Four newly isolated bacteria from soil were used to manufacture microbial inoculum to compost food waste. The bacteria, GM103, V25, V31, and V35, were identified as Bacillus licheniformis, B. subtilis, B. stearothermophilius, and B, subtilis, respectively. The bacterial strains were efficient to degrade protein and starch and also able to inhibit the growth of plant pathogenic fungus Rhizopus stronifer. The GM103 showed distinct capability in degrading starch, but grow only aerobically. The other three bacterial strains. V25, V31, and V35, could grow both aerobically as well as anaerobically, in 10%(w/v) salt, at $50^{\circ}C$, and had good viability and survival rate in soil. These characteristics of the bacterial strains are very adquate in Korean food composting containing high concentration of salt, especially at home. By mixing the 4 bacterial culture broth with molasses, beet pulp, zeolite, The bacterial inoculum for food waste composting-BIOTOP-CLEAN-was made. The performance of food waste composting by the BIOTOP-CLEAN was compared with that by control(not treated) and HS(other demestic company's inoculum product for food waste composting). The maximum temperature of the food waste during the composting with the BIOTOP-CLEAN was $50^{\circ}C$, while those of the control and HS were $30^{\circ}C$ and $35^{\circ}C$, respectively. The BIOTOP-CLEAN gave the good smell and showed dark brown color, while the control gave bad smell and HS gave less bad smell. These indicates that the food waste composting by the BIOTOP-CLEAN had been well accomplished. The culture broth of V25, V31, V35 were sparyed to the plants of tomato, chinese cabbage, raddish, red pepper every month and the spraying the culture broth to these plant significantly improved the production yield of the crops, due to the control effect of the bacterial strains against the plant pathogens.
Juice were extracted from fresh leaves of 70 species of plants growing in Korea by mincing and pressing the resulting pulp through a cotton cloth. Leaf protein concentrates could be prepared from many species of land and water plants that are at present economically unimportant. The choice of plants is of considerable important. Total-N, protein-N and pH determinations were made on the extracts, and total-N remaining in the fibre were calculated. Leaf protein concentrates were precipitated from the extracts at $75{\sim}80^{\circ}C$, and analysed total-N as protein-N of products. The present paper deals with the calculated yields of leaf protein concentrates from various plants, relations between yield of leaf protein concentrates and total-N of leaves, or pH of extracts, and the amino acid compositions of leaf protein concentrates. Results are summarized as follows. 1. Spinach and radish were the best sources of easily extractable, but good results were also obtained with indian mustard, kail, chenopod, red bean, cucumber, squash, houndberry, white flowered gourd, potato, Humulus japonicus, arrowroot and soybean as a good resources for the production of leaf protein concentrates. 2. In general, the greater the protein content of leaves the greater the yield of leaf protein concentrates. However, there are some plants difficult to make a adequate protein extraction by a simple mechanical process. 3. It was to be expected that leaf protein concentrates would be more extractable with the higher pH of extracts. There were a poor yield of the leaf protein concentrate in the pH values lower than 5.50 of the first extracts. 4. Protein content of the leaf protein concentrate shows marked differences, depending on species and season. It ranged between 29 to 80% of protein contents. However, the majority of plants yielded products containing more than 50% of protein. Products containing more than 75% of protein were obtained from two species of radish and indian mustard. Cabbage and Digitaria sanguinalis cilialis (summer) made products containing 29 to 32% of protein. 5. The amino acid composition of leaf protein concentrates was not greatly altered by species of plants. On an amino acid compositional basis, the leaf protein concentrate has a favorable balance of essential and non-essential amino acids, the only exception being methionine, which was usually low in all cases.
Seventy two isolates of Cordyceps militaris collected from 11 sites in Korea, including two isolates from ATCC, were used to assess genetic variation within Cordyceps militaris. The anamorph stage and cultural characteristics of C. militaris were observed through microscope and investigated on PDA respectively. The anamorphs of C. militaris were identified to be Verticillium. Isolates of C. militaris showed different growth rates, morphology and color. Fifty six isolates of single ascospore and seventy two isolates of mass ascospore from C. militaris were analysed using by Random Amplified Polymorphic DNA (RAPD) for genetic relationship analysis. Fifty six single ascospore isolates fell into two groups by phenogram constructed from distance values using the UPGMA method in NTSYS-pc software: group A from artificial fruit body of C18 except for isolate 51; group B from artificial fruit body of C738. The average genetic distance value within group A is 0.150 and group B is 0.163. The average genetic distance value between the two groups is 0.221. The average genetic distance value within 56 single ascospores is 0.207 and 72 mass ascospores is 0.330. Genetic relationships were not found among 72 mass ascospore isolates obtained from eleven geographically distant populations.
In this study, Kimchi, soup and stew samples were collected from May to June, 2007, in the Jeonju area, and their salinity levels were analyzed. In addition, housewives were surveyed via questionnaire to assess food behaviors and consumption patterns. The average salinity of the Kimchi samples was $2.0{\pm}0.5%$. The average salinity of the soup/stew samples was $1.0{\pm}0.3%$ in the broth portion and $0.8{\pm}0.3%$ in the homogenized mixture of both broth and solids. The average salinity of all types of soup was $0.9{\pm}0.3%$, and that for stews was $1.1{\pm}0.3%;$ the average salinity of the stew was significantly higher than that of the soup (p<0.001). Beanpaste soup had a significantly higher average salinity $(1.0{\pm}0.3%)$ than clear soup $(0.8{\pm}0.3%)$ (p<0.05). The Food behavior scores of the respondents, with regard to sodium intake and salty taste preference, showed significant positive correlations to the salinity of the soup and stew samples (p<0.01). The consumption patterns of the Kimchi and soup/stews were also analyzed to determine whether there was a relationship to the saltiness of the food samples. The respondents were divided into two groups for each food category: Kimchi groups of below 2.0% salinity and above 2.1% salinity, soup/stew groups of below 0.8% salinity and above 0.9% salinity. The below 0.8% salinity soup/stew group used salt or soy sauce in meals significantly less frequently (p<0.01) than the above 0.9% salinity group. The lower salinity Kimchi and soup/stew groups gave significantly higher scores regarding answers that their Kimchi was 'bland' (p<0.05). The types of frequently consumed Kimchi were determined as Korean cabbage, Welsh, wild greens, radish, KKak Du Ki, and Yol Mu Kimchi. When compared to the above 2.1% salinity Kimchi group, the below 2.0% salinity Kimchi group gave higher scores regarding answers that they consumed 'more than half the broth in the bowel' and also gave significantly higher (p<0.01) scores in answering that they consumed only the solid ingredients, leaving the broth.
The purpose of this research is to examine the awareness and preference for a variety of Kimchi and Kimchi intake patterns among the students living in Chungbuk province. Four hundred samples, consisting of elementary, middle, and high school students, were surveyed; and a total of 366 usable, completed copies of the questionnaire were used for the research. The collected data were statistically analyzed using SPSS 10.0. The results of the analysis were as follows: First, Kimchi was considered traditional (24.3%), nutritious (20.5%), fermented (l9.2%), and healthy (16.1%). Second, the main reason Kimchi was preferred was its "hot taste" (25.4%), "chewy texture" (17.4%), and "sour taste" (14.0%). The students preferred their Kimchi a little hot, moderately salty, and properly fermented with a moderate amount of seasoning and did not care much about any particular parts of Kimchi. Third, 75.4% of the students ate Kimchi more than twice a day, and 78.0% of the students consumed more than 3 pieces($2.5{\times}3.0cm$) of Kimchi per meal. Fourth, elementary students wanted the school foodservice to develop bite-sized Kimchi while middle school students wanted to eat their favorite parts of Kimchi without the fishy smell. High school students wanted to eat cool and fresh Kimchi. Finally, the students wanted Kimchi to contain the following fruit and vegetables: pears (48.9%), apples (34.2%), and pineapples (30.0%), young radishes (44.9%), turnips (37.5%), and sesame leaves (34.9%). This study concludes that it is necessary to educate young students about traditional Korean food culture, serve them various types of Kimchi, change the service style, and develop new Kimchi recipes to increase Kimchi intake in school foodservices.
This study was conducted to investigate the effects of tile drain on Physicochemical properties and crop productivity of soils under plastic film house for three years (1999 - 2001). Tiles (${\Phi}100mm$ PVC pipe) were established at 50-60 cm depth with 1 m, 2 m, and 3 m intervals in Gangseo silt loam soil under 2W-type plastic film house. Cropping system was a pumpkin-pumpkin in the first year, a cucumber-spinach-crown daisy-spinach-young radish in the second year, and a green red pepper-tomato-spinach in last year, with conventional fertilization and drip or furrow irrigation by groundwater pumping. Bulk density and soil hardness of plot with tile drain were lower than those of control (plot without tile drain). Soil water content was also lower in tile drain plot than in control regardless of soil depth, and decreased at narrower interval and longer distance from tile in the same plot, thus suggesting that water flow and density of tile drain plot was higher than those of control. Rhizosphere of spinach, a final crop of third year, was expanded more than 2 cm due probably to improvement of soil physical properties caused by tiles establishment. Electrical conductivity (EC) of topsoil decreased from $1.22dS\;m^{-1}$ to $0.82dS\;m^{-1}$ by tile drain system, and the extent of EC decrease was different with season: higher in spring and lower in summer and autumn. The $NO_{3^-}-N$ concentration in topsoil decreased, from $200mg\;kg^{-1}$ to $39mg\;kg^{-1}$. The effect of tile drain on crop yield varied with crops. Average crop productivity obtained in tile drain plot than that of control crop: 18.2% in 2 m interval, 14.2% in 3 m interval, but lower 0.2% in 1 m interval.

The physical and chemical properties of the dried low rank coals (LRCs) before and after the surface treatment using ozone and ammonia were characterized in this study. The contents of moisture, volatiles, fixed carbon and ash consisting of dried LRCs before the surface treatment were about 2.0, 44.8, 44.9 and 8.9%, respectively. Also, it was composed of carbon of 62.66%, hydrogen of 4.33%, nitrogen of 0.94%, oxygen of 27.01% and sulfur of 0.09%. The dried LRCs was surface-treated with the various dry methods using gases such as ozone at room temperature, ammonia at $200^{\circ}C$ and then the dried LRCs before and after the surface treatment were characterized by the various analysis methods such as FT-IR, TGA, proximate and elemental analysis, caloric value, ignition test, adsorption of $H_2O$ and $NH_3-TPD$. As a result, the oxygen content increased and the calorific value, ignition temperature and the contents of carbon and hydrogen relatively decreased because the oxygen-contained functional groups were additionally generated by the surface oxidation with ozone which plays a role as an oxidant. Also, its $H_2O$ adsorption ability got higher because the hydrophilic oxygen-contained functional groups were additionally generated by the surface oxidation with ozone. On the other hand, it was confirmed that the dried LRCs after the surface treatment with $NH_3$ at $200^{\circ}C$ have the decreased oxygen content, but the increased calorific value, ignition temperature and contents of carbon and hydrogen because of the decomposition of oxygen-contained functional groups the on the surface. In addition, the $H_2O$ adsorption ability was lowered bucause the surface of the dried LRCs might be hydrophobicized by the loss of the hydrophilic oxygen-contained functional groups. It was concluded that the various physico-chemical properties of the dried LRCs can be changed by the surface treatment.
There is a limitation to estimate vitamin $B_{12}$ intake due to lack of data on vitamin $B_{12}$ content in many Korean foods. In this study, vitamin $B_{12}$ content was determined in some soybean or vegetable-fermented foods, edible seaweeds and other frequently consumed foods in Korea by microbioassay using Lactobacillus delbruecki ATCC 7830. The traditional type of Doenjang and Chungkookjang contained 1.85 ${\mu}g/100$ g and 0.69 ${\mu}g/100$ g of vitamin $B_{12}$, respectively, while the factory-type of Doenjang and Chungkookjang contained 0.04-0.86 ${\mu}g/100$ g and 0.06-0.15 ${\mu}g/100$ g. Vitamin $B_{12}$ was not detected in steamed soybeans and Tofu which is a not-fermented soybean product, indicating that vitamin $B_{12}$ in Doenjang and Chungkookjang might be produced during the fermentation process. The Korean-style soy sauce contained 0.04 ${\mu}g$ vitamin $B_{12}$/100 mL, but vitamin $B_{12}$ was not detected in Japanese-style soy sauce and white miso. Commercial Kimchi, a representative Korean vegetable- fermented food, made of Korean cabbage, Yeolmu, or Mustard leaves contained 0.013-0.03 ${\mu}g$ vitamin $B_{12}$/100 g, while Kimchi without red pepper and fermented fish sauce (White Kimchi) did not. Vitamin $B_{12}$ content was very high in some edible seaweeds such as laver (66.76 ${\mu}g/100$ g dry weight) and sea lettuce (84.74 ${\mu}g/100$ g dry weight), and it was 17.12 ${\mu}g/100$ g of dried small anchovy, 1.07 ${\mu}g/100$ g of whole egg, and 0.02 ${\mu}g/100$ g of coffee mix. From these results, it is assumed that Koreans take substantial amount of vitamin $B_{12}$ from plant-origin foods. And, with these data, we will be able to calculate dietary vitamin $B_{12}$ content more correctly than before. In conclusion, soybean-fermented foods, Kimchi, laver and sea lettuce are recommendable as good sources of vitamin $B_{12}$ for vegetarians or Korean elderly on grain and vegetable based diet.

As an accempt to increase thc efficiency of land use and the food production to achieve the national goal in the food self-sufficiency, nine cropping systems on the upper-land were examined in pure-stand and in mixtures of soybean, corn, potato and radish. The important conclusions of this study were summarized as follows; 1. The flowering date of soybean was two or three days earlier in pure-stand than in the mixture with corn. The maturing date two days earlier in the pure-stand than in the mixture with corn. The flowering and maturing dates were not different among various cropping systems in corn. 2. The stem length of soybean was significantly different among various cropping systems. Soybean in pure-stand was shorter in stem length than with corn. 3. The number of pods per soybean plant did not give any significant differences among various cultivation methods. 4. The length of internode and the number of nodes per soybean plant in the mixture with corn were greater than in the pure-stand. In the number of branches per plant this was reversed. 5. The average stem dry weight of soybean per 10a was not significantly different among various cultivation methods. 6. The soybean yield per 10a in the pure-stand was obviously greater than the mixture and there were significant differences among cultivation method within the mixture with corn in soybean yield. 7. The 1,000-grain weight of soybean was significantly different and those in the pure-stand was heavier than those in the mixture with corn. 8. Grain weight per soybean plant and the stem diameter in the pure-stand were significantly lesser than those in the mixture with corn. 9. In the comparisons of corn in the pure-stand and in the mixture with soybean, plant height, number of ear per 10a, mean ear weight and remember of grain per plant, 100-grain weight, ear length, ear girth and number of ear pel plant were not significantly different among various cultivation methods except for the grain yield per 10a. 10. In the economic analysis, the mixture with soybean and corn gave the greatest gross income. The combination 7 was the best which was 47.6% increase income comparing with the soybean pure-stand. 11. As it can be assumed, soybean plant was influenced greatly than corn by various cropping system. It is necessary to study more complex cropping system finding and giving more desirable multiple cropping system for the farmer.
