Comparative Effect of ${\gamma}$-Irradiation and Ozone Treatment for the Improvement of Hygienic Quality of Dried-Angelica Keiskei Koidz Powder (신선초 분말의 위생화를 위한 오존처리와 감미선 조사와의 비교 효과)

  • For the purpose of improving hygienic quality of dried-Angelica Keiskei Koidz powder, the effect of ozone treatment and gamma irradiation on the microbial decontamination and physicochemical properties were investigated. Gamma irradiation at 5 to 7.5 kGy resulted in sterilizing total aerobic bacteria, molds and coliforms below detective levels, while ozone treatment for 8 hours up to 18 ppm did not sufficiently eliminate the total aerobic bacteria of the sample. The physicochemical properties of the sample were not changed by gamma irradiation up to 7.5 kGy, whereas, ozone treatment caused remarkable changes in pH, TBA value, chlorophyll, carotenoid and fatty acid compositions. Therefore, this investigation demonstrated conclusively that gamma irradiation was more effective than ozone treatment for decontaminating and sterilizing the dried-Angelica Keiskei Koidz powder, with minimal effect on the physicochemical properties analyzed.

  • For the purpose of improving hygienic quality of health-foods, sterilization effects of ${\gamma}$-ray and ozone on microoganisms associated with food cultured in the media and contaminated in Angelica keiskei powder were investigated. Ozone was immersed in water and sprayed in air, on the concentration of 3 mg liter-1 at an air flow rate of 5 liter min-3. Test strains cultured in the media completely inhibited by ${\gamma}$-ray at irradiation doses of 0.25~2 kGy. In the case of ozone, test bacteria inactivated after treatment of 10~20 minutes, but test mold, Aspergillus flavus was not effective. Strains contaminated in Angelica keiskei powder completely inhibited by ${\gamma}$-ray at irradiation doses of 2.5~7.5 kGy. However, when the powder was sprayed with ozonized air for 10hours, Bacillus subtilis and Staphylococcus aureus among five strains were eliminated.

  • Changes in the contents of volatiles and chlorphylls of Angelica keiskei Kimchi during fermentation were investigated. Total chlorphyll contents decreased gradually during the fermentatin period. Chlorphyll a decreased rapidly from 1.38 to 0.5$\mu\textrm{g}$/cm by the 5th day of fermentation with no further changes at 7th day, while chlorophyll b did not show any change by 3rd day and decomposed rapidly thereafter. Major voltile compounds identified in the kimchi were sabinene, $\alpha$-pinene and $\alpha$-terpinolene, which were gradually decreased during fermentation. There were significant differnce in color, sourness, bitterness and overall acceptability in sernsory evauation of Angelica keiskei Kimchi during fermentation at 2$0^{\circ}C$.

  • Genotoxicological safety on 10 kGy-gamma irradiated vegetable juices such as Oenanthstolonifera DC., Daucus carota L., Brassica oleracea var. acephala and Angelica keiskei was determined by the Salmonella typhmurium reversion assay, the SOS Chromotest using in Escherichia cloi PQ37 and chromosome aberration test in cultured Chinese hamster lung (CHL) fibroblast cells. Vegetable juices exposed to 10 kGy-gamma ray revealed negative results in these three in vitro mutagenetic tests.

Chemical Characteristics, Antimicrobial Activity and Dyeability of Gyeongsanbansi (Persimmon kaki) Unripe Juice Extraction and Fermented Liquor (경산반시의 미숙감 착즙액과 발효액의 화학적 특성, 항균성 및 염색성)

  • This study was conducted to examine the chemical characteristics, antibacterial activity and dyeability of several juices made from Persimmon cv. 'Gyeongsanbanshi'. Young fruits of persimmon were harvested at 1st August, 2006. Fruit juice was extracted soon after harvesting, some of them were stored at $4{\sim}6^{\circ}C$ for 6 months or fermented at room temperature for 6 months. $L^*$ values of vinegar was 43.5 higher than those of fresh juice and fermented liquor. Inorganic matter contents in fresh juice, fermented liquor and vinegar were higher in the order of K ($1696{\sim}2880\;mg$/100 g), Ca ($166.7{\sim}417.9\;mg$/100 g), Mg ($203.9{\sim}214.4\;mg$/100 g), P ($37.9{\sim}109.8\;mg$/100 g), Na ($13.2{\sim}23.3\;mg$/100 g) and Fe ($8.4{\sim}14.2\;mg$/100 g). Cotton fabrics dyed with the fermented liquor and vinegar had the largest inhibitory zone against the gram-positive microorganisms with range of $16.0{\sim}35.0\;mm$. Cotton fabrics dyed with the fresh juice showed $9.0{\sim}9.5\;mm$ inhibitory zone against the gram-negative microorganisms, $15.0{\sim}21.0\;mm$ with the juice stored at $4{\sim}6^{\circ}C$ for 6 months, $22.0{\sim}23.0\;mm$ with the fermented liquor and $9.0{\sim}35.0\;mm$ with vinegar. The hue of cotton fabrics dyed with the fermented liquor had a YR levels, and antibacterial activity of them were 78.5%.

Contents of Minerals and Vitamins in Organic Vegetables (유기농 야채의 무기물 및 비타민 함량)

  • Proximate components, minerals, vitamins and chlorophyll contents were determined in vegetables purchased at Garak-dong market and organic vegetables cultivated at Hongchun, Kangwon-do. The vegetables were Kale, Angelica Keiskei Koidz, Celery, Lettuce and Allium fistulosum. In proximate component contents, analyzed crude protein and fat contents of organic vegetables were higher than those of general vegetables. Organic vegetables had strong green color. Minerals such as sodium, potassium, calcium, phosphorus, iron as well as vitamins were determined. Contents of minerals and vitamins in organic vegetables were higher than those of general vegetables. Total mineral content of organic and general kales were 811.8 mg/l00g, and 688.1 mg/l00g, respectively. Total mineral content of organic Angelica Keiskei Kowz, Celery, Lettuce and Allium fistulosum were 447.9, 486.5, 368.6, and 320.9 mg/100g, respectively.

  • This experiment was conducted to find appropriate media in hydroponic Culture of Angelica keiskei. The mediaused were carbonized rice hull, perlite, vermiculite, mixture(carbonized rice hull (1) : perlite (1) : peatmoss (1)), mixture+peatmoss20%, mixture+peatmoss40%, mixtrue+peatmoss60%, perlite 40%+peatmoss40%+vermiculite20% and open field cultivation. The highest yield of Angeli ca keiskei was shown 4,428ka/10a at vermiculite. The yield of vermiculite was increased about 133 percent compared to that of open field cultivation. The highest germanium contents was shown 0.52ppm at mixture+peatmoss 40%. The contents of germanium increased about 108 percent at mixture+peatmoss40% compared to that of open field cultivation.

Ashitaba and red ginseng complex stimulates exercise capacity by increasing mitochondrial biogenesis (미토콘드리아 생합성 촉진을 통한 신선초와 홍삼 복합물의 운동수행능력 증가 효과)

  • Mitochondrial biogenesis-a process that leads to an increment in the number and density of mitochondria, improves physical performance and body health by enhancing exercise capacity. In the present study, we investigated the stimulatory effect of Ashitaba and red ginseng complex (ARC) on exercise capacity in L6 skeletal muscle cells and mice. In L6 skeletal muscle cells, ARC increased the mitochondrial contents and ATP production by activating AMP-activated protein kinase (AMPK), sirtuin 1 (SIRT1), and peroxisome proliferator-activated receptor gamma coactivator-1 alpha (PGC-$1{\alpha}$) and up-regulating the mRNA expression of nuclear respiratory factor-1 (NRF-1) and mitochondrial transcription factor A (TFAM). In the animal experiments, mice treated with ARC showed an increment in exercise capacity as compared with mice treated with Ashitaba extract or red ginseng extract alone. These studies indicate that ARC might serve as a potential natural candidate for enhancing exercise capacity by stimulation of mitochondrial biogenesis.

Investigation of the Utilization of Organic Materials and the Chemical Properties of Soil in the Organic Farms in Korea (국내 유기농재배지 유기물 시용실태 및 토양의 화학적 특성)

  • A survey of 31 organic farmers were conducted to investigate the actual conditions of organic matter application. The amounts of organic matter application in the fields were higher in order of fruit, vegetable and rice farm. The average was 50 ton/ha in vegetable farms. In the green vegetable farms saw dust and animal manure were mainly utilized to make compost. Rice straw, wood chip, and forest bushes were also used for composting. In the fruit vegetable farms materials relatively lower in nitrogen content such as rice straw and cattle manure were used in vegetative period and materials higher in nitrogen content such as oil cake and wild grass were used in reproductive phase. Nutrient balance investigated in the farm in Icheon region who produce lettuce, angelica, and kale continuously in one cropping year indicated surplus in three major nutrients. Nitrogen and phosphorous were in excess by 29 and 10 kg respectively in the organic rice farm in yang-pyoung region. While soil chemical properties in the organic farms are within the adequate range in open field, it is much higher than the limits in the greenhouse soils. Overall application of organic matter is in an oversupply state. This results suggested that the organic matter management should be based on the soil conditions for sustainable cultivation. Chemical composition of organic matters and soil test reports should be considered prior to the application of organic matter.

  • We surveyed on the host plants of Fungus gnat, Bradysia app. and found 21 species in the greenhouse and field. These are as follows: Cucumis sativus L., Cucumis melo L., Citrullus lanatus T., Cucurbita moschata F., Lycopersicon esculentum M., Capsicum annuum L (Pepper), Capsicum annuum L (Paprika), Lillium longiflorum T., Dianthus caryophyllus L., Rosa hybrida H., Gerbera jamesonii B., Chrysanthemum morifolium R, Phalaenopsis schilleriane R., Gladiolus grandiflours H., Zingiber officinale R., Cnidium officinale M., Canavalia gladiata DC., Angelica utilis M., Polygonatum odoratum D., Pinus densiflora S., and Pinus thunbergii P. Fungus gnat larvae cause damages to the root and promote decay and wilt by feeding on the roots and burrowing in plant tissue.
