  • 핵연료의 피복관은 핵분열로부터 발생하는 방사성 핵분열생성물이 외부로 유출되는 것을 차단하는 첫번째 방어막의 역할을 하며, 피복관의 건전성은 정상 상태는 물론 이고 사고시에도 위해한 핵분열생성물의 방출을 억제하는 역할을 충분히 수행할 수 있도록 유지되어야 한다. 단사정 산화막 영역에서만 수증기 압력에 의한 산화가속 효과가 존재하는데, 아직 이를 설명할 수 있는 산화속도 모형이 설정되어 있지 않은 상태이다. 본 연구에선 실험자료를 근거로 하여, 절실히 요구되는 $1000^{\circ}C$ 이하 영역에서 의 수증기 압력을 고려한 산화속도식을 개발하여, 보다 정확한 원전 사고해석이 가능 하도록 하는데 기여하려 한다.

Antioxidant activity and inhibitory effect of melatonin and the relative indole compounds on perilla oil oxidation (멜라토닌 및 관련 인돌 화합물의 산화방지능과 들기름 산화에 대한 억제 효과)

  • Melatonin, known as a powerful wide-spectrum antioxidant, is consumed as a food supplement in some countries, but its applicability as an antioxidant additive was not yet studied. Therefore, we evaluated the antioxidant activity of melatonin by DPPH, ABTS, FRAP and ORAC assays as well as its ability to inhibit perilla oil oxidation. The activities of four other related indoles were also compared. Melatonin showed the highest antioxidant activity (mmol trolox equivalent per mol indole, mmol TE) in ORAC (2,159) assay, but a low antioxidant activity in DPPH (0.63), ABTS (91), and FRAP (764) assays, whereas serotonin showed an opposite result. Addition of 1% (w/w) melatonin to perilla oil extended the induction period of oxidation up to about 2 times ($2.93{\pm}0.47h$) compared to that of control ($1.43{\pm}0.26h$) in the Rancimat assay, corresponding to almost 50% of the ability of butylated hydroxyl toluene (BHT). Tryptamine was the most effective indole that inhibited perilla oil oxidation ($9.53{\pm}1.43h$).

Effect of Hot Pepper Seed Oil, Capsaicin, and Alpha-Tocopherol on Thermal Oxidative Stability in Lard and Soy Bean Oil (고추씨유, 캡사이신 및 토코페롤의 첨가가 돈지와 대두유의 산화안정성에 미치는 영향)

  • This study was designed to compare the thermal oxidative stability of lard, soy bean oil, and hot pepper seed oil for 0-3 d at $100^{\circ}C$, and to evaluate the effect of capsaicin on thermal oxidative stability in lard and soy bean oil. As result, thermal oxidation stability was shown in the order hot pepper seed oil>soy bean oil>lard for 0-3 d at $100^{\circ}C$. In blended oils, hot pepper seed oil effectively inhibited lipid oxidation when mixed with lard than soy bean oil by showing the ratio of 30% pepper seed oil plus 70% lard and 60% pepper seed oil plus 40% soy bean oil inhibited lipid oxidation during storage periods. And to investigate the antioxidative effect of antioxidants such as capsaicin and alpha-tocopherol in hot pepper seed oil, 1,200 and 2,400 ppm capsaicin, or 0.3% alpha-tocopherol were added in soy bean oil and lard and stroed for 0-3 d at $100^{\circ}C$. Capsaicin inhibited lipid oxidation in lard but not in soy bean oil, however alpha-tocopherol exhibited a prooxidaton effect in soybean oil. Therefore, it suggests that the application of hot pepper seed oil or capsaicin in lard may be better for thermal oxidative stability.

Antioxidative Effect of Salicornia herbacea L. Grown in Closed Sea Beach (폐염전에서 채취한 함초(Salicornia herbacea L.)의 항산화 효과)

  • This study was designed to investigate the antioxidative effect of glasswort (Salicornia herbacea L.) grown in closed sea beach. To compare antioxidant effects of glasswort plant parts, dried ground leaves, stems, and roots of glasswort were exploited for investigation of antioxidant activity Antioxidant activity for the samples was investigated by Rancimat and TBA method. The oxidative stability determined by the Rancimat technique showed a variation in antioxidative index (AL) between the different plant parts, ranging from 1.0 to 3.6. Oxidative stability from ground stem sample of glasswort harvested in the closed sea beach was the highest, and followed by leaf and root. Stem had higher oxidative stability than ascorbic acid. Antioxidatiue effects of glasswort were increased in dose-dependent manners, and antioxidant activity by addition of glasswort with same amount to 4% oil was similar to the activity of ascorbic acid. Specially, 8~10% glasswort addition to oil showed similar antioxidative effect to 1% $\alpha$-tocopherol.

  • One of the major sources of air pollution is urban particulate matter (UPM), which causes lung diseases involving oxidative stress, inflammation, and cancer. Codonopsis lanceolata (CL) has been used in East Asia as a traditional oriental medicinal ingredient for lung diseases (e.g., asthma and bronchitis). However, the connection between the impact of CL and UPM in the lungs has rarely been investigated. This study aimed to confirm the inhibitory activity of the ethanol extract of CL (ECL) against oxidative stress and disruption of tight cell junctions in human pulmonary epithelial cells after exposure to UPM. As the lung cells were pre-treated with ECL, the UPM-induced increase in cellular reactive oxygen species production suppressed tight junction proteins (e.g., N-cadherin, fibronectin, occludin, zonula occludens-1, and claudin-4). These results suggest that ECL prevents the possible effects of UPM toxicity on the lungs.

Effects of Oil Unsaponifiables and Plant Extracts on the Thermal Oxidation of Oils at $180^{\circ}C$ (유지 불검화물과 식물체 추출물이 식용유의 $180^{\circ}C$ 가열 산화에 미치는 효과)

  • The effects of oil unsaponifiables (8 species) and methanolic plant extracts (53 species) on the thermal oxidation of oils during 14 or 16 hour heating at $180^{\circ}C$ were studied by analyzing the fatty acid composition of soybean oil or cottonseed oil. All the unsaponifiables tested did not show any antioxidative activities on the thermal oxidation of soybean oil. However, among the 53 species of methanolic plant extracts, some species (Rheum undulatum L., Chelidonium majus L. var. asiaticum and Eugennia caryopyllata T.) showed very strong antioxidative activities on the thermal oxidation of cottonseed oil. The antioxidative activities of methanolic extracts of these 3 species on thermal oxidation of cottonseed oil during an extended heating period were also studied by heating cottonseed oils for 7 hours a day for 8 days at $180^{\circ}C$. The methanolic extracts of Chelidonium majus L. v. asiaticum and Eugennia caryopyllata T. greatly reduced both polymer formation and linoleic acid decomposition after the 8 day heating at $180^{\circ}C$. However, the methanolic extracts of Rheum undulatum L. was effective for the reduction of polymer formation, but not for the reduction of linoleic acid decomposition.

Antioxidative Effect of Bamboo Smoke Distillates in Palm Oil and Lard during Storage (죽초액의 팜유와 돈지의 저장 중 산패 억제 효과)

  • Effects of bamboo smoke distillates (BSD) in oxidative stability of oil during storage were investigated. BSD at 0.1, 0.5, and 1.0% was added to palm oil and lard, and peroxide, acid, and TBA values were measured during storage at $60^{\circ}C$ for 25 days. Induction periods and relative antioxidant effectiveness (RAE) for the oils were also investigated. Antioxidative effect increased with increasing concentration of BSD. Oil with 0.1% BSD had higher antioxidative effect than that with 0.02% BHT and much higher than that with 0.02% ${\alpha}-tocopherol$. Induction periods of lipid oxidation were 34.27 and 25.61 days for palm oil and lard, respectively. In oxidation reaction, palm oil was more stable during storage than lard. When 1.0% BSD was added RAEs of palm oil and lard were 233.92 and 2371.62%, respectively. Palm oil with 1.0% BSD showed higher antioxidative effect than that with 0.02% BHT, and lard showed much higher antioxidative effect than palm oil.

Oxidative Stability of Structured Lipid Containing Conjugated Linoleic Acid (복합 리놀레산을 함유하는 재구성지질의 산화안정성)

  • Structured lipid (SL) containing conjugated linoleic and caproic acid was produced from soybean oil through lipase-catalyzed reaction, and its oxidative stability was compared. When heated at $60^{\circ}C\;or\;150^{\circ}C$, soybean oil as control was more susceptible to oxidation than SL. When the antioxidants, such as ascorbyl palmitate, tea polyphenol, alpha-tocopherol, and rosemary extract, were added in SL, the induction periods of each antioxidant treats in SL were increased. The tea polyphenol showed the most effective antioxidant activity among them. When the emulsion form with SL was heated from oxidation, its oxidation stability was reduced compared to SL. The oxidation stability were also observed in photooxidation of SL.

Studies on the Improvement of Shelf-life in Spicy Beef Meat Using Chitosan (키토산 첨가에 의한 양념 우육의 보존성 개선에 관한 연구)

  • This study has been investigated the effect of different concentrations (0%, 0.05%, 0.1%, 0.5% and 1.0%) of M.W. 120 kDa of chitosan on improvement of shelf-life and quality in the spicy beef meat. The spicy beef meat without chitosan has not shown the extended effect of storage. However, concentration of more than 0.1% of chitosan have a very strong effect on shelf-life improvement of spicy beef meat. In antioxidation, spicy beef meat with 1.0% of chitosan has shown remarkable effect. The pH value and water holding capacity of these spicy beef meat revealed no significant differences among various concentration of chitosan treatments during storage periods. The value of red color was stable in samples treated with chitosan during period of storage.

Antimicrobial Activity and Oxidative Stability of Bamboo Smoke Distillate on Soybean Oil during Storage (죽초액의 항균활성 및 대두유에 대한 산패 억제 효과)

  • The antimicrobial and antioxidative effect of mechanical bamboo smoke distillate (MBSD) and traditional bamboo smoke distillate (TBSD) were investigated. Antimicrobial activity was demonstrated against all the microorganisms used in this experiment and was the higher in TBSD than in MBSD, with an activity concentration in the range 10-50 ${\mu}m/8$ mm paper disc. At the same concentration the antimicrobial activities of TBSD and MBSD was Gram positive bacteria>gram negative bacteria>Lactotobacillus>yeast. The minimum inhibition concentration (MIC) of BSC was 1.0-7.3${\mu}L/mL$, and the maximum lethal concentration (MLC) was 26.7-116.7 ${\mu}L/mL$. The soybean oil oxidative stability increased with increasing BSD concentration. The induction periods of oil oxidation were 3.75, 4.57 and 12.06 days for the samples with BSD added at 0.1%, 0.5%, and 1.0%, respectively. The RAE in soybean oil with 0.5% BSD was evaluated to be 168.45%, being similar to that of the sample with 0.02% BHT.
