해양 심층수 첨가에 따른 알콜발효 효모의 증식 변화

  • 최근 새로운 바다 자원으로서 “해양 심층수”가 주목받고 있다. 해양 심층수(深層水, deep sea water)는 태양광이 도달하지 않는 수심 200 m 이상 깊이의 물로 수온이 2$^{\circ}C$ 이하로 연중 거의 변화가 없는 저온안정성과 무기 영양염을 다량 포함하는 특징이 있어 심층수의 활용도는 매우 높다. NaCl만 제거하면 훌릉한 생수가 되기 때문에 심층수를 원료로 한 식품, 화장품, 의약품 개발에 대한 관심이 높아지고 있다. 미국, 일본 등지에서는 10여년전부터 심층수를 이용한 에너지, 수자원, 생수 및 식품 산업이 활발히 진행되어졌다. 현재 식품 산업분야로는 두부제조, 빵, 청주, 간장, 된장 등의 발효식품에 대한 연구가 진행되어지고 있다. 심층수를 적당하게 첨가하면 알코올 농도가 높아지는 발효강화작용이 있다. 새로운 건강 먹거리를 갈망하는 현대인들에게 해양 심층수를 이용한 발효식품은 매우 환영받을 것으로 사료된다. 이에 본 연구는 해양 심층수의 다양한 자원성을 효율적으로 활용하기 위해 심층수의 청정성과 풍부한 미네랄을 함유한 심층수의 농도에 따른 효모의 증식도를 알아봄으로서 적응력 강한 효모를 조사하였다. 실험에 사용한 해양 심층수는 淸凉飮料水(日本ナチュラルヘルス株式會社, 深透水 1550) 사용하였다. 효모균주는 경북과학대 전통식품 연구소에서 보유하고 있는 9종의 효모를 사용하였으며, 심층수 경도 250, 500, 1000의 심층수와 1차 증류수(대조군)에 sucrose 10% 첨가한 당용액을 사용하였다. 또한 당의 적응력을 알아보기 위해 sucrose 10, 15, 20% 첨가 당용액을 사용하여 Sacch.cerevisiae kluyvery DJ97 효모의 증식도를 알아보았다. 그 결과, Saccharomyces cerevisiae 12호 균주가 심층수 경도 500인 시험군에서 증식력이 높았으며, Saccharomyces cerevisiae 901 균주는 경도 1000인 시험군이 대조군에 비해 증식력이 높게 나타나 효모균주의 종류와 심층수의 첨가량에 따라 적응력이 차이가 있었다. 당농도와 심층수 첨가량에 따른 효모 균주의 발효력을 알아본 결과 심층수 경도 200의 당 10% 첨가군에서 가장 잘 증식하는 것으로 나타나, 알코을 효모균주의 발효력을 높이는데는 최적의 농도가 있음을 알 수 있었다. 따라서 심층수를 이용한 다양한 발효식품에 대한 연구가 요구되어진다.

Change in Growth of alcohol Fermentation Yeast with Addition of Deep Seawater (해양 심층수 첨가에 따른 알콜발효 효모의 증식 변화)

  • In order to study optimum culture condition of yeast medium added deep seawater, we examed samples with 9 yeast strains. The growth rate were measured for Saccharomyces cerevisiae 10, 11, 12, 901 and RCY and Saccharomyces kluyvery DJ97, Saccharomyces cerevisiae YJK, JK99, CMY-28 etc.. The growth of S. cerevisiae 12 was found most active in the deep seawater(hardness 500). The growth rate of S. cerevisiae 901 on medium containing deep seawater(hardness 1000) was faster than that of the yeast on medium without deep seawater. The use of deep seawater on the growth of Sacch.cerevisiae kluyvery DJ97 revealed maximum growth under the condition of hardness 200 of deep seawater and 10% of sugar concentration.

해양 심층수염을 이용한 무 절임시 품질특성 변화

  • 해양 심층수는 저온 안정성, 부영양성 및 인공물질에 오염되지 않은 해양수로서 오늘날 많은 분야에서 사용 가능성이 대두되고 있다. 해양 심층수를 음료나 식품, 화장품 등에 이용하였을 경우 나타나는 효과의 일부는 미네랄 특성과 관계가 있는 것으로 알려져 있으며, 심층수를 원료로 한 음료수에는 혈행개선 효과가 있으며, 심층수를 생수로 섭취하였을 경우 혈중 콜레스테롤치을 유의적으로 낮추는 것으로 알려져 있으며, 간장의 인지질 값도 낮춘다는 연구보고가 있다. 또한 해양심층수는 아토피성 피부염에 효과가 있으며, 식품의 맛을 개선하는 것으로도 알려져 있다. 우리나라의 대표적인 음식인 김치는 배추, 무 둥을 식염으로 절여 각종 채소류 및 향신료를 첨가한 후 젖산발효를 적절하게 시켜 숙성한 채소발효식품으로 세계적인 음식으로서 각광받고 있다. 이 중 무는 천일염이나 정제염에 절여서 깍두기나 동치미 등에 사용되기도 하며, 김치의 재료로 배추 다음으로 이용율이 높은 김치소재이다. 무는 절임여하에 따라서 김치의 맛, 품잘, 미생물의 번식속도, 저장성 등이 변화하며, 절임이 중요한 품질요소로 알려져 있다. 소금의 종류 및 소금의 사용방법에 따른 무의 품질특성의 변화에 대한 연구들이 있으나 해양 심층수염을 이용하여 무를 절임시 품질특성에 대한 연구는 이루어져 있지 않는 실정이다. 이에 본 실험에서는 해양 심층수염에 무의 절임에 따라 무의 절임 특성 변화를 관찰하였다. 해양 심층수염과 천일염을 이용하여 무를 절임할 경우 수축율, 염도, 물성의 특성 변화를 관찰하였다. 해양 심층수염을 가지고 무를 절임할 경우 특성 변화를 살펴본 결과 수축률은 절임 8시간 이후에 해양 심층수염으로 절임한 경우가 천일염으로 절임한 경우보다 큰 것으로 나타났으며, 해양 심층수염이 천일염보다 더 높은 염도를 나타내며 절임되었다. 젤리강도는 절임시간이 증가함에 따라 감소하는 경향을 나타내었으며, 절임 염도가 높을수록 젤리강도는 낮아지는 경향을 나타내었다. 무의 연도(Softness)는 심층수염이 천일염보다 높은 값을 나타냄으로서 해양 심층수염에 절일 때 더 부드러운 물성을 나타냄을 볼 수 있었다. 견고성은 해양 심층수염에 절임하는 것이 천일염에 절임하는 것보다 더 높은 값을 나타났다. 해양 심층 수염이 천일염보다 빨리 무 조직에 손상을 줌으로 절임을 단축시키지만 절임시간이 연장되면 오히려 무 조직의 손상을 완화시키는 것으로 나타났다. 이러한 차이는 김치맛과 발효에도 영향을 미치는 품질 요인이 될 수 있을 것으로 판단되며, 해양 심층수염을 이용하여 김치발효시 특성 변화에 대해 더 구체적인 연구가 필요하리라 사료된다.

Effects of Deep Seawater and Salt on the Quality Characteristics of Breads (해양 심층수 및 염을 이용한 식빵의 품질 특성)

  • Deep seawater is pumped up about 200 m water depth, which has characteristics of rich nutrients, low temperature and cleanness. This study was performed to investigate the effect of deep seawater and deep seawater salt on the yeast growth of fermented bread. The rate of increase in volume of groups added with deep seawater and deep seawater salt was higher than that of groups added with distilled water. The pore pattern of groups added with deep seawater was more regular than that of groups added with distilled water. In sensory property, the bread added with distilled water and deep seawater salt has the highest score (6.56) in overall acceptability.

Effect of the Deep Sea Water of East Coast on Blood Flow and Serum Lipids (동해안 심층수의 혈행 및 혈중지질 개선효과)

  • The more the population grow, the severer the shortage of a basic human needs such as clean water, food, energy resources and so on. Recently, we aware that deep sea water can be utilized to solve comprehensively food, energy and water problems. In this study, inhibitory effect of the deep sea water of east coast (DSW) on platelet aggregation were investigated using washed platelet and beneficial effect of the change of lipid concentration on serum at various time intervals for three weeks. In this study six groups of 6-month-old Sparague-Dawley rats were examined. An intact group served as controls (C-1D : breeding for one day, C-1W : breeding for one week, C-3W : breeding for three week). The fourth group (1D-DSW) supplemented with DSW for one day. The fifth group (1W-DSW)supplemented with DSW for a week. The sixth group (3W-DSW)supplemented with DSW for three weeks. The total cholesterol and triglyceride concentration on serum of supplemented groups with the DSW for one or three weeks were significantly decreased. The serum HDL-cholesterol level in the DSW groups were significantly higher than the level in the control group. The supplementation of DSW for one day did not appear to have such a beneficial effect on lipid level. The ability of platelet aggregation of supplemented groups with DSW was less than control group. These results suggest that supplementation with DSW is positively influence on lipid concentration and platelet aggregation.

Quality Characteristics of Kochujang Added Deep Sea Water Salt and Sea Tangle (해양 심층수염 및 다시마 분말 첨가 고추장의 품질특성)

  • In order to improve the quality of kochujang, sea tangle was added to deep sea water kochujang and their effects on component analysis and sensory evaluation were investigated for 90 days of fermentation. Crude protein, crude lipid and carbohydrate of deep sea water kochujang was higher than general kochujang. The content of potassium among the mineral in deep sea water kochujang was also presented higher than the general kochujang. Total amino acid contents were 16,608.8 ng/mg in deep sea water kochujang and 14,943.2 ng/mg in general kochujang. Content of oleic acid had the highest value at deep sea water kochujang. Sensory evaluation of showed that deep sea water kochujang were more aceeptable than general kochujang in the taste and overall acceptability.

Effects of Deep Sea Water Treatment on the Inhibition of Over-Growth of Plug Seedlings (해양심층수 처리가 육묘 시 도장억제에 미치는 영향)

  • The investigation of the effect of the deep sea water in different concentration (0%, 10%, 20%, 30%, 40%) on the inhibition of growth, fresh weight, dry weight of the tomato, hot pepper, cucumber plug seedlings were conducted. As the concentration of the deep sea water was higher, the greater inhibition was noticed. The height were decreased at the rate of 8%, 25%, 32% in tomato, 9%, 26%, 27% in hot pepper, and 21%, 50%, 58% in cucumber plug seedlings as compare to local check. The fresh weights were decreased highly, as the concentration of the deep sea water increased. Tomato seedlings showed the decrease rate of 12%, 23%, 33% at above the ground part of plants, and 2%, 30%, 52% at under the ground parts. Likewise, Hot pepper seedlings showed the decrease rate of 1.1%, 5.7%, 15.4% at above the ground part of plants, and 22.1%, 25%, 47.1%, respectively at under the ground parts. The fresh weight of cucumber was decreased at the rate of 8.1%, 36%, 51% in the above the ground, and 6.2%, 11%, 65% at the under the ground parts. In tomato, hot pepper, and cucumber seedlings, the dry weight was decreased as the concentration of deep sea water was increased. Thirty percent of deep sea water treatment reduced the dry weight of the seedlings as half of the control seedlings. One of the important factors of the seedling quality is compactness. Compactness was highest at 20% deep sea water in all the three crop seedlings.

Effect of Reverse Osmosis-treated Deep Sea Water Supplementation on the Quality Characteristics of Chicken Meat (역삼투 처리한 해양 심층수의 급여가 닭고기의 품질 특성에 미치는 영향)

  • This study was carried out to investigate the effect of reverse osmosis (RO)-treated deep sea water (DSW) supplementation on the quality characteristics of chicken breast meat. For 28 days, one-day-old broiler chicks (Ross 308) were divided into two groups and supplemented with either water (control) or RO-treated DSW (diluted with deionized water at 1:20 [RO-treated DSW:deionized water] ratio). The control group was fed on a basal diet containing 0.21% salt. Five birds were slaughtered on each group and breast meat from carcasses was stored at $4^{\circ}C$ for 9 days. The proximate composition, fatty acid composition, cholesterol content, mineral content, pH value, water-holding capacity and Warner-Bratzler shear force value were not affected by RO-treated DSW supplementation. At 6 day of storage, lipid oxidation (2-thiobarbituric acid reactive substances) was significantly higher in RO-treated DSW group than in the control (P<0.05). With regard to meat color, CIE $L^*$ value was significantly lower in RO-treated DSW group than in the control after 6 day of storage (P<0.05), whereas CIE $a^*$ and $b^*$ values were not significantly different between two groups during storage. Consequently, RO-treated DSW supplementation led to a darker color and reduced the lipid oxidation stability in chicken meat during storage. Therefore, these results may indicate that RO-treated DSW can not be used as drinking water of chickens because it negatively affects the quality of chicken meat.

  • This study was conducted to investigate the effect of a deep sea water (DSW) supplement on the quality characteristics of chicken meat. One-day-old broiler chicks (Ross 308) were assigned to three groups and supplemented with water (control) or DSW diluted with deionized water at 1:40 (DSW1:40) and 1:20 (DSW1:20) ratios, respectively, for 28 d. The control was fed a basal diet containing 0.18% salt. Five birds were slaughtered from each group, and the breast meat was collected and stored at $4^{\circ}C$ for 9 d. The DSW supplementation did not affect cholesterol content in the chicken meat. The DSW 1:40 supplement decreased fat content (p<0.05), water-holding capacity (p<0.05), and sodium and potassium contents (p<0.05) but increased unsaturated fatty acid content (p<0.05) and the $L^*$ value (p<0.05) of the meat. The DSW 1:20 supplement increased the $a^*$ value (p<0.05) but decreased thiobarbituric acid reactive substance inhibition, the $L^*$ value (p<0.05), and the $b^*$ value (p<0.05) in chicken meat. However, the DSW 1:20 supplement did not affect water-holding capacity, fatty acid composition, or mineral content. DSW supplementation at a higher concentration increased red color but decreased lipid oxidation stability. However, further studies are needed to support our findings.

International case studies for deep sea water industry -Focusing on the Taiwan case- (해양심층수 산업 해외 사례 연구 -대만 사례의 분석과 시사점을 중심으로-)

  • Deep Sea Water (DSW) has been exploited mainly by industry in a few countries including the U.S., Japan, Taiwan, and Korea. The development strategy of these states has pursued various goals based on their unique industrial environments and visions. Among them, Taiwan recently started their DSW industrialization, but has rapidly developed a variety of technologies and products. On the contrary, the Korean DSW industry has remained stagnant in the initial and growing stages for years, and now appears to need new plans and strategies for further development. The current literature lacks the strategy and policies required to foster the development of the domestic DSW industry. Relying upon the case of advanced foreign DSW industries, this study delineates the current status of the Korean DSW industry and discusses its future direction. Taiwan in particular has moved forward with policy development, financial and operation systems. This study attempts to provide a set of guidelines for the Korean DSW industry by focusing on the case of its Taiwanese equivalent. The Taiwanese strategical plans include premium drinkable water, government driven industrialization, diversification of DSW technologies and development of value-added products. This study provides a new direction for the DSW industry.
