The Change of Nitrate, Nitrite and Ascorbic Acid Content in Spinach as processing and Storaging (시금치의 가공(加工), 저장중(貯藏中)의 질산염(窒酸塩) 및 아질산염(亞窒酸塩)과 Vitamin C의 함량변화(含量變化))

  • Concern was forcused to investigate the relationship between nitrite and ascorbic acid contents in spinach during processing and storage in this experiment. Contents of nitrate and nitrite in fresh spinach were 3,000ppm and 0.25ppm, respectively. Nitrite contents were decreased by branching and storaging, while the nitrite contents were increased. The tendency was accelerated by seasoning. When spinach was stored at $4^{\circ}C$ and $25^{\circ}C$, Changes of nitrate and contents were rapid at $25^{\circ}C$, but slow at $4^{\circ}C$. In the relationship among the contents of nitrite, nitrate, and ascorbic acid during storage, nitrate contents were decreasing, whereas nitrite and ascorbic acid contents were increasing.

매생이 에탄올 추출물의 생리기능성과 아질산염 분해능

  • 매생이의 에탄올 추출물의 기능적 특성과 추출액의 플라보노이드와 페놀함량과의 상관성을 검토하고, 아질산염 분해능과 효소의 영향 등을 측정하였다. 매생이 에탄올 추출액의 클로로필 함량은 물추출보다 에탄올 추출의 경우가 높았으나, 플라보노이드 함량은 물추출액에서 약간 높게 나타났다. 추출액의 TPC함량은 TFC함량이 높을수록 높게 나타났으나 직접 비례하지는 않았다. 그리고 매생이에 함유된 아질산염 함량 측정결과와 아질산염 분해능 결파 비교로부터 에탄올 추출의 경우에는 아질산염 분해능이 시료자체의 아질산염 함량과 직접적인 영향이 없는 것으로 보였으며, 매생이 에탄올 추출액이 나타내는 아질산염 분해작용은 낮은 pH에서 높게 나타났으나, 매생이 자체에 존재하는 효소의 관여는 극히 미약하였다.

Effects of Pigment of Red Beet and Chitosan on Reduced Nitrite Sausages (레드비트 색소 및 키토산 첨가가 저아질산염 소시지에 미치는 효과)

  • This study was carried out to produce reduced-nitrite sausages by using the red beet pigment and chitosan. The addition of red beet pigment affected the color of sausage and was effective in nitrite scavenging ability, water holding capacity, and tenderness. The addition of chitosan was effective in water holding capacity and tenderness, but was not effective in nitrite scavenging ability. On the other hand, the use of ${\beta}$-cyclodextrine was effective in water holding capacity and tenderness. Pyrophosphate was only effective in water holding capacity. The adding level of nitrite could be reduced by half by using red beet pigment and chitosan for the development of color of sausage.

Studies on Substitution Effect of Chitosan against Sodium Nitrite in Pork Sausage (돈육 소시지에 첨가한 키토산의 아질산염 대체 효과에 관한 연구)

  • Sodium nitrite which is added in processing of meat process product to develope color and to keep bacteria from growing, produces toxic substance after reacting, bring about deterioration by oxidation and toxic substance. So natural material is needed to substitute this sodium nitrite for. Chitosan which is made of chitin by processing of deacetylase, has various function of antibiosis and antimutation. We studied about the substitution effect of chitosan against sodium nitrite in pork sausage. As a result, of storing the sausage, antimicrobial effect of sodium nitrite was detected by 0.35% of chitosan(M.W. 30 kDa). This chitosan had same color developing effect even though addition content of sodium nitrite reduced until 15 ppm which is less than 1/10 of standard level. And chitosan decreased fast a residual nitrite. This result shows that chitosan inhibited a formation of nitrosamine.

Effect of Red Beet on Quality and Color Stability of Low-fat Sausages during Refrigerated Storage (레드 비트의 첨가가 냉장저장 중 저지방 소시지의 품질과 발색 안정성에 미치는 영향)

  • This study was performed to evaluate the quality characteristics of low-fat boiled or smoked sausages containing sodium nitrite and various levels of red beet during refrigerated storage. Physicochemical properties of boiled and smoked sausages were not affected by the addition of red beet (p>0.05), except for the color values. The interaction between treatment and storage time had significant effects on redness and yellowness of boiled sausages, and on redness of smoked sausages (p<0.05). Boiled sausages containing more than 0.5% red beet decreased lightness and increased redness and yellowness (p<0.05). During storage time, redness decreased and yellowness increased (p<0.05). The combination of sodium nitrite with red beet was better than red beet alone for color stability. In the smoked sausages, addition of red beet decreased lightness, but redness (p<0.05), unlike the boiled sausages, did not change. Redness of sausages containing red beet alone decreased with increased storage time (p<0.05), but there was no change (p>0.05) upon treatment with the combination of sodium nitrite and red beet. These results indicate that the combination of red beet and sodium nitrite contributed to color stability of smoked sausages during refrigerated storage. Therefore, we suggest that red beet as a natural colorant may be used to reduce the content of nitrite during low-fat sausage processing.

The Effects of Salt and $NaNO_2$ on Physico-Chemical Characteristics of Dry-cured Ham (소금과 아질산염 처리수준에 따른 건염햄의 이화학적 특성)

  • The aim of this work was to analyze the effects of salt and NaNO2 on weight loss, proximate compositions, chemical parameters and texture characteristics of dry-cured ham processed using Korean methods. Four different treatments were considered: The H8 group of 3 hams (11.30 kg) was salted with 9.2 g/kg salt (w/w) (high salt batch), the HS+NaNO2 group of 3 hams (10.65 kg) was salted same as HS group and added 100 ppm NaNO2. The LS group of 3 hams (11.42 kg) was salted with 6.2 g/kg salt (w/w) (Low salt batch), the LS+NaNO2 group of 3 hams (10.62 kg) was salted same as L8 group and added 100 ppm NaNO2. The highest weight losses took place at the drying stage (27.46, 28.25, 26.99, and 28.42%). However, there were no significant differences in the weight losses between treatments (p>0.05). The moisture content was significantly affected with addition of NaNO2 (p<0.05), the L8 hams had significantly higher moisture content than HS + NaNO2 and L8 + NaNO2 (p<0.05). The level of salt and NaNO2 did not affect the fat, protein and ash contents. The hardness and chewiness in biceps femoris muscle from L8 hams were significantly lower than in the muscles from HS + NaNO2 hams (p<0.05). The NaNO2 did not affect the texture characteristics of dry-cured hams. The processing conditions significantly affected the chemical parameters of biceps femoris muscle (p<0.05). The water activity in biceps femoris muscle from L8 hams was significantly higher than in muscles from HS and H8+NaNO2 hams (p<0.04). The salt content in biceps femoris muscles from LS + NaNO2 hams was significantly lower than in the muscles from HS and HS + NaNO2 hams (p<0.05). The NaNO2 treatment did not affect the NaNO2 content in biceps femoris muscles (p>0.05). The processing conditions did not significantly affect the lightness (L), redness (a), and $h^{\circ}$ of biceps femoris muscles (p>0.05). The yellowness (b) and chroma in biceps femoris muscle from HS + NaNO2 hams were significantly higher than in the muscles from HS and LS hams.

약용식물 추출물의 기능성 검토

  • 약용식물의 추출물을 식품 제조시에 첨가제로 사용할 목적으로 4종류의 약용식물을 추출하여 각 식물의 기능성을 조사하였다. 골담초, 당귀, 목통, 초피의 나무 줄기를 물과 70% 에탄올로서 추출하여 동결 건조한 후 항균작용, 항산화작용 및 아질산염소거능을 조사하였다. 각 시료의 물과 에탄올추출물의 식중독세균에 대한 항균작용은 그람음성균인 Escherichia coli, Salmonella typhimurium, Shigella sonnei에 대하여 억제 작용을 나타내지 않았다. 그러나 골담초와 당귀의 에탄을 추출물은 2% 이상의 농도에서 그람양성균인 Listeria monocytogenes와 Staphylococcus aureus의 증식을 억제하였다. 각 시료 물추출물의 전자공여능은 500ppm이상의 농도에서 모두 60% 이상의 전자공여능을 나타내었다. 각 시료의 에탄을 추출물은 목통과 초피가 300ppm에서 70% 이상의 전자공여능으로 물추출물보다 우수하였고 골담초는 물추출물과 비슷한 수준이었으며 당귀는 물추출물보다 낮은 전자공여능을 나타내었다. 각 시료 추출물의 아질산염소거능은 물추출 1,000ppm, pH 1.2에서 당귀 38%, 골담초 40%, 목통35%의 소거능을 나타내었으며 초피가 50%로서 가장 우수한 아질산염소거능을 나타내었다. 각 시료에탄을 추출물의 아질산염소거능은 당귀와 골담초가 물추출물보다 약간 낮은 소거능을 나타낸 반면에 목통과 초피는 물추출물보다 높은 아질산염소거능을 나타내었는데, 특히 초피는 1,000ppm pH 1.2에서 66%의 우수한 아질산염소거능을 나타내었다.

Determination of Nitrite-scavenging Activity of Seaweed (해조류에 의한 아질산염 소거활성 분석-연구노트-)

  • Nitrite plays an important role in the formation of carcinogenic nitrosamine. In order to effectively inhibit the formation of carcinogenic nitrosamine in food and biological systems, scavenging of residual nitrite is necessary. In screening test of nitrite-scavenging effect of seaweed, The methanol extract from Phaeophyta was more effective than those from Rhodophyta and Chlorophyta. Among the brown algae family, Laminariaceae, A. cribrosum (90.4$\%$) and E. cava (80.1$\%$), E. stolonifera (79.0$\%$) that belong to genus Ecklonia showed marked nitrite-scavenging effect at pH 1.2. Furthermore, these algae showed potent reducing power and radical scavenging activity. The nitrite-scavenging effect was correlated with level of reducing power.

Effects of Chitosan with Different Molecular Weight and Nitrite Addition on the Residual Nitrite Contents and Self-life of Emulsified Sausage during Cold Storage (분자량이 다른 키토산과 아질산염 첨가가 유화형 소시지의 냉장 저장 중 아질산염잔존량 및 저장성에 미치는 영향)

  • The objective of this study was to determine the effects of residual nitrite contents, chitosan with different molecular weight and nitrite addition on emulsified sausage during cold storage. Six types of sausages were evaluated: control, 0.5% 50 kDa chitosan (T1), 0.5% 200 kDa chitosan (T2), 150 ppm nitrite (T3), 0.5% 50 kDa chitosan+150 ppm nitrite (T4), and 0.5% 200 kDa chitosan+150 ppm nitrite (T5). Each type of sausage was tested in triplicate and assigned to one of four storage periods: 0, 10, 20 and 30 days. As the storage time increased, the presence of chitosan and nitrite resulted in decreased residual nitrite value and increased pH (in control and T2), TBARS (thiobarbituric acid reactive substance) values, and total plate counts (TPC). Values for pH, TBARS, residual nitrite and total plate counts decreased significantly in response to the addition of chitosan and nitrite relative to the control (p<0.05). T5 was redder than the control (higher CIE$a^*$) at 30 d; however, no difference in the CIE $L^*$ and $b^*$ values was observed. T5 was significantly (p<0.05) more effective at delaying lipid oxidation when compared to the other treatment groups. T5 presented TPC that was significantly lower (p<0.05) than the other groups after three days of storage. In addition, the use of chitosan and nitrite in combination had much better antioxidant and antimicrobial effectiveness than other treatment groups. In conclusion, this study demonstrates that the addition of 0.5% 200 kDa chitosan and 150 ppm nitrite in combination with emulsified sausages tended to improve antioxidative and antimicrobial effects during storage when compared to other treatment groups.
