Pattern recognition of multiplication environment of lactic acid bacteria in curd yogurt prepared by household fermentation system (가정용 호상 요구르트 발효기를 이용한 유산균 증식환경의 패턴 인식)

  • In this paper, it was investigated that the pattern recognition of multiplication environment of lactic acid bacteria in the process of curd yogurt preparation using household fermentation system, which was manufactured by combining incubator with sensor module, data processing circuit and computer. It will be sufficiently applicable to determine the maximum ratio of the amount of air to mixed milk for preparation of high quality yogurt.

  • Resume 1. The toxic effect of $CuSO_4$ on the growth of yeast began in the 0.2mM and colony formation was completely inhibited in the 3mM $CuSO_4$ media. 2. The yeast strain which was trained sucessively from lower concentration media to higher one, could grow even in 10mM $CuSO_4$ media. 3. Rlb strain produced brown pigment in copper media. 4. Resistance of Rlb strain to $CuSO_4$ did not revert in non copper media. 5. The appearance of resistant strain was regarded as the result of "Mutation and Selection". 6. The alcohol fermentation ability of Rlb strain was lower than that of parent strain. 7. Rlb strain yielded some effective substance which induced the parent strain to resist against $CuSO_4$. 8. The dehydrogenase activity of yeast was inhibited by $CuSO_4$.

발효식품에서 분리된 젖산균으로 제조한 발효소시지의 특성

  • 발효식품에서 분리한 젖산균인 Lactobacillus plantarum(NFS #6-6과 S #3)의 발효소시지에서 starter culture로의 이용가능성을 알아보기 위하여 상업용 혼합 starter culture인 SL(Staphylococcus carnosus+ Lactobacillus pentosus)을 비교구로하여 발효소시지를 제조하고 그 특성을 상호 비교하였다. 발효 및 숙성 중 변화에서 starter culture의 종류에 관계없이 최종 43~45%의 수분이 증발되었다. PH는 SL 처리구가 가장 낮은 4.3 수준이었으며 수분활성도 역시 0.88로 SL 처리구가 가장 낮았다. 색도에서 적색도는 SL 처리구보다 NFS #6-6과 S #3 처리구가 더 높았으며 텍스쳐, 지방산, 그리고 유리아미노산의 변화에서 starter culture에 따른 차이점은 없었다. 관능평가시 색깔에서는 NFS #6-6 처리구가 SL 처리구에 비하여 낮았으나 향기, 맛, 텍스쳐와 기호도에있어서는 SL과 비슷한 결과를 나타내었다. 유산균수는 발효 2일째 급격히 증가하는 추세($10^8 cfu/g이상)였으나 S #3과 NFS #6-6이 더욱 빠른 성장을 보였으며 Step. aureus는 모든 처리구에서 검출되지 않았다. 장내세균의 경우 SL 처리구에 비하여 우수하여 S #3 처리구는 3일째, NFS #6-6 처리구는 8일째부터 검출되지 않았으며 Listeria 역시 SL처리구보다 우수한 억제력을 나타내었다.

  • Many higher fungi were collected at Mt. Manduck, Mt. Duckwoo and Mt Jiri from June, 1990 to October, 1991. these higher fungi were identified. According to the resulting, following genus and species are newly to Korea : genus of Strobilurus and species of Strobilurus oshimae, Mycena chlorophos, Marasmius pulcherripos, Pholiota astragalina, cortinarous subedibutrs and Boletellus schinchanius.

  • 생분해성 고분자 재료들은 지구환경 보호측면에서 다양한 분야, 즉, 1회용 재료, 농업용 필름 및 생체적합성 재료(약물 방출, 봉합사) 등에서 실용화되거나 활발한 연구가 진행되고 있다. 이들 재료의 상업적응용은 물성, 분해능, 제조가격, 대량생산 등에 의해 좌우 될 수 있다. 이들 중 특히, 분해 속도의 측정 및 조절은 본질적인 응용에서 가장 중요한 위치를 차지 하고 있다. 분해 속도의 규명 및 조절은 제품의 수명을 제어할 수 있고 응용분야를 넓힐 수 있다. 본 연구에서는 단분자 막장치를 이용하여 생분해성 고분자의 분해 속도 및 이성질체간의 complex 형성을 통한 분해속도의 제어를 연구하였다. complex의 형성은 분해성 고분자의 분해속도를 현저히 감소시키는 것으로 나타났다.

  • 비만 특히 복부비만은 여성의 임신 및 출산에 많은 악영향을 미친다. 비만이 가임력에 영향을 미치는 기전은 명확히 밝혀지지는 않았지만, functional hyperandrogenism과 insulin resistance에 수반된 hyperinsulinemia가 중요한 역할을 하리라 여겨진다. 또한 지방조직은 활발하게 대사 작용이 일어나는 장소로서 steroid hormone을 modification 시키고, 여러 가지 adipokine들을 분비시키는데 이런 지방조직의 분비물들은 생식계에 영향을 미친다. 비만이 생식계에 미치는 영향은 간략히 다음 표와 같이 정리할 수 있다 (Table 3). 특히 PCOS 환자에서 비만은 hyperinsulinemia에 의한 난소의 steroidogenesis 증가와 SHBG의 감소에 연관되어 hyperandrogenism 과 무배란의 원인으로 작용한다. 비만은 약물에 의한 배란유도 및 체외수정의 성공률 또한 떨어뜨리며, 임신이 되더라도 자연 유산, 조산, 임신성 당뇨, 임신성 고혈압 등의 위험은 높인다. 이와 같이 최근 급격히 증가하는 비만은 여성의 건강 특히 생식계에 많은 문제를 야기시킨다. 특히 청소년기의 비만은 성인이 된 뒤 PCOS로 발전하여 불임, 심혈관 질환 등과 같은 많은 합병증을 일으킬 수 있으므로 세심한 주의를 기울여야 하겠다.

  • In severe cases of denture stomatitis, antifungal drugs are sometimes ineffective. This case is a 72-year-old patient who was prescribed fluconazole for five months but had no improvement in symptoms. After re-diagnosis, medication was performed, and temporary dentures were fabricated for oral rehabilitation. This report describes that microbiological analysis and adjuvant therapy can be helpful, in case does not improve symptoms even with continuous medication of antifungal agent.

A Changes in China's Landscape Scenic Sites System and Suggestions for Application of Major Policies to Scenic Sites of Korea (중국 풍경명승구 제도의 변천과 주요정책의 국내 명승 적용 제언)

  • This study aims to distinguish what can be used in consideration of the national situation with Korea for Chinese Scenic and Historic Interest Areas, and the results are as follows; First, the Chinese Scenic and Historic Interest Areas expanded to the existing scenic cruise culture, travel, and tourism culture in the process of the influx of Western culture in the modern and contemporary era, and became popular as a travel destination. Accordingly, the Chinese government developed the tourism industry around the scenic sites, and thanks to the development of transportation and communication, the Scenic and Historic Interest Areas has become an important national heritage. This influenced the establishment of the system related to Scenic and Historic Interest Areas, and today, it is operated around the Scenic and Historic Interest Areas ordinance. Second, the designation of the Scenic and Historic Interest Areas is divided into the size of the site according to the area, and the process of selecting the Scenic and Historic Interest Areas classification, rating evaluation, and comprehensive value evaluation according to evaluation indicators and rating standards is carried out. Accordingly, according to the results of the classification, it is subdivided from the national level to the Scenic and Historic Interest Areas at the local level. Third, the central government is in charge of managing and supervising Scenic and Historic Interest Areas across the country, and the local government's construction department is in charge of supervising Scenic and Historic Interest Areas in the region. The management organization of Scenic and Historic Interest Areas established by local governments above the county level has a system that actually protects, utilizes, and manages Scenic and Historic Interest Areas. In addition, 14 detailed indicators are used to monitor Scenic and Historic Interest Areas. Based on these results, considering the application of the domestic scenic site policy, the method of developing the policy that has established the system from the perspective of the utilization of the people is worth considering. On the other hand, the evaluation of the designation and management system through the setting of various indicators has limitations in that it is difficult to secure objectivity in impressing or evaluating the landscape. Therefore, rather than blindly introducing quantified evaluation, it seems that guidance and promotion on how to expand consensus on scenic values and enjoy heritage should be prioritized.

  • Daegokcheon Stream in Daegok-ri, Ulju-gun, is an area with a developed valley and bedrock from Gajisan Provincial Park to the confluence of the Taehwa River across the Yangsan Fault. To measure the rock of Bangudae petroglyphs, the mineralogical weathering, joints, and scours or cavities at the bottom were confirmed. The measurement was carried out for a short period of time on the joint of the bedrock on which the Bangudae petroglyphs were engraved. Compared to the measured value obtained using existing optical fiber (Ch4 150 ㎛), a displacement value of 300 ㎛ was obtained using the non-attached, non-contact type of measuring instrument. In the future, it is inferred that this instrument could be used for various cultural properties if the HSV-value suitable for illuminance and various measurement experiences are stored.

  • To detect proper lytic assay conditions of the crude zumolyase from Arthrobacter luteus, effets of the various factors involved in the lytic system of Sacchromyces sake cultured with shaking in the malt extracts medium were investigated. The results are summarized as follows : 1. The susceptibilities of viable cells of S. sake from logarithmic growth phase to the lytic enzmye were much greater than those of the cells in lag and stationary phases. The cells cultured for 18 hr were the most susceptible to the enzyme. 2. Lytic activity of the enzyme toward the viable cells of S. sake was very low. It was, however, enhanced 4 folds of more by the pretreatment of the cells with 0.05 M sodium sulfite. 3. Lytic activity of the enzyme toward commercial baker's yeast cells was negligible, and the effect of sodium sulfite on the lysis of the cells also was nothing but a little. 4. The lyophilized cells of the baker's yeast showed more susceptibility to the lytic enzyme than viable cells of the yeast. No definite effect of sodium sulfite on the lysis of the lyophilized cells, however, was observed either baker's yeast of S. sake. 5. It appeared that the relationship between the reaction rate and the enzyme concentration on the lysis of the yeast cell walls followed enzyme kinetic theory, but one between the reaction rate and concentration of the yeast cells as substrates showed different pattern from that in enzyme kinetic theory. 6. After the preparation of crude zymolyase was kept at $7^[\circ}C$ for 10 days in the 0.05 M phosphate buffer, pH 7.5, the remainning lytic activity was about 80 %.
