Optimal Transplanting Time for 'Saemimyeon' Production in Youngnam Province (영남지방에서 쌀면용 새미면 최대생산을 위한 이앙적기 설정)

  • 'Saemimyeon,' a Tongil-type rice variety (Indica x Japonica), containing high amylose content, is suitable for rice noodle production. Currently, the major parts of the rice processing industry that include products such as rice flour and noodles are expected to partially replace the wheat flour market. The volume of the rice noodle market is growing and can contribute to the rice surplus problems and farmer's income. This study was carried out to promote productivity of 'Saemimyeon' by finding the most suitable transplanting times in Youngnam Province. The transplanting times were May $10^{th}$, May $17^{th}$, May $24^{th}$, May $31^{th}$, June $7^{th}$, and June $14^{th}$ and the planting distance was $30{\times}12cm$. The field experiment was conducted in the Miryang region (southern plain region of Korea) from 2015 to 2017. Our results suggested that the optimum transplanting dates were from May $17^{th}$ to May $31^{th}$, which resulted in an average yield of 750 kg/10 a. The average grain filling rate before May $31^{th}$ was more than 83% and it declined to 75% after June $7^{th}$. The average temperature range from heading to harvesting time was $21{\sim}25^{\circ}C$ and the estimated optimal temperature was $24^{\circ}C$, which is similar to that of May $24^{th}$ by regression equation. It is suggested that low temperature at seed maturation time caused the lower grain filling rate, and therefore 'Saemimyeon' needed to be transplanted before May $31^{th}$ for higher productivity. Estimated optimal transplanting time based on temperature was 1 ~ 2 weeks earlier than the optimum transplanting time for common japonica rice cultivars in Youngnam Province.

Evaluation of Incident Detection Algorithms focused on APID, DES, DELOS and McMaster (돌발상황 검지알고리즘의 실증적 평가 (APID, DES, DELOS, McMaster를 중심으로))

  • This paper is designed to report the results of development and validation procedures in relation to the Freeway Incident Management System (FIMS) prototype development as part of Intelligent Transportation Systems Research and Development program. The central core of the FIMS is an integration of the component parts and the modular, but the integrated system for freeway management. The whole approach has been component-orientated, with a secondary emphasis being placed on the traffic characteristics at the sites. The first action taken during the development process was the selection of the required data for each components within the existing infrastructure of Korean freeway system. After through review and analysis of vehicle detection data, the pilot site led to the utilization of different technologies in relation to the specific needs and character of the implementation. This meant that the existing system was tested in a different configuration at different sections of freeway, thereby increasing the validity and scope of the overall findings. The incident detection module has been performed according to predefined system validation specifications. The system validation specifications have identified two component data collection and analysis patterns which were outlined in the validation specifications; the on-line and off-line testing procedural frameworks. The off-line testing was achieved using asynchronous analysis, commonly in conjunction with simulation of device input data to take full advantage of the opportunity to test and calibrate the incident detection algorithms focused on APID, DES, DELOS and McMaster. The simulation was done with the use of synchronous analysis, thereby providing a means for testing the incident detection module.

Comparison of Hydrolysis from In Vitro Digestion Using Symmetric and Asymmetric Triacylglycerol Compounds by Enzymatic Interesterification (효소적으로 합성된 대칭형과 비대칭형 Triacylglycerol 혼합물의 In Vitro Digestion에서의 소화율 비교)

  • For developing indigestible lipids, symmetric triacylglycerol (ST) and asymmetric triacylglycerol (AT) were produced by enzymatic interesterification using high oleic sunflower oil, palmitic ethyl ester, and stearic ethyl ester in a shaking water bath. Used enzymes were Lipozyme RMIM for ST and Lipozyme TLIM for AT. To remove ethyl ester from reactants, methanol fractionation (reactant : methanol=1:5, w/v, $25^{\circ}C$) and florisil separation (reactant : florisil=1:8, w/w) were applied. Acetone fractionation (reactant : acetone=1:9, w/v) was implemented to separate triacylglcerol (TAG) species into ST and AT. Fractions I (before fractionation), II (after fractionation, liquid phase) and III (after fractionation, solid phase) were separated from ST, whereas fractions IV (after 1st fractionation, liquid phase) and V (after 2nd fractionation, solid phase) were from AT. From sn-2 fatty acid composition analysis, the sum of palmitic acid (C16:0) and stearic acid (C18:0) was 4.9~6.5 area% in ST (I, II, III), and 41.9~43.9 area% in AT (IV, V). In vitro digestion was performed for 0, 15, 30, 60, and 120 minutes at $37^{\circ}C$ in a shaking water bath. For the digestion results, hydrolysis of V was only 40% compared to others (I, II, III, IV) at 120 minutes due to its melting point ($49^{\circ}C$). However, initially (15 minutes), hydrolysis (%) was as follows: V$32.5^{\circ}C$, $31.8^{\circ}C$) and different slip melting points ($31.3^{\circ}C$, $19.5^{\circ}C$). Even though IV has a lower TAG content composed of two saturated fatty acids than III, it had a similar melting point.

The Effect of Calcium Supplementation on Soy Sauce Seasoning and Cooking Meat (액상칼슘을 첨가한 육류조리용 간장양념 및 그 제조방법)

  • In this study, liquid calcium was used to develop a calcium-fortified soy sauce-based seasoning for meat and the quality characteristics of the seasoning and cooked meat were investigated. All seasonings with different amount of liquid calcium (0, 2, 4, or 8%) showed no significant changes in pH and titratable acidity at $4^{\circ}C$ for 9 days; however, the control seasoning and seasoning with 2% liquid calcium (Ca-2%) showed significant decreases in pH and increases in titratable acidity during storage at $20^{\circ}C$ for 9 days, compared to the seasoning with 4% (Ca-4%) and 8% (Ca-8%) liquid calcium. We also observed that during storage at $20^{\circ}C$, the numbers of total aerobic bacteria, lactic acid bacteria, and yeast were significantly lower in Ca-4% and Ca-8% seasoning compared to the control or Ca-2%. The calcium contents in cooked meat seasoned with the control, Ca-2%, Ca-4%, or Ca-8% were 2.16, 33.47, 54.72, and 58.23 mg/100 g, respectively. Sensory evaluations demonstrated no significant differences in flavor, taste, juiciness, texture, and overall acceptability between the cooked meat samples. These results suggest that soy sauce seasoning supplemented with liquid calcium (2~8%) effectively increases the calcium content in cooked meat without adversely affecting its taste, flavor, and juiciness. Thus, this type of calcium-fortified seasoning may be helpful in combating the lack of calcium in modern diets.

Assessment of Dietitian's Nutritional Quality Management for School Food Service (학교급식 영양사의 영양적 품질관리 수행도 평가)

  • The purpose of this study was to evaluate school dieticians' performance of nutritional quality control, and further to establish effective and objective standards of nutritional quality control. Data for this study came from 200 school dieticians' responses in the Chungbuk area. The total quality management (TQM)-based questionnaire was structured. The questionnaire consisted of the following four fields (1) performance of nutritional quality control, (2) performance of stepwise food production to maximize nutrient preservation rate, (3) management of documents and records related to nutritional quality control, and (4) other relating matters. The items of the questionnaire were measured on a five-point Likert scale which ranged from 'strongly agree' to 'strongly disagree'. First, the analysis indicated that school dieticians performed 'least' on human resource management', 'mediocre' on nutritional quality control, and best on 'leadership'. Second, the analysis on performance of stepwise food production to maximize nutrient preservation rate showed that dieticians considerably endeavored to maximize nutrients of cooked food, but it was found out that the most of nutrient destruction can be caused by heating during cooking. Third, the result showed that the systematic use of documents and records for nutritional quality control was not sufficiently accomplished, especially in the production phase of food. In addition, the measure by the Pearson correlation coefficient indicated that there was a significant relationship between performance of nutritional quality control and performance of stepwise food production to maximize nutrient preservation rate, and between performance of nutritional quality control and management of documents and records related to nutritional quality control. Finally, the findings of this study suggest that more effort should be exerted to carefully establish TQM-based standards for the improvement of nutritionary quality.

Effect of PE Film Mulching and Irrigation Method on the Growth, Yield and Antioxidant Activity for Potatoes Grown in Winter Season at Saemangeum Reclaimed Land (새만금 간척지에서 감자 겨울재배시 비닐멀칭 및 관수방법이 생육, 수량 및 괴경의 항산화 활성에 미치는 영향)

  • This study was conducted to measure the effect of PE film mulching and irrigation methods on the growth, yield and antioxidant activity of potatoes tubers, in order to examine the possibility of cultivating potatoes in winter season in vinyl greenhouse on the reclaimed tidal land with weak ground inside the sea wall currently completed. The test was conducted on the sandy loam soil (Munpo series), and its salt concentration was 0.42% at the time of planting. The emergence speed per kind of PE film mulching was in the order of black > coloration > transparent > green color, with the black color showing the fastest speed. The temperature change during a day per kind of PE film mulching was in the order of transparent > coloration > green > black color. As for the salt concentration in the soil for each different way of water management, the salt concentration in the treatment of drip irrigation with 1 week interval was lower than that drip irrigation with 2 weeks interval. As for the growth of above-aerial part, plant length was higher, number of tiller and leaves were more and dry weight of above-aerial part was larger in the treatment of drip irrigaton with 1 week interval than drip irrigation with 2 weeks interval. As for the yield of potatoes depending on each way of water management, the yield in the treatment of drip irrigation with 1 week interval was more than drip irrigation with 2 weeks interval. The yield for each different kind of PE film mulching in the weekly drip-irrigation management section was in the order of transparent ${\geq}$ black ${\geq}$ coloration ${\geq}$ green color. In both of total phenol content and DPPH free radical activity experiments, the content and activity were higher with pear color vinyl treatment.

Seasonal Variations of Environmental Factors and Distribution of Anabaena cylindrica Growth-Inhibiting Bacteria in the Lower Daechung Reservoir (대청호 하류에서 환경요인과 Anabaena cylindrica 생장억제세균의 계절별 분포 변화)

  • The authors surveyed the seasonal variations of environmental factors, the distributions of heterotrophic bacteria and Anabaena cylindrica growth-inhibiting bacteria at each water layer in Daechung Reservoir to verify the role of bacteria during the extinction of bloom. Average water depth at site 1, 2, and 3 were 25.5 m, 15.0 m and 12.3 m, respectively. Water temperature showed a typical pattern seasonally. The variation of DO was relatively inverse proportional to that of water temperature, although it was irregular during summer time. DO decreased gradually to early May, fluctuated sharply after then, and followed by gradual increasement after middle of September. This variation pattern was notable at surface layer. There was remarkable difference in DO concentraion between surface layer and the other water layers during the period in which DO irregulary varied. The variation range of chlorophyll-a concentraion at surface layer in summer time was broad, and it was relatively high when DO was high. The population size of heterotrophic bacteria was high from Spring to Autumn, an declined after September when the water temperature droped rapidly. Especially this variation pattern was prominent at the surface layer. Bacteria that inhibit the growth of A. cylindrica was almost not detected by June, and its distribution increased in July. Afterward, it showed different variation pattern between each site. The distribution of A. cylindrica growth-inhibiting bacteria was higher at the middle and bottom layer than the surface layer in July and October, when it was larger at all sites for the study period. This result suggests that the antagonistic bacteria exhibit higher activity when host activity drops. These results also suggest that natural water bacteria control the distirbution of cyanobacteria, especially its activity as controller is remarkable when cyanobacterial growth declines.

Analysis of the Level of Microbial Contamination in the Manufacturing Company of Ginseng Products (인삼류(홍삼, 백삼) 제조·가공업체의 미생물 오염도 조사)

  • The aim of this study was to investigate microbiological contamination levels in the manufacturing company of ginseng products (white and red ginseng). Firstly, the contamination level for ginseng and each stage ginseng were 1.8~4.9 log CFU/g (total bacteria), 1.2~3.0 log CFU/g (coliform), 0.8~4.1 log CFU/g (fungi). However, only Bacillus cereus among pathogenic bacteria was detected from a few sample. The contamination of total bacteria tended to decrease as ginseng was being processing. Therefore, that of finished products (white and red ginseng) showed the lowest contamination level among each stage ginseng sample. That of fungi decreased steadily, although the contamination of fungi has tended to increase right after ginseng was steamed. Secondly, the contamination level for working tools and facilities were $1.7{\sim}4.7log\;CFU/cm^2$ (total bacteria), $0.4{\sim}4.0log\;CFU/cm^2$ (coliform), $0.9{\sim}4.2log\;CFU/cm^2$ (fungi). Especially, washing and peeling machines were higher contamination level. Finally, the contamination level of worker who washed and steamed ginseng was higher than worker who shaped, sorted and stored ginseng. Also, Staphylococus aureus was detected at 0.2~0.7 log CFU/hand on some wokers' hands. These results showed proper heating condition (temperature and time) and tidy manufacturing facility are the most important to avoid developing any microbiological problem of Ginseng Products.

Microbiological Quality and Safety Assessment of Commercial Ready-to-Eat Side Dishes Sold in Gyeonggi-do

  • We aimed to analyze the microbiological quality of the ready-to-eat (RTE) side dishes collected from traditional markets, supermarkets, and cafeterias in Gyeonggi-do in 2019. A total of 108 samples were analyzed for total aerobic bacterial counts, coliforms and foodborne pathogens depending on place of purchase and cooking methods. Results show that Bacillus cereus was detected in 14 (12.9%) out of 108 samples of side dishes, while no other foodborne pathogens were detected. The mean detected level (range) of total aerobic bacteria depending on place of purchase was 5.8 log CFU/g (3.0 to 8.2 log CFU/g) for traditional markets, 4.3 log CFU/g (2.4 to 7.8 log CFU/g) for supermarkets, and 3.80 log CFU/g (0.0 to 6.8 log CFU/g) for cafeterias, indicating that there was a significant (P<0.05) difference in total aerobic bacterial counts among places of purchase. Among the samples, the highest counts of total aerobic bacteria and coliforms were detected in saengchae (raw vegetables), followed by namul (seasoned herbs, vegetables), bokkeum (stir-fried foods), and jorim (foods cooked in soy sauce). The growth of total aerobic bacteria in seasoned soybean sprouts was inhibited when the sprouts were stored at 4℃ up to 24 h, whereas bacteria rapidly grew at 20 and 35℃ after 3 and 6 h, respectively. These results reveal that storage temperature might play a significant role for the microbiological quality of seasoned soybean sprouts when they are sold in markets. Thus, this study suggests that RTE side dishes should be stored at refrigerated temperature when being sold at markets as well as after purchasing to improve their microbiological quality.

A Monitoring for the Management of Microbiological Hazard in Rice-cake by Climate Change (기후변화에 따른 떡류의 미생물학적 위해관리를 위한 권역별 모니터링)

  • This study was conducted to investigate the microbiological contamination levels in rice cakes and rice flour due to climate change in three areas classified to their temperature and precipitation. We investigated the contamination levels of total aerobic bacteria, coliforms, Escherichia coli, Bacillus cereus, Staphylococcus aureus, Clostridium perfringens of rice flour and 3 rice cakes such as Garaetteok, Sirutteok and Gyeongdan. Contamination levels of total aerobic bacteria in rice flour were 4.9 log CFU/g. In a total of 70 rice flour, yeasts & molds and coliforms were detected in 42 and 52 samples at the levels of 43 CFU/g and 1.29 log CFU/g, respectively. S. aureus were detected in only 1 rice flour (1.66 log CFU/g) out of 70. In an investigation of contamination levels in rice cakes, the population of total aerobic bacteria were highest in Gyeongdan (5.18 log CFU/g) and coliforms were highest in Gareattock (2.93 log CFU/g). There was no detection of E. coli and B. cereus except for only 1 Gareattock (1.20 log CFU/g). There were no differences of contamination levels among the three areas. If constant monitoring of rice cakes and rice flour is conducted on the basis of this study, it is expected to be able to analyze the change of contamination levels in rice cakes and rice flour due to climate change.
