건조시간이 녹포의 품질에 미치는 영향

  • 본 연구는 사슴고기를 활용한 기능성 육제품인 녹포를 개발하여 이를 실온 $35^{\circ}C$에 보관하면서 품질특성을 분석하였다. 건조시간에 따라 pH와 수분활성도는 T1이 다른 두 처리구에 비하여 높은 반면 TBARS는 낮은 경향이었으며, 제조시 건조시간이 길어짐에 따라 수분활성도는 낮아졌으며, T1 처리구는 저장기간에 따라 수분활성도는 증가하였으나 나머지 처리구는 저장기간에 따라 차이를 나타내지 않았다. 총세균수 T1이 다른 두 처리구에 비하여 높았다.

진공포장이 배아미와 현미의 저장성에 미치는 영향

  • 쌀에 함유된 지방질은 가공 처리 중 쉽게 가수분해나 산화를 일으켜 이취 또는 불쾌한 맛을 생성하여 밥의 품질을 저하시키는 원인이 된다. 산화를 억제시키기 위해서는 공기와의 접촉을 차단시키는 것이 중요하다. 이러한 목적의 일환으로 본 연구에서는 쌀의 저장기간을 연장시키기 위하여 배아미와 현미를 진공포장한 후 실온에서 보관하면서 14주 동안 2주마다 과산화물가와 산가를 분석하여 산패도를 측정하였다. 비포장 현미와 배아미의 과산화물가는 처음 4주동안은 모두 6∼9 meq/kg정도로 차이가 없었지만, 현미의 경우에는 6주후에는 배아미보다 산패가 빨리 진행되어 휘발성 물질의 생성에 따라 이취미가 나기 시작하였다. 진공포장한 현미와 배아미는 지방질 함량의 차이 때문에 초기에는 과산화물가 0.3 meq/kg정도의 차이가 있었고, 저장과정 중에는 과산화물가의 차이가 거의 없었다. 산가(유리지방산)의 양도 비포장한 배아미와 현미의 경우에는 저장기간중 0.5 mg/g정도의 차이가 있었지만, 진공포장을 한 경우에는 8주 동안에는 큰 차이가 나지 않았으며, 10주후 부터는 0.6 mg/g정도의 차이를 나타냈다. 본 실험으로 배아미와 현미를 진공포장할 경우 비포장하였을 때보다 산패가 억제되어 10주 정도의 저장기간이 연장됨을 확인할 수 있었다.

  • 최근 플라스틱제 식품 포장재에 대한 환경학적 문제가 제기됨으로 인하여 다양한 곡류 단백질의 필름 형성능력에 많은 관심이 모아지고 있다. 단백질 필름으로서 soy protein, wheat gluten, rice bran, corn zein, glatin 및 colloagen 등의 소재들이 많은 관심을 모으고 있으며, 비교적 필름 형성력이 뛰어나고, 저렴한 가격으로 구입할 수 있는 대두 단백질에 커다란 관심이 모아지고 있는 실정이다. 이들 물질로부터 제조된 가식성 필름 및 코팅제들은 식품의 보존기간을 연장시킬 뿐만 아니라 수분 및 용질의 이동을 방지하여 식품의 품질을 개선시킬 수 있다. 또한 이들 필름 및 코팅제들은 산소 및 이산화탄소의 이동, 이로 인한 지방 산화 그리고 휘발성 향기성분들의 감소 등을 조절할 수 있다. 대두 단백질 필름의 사과 코팅제로서의 이용은 개별적 포장이 용이하지 않는 제품들의 코팅제로서 활용하여 대두 단백질 필름 및 코팅제의 잠재적 시장성을 확인하는 하나의 응용분야이다. 본 실험의 목적은 대두 단백질 코팅제를 후지와 golden delicious 사과에 코팅하여 상온 (22$^{\circ}C$)과 냉장온도(2-4$^{\circ}C$)에서 60일동안 보관하여 색도, 경도 및 산도 변화 등을 측정하여 저장 중 사과의 품질에 미치는 영향을 조사하였다. 대두 단백질 코팅제는 대두 단백 용액들 (5g, 8g, 10g/100mL water)에 glycerin (50% w/w의 단백질)을 가소재로 첨가한 후 알칼리 용액으로 pH 9.0에 맞추었다. 그런후 85$^{\circ}C$에서 30분간 가열하여 코팅제를 준비하였다. 후지 사과(붉은색)와 golden delicious 사과 (초록색)를 dipping 방법으로 코팅하여 60일도안 실온과 냉장온도에 저자하여 보존기간의 연장을 확인하였다. 사과품질의 결정인자는 Hunter L, a, b 색도값과 사과의 조직의 강도 (외부 및 내부) 그리고 산도 등을 측정하였다. 코팅된 후지 및 golden delicious 사과의 표피 및 내부 경도는 control과 비교하여 높은 경도를 유지하였다. 또한 냉장온도에서 30일 동안 보관하였을 때, control 사과와 거의 비슷한 경도를 유지하였다. 식품의 색도를 소비자의 기호를 결정하는 중요한 인자이다. 대두 단백질로 코팅된 후지 사과는 상온에서 20일 동안은 control에 비하여 약간의 색도의 증가를 보였으나, 그 후 60일 동안은 색도의 증가를 보이지 않았다. 그러나 냉장 보관한 control 후지 사과에 비하여 색도의 증가가 관찰되었다. 대두 단백질 코팅제가 사과의 색도 변화를 방지하는 효과를 가졌으나, 저장 온도가 색도의 변화에 더욱 큰 영향을 미침을 알 수 있었다. 대두 단백질로 코팅된 golden delicious는 상온에서60일 동안 보관하였을 경우, 사과표피의 색도 변화를 현저히 지연시킴을 확인하였다. 또한 control과 비교하여 성공적으로 사과에 코팅하였으며, 상온에서 보관하여을 때 사과의 품질을 30일 이상 연장하는 효과를 관찰하였다. 이들 결과로부터 대두단백질 필름이 과일 등의 포장제로서 이용할 가능성을 확인하였다.

Degradation and Conversion of Blood Group Antigens in Saliva (혈액형 항원의 분해와 변환에 관한 연구)

  • Mucin glycoproteins are the primary carriers of the oligosaccharide moieties that constitute the blood group substances in human saliva. The aim of this study was to determine whether or not the conversion of either the A or B blood group antigens to the H antigen can occur during the degradation process of stored saliva samples. Forty subjects (20 subjects in each A and B blood group) identified as secretors were enrolled in this study. Fresh whole saliva samples and their clarified supernatants were stored at room temperature for 1 week. The conversion of the blood group antigens was detected by SDS-PAGE and immunoblotting. Among the subjects showing the conversion in whole saliva, glandular saliva samples were obtained from 8 subjects (4 subjects in each A and B blood group). Submandibular-sublingual saliva (SMSL) and a mixture of SMSL and parotid saliva (PS) were stored at room temperature for 1 week. The conversion of the blood group antigens was detected by the same method. The obtained results were as follows: 1. In the clarified samples of whole saliva, the A antigen was detected as being either intact (5%) or degraded molecules (95%) after the 1 week period. Conversion of the A antigen to the H antigen was detected in 5 subjects (25%). In the unclarified samples, the A antigen was either detected as degraded molecules (90%) or was not detected (10%). Conversion of the antigen had occurred in 4 subjects (20%). 2. In the clarified samples of whole saliva, the B antigen was detected as intact (20%) or as degraded molecules (65%) or was not detected (15%) after the 1 week period. Conversion of the B antigen to the H antigen was detected in 7 subjects (35%). In the unclarified samples, the B antigen was detected as intact (5%) or as degraded molecules (65%), or was not detected (30%). Conversion of the antigen was observed in 2 subjects (10%). 3. In the glandular saliva samples, only one of the four subjects displayed an antigenic conversion from the A to H antigen or from the B to H antigen. The conversion had occurred in both the SMSL samples and the SMSL and PS mixture. No degradation of the antigens was detected in the other three samples of the A or B blood groups, nor was there any conversion. The results demonstrated that conversion of the blood group antigens could occur in saliva, and suggested that the enzymes responsible for the conversion are present in saliva. Further studies on the origin and activity of the specific glycosidases in saliva as well as quantitative measurements of the antigenic conversion will be needed.

Heavy Metal Content and its Change in Open Storage of Canned Orange Juice (캔 오렌지쥬스의 중금속 함량 및 개봉 저장 중의 변화)

  • The average concentration of Pb in 53 samples of canned orange juice currently sold in Korean market was 0.225 mg/kg, and that of Sn, 40.7 mg/kg. There was no appreciable difference in Pb concentration according to elapsed time after manufacturing, whereas Sn concentration increased 0.66 mg/kg per month. During the storage at room temperature or in refrigerator after opening, the Pb concentration increased slowly, reaching 1.7 to 1.8 times of original concentration, whereas Sn concentration increased by 20% per day, resulting in 3 times of original concentration after 7 days. There were no serious changes in Pb and Sn concentration in storage at room temperature or refrigerator for 3 days, when juice samples were opened and transferred to glass container. It is needed that detailed inspection by undertaken to monitor the contents of heavy metals in canned orange juice, since 18% of samples within recommended distribution period exceeded the legal standard for Pb, and recommended that more attention be paid in handling canned orange juice after opening, in order to avoid the hazard from heavy metals.

The Microbiological Assessment of a University Foodservice Establishment, and Hazard Analysis for Quality Control of Fried Fish Cake Soup Preparation (대학 급식시설의 위생 실태조사 및 품질관리를 위한 연구 - 제 1 보 : 오뎅국을 중심으로 -)

  • A sanitary quality of a university foodservice establishment was assessed in terms of time and temperature, pH and Aw, and microbiological evaluation. Critical control points during various phases in product flow of fried fish cake soup were identified using hazard analysis concept. The results are summarized as follows : 1) Time and temperature data indicated that phases of holding ingredients at room temperature after cooking, and hot - holding of soup before assembly were critical. 2) pH and Aw values were in favorable for microbial growth. 3) Microbiological data indicated that microbial quality of ingredients was in poor condition. A holding practice of cooked ingredients at room temperature might provide the chance for microbial contamination and multiplication. Hot - holding time and temperature of soup should be strictly controlled to assure the food safety, since the microbial quality of serving food can be directly influenced by the hot - holding temperature of soup. 4) Microbiological test results for food containers, equipments, working surfaces, and supplies indicated that sanitary conditions of earthenware, gloves, wiping cloths and cutting board should be improved promptly. 5) Critical control points identified were : ingredients, pre - preparation, post - preparation, and holding before assembly and service. 6) Guidelines for the effective quality control program for this operation were suggested.

Effects of Storage Conditions on Weight Loss and Free Sugar Composition of Fresh Ginseng (보관조건에 따른 수삼의 중량과 유리당 조성 변화)

  • This study was to examine the effect of the opening ratio (area of spile hole/total surface area) of plastic container and storage temperature on physicochemical changes of fresh ginseng. At room temperature ($19\~23^{\circ}C$, RH $40\~61\%$), fungi and spoilage were observed 4 and 10 days, respectively after storing the fresh ginseng in a closed container. In storage container with $1\%$ opening ratio, fungi appeared 8 days after storage. In the container with $5\%$ and $10\%$ opening ratio, fresh ginseng showed excessive loss of moisture on the surface only after 4 days. The weight loss was most remarkable in the container with 5 and $10\%$ opening ratio. Content of maltose and sucrose decreased gradually in accordance with storage time but the extent of decreasing ratio was less significant in the container with lower opening ratio. At low temperature $(4\~9^{\circ}C,\;RH\;72\~92\%)$, no fungi but $10\%$ loss of weight was observed in the container with $5\%$ and $10\%$ opening ratio after 12 days storage. But in the tightly closed container and $1\%$ opening ratio for spiting, fresh ginseng showed good appearance even after 30 days of storage. Free sugars, especially maltose revealed gradual decrease but sucrose gradually increase following decrease at the beginning. This result suggests that storage condition of low temperature and opening ratio of plastic box less than $1\%$ can extend storage span of fresh ginseng significantly.

Effects of pretreatments and storage temperature on the quality of lotus leaves (연잎의 품질특성에 미치는 전처리 방법과 저장온도의 영향)

  • This study aimed to investigate the effects of pretreatments blanching, roasting, drying, and storage temperatures ($25^{\circ}C$, $4^{\circ}C$ and $-10^{\circ}C$) on their quality of lotus leaves. As a result, the lotus leaves retained a good appearance when stored at $25^{\circ}C$ for 5 days, $4^{\circ}C$ for 30 days, and $-10^{\circ}C$ for 90 days, regardless of the pretreatment used. At the same storage temperatures, pH, soluble solids, total acid content, polyphenols, and microorganisms were significantly different among the pretreatments (p<0.05). Soluble solids, pH, and total acid contents were not significantly different for the same pretreatments at different storage temperatures. However, the polyphenol, oxalic acid, and tartaric acid contents of lotus leaves were significantly different after drying and blanching treatments. In particular, it was shown that polyphenol content of the lotus leaf was affected by both pretreatment and storage temperature. In conclusion, the lotus leaves appeared in good condition until 5 days at $25^{\circ}C$, 30 days at $4^{\circ}C$, and 90 days at $-10^{\circ}C$, regardless of the pretreatment while influenced by storage temperature.

A Study for the Improvement of the Sanitary Condition and the Quality of Packaged Meals(Dosirak) Produced in Packaged Meal Manufacturing Establishments in Seoul city and Kyungki-do Province (서울, 경기지역 도시락 제조업체의 위생실태 및 도시락 생산의 품질개선을 위한 연구)

  • Packaged meal manufacturing establishments in Seoul city and Kyungkido province were assessed in terms of the sanitary conditions and practices, time and temperature, and microbiological quality. Sanitary check-lists were developed to evaluate the sanitary condition of sampled packaged meal manufacturing establishments. Microbiological tests on.food containers, equipments, and foods in various phases of product flow were done. The results of the study are summarized as follows; 1) Sanitary condition of kitchen.and sanitary practices of employees in.large and medium establishments were evaluated as the some improvement required in order to meet all standards. But sanitary practices of employees in small establishments were evaluated as the unsatisfactory state with negligence or ignorance of safe practice. 2) The microbiological quality of basic ingredients and food materials after pre-preparation were poor. 3) Time and temperature data indicated that phases of holding ingredients at room temperature after cooking, assembly and packaging before delivery were critical. 4) Microbiological test results for food containers, equipments indicated that sanitary conditions of stainless steel ware, knife, wiping clothes and cutting board should be improved promptly. 5) Critical control points identified were ingredients, pre-preparation, Holding, and assembly and packaging. 6) Guidelines were suggested for effective quality control of packaged meals production.

Study on the Storage Stability of Horse Fat in Jeju (제주산 말지방(Horse Fat)의 저장 안정성 향상에 관한 연구)

  • Horse fat is known to be an effective ingredient in Asia, and the horse fat itself, which is mixed with other ingredients at the additive level, is often sold as a finished product. In this case, physical properties of the horse fat raw material are important. Many horse fats produced in Korea (Jeju) have low temperature stability, so if not stored at low temperatures, segregation may occur. In the case of Japanese horse fat, it is partially hydrogenated or is used the solid phase as the horse fat by separating the liquid phase and the solid phase that is harder and more stable than the horse fat of Jeju. In this study, the physical properties were tested to improve the temperature stability even without the partial hydrogenation process of Jeju horse fat. Various oil gelling agents were used in the study. Results confirmed that the physical properties of the hydroxystearic acid added Jeju horse fat were improved. In addition, stability evaluations at temperatures of 25 ℃, 40 ℃, 45 ℃ and flow behavior evaluations at temperatures of 25 ℃, 30 ℃, 40 ℃ were performed for Jeju horse fat with hydroxystearic acid, 100% Jeju horse fat, and 100% Japanese horse fat. Results showed that the Jeju horse fat improved in flow behavior by adding hydroxystearic acid similar to that of Japanese horse fat. In addition, when the crystal state was observed under a microscope, the thermal stability was improved by decreasing the size of the needle-type crystals with the addition of hydroxystearic acid. Jeju horse fat containing hydroxystearic acid was found to have no physical problems even when stored at room temperature for a long time.
