Physicochemical Characteristics of Silky Fowl(Gallus domesticus var. silkies) (백봉오골계육의 이화학적 특성)

  • In this study, the anatomic characteristics and the contents of nutritional ingredients and minerals of silky fowl and yeonsan ogolgye was investigated. Silky fowl is covered with white silky feather. There is a pinch of vertical white tassel on peak of the head, especially a silky fowl cock. The crown of a silky fowl has a nickname of phoenix crown, the crown of a cock is mostly like a rose, while that of a hen like strawberry or mulberry. The ear of silky fowl is mostly peacock green(Light blue turquoise), bronze for a small part. Peacock green is most common for Silky Fowl with a age of $60{\sim}150$ days, over the age of 150 days, the peacock green will be gradually replaced by purplish red. Beaks are leaden blue, short and stout while the face is smooth and fine. The lower jaw of silky fowl has comparatively long tiny hair, similar to beard. The two legs of silky fowl are covered with a handful of feather, or known as 'Putting on trousers'. Each leg of silky fowl has five talons. The whole skin, eyes, mouth, talons of silky fowl are grey black The bone and marrow of silky fowl are light black the periosteum is black. The whole meat, internal organs and abdominal fat of sillry fowl aye black the heart and leg meat are light black. Silky fowl meat had lower moisture and lipids content, but higher Ash and protein content than meats of yeosan ogolgye and general chickens. For mineral contents of leg muscle and breast muscle, silky fowl had higher contents of phosphorus (P), iron (Fe), potassium (K), zinc (Zn) than those of yeonsan ogolgye, while yeonsan ogolgye had higher contents of calcium (Ca) than that of silky fowl. The contents of iron (Fe) and zinc (Zn) is higher in leg muscle than in breast muscle for the silky fowl and yeonsan ogolgye. Leg muscle of silky fowl contains a lot of iron (Fe), about 4 times as much as that of leg muscle of yeonsan ogolgye. For the silky fowl and the yeonsan ogolgye, leg muscles contains a lot of zinc (Zn), about 5 times, 4 times respectively as much as that of breast muscle.

  • 오골계에 대하여는 이미 지상을 통하여 그 약효등이 널리 알려져 왔으며 천연기념물로 정하여 보호하고 있다. 오골계에 대한 일반의 관심이 높아지자 서울 한가운데에서 삼계탕을 오골계로 만들어 삼오골계탕이 대성업을 하고있다. 외지에 소개된 중국산 오골계에 대한 약효를 참고로 소개한다.

Physicochemical Properties of Korean Ogol Chicken, the Cross-Bred Ogol Chicken and Broiler Meat (오골계, 오골계교잡종 및 육용계육의 이 $\cdot$ 화학적 특성 비교)

  • This study was conducted to compare the biochemical properties on chicken meat among Korean Ogol Chicken(KOC), the Cross-bred Ogol chicken(CBO), and broiler(BRO). The results were as follows: the total protein content of the CBO was significantly(P<0.05) higher by 0.83% in male and by 1.37% in female than that of KOC. In the total protein content, CBO also had significantly(P<0.05) higher percentages than that of BRO(21.73%). In the total fat content of CBO, there was a significant (P<0.05)difference between male(0.69%) and female(0.91%). However, on the regarding both sexes the total fat content percentage of CBO was a greatly lower than that of BRO(1.92%). The CBO showed a significantly (P<0.05) higher calcium ion content, with 103.67 ppm and 118.00 ppm in male and female, respectively, than traditional broiler breed(73.80 ppm). But KOC and CBO contained similar calcium ion content in each other. The CBO contained significantly(P<0.05) higher essential amino acids(cystine, serine, lucine, phenylalanine, arginine, proline) than the BRO. In fatty acid composition, the CBO contained higher unsaturated fatty acids, with 34.22 and 26.23% for male and female, respectively, than the KOC containing 29.76 and 24.59% fur male and female, respectively. These were substantially higher levels compared to 19.59% in BRO. Higher trend in Docosa hexaenoic acid(DHA) level was observed in the CBO(5.47% and 2.89% for male and female, respectively) compared to the KOC(2.92% and 1.00%). While DHA in the broiler meat was not detectable. In the ratio between n-6 and n-3, the CBO(3.87∼6.14) appeared to have a better profile than BRO(25.71). The brightness of Commision Internationale do L'Eclairage for CBO were 56.97 and 58.06 for male and female, respectively. Whereas broiler meat showed 62.88. Collectively, these color properties were higher than KOC.

Quality Stability of High Pressure Boiled Extract of Ogol Chicken during Storage Periods (오골계 증탕액의 저장 및 관능 특성)

  • This study was conducted to examine quality stability during storage periods, herb high pressure boiled extract(HPBE)(T$_1$), Korean Ogol chicken HPBE(T$_2$), cross-bred Ogol chicken HPBE(T$_3$), cross-bred Ogol chicken meat hydrolyzed with flavourzyme(T$_4$) were pouch packaged and stored at 37$\^{C}$. After each period, TBARS, VBN, pH, total microbial counts and sensory properties were determined and the results were as follows. There was no noticeable difference in TBARS value until 42 days at the ambient environment among the treatments, but T$_4$ showed a significantly higher TBARS value at 56 days. There was a tendency for a higher protein decomposition as storage time increased, and in particular at 56 days, T$_1$ group showed a significantly higher values than other groups. Given to the sensory properties in which overall sensory preference decreased after 42 day, it was considered that the maximum storage time for the extract was less than 42 days at 37$\^{C}$.

  • 한국재래오골계는 천연기념물로 등록이 되어 있어 세계의 중요한 유전자원 중 하나이다. 현재 한국에서 사육되어 있는 오골계의 유전적 특성을 규명하기 위하여 미토콘드리아 DNA의 변이를 이용하여 계통 분석을 실시하였다. 총 31 마리의 한국재래오골계가 이 분석에 이용되었으며 10개의 haplotypes이 관찰되었다. NJ 방법으로 만들어진 계통도 분석을 통하여 이미 닭에서 알려진 A부터 C의 lineage를 포함하는 것으로 보아 한국 재래오골계는 아직도 높은 유전적 다형성을 유지하고 있음을 알 수 있었다. 이 연구 결과는 한국 재래오골계의 육종 및 보존 계획을 세우는데 유용하게 이용될 수 있을 것으로 사료된다.

  • Korean Ogol Chicken is a natural treasure in Korea and expected to be a valuable genetics resource in the world. As an initial step to investigate the genetic structures of this breed, phylogenetic analysis has been performed using mitochondrial DNA (mtDNA) sequence variations. Total 30 Korean Ogol Chickens were investigated in this study and they were grouped into 4 haplotypes, consisting 11 birds in the largest haplotype. Based on the phylogenetic analysis, chicken breeds were divided into three major groups and Korean Ogol Chicken were appeared all of these three groups indicating their large genetic mtDNA diversity. These results will be used for making breeding and conservation strategies for this breed.

한국재래오골계의 초기 성장기간에 따른 근육 조직학적 특성 및 생리학적 변이분석

  • 오골계의 초기성장 단계별 근육과 근섬유의 변화를 살펴보면 흉근 무게는 부화 직후에서 3주령까지 증가가 가장 뚜렷했으며 근섬유의 크기도 증가하였다. 이러한 결과를 바탕으로 가슴 근육과 근섬유 변화는 오골계의 초기성장단계에 있어서 체중변화와 연관성이 높음을 확인하였으며, 핵산 함량 및 단백질 변이 분석을 통해 근육내 이화학적 변이 및 성장잠재력의 변이를 심도있게 분석할 수 있었다. 또한 가자미근의 경우 0주령에서 3주령까지developmental muscle fiber 의 감소 및 소진과 adult muscle fiber의 형성 및 증가도 각 개체의 체중, 근육의 무게, 성장특성 및 성장가능성과 연관성이 있어, 이후 오골계의 근육성장특성 분석 시 조직학적 분석기법의 활용도 및 이화학적 변이 분석의 참고자료 및 활용도가 클 것으로 기대된다.

  • 올 여름은 찌는 듯한 무더위에 가을 장마까지 더해 어느 때보다 후덥지근했다. 필자가 지난 8월 양구를 찾았을 때도 무척 더웠는데, 갑자기 소나기가 내려 더위가 한 풀 꺽이나 했는데 오히려 습한 기운이 올라와 기진맥진 해 버렸다.

Effects of Bursectomy and Thyectomy on the Immunoglobulins in Korean Ogol Chickens (오골계의 Fabricius 낭과 흉선 적출이 Immunoglobulin 에 미치는 영향)

  • The concentration of serum proteins, lipoproteins, leukocytes and lymphocytes in bursectomy and thymectomy Ogol chickens were examined from 5 days to 150 days of age. Concentration of serum proteins and lipoproteins were measured by cellulose acetate electrophoresis. The results summarized as follows : 1. The gamma-globulin concentrations in growing Korean native chickens and Ogol chickens were increased 0.41$\pm$0.01~0.85$\pm$0.05 mg/㎗ and 0.50$\pm$0.01~0.98$\pm$0.08 mg/㎗ from 1 day after to 5 days of age and gradually decreased at 10 days of age, and thereafter increased 0.82$\pm$0.06 mg/㎗, 1.09$\pm$0.04 mg/㎗ at 100 days of age. 2. The serum apha-, beta-, gamma-lipoprotein concentrations of growing Ogol chickens were 74.1$\pm$6.8~240.2$\pm$9.7 mg/㎗, 89.7 5.7~225.8$\pm$11.3 mg/㎗ and 87.6$\pm$4.7-220.3$\pm$10 mg/㎗, respectively. The serum -lipoprotein concentrations from 5 days to 150 days of age Ogol chickens were significantly decreased. 3. The leukocyte and lymphocyte counts in bursectomy and thymectomy Ogol chickens slightly increased from 10 to 100 days of age. However the leukocyte and lymphocyte counts in thymectomy chickens were lower than in untreated chickens. 4. The Ig concentrations of 1 day to 50 days(0.30$\pm$0.03~0.58$\pm$0.04 g/㎗) in bursectomy chickens were similar to those found in untreated chickens and thereafer increased from 50 to 150 days of age(0.58$\pm$0.04~1.21$\pm$0.05 g/㎗). The Ig concentrations in thymectomy chickens increased significantly.
