  • The study of quality and salting characteristics of root vegetables other than Chinese cabbage was done to develop different kinds of Kimchi. The root vegetables lotus (Nelumbo nucifera) and lance Asia bell (Codonopsis lanceolata) were evaluated as main ingredients for Kimchi by measuring their physico-chemical and microbial properties. Salinity, pH, titratable acidity, reducing sugar, firmness, color change, moisture content, total viable counts, and lactic acid bacteria were investigated to identify adaptability for Kimchi. The initial pH of lotus and lance Asia bell showed 5.7 to 6.3 during the salting period, and the pH decreased with increasing salting periods. The reducing sugar contents of lance Asia bell showed 34.1 to 35.6 mg/g, which were significantly higher compared to lotus 3.2 to 3.4 mg/g. Titratable acidity also showed higher in salted lance Asia bell at 0.36 to 0.4%, while lotus showed 0.17 to 0.27%. Lactic acid producing bacteria increased in lance Asia bell during salting periods and reached $2.1{\times}10^4CFU/g$ after 48 hr of salting. However, no lactic acid bacteria were detected in lotus. As a result of this physico-chemical and microbial analysis, lance Asia bell was more suitable as an ingredient of Kimchi than lotus.

  • This study was carried out to develope yeast leavened pan bread using the commercial Doenjangs (Korean soybean pastes). Physicochemical properties of the Doenjang products were measured such as aminonitrogen, pH, titratable acidity and salinity, reducing sugar, total free sugar, total organic acid, PDI (protein dispersibility index) and color. Seven products of Doenjang were freeze-dried and powdered to be used in bread formula at the levels of 2.5, 5.0, 7.5 and 10.0%. When the Doenjang powder was added up to 5.0%, the ovenspring during baking remarkably increased resulting in increased loaf volume. However, with Doenjang powder more than 7.5%, the loaf volume became smaller than the control as the dough expansion and ovenspring decreased. Thus when Doenjang was added to bread dough, the loaf volume was highly correlated with ovenspring (r=0.92) but it was not with dough expansion during 1st fermentation (r=0.56). The browning color of bread crust and crumb became deeper with decrease in L value as the addition of Doenjang powder increased. From the mechanical texture measurements of bread crumb, hardness, gumminess and chewiness decreased with addition of Doenjang powders. Regardless of the kinds of Doenjang, the Doenjang powders could be added into the bread dough up to 5.0%, improving the loaf volume and texture of yeast leavened pan bread and demonstrating the possibility of producing a functional bread using the Doenjang powders.

  • The ascidian Styela clava has been one of the favorite seafood in Korea. Suspended culture of Styela clava was initiated in 2001 and the annual production reached 15,084 M/T, but declined to 2,655 M/T in 2011. In order to solve this problem, it is necessary to estimate the material balance according to the farm-environment. Vertical particulate fluxes and release fluxes were estimated at 2 stations, an ascidian farm (AF) and a non-cultivated area (control) in Jindong Bay. An in-situ benthic chamber(BelcI) was used in summer and winter season. The sedimentation fluxes of organic carbon were 72 mmol C $m^{-2}\;d^{-1}$, 93 mmol C $m^{-2}\;d^{-1}$, 34 mmol C $m^{-2}\;d^{-1}$ in Jul. AF, Feb. AF, Feb. control. The organic carbon oxidation rates were 13 mmol C $m^{-2}\;d^{-1}$, 81 mmol C $m^{-2}\;d^{-1}$, 31 mmol C $m^{-2}\;d^{-1}$, in each. The release fluxes of nutrients followed the general pattern, well. Consequently, the ratio of the organic carbon burial fluxes were 20:4:1, in each. By the estimation of the carbon circulation, it could be a scientific basis to analyze the reason of production decline for cultivated organism.

  • Samples were collected from five stations monthly from October 2003 to September 2004 to investigate seasonal variation of size structure of phytoplankton and relationship between size-fractionated phytoplankton and environmental factors in the Asan Bay. The contribution of large cells (microphytoplankton, $>20\;{\mu}m$) to total concentrations of chlorophyll $\alpha$ was higher than small cells (nanophytoplankton, $3\sim20\;{\mu}m$; picophytoplankton, $<3\;{\mu}m$) during the sampling period. Especially, large cells contributed 80% to the total chlorophyll a from February, 2004 to April 2004 when chlorophyll $\alpha$ concentrations were high. The size structure of phytoplankton shifted from micro-size class to nano-size class and picophytoplankton rapidly increased when phytoplankton biomass decreased in May 2004. Microphytoplankton exhibited a high biomass in the upper region during winter-spring season whereas nano- and picophytoplankton showed two peaks in the middle-lower regions (Station 3,5) during spring and summer. Microphytoplankton are most likely controlled by water temperature and nutrient supply during the cold season whereas nano- and picophytoplankton may be affected by stratification, light exposure during the warm season.

  • In order to understand the spatiotemporal variation of water quality, an investigation on variation characteristics of water quality was conducted at 13 stations in Yongil bay from 1990 to 1998. The salinity in summer was relatively lower than that in other seasons and it have increased from inner bay to outside of the bay gradually. However, nitrate concentration in summer was relatively higher than that in other seasons, and it was the highest, up to $65.40\%$, among dissolved inorganic nitrogens, Nitrate concentration indicates the possibility of affecting by freshwater discharges to Yongil bay. Correlation analysis showed that salinity had a significantly good correlation with nitrate. This result suggested that inflow of river had an influence on increase of nitrate. The result of Principal Component Analysis (PCA) indicated that nitrate was major factor to influence the water quality in Yongil Bay.

  • Carrying capacity model focused on interactions between the filter-feeder growth and their environments is presented, and differences among existing various carrying capacity models are reviewed. For carrying capacity modeling of shellfish system, we constructed a new numerical model coupled oyster growth model with an ecosystem model (EUTRP2). Physical and biological processes such as water transport and mixing, primary production, feeding and growth of the cultivated oyster, Crassostrea gigas and benthic-pelagic exchange were included in the model, Simulated results for validation showed that the more phytoplankton biomass decreased, the more oyster meat weight and nutrients increased, suggesting a powerful tool for reasonable management of shellfish aquaculture. The model was sensitive to parameters controlling the primary production. Among the ecosystem compartments, the oyster growth is highly influenced by small changes in the physiological parameters of phytoplankton and oyster. This sensitivity analysis indicated the importance of experimental data on biological parameters for calibration of the model.

  • Numerical study on coastal water quality management was conducted to examine the response of summer water quality to the flow into the sea of land based pollution load in Ulsan Bay, Korea The abatement of pollution load. from point sources of land was estimated on the basis of Korean coastal water quality standard using an ecosystem model. The results of the ecological model simulation showed that COD values in the inner part of the bay were greater than 280mg/L, and exceeded the grade III limit of Korean coastal water quality standard 30% of all land based pollution loads or organic and inorganic material loads from point sources should be cut down to keep the COD levels below 2mg/L. As environmental carrying capacity was estimated to be 7,193kgCOD/day to keep the COD levels below 2mg/L in Ulsan Bay, 3,083kgCOD/day of land based organic loads should be reduced. The phytoplankton blooms have occurred in the Teahwa river mouth or estuary repetitively, so it is important to control land based nutrients loads for removal of autochthonous organic loads around Ulsan Bay.

  • The ethanol extracts of Puerariae Radix inhibited cyclooxygenase-2 (COX-2) activity in bone marrow derived mast cells (BMMC). COX-2 is responsible for the production of large amounts of proinflammatory prostaglandins (PGs) at the inflammatory site. We have investigated the anti-inflammatory effect of ethyl acetate fraction from $70\%$ ethanol extract of Puerariae Radix (EPR), and attempted acetic acid induced writhing to verify the analgesic effect. Inflammation was induced by interleukin-1 (IL-1), tumor necrosis factor-a (TNF-a), $inteferon-\gamma$ $(IFN-\gamma)$ and lipopolysaccharide (LPS). EPR showed strong inhibitory efficacy against cytokine-induced proteoglycan degradation, prostaglandin $E_2\;(PGE_2)$ production, nitric oxide (NO) production, and matrix-metalloproteinases (MMPs) expression in mouse macrophage and rabbit articular chondrocyte. In the writhing test, EPR $(200\~400\;mg/kg)$ exhibited a dose-dependent inhibition of writhing. The results indicate that EPR have anti-inflammatory and analgesic activities, and could be a good herbal medicine candidate for treating of osteoarthritis (OA).

  • We conducted the algicidal activity screening tests using 10 L microcosm to investigate the possibility of the field application of naphthoquinone derivative Nq 4-6 compound as an algicide. We determined its application range to assess its algicidal effects on the phytoplankton and to evaluate the response of the planktonic community and the water environment to this chemical. From results of the microcosm experiments, Nq 4-6 compound showed high algicidal activity on the centric diatoms such as Stephanodiscus hantzschii and Cyclotella meneghiniana, but it had no effect on other phytoplankton. The abundance of S. hantzschii continuously increased in the control, but its cell density decreased 1 day after the Nq 4-6 treatment. In particular, Nq 4-6 showed algicidal activity of 94.4% against S. hantzschii 7 days after the treatment. The dominance index of phytoplankton community was lower in the treatment than in the control. The diversity index, richness index and evenness index of phytoplankton community was higher in the treatment. Environmental factors and biological factors did not show specific changes after the Nq 4-6 compound treatment. Therefore, the results of this study demonstrates that Nq 4-6 is an effective agent for the control of S. hantzschii blooms, and that the microcosm tests play a crucial role when assessing field application.

  • This study was carried out to elucidate the development of unprecedented water-bloom caused by a single species of colonial green algae Eudorina elegans in the upstream area of the Seungchon weir located in the Yeongsan River from late April to May 2013. The Yeongsan River is typically regulated system and the waterbody is seriously enriched by both external and internal sources of nutrients. Seasonal algal outbreaks were highly probable due to various potential factors, such as the excessive nutrients contained in treated wastewater, slow current, high irradiation and temperature, in diatom (winter), green algae (spring) and bluegreen algae (summer). Spring green-tide was attributed to E. elegans with level up to $1,000mg\;m^{-3}$(>$50{\times}10^4cells\;mL^{-1}$). The bloom was exploded in the initial period of the algal development and after then gradually diminished with transporting to the downstream by the intermittent rainfall, resulting in rapid expansion of the distribution range. Although the pulsed-flows by the weir manipulation was applied to control algal bloom, they were not the countermeasures to solve the underlying problem, but rather there still was a remaining problem related to the impact of pulsed-flows on the downstream. The green-tide of E. elegans in this particular region of the Yeongsan River revealed the blooming characteristics of a colonial motile microalga, and fate of vanishing away by the succeeding episodic events of mesoscale rainfall. We believe that the results of the present study contribute to limno-ecological understanding of the green-tide caused by blue-green algae in the four major rivers, Korea.
