었다. 또한 수삼에서 4본은 썩은 부위가 포함되어있는 수삼이었는데 홍삼으로 제조되었을 때 3본은 내백으로 되었고 1 본은 수삼에서 썩은 부위가 1/4정도로 미미해서 홍삼 제조시 정상으로 나타났다. 일반적으로 홍삼 제조시 내공의 발생은 제조공정에서 나타나는 경우가 많으며, 내백의 경우는 홍삼으로 가공되면서 발생하는 경우가 있고, 인삼이 성장될 때 부분적인 영양상태의 불충분이나 기후 등에 따른 영향을 받을 수 있기 때문에 앞으로 이에 대한 많은 연구가 이루어져야할 것으로 판단된다.

  • The power tools is the product using working power generated by electric motor. Many companies are manufacturing numerous devices. Main features of tools are included various assembled products, small, light and solid and durable enough to match several standards. Fundamental requirements for the product is excellent performance and convenience for use. The quality of them depends on the equipped motor'(s) capability, accuracy of gear and endurance against worn-out. By adapting the state-of-the-art parts, they could be used in the place from home to heavy industry broadly. They can be classified electronic drills, grinders, saws and sanders families for the household appliances. For industrial tools, bore drill, grinder, polisher, and driver drill are classified as special and high priced group. This study presents the strategy of power tool development of BOSCH, BLACK&DECKER and KEYANG. Their products were analyzed in terms of product line and product mix concept. Then they are examined by design elements, such as color, shape and material for housing. As an analysis method, the image scale parameter and criteria were applied to each company's product.

Pretreatment and Storage Condition of Abnormal Fermented Oriental Melon for Fermentation Use (참외주 제조를 위한 이상발효 참외의 원료전처리 및 저장조건의 확립)

  • Since abnormal fermentation and short storage duration of oriental melon are the main problems causing loss in commercial value, it is necessary to develop a food processing method using uncommercial melon. In this study, we suggested the effective pretreatment and storage conditions of melon as the material for alcoholic beverage production. Abnormally fermented melon had smaller carbohydrate and larger moisture content than normal one, indicating that carbohydrate in normal melon was probably converted to fermented products during fermentation. The sugar content of oriental melon was increased after fruiting and the highest value $(12.4^{\circ}Brix)$ was found at 5 weeks of storage. The maximum storage duration of normal and fermented oriental melons were 25 and 7 days at $4^{\circ}C$, and 8 and 4 days at room temperature, respectively. The oriental melon for fermentation-use could be conserved after slicing for 30 days at $4^{\circ}C$ with the addition of 1.5% citric acid and for one year at $-20^{\circ}C$ with the plastic film sealing, respectively.

A Study of material analysis and its experimentation of metamorphosis and its utilities in Copper Alloy plates for contemporary metal craft (현대금속공예용 동합금판의 재료분석과 형질변환 실험 및 응용에 관한 연구)

  • In this research, the copper alloy plates C2200, C5210, C7701, C8113 were selected to make datum and to identify further usage of metal craft experimentation. For its experimentation, the general welding and TIG welding methods were researched; for 2nd experimentation, the Reticulation and Electroforming skill's differences in color and temperature were researched. With these methods 3 different kinds of works are introduced for sample studies. For this research, Dr. Lee, Dong-Woo who works in Poongsan Metal Co, supported 4 kinds of copper alloy metals. Which are Commercial bronze (Cu-Zn), Deoxidiged Copper(Cu-Sn-P), Nickel Silver (Cu-Ni-Zn), and White Bronze (Cu-Ni); they were applied partly and wholly by the method of Laminatin, Reticulation, Fusing, and Electroforming skills. In case of C2200, the brass, the A. C. TIG welding method is better under 2mm slight plate; the D.C. TIG welding is better upper 2mm plate; and 250~300$^{\circ}C$ is recommended for remain heat treatment. In case of C5210, not having Hydrogen in high temperature return period, doesn't need Oxygen in high temperature and hardening in comparative high temperature neither, it is good for welding. It contains Sn 2-9% ad P 0.03-0.4% generally; and in accordance with the growth rate of Sn contain amount, the harden temperature boundary become broad. In case of cold moment after welding, they are recommended that higher speed TIG welding, smaller melting site and less than 200$^{\circ}C$ for pre-heating temperature. In case of C7701, the 10-20% Ni, 15-30% Zn are widely used.. If it is upper 30% Zn, it become (${\alpha}+{\beta}$) system and adhesive power rate become lower, and the productivity become lower in low temperature but the productivity become higher in high temperature. Nickel Silver's resistance of electricity is well; and the heatproof and incorrodibility is good, too. Lastly, in case of C8113, good at persistence in salty and grind; high in strength of high temperature. In case of white brass, contain 10-30% Nickel and hardened in high temperature and become single phrase. For these reason, the crystallization particles easily become large, if the resistance become higher small amount of Pb, P, S separation rate become higher.

Material Characteristics of Gold Artifacts of Sarira Reliquary inside Stone Pagoda of Mireuksa Temple Site (미륵사지 석탑 출토 사리장엄 금제유물의 재료학적 특성)

  • When sarira reliquary was found in stone pagoda of Mireuksa Temple, there were 494 gold artifacts, including inner gold pot, gold plate with inscription for Sarira enshrinement, etc. Most of gold artifacts were crafted, but there were 22 gold plates and 4 gold ingots, which did not have any specific shape. It was considered that they had not been crafted. Since gold exists as a metal rather than a metallic oxide in nature, in general, it can be crafted by melting and shaping. However, gold in nature has impurities so it has to be refined to have malleability. The characteristic features were identified through the analysis of gold artifacts from sarira reliquary found in stone pagoda of Mireuksa Temple. The analysis result showed that there were 3 types of gold; pure gold artifacts, artifacts produced with silver containing gold and natural gold ingots. Inner gold pot, gold earrings and gold small beads were produced with pure gold and they contained less than 1wt.% of copper. It seemed like they were produced as pure gold to be shaped by hammering. Gold plate with inscription, tweezers, gold earrings, ingots, etc. were produced with silver containing gold as they had to be more solid. Gold ingots seemed to be natural gold considering the distribution of silver and copper in them, but it cannot be concluded as there are not enough information on gold ingots in Korea. The comprehensive research on gold ingots from various regions in Korea has to be carried out to confirm the above. Sarira Reliquary showed the very sophisticated gold craftsmanship. Gold ingots with the inscriptions, which say 1 nyang, were approximately 14g. Considering the weight of these ingots as standard, weights of other ingots were half nyang(7g), 2 nyang(28g), etc.
