Assessment of Dietary Fiber Intake in Korean College Students (한국대학생의 식이섬유 섭취실태조사)

  • 본 연구에서는 남자대학생 80명을 대상으로 총 식이섬유 및 조섬유와 영양소 섭취상태를 비교 분석하였다. 남자대학생들의 평균 총 식이섬유 섭취량은 $20.54\pm5.82g으로$ 외국의 잠정적 권장량의 범위(20~30g)에는 들었으나 권장량의 하한치를 약간 상회하는데 그쳤다. 조섬유의 1일 평균 섭취량은 $8.43\pm5.56g으로$ 1일 식이섬유 섭취량의 약 41%에 해당하였으며 그 외 열량 및 다른 영양소의 평균 섭취량은 한국인 영양권장량과 비슷하거나 다소 더 높은 것으로 나타났다. 총 식이섬유 섭취량과 에너지 및 단백질, 당질, 그리고 조섬유의 섭취량 간에는 유의적인 상관관계를 보였으며, 당질이 가장 높은 상관계수(r=0.7232, p<0.001)를 보였다. 또한 조사 대학생들의 총 식이섬유 섭취량과 식품군별 섭취량과의 상관관계수를 보인 것은 채소류 (r=0.6548, p<0.001)였으며 그 다음은 곡류(0.5913, p<0.001)였으며 그 다음은 곡류(0.5913, p<0.001), 해조류(0.3300, p<0.01)였다. 조사 대학생들의 식이섬유 섭취량 중 총식이섬유 급원으로 가장 많이 섭취한 식품은 쌀과 김치였으며, 각각 총 식이섬유 섭취량의 11.98%와 7.64%에 기여하였다. 그 외 학생들이 많이 섭취한 라면, 고춧가루, 냉면, 빵, 콩나물, 밀가루, 깍두기, 무 등이 주요한 식이섬유 급원으로 나타났다. 본 연구의 남자대학생들의 식이섬유 섭취량은 외국의 잠정적 권장량의 범위(20~30g)에 속하였으나 충분한 양을 섭취하고 있는 것은 아니었으며, 오히려 경제수준의 향상으로 인한 식습관의 변화에 민감하게 반응하는 젊은 세대들인 조사대학생들의 장래 식이섬유 소비량은 더욱 감소할 것으로 추정된다. 그러므로 식이섬유 급원식품의 섭취를 증가시키는 방안이 모색될 필요가 있다. 따라서 성인기에 식이섬유 부족으로 나타나는 각종 질병의 위험을 예방하기 위해 정백비 위주의 식사를 지양하고 총 식이섬유 함량이 높은 해조류의 섭취를 널리 교육시키는 것이 바람직할 것으로 사료된다. 또한 보다 광범위하고 체계적인 대상자 선정을 통하여 식이섭취조사가 이루어져 식이섬유 섭취패턴을 연구할 필요가 있다.

  • Parameter uncertainty and sensitivity of KFOOD model for calculating the ingestion dose via terrestrial food-chain pathway was analyzed with using Monte-Carlo approach. For the rice ingestion pathway, estimated values from KFOOD code were very conservative. Most sensitive input parameters in model were deposition velocities and soil-to-plant transfer coefficient of radionuclides.

A Study on Dietary Fiber Intake of Korean (한국인의 식이성섬유소 섭취량에 대한 연구)

  • The dietary fiber intakes of Korean were estimated based on the data from the National Nutrition Survey in 1989. From the data, 566 foods which contain dietary fiber were selected.The intake estimation was done based on these foods. Results were summarized as followed ; Mean DF intake of nationwide population was 17.53g/day and most of these were come from vegetables. Mean DF intake of rural population was slightly lower than that of urban's. Major sources of DF were vegetables, cereals & grain products, seaweeds, fruits, fungi & mushrooms and legumens & their products in order. Vegetables were the major sources of DF which occupied 32.4% of total intake. Among them, kimchi and red pepper were the representative sources. Among cereals & grain products, rice was found to be the most important DF source occupying 12.2% of total DF. And fried noodle, loaf bread and barley were followed. Sea mustard among seaweeds, apples and persimmons among fruits, oyster mushroom and mushroom among fungi & mushrooms and soybean sprout among legumes & their products were favorable sources of DF. 653 households out of 1, 925(33.9%) were consummed 10~15g of DF per day.

Comparative Evaluation of Dietary Intakes of Calcium, Phosphorus, Iron, and Zinc in Rural, Coastal, and Urban District (농촌, 어촌, 도시 지역별 칼슘, 인, 철, 아연의 섭취상태 비교평가)

  • The purpose of this study was to compare the intake status of calcium, phosphorus, iron, and zinc of Korean adults residing in different regions. Subjects were recruited and divided into three groups according to the districts where they lived, which included rural (n=137), coastal (n=100), and urban district (n=117). Subjects were interviewed using a general questionnaire and 24-hour recall method for dietary intake. The average age of the subjects were 58.1 years for rural district, 57.7 years for coastal district, and 48.6 years for urban district. There was no significance in total food intake by regions. The food intakes from cereals, mushrooms, vegetables of rural district, that from fishes of coastal district, and those from sugars, milks, oils of urban area were the highest among three districts. The calcium, phosphorus, iron, and zinc intakes were $60.1\%,\;123.9\%,\;95.2\%,\;and\;73.1\%$ of RDAs, respectively. The calcium intakes as percentage of RDA in rural and coastal district were significantly (p<0.01) lower than that in urban district. A larger number of subjects from coastal or urban district ate under $75\%$ of zinc RDA compared to those from rural village. Major sources of dietary calcium in total subjects were anchovy, kimchi, milk, soybean curd, rice, ice cream, sea mustard, yogurt, loach, and welsh onion. Rice supplied $15.5\%$ for phosphorus, $22.1\%$ for iron, and $35.9\%$ for zinc of total intake. Except for rice, major sources of dietary zinc were pork, beef, small red bean, dog meat, chicken, jacopever, soybean curd, glutinous millet, and kimchi. In conclusion, the food and mineral intakes of adults differed according to the regions in which they resided. The food and nutrient intakes of coastal district were not satisfactory, and calcium and zinc intakes of three regions did not meet RDAs. Therefore, it is required unique and discriminatory nutritional education with each region for increasing intakes of calcium and zinc.

Hypoglycemic Effect of Naturaceuticals Extract Supplementations in NIDDM Patients (천연소재 혼합물 섭취가 당뇨환자의 혈당 및 당화혈색소에 미치는 영향)

  • Cordyceps militaris, Artemisa capillaris, and Fagopyrum esculentum have been known to maintain normal blood sugar levels in folk medicine. We investigated the effects of these nutraceuticals extract supplementations on fasting and postprandial blood glucose in diabetes mellitus patients. The study population consisted of 50 diabetes subjects with a mean fasting blood glucose of 186.8${\pm}$6.2 mg/dl and postprandial blood glucose of 292.8${\pm}$10.3 mg/dl. They consumed 3 tea bags (3g per meal) of the extract of selected plants for 17 weeks. Patients treated with nutraceuticals extract supplementation showed a significant decrease of fasting blood glucose (118.4${\pm}$3.9 mg/dl) and postprandial blood glucose (160.5${\pm}$4.0 mg/dl) in 7 weeks. Nutraceticals extract supplemantation caused a significant decrease of 36.5% and 45% in fasting and postprandial blood glucose levels, respectively, and also significantly decreased HbA1c levels. This study shows that extract of nutraceuticals supplementation significantly lowered the fasting and postprandial blood glucose levels in NIDDM patients. These effects presumably contribute to the hypoglycemic activity.

Comparative Study on Dietary habits, Food Intakes, and Serum Lipid Levels according to Kimchi Consumption in College Students (대학생의 김치섭취 수준에 따른 식습관, 식품섭취실태 및 혈중지질 농도에 관한 연구)

  • This study was carried out to compare the differences in dietary habits, food consumption patterns, nutrient intakes, and serum lipid levels according to kimchi consumption in college students. The anthropometric and biochemical parameters of blood samples from the subjects were investigated, as well as a kimchi frequency questionnaire, 24-hour food recall and dietary habits. The subjects were divided into two groups according to their kimchi consumption level based on the quantitative kimchi frequency questionnaire-kimchi consumption under 50 g group and kimchi consumption over 50 g group. As kimchi consumption increased, consumption of white rice (p<0.05) and noodles increased, whereas the consumption of confections decreased. The kimchi consumption over 50 g group was more likely to eat balance meals (p<0.05), and consume fruits and vegetables (p<0.05) than the other group. On the other hand, the kimchi consumption under 50 g group was more likely to consume milk than the kimchi consumption over 50 g group. The energy and sodium (p<0.05) intakes in the kimchi consumption over 50 g group were higher compared to the kimchi consumption under 50 g group. Kimchi consumption was positively correlated with HDL-cholesterol and negatively correlated with body fat, BMI, and blood glucose level. In addition, kimchi consumption was positively correlated with cereals, meats, and vegetables intakes, and negatively correlated with milk and dairy product intakes. However, there was no significant difference between the two groups.

Improvement of Skin Moisture Capacity through Dietary Beauty Supplement Containing Ceramides Derived from Rice (쌀 유래 세라마이드를 함유한 미용보조제의 피부미용개선 효과)

  • A placebo-controlled double-blind ingestion study of a beauty supplement containing rice-derived ceramide was performed. Thirty three subjects who always tended to have rough skin due to dryness participated in the study. Dermatological diagnosis by physicians showed that the supplement significantly improved dryness and itching of the skin. On measurement of water content in the skin, the supplement was shown to significantly increase water content in the skin. On microscopic three-dimensional analysis of the epidermis, the supplement was shown to improve smoothness, exfoliation, and short-term ingestion of the supplement containing rice derived ceramide, which is very effective as skin beautifying food.

Safety Evaluation in Mice of Cereals Infected with Fusarium graninearum (붉은곰팡이병에 감염된 맥류의 실험동물에 대한 안전성 평가)

  • In order to investigate the harmful effects of Fusarium, producing mycotoxins, contaminated cereals, two months feeding study was carried out in SPF-ICR mice. Mice diets were incorporated with 30% Fusarium infected wheat, nepal barley or barley. The wheat was processed to flour. The nepal barley and barley were polished by 68% and 58%, respectively. The cereal incorporating amount in mice diet were 0, 10, 30 and 50% for each processed cereal. Five week-old mice were fed with the prepared diet for 2 months. The effects of Fusarium contaminated cereals on the mice were observed after the feeding. The rates of body weight gain, diet and water consumption were not changed. There were no significant changes on hematology, blood biochemistry, gross and histopathological evaluation, organ weights in all treatment groups. These results suggest that the diets have no deleterious effects to ICR mice.

A Note on the Deveolopment of Tribolium castaneum (Coleoptera: Tenebrionidae) on Brown Rice Oryzae sativa L. (현미에서의 거짓쌀도둑, Tribilium castaneum(딱정발레목:거저리과)의 발육)

  • 현미를 사료로하여 네가지 정온도조정에서(25, 28, 34, 36$^{circ}C$ $pm$0.5$^{\circ}C$, RH 70%)에서 거짓쌀도둑(Tribilium castaneum Herbst)의 각 충태별 평균발육기간($\pm$SE)을 산출하였으며, 이를 기초로하여 발육임계온도를 추정하였다. 난의 평균발육기간은 각 온도에서 7.6$\pm$0.25, 4.8$\pm$0.10, 3.0$\pm$0.03, 2.5$\pm$0.09일, 유충에서 각각 53.3$\pm$1.49, 33.4$\pm$0.57, 30.6$\pm$0.70, 31.0$\pm$1.18일, 용에서 각각 12.1$\pm$0.17, 7.8$\pm$0.09, 5.0$\pm$0.07일로 산출되었으며, 난에서 성충우화시기까지의 전발육기간은 각각72.3$\pm$1.67, 46.0$\pm$0.05, 39.4$\pm$0.64, 38.7$\pm$1.15일로 산출되었다. 난과 용의 발육기간은 밀과 옥수수같은 다른 식이조건에서와 유사하였으나, 섭식을 하는 유충기의 발육은 밀보다 현미에서 상대적으로 지체되는 현상을 보였다. 한편 현미를 섭취했을 경우, 밀을 섭취했을 때 보다 발육중 치사율이 높아 밀에 비해 현미가 저급의 식물임을 보여주었다. 거짓쌀도둑 난, 유충 용 및 전발육기간의 저온발육임게온도는 각 충태 공히 20.0$^{\circ}C$로 산출되었으며, 유충과 전발육기간의 고온발육임계온도는 각각 40.2$^{\circ}C$와 41.9$^{\circ}C$로 추정되었다. 영기수는 온도에 상관없이 최빈치 7회를 나타냈지만, 온도의 상승에 따라 7회 이상 탈피하는 비율이 높아지는 경향을 보였다. 성비는 온도와 무관한 것으로 나타났다.

쌀의 tocol 획분이 고콜레스테롤 식이를 섭취한 흰쥐의 체내 지질함량에 미치는 영향

  • 본 연구에서는 현미로부터 tocoles 획분을 분리하여 고콜레스테롤 식이를 섭취한 흰쥐의 체내 지질대사에 미치는 영향을 조사하였다. 실험동물은 SD계 숫컷 5주령을 구입하여 정상군, 대조군 (1% cholesterol), rice oil 첨가군, tocoles 첨가군의 4군으로 나누어 AIN-76 diet 조성에 의거하여 식이를 조제하여 4주 동안 섭취시켰다. 실험기간이 끝난 후 복부 대동맥으로부터 채혈하고 각 조직을 적출하여 간, 신장, 비장 및 부고환지방 조직의 무게를 측정하였다. 또한 혈청 lipid profile과 TBARS 함량 및 ALT, AST 및 ALP 활성을 분석하였고 간장중 중성지방, 콜레스테롤 및 TBARS 함량과 G6PDH 및 malic enzyme을 분석하였다. 그 결과 간장 및 부고환지방의 무게가 대조군에서 유의적으로 증가하였으나, tocoles 첨가군은 정상군의 수준으로 감소하였다. 혈청 내의 중성지방과 총 콜레스테롤은 실험군 간에 유의적인 차이는 나타내지 않았으나 감소하는 경향을 보였다. 간장 조직 내 지질함량은 대조군에서 높게 나타났으며, tocoles 군에서 중성지방과 콜레스테롤 및 총 지방의 함량이 유의하게 감소하였다. 지질 과산화물 함량은 혈청과 간장 조직 모두 유의적으로 감소하였다.
