Adding Effect of Lotus Leaf Extract on the Quality of Beef Jerky (우육포의 품질에 영향을 미치는 연잎추출물 첨가효과)

  • This study was carried out in order to investigate the effects of lotus leaf extracts on the quality characteristics of beef jerky, such as chemical composition, free amino acid, Hunter's color, physical properties, water activity, pH, TBARS value, VBN content, total bacterial count and sensory score. According to the results, there were no significant differences in moisture, protein, fat, ash, L-value, b-value, hardness, springiness, cohesiveness, gumminess, chewiness, water activity, pH, flavor, taste, texture, juiciness and overall acceptability. Total free amino acid content was highest in T0 and, lowest in T3 (p<0.05). The a-value was highest in T3 (p<0.05). The TBARS value and total bacterial count of T2 and T3 were significantly lower than those of T0 and T1 (p<0.05). The VBN content was lowest in T3 (p<0.05) and the sensory color was highest in T3 (p<0.05).

Quality Change of Pork Patty Containing Lotus (Nelumbo nucifera) Leaf and Root Powder during Refrigerated Storage (냉장 중 연근 및 연잎분말을 첨가한 돈육 패티의 품질변화)

  • This study was carried out to investigate the effect of lotus root and leaf powder on the quality characteristics of pork patty stored at $3^{\circ}C$ for 9 days. The pork patties were of four types: nothing added(control, T0), 0.5% lotus root powder added (T1), 0.25% lotus root and 0.25% lotus leaf powder added (T2), and 0.5% lotus leaf powder added (T3). The $a^*$ value tended to decrease with longer storage period (p<0.05). The $L^*$ and $a^*$ value of T3 had the lowest value among the samples, the $b^*$ value T2 and T3 were higher than those of T0 and T1 (p<0.05). Water holding capacity decreased with longer storage period (p<0.05), the water holding capacity, cooking loss, increase rate of thickness and decrease rate of diameter were not significantly different among the samples. Hardness and chewiness increased and springiness decreased with longer storage period (p<0.05). The pH creased with longer storage period (p<0.05), but the VBN content not changed during storage. The TBARS values increased with longer storage period (p<0.05), and those of T0, T1, T2 and T3 were 4.57, 1.85, 0.43 and 0.41 mg MA/kg, respectively, after 9 days of the storage. The result suggest that the addition of lotus root and leaf powder at the same time, or addition of lotus leaf powder can be applied to pork patty to its functionality.

Quality Characteristics and Volatile Flavor Components of Cooked Rice, Yenipsambab, with Lotus Leaf Powder (연잎분말을 첨가한 밥의 품질특성 및 연잎쌈밥의 저장 중 향기성분)

  • We investigated the quality characteristics and volatile flavor components in yenipsambab prepared with various concentrations of lotus leaf powder. Hunter's color L and a values of yenipsambab decreased with increasing content of lotus leaf powder, whereas b value increased. Moreover, addition of lotus leaf powder resulted in increased hardness, adhesiveness, chewiness, and brittleness compared to control. Major volatile compounds of yenipsambab were ethyl benzene, 1,3-dimethylbenzene, 1,2-dimethylbenzene, and 5-hydroxymethyldihydrofuran-2-one.

  • 자연계에는 다양한 생물체들의 표면 구조가 특수한 기능을 갖는 형태로 되어 있다. 이와 같이 특수한 기능을 갖는 생물체들의 표면 구조는 일반적으로 화학적 조성과 표면의 더불어 나노와 마이크로 구조가 혼합되어 있는, 이른바 hierarchical 구조를 보인다. 그 중에서도 표면 초소수성 특성을 보이는 연잎의 표면과 같은 hierarchical 구조는 self-cleaning effect 등의 기능성 표면 제작에 활용이 가능하여 이를 모사하기 위한 연구가 활발히 진행중에 있다. 이에 본 연구에서는 연잎과 같은 초소수성을 띄는 ZnO nano-in-micro hierarchical 구조를 저온 공정을 통하여 다양한 기판에 제작하였다. 이를 위하여 ZnO 나노 입자 분산 레진을 제작하였고 UV imprinting 과 수열합성법을 통하여 마이크로 패턴 상부에 ZnO 나노 입자가 형성된 ZnO nano-in-micro hierarchical 구조를 형성하였다. 제작된 ZnO hierarchical 구조의 젖음 특성은 표면 접촉각이 $160^{\circ}C$이상인 초소수성을 보였으며, 제작 공정에는 고온의 열처리가 수반되지 않아 PET film 등 다양한 기판에 ZnO hierarchical 구조를 제작할 수 있었다.

Fabrication and Medical Applications of Lotus-leaf-like Structured Superhydrophobic Surfaces (연잎 모사 구조로의 초소수성 표면 처리와 의료분야의 적용에 관한 연구)

  • Various biomaterials have been widely used for biomedical applications, including bio-organs, medical devices, and clinical devices like vessel, blood pumps, artificial kidneys and hearts, even in contact with blood. The issue of blood compatibility has been studied intensively to prevent negative effects such as thrombosis due to the implanted devices. The use of lotus-leaf-like structured surfaces has been extended to an increasing number of applications such as contamination prevention and anticorrosion applications. Various methods such as template, sol-gel transition, layer-by-layer, and other methods, developed for the fabrication of lotus-leaf-like surfaces have been reported for major industrial applications. Recently, the non-wettable character of these surfaces has been shown to be useful for biomedical applications ranging from blood-vessel replacement to antibacterial surface treatment. In this review, we provide a summary of current and future research efforts and opportunities in the development and medical applications of lotus-leaf-like structure surfaces.

In-vitro Anti-thrombosis Activities of Different Parts of Nelumbo nucifera Gaertner (다양한 부위별 연 추출물의 항혈전 활성)

  • To investigate the bio-activities of lotus (Nelumbo nucifera Gaertner), ethanol extracts were prepared from different parts of lotus, including lotus root, node of root (NR), leaf, pod of seed (PS), seed (S), and embryo of seed (ES), respectively. Anti-thrombosis activities were evaluated. NR, S, and PS extracts displayed strong anti-coagulation activities, as evidenced by the inhibition of thrombin, prothrombin, and coagulation factors, respectively. NR, leaf, S, and PS extracts displayed strong platelet aggregation inhibitory activities. The aggregation inhibition of S and PS extract was comparable to that of aspirin. The extracts of NR, S, and PS did not show hemolysis activity up to 1.0 mg/ml.

Anti-thrombotic Activities of Hot-water Extracts Prepared from Various Parts of Nelumbo nucifera Gaertner (다양한 부위의 연(Lotus) 열수 추출물의 항혈전 활성)

  • To investigate the anti-thrombotic activities of the lotus (Nelumbo nucifera Gaertner), various hot-water extracts were prepared from the leaf, pod of seed (PS), seed, embryo of seed (ES), root, and the node of root (NR) of the lotus. The highest extraction ratio was found in the NR (20.3%), followed by the seed, root, leaf, ES, and PS. These extracts had pH and acidity levels ranging from 5.6~6.5 and 0.06~0.20%, respectively. The seed extract showed 70% brix, whereas the leaf and PS extracts showed less than 0.1% brix. The highest contents of total polyphenol (179.7 mg/g), total flavonoids (161.4 mg/g), and reducing sugar (161.4 mg/g) were observed in the leaf extract, and the highest total sugar content (873.0 mg/g) in the seed extract. Anti-coagulation assay of the extracts of NR, leaf, and PS showed strong activities. In particular, at a concentration of 5 mg/ml, the PS extract had 15-fold extended thrombin, prothrombin, and activated partial thromboplastin times. However, only the ES extract showed activities inhibitory to platelet aggregation, with treatment with 0.25 mg/ml of ES extract decreasing platelet aggregation to 25.1%, a reduction comparable to that effected by aspirin. The extracts other than the seed extract showed no hemolysis activities against human RBC at treatments of up to 1 mg/ml. These results suggest that the NR, PS, seed, and ES, all byproducts of the lotus agriculture industry, have high potential as novel sources of anti-thrombotic agent.

Quality Characteristics and Palatability of Ground Pork Meat Containing Lotus Leaf and Root Extracts (연잎 및 연근 추출물을 함유한 분쇄돈육의 품질 특성 및 기호성)

  • This study was conducted to investigate the effects of addition of lotus (Nelumbo nucifera) leaf and root extracts on the quality and sensory characteristics of ground pork meat. Four types of ground pork were evaluated: 5% ice water added (T0), 5% lotus leaf extract added (T1), 2.5% lotus leaf extract and 2.5% root extract added (T2), and 5% lotus root extract added (T3). There were no significant differences in moisture, protein, fat, ash, cooking yield, moisture retention, water holding capacity, reduction in diameter, a-value (redness), b-value (yellowness), VBN content (volatile basic nitrogen), hardness, springiness, cohesiveness or chewiness. The fat retention was highest in T0 (p<0.05). The L-values (lightness) of T2 and T3 were higher than those of T0 and T1 (p<0.05). The pH was lowest in T1 (p<0.05). The TBARS (2-thiobarbituric acid reactive substances) values of T0, T1, T2, and T3 were 0.47, 0.17, 0.21, and 0.32 mgMA/kg, respectively, with that of T1 being significantly lower than those of the other samples (p<0.05). The contents of free amino acids related to sweet taste was 642.5 ppm for T1, which was highest among the samples (p<0.05). The flavor was highest in T1 (p<0.05). These results suggest that lotus leaf extracts improved the lipid oxidation and flavor of ground pork meat.

An Ecological Study on the Sand Dollar, Astriclypeus manni (VERRIL 1867), in Hamdock, Cheju Korea (제주도 함덕 연안에 서식하는 구멍연잎성게, Astriclypeus manni (VERRIL 1867)의 생태학적 특성에 관한 연구)

  • The sand dollar, Astriclypeus manni is commonly encountered on a subtidal sand bottom along the coast of Cheju Island. limited information has been reported on their ecology despite their natural abundance. This study reports ecology and an annual reproductive cycle of the sand dollars present at Hamdock, northern coast of Cheju Island. A. manni collected from Hamdock revealed that they are 80 to 200 mm in test diameter. Sediment Brain size analysis indicated that A. manni mostly occurs on medium (particle diameter of 500 $\mu$m) to very find sand (particle diameter of 125 $\mu$m), particularly on fine sand (particle diameter of 250 $\mu$m). Internal morphology and in situ observations on their feeding habit indicated that A. manni is a deposit feeder, feeding on organic debris contained in the sediment around its habitat. A. manni were more frequently observed near Zostrea marina bed where content of organic matter in the sediment is considered to be higher. Gonadal tissues of the male were yellow in color while female gonads appeared to be purple. Fully mature eggs, with a mean diameter of 381 $\mu$m, and sperm were observed from the histological slides of the sand dollars collected in late July to August, suggesting that A. manni spawn during July to August when water temperature reaches 20 to $25^{\circ}C$.
