Effect of Electron-Beam Irradiation on Flavor Components in Pear (Pyrus pyrifolia cv. Niitaka) (전자선 조사가 신고배의 향기성분에 미치는 영향)

  • This study was performed to examine the effects of electron beam irradiation on volatile flavor components of Shingo pear (Pyrus pyrifolia cv. Niitaka) and on their changes according to storing period following irradiation. Volatile flavor components in pear were extracted using simultaneous steam distillation and extraction (SDE) apparatus and analyzed by GC/MS. 46 components were identified in control whereas 45, 44, 48 and 51 components were identified in irradiated samples by electron beam at 0.25, 0.5, 1, and 3 kGy, respectively. Hexanal, n-hexanol, and (E)-2-hexenal were identified as the major volatile flavor components of all samples. The characteristic volatile flavor components of irradiated pear by electron beam were similar to those of control, and their effects depending on irradiation source were not different. In addition, there was no noticeable change in volatile flavor components of pear with storage at $4^{\circ}C$ for 30 days or with irradiation. Sensory evaluation indicated that the consumer receptiveness tended to be higher at a low level of radiation dose under 1 kGy than control, albeit not significant. Therefore, electron beam irradiation at low level of radiation dose under 1 kGy could be considered as an effective method to exterminate vermin and thus to improve the shelf-stability of pear without deterioration.

  • 배를 저장할 때는 여러 가지 원인으로 손실이 발생할 수 있은데 원인은 크게 '생리적 장해'와 '저장병해'로 구분할 수 있다. 생리적 장해는 저장 중에 병원균의 침입 이외의 요인으로 발생되어 과실조직에 손상을 주는 것을 의미하며, 저장병해는 수상에서 또는 수확 전에 과피나 과경에 병원균이 침투하여 저장 중에 일정한 조건이 형성될 때 발병하는 현상을 말한다. 이 중에서도 근래에 많이 발생되어 농가에 많은 피해를 주고 있는 신고배 '얼룩과'는 저장병원균에 의해 발병하는 것으로 보고 얼룩과의 원인과 성상 그리고 억제 방법에 대해 설명하고자 한다.

Comparison of Antioxidant Effects of Different Korean Pear Species (종에 따른 배나무 열매의 항산화 활성 비교)

  • In this studies, contents and activities of antioxidative substances in the fruits of a pear cultivar and five Korean wild pear lines were investigated. The content of total phenolic compounds was highest with Pyrus pyrifolia var. culta "Shingo" (7.68 $mg{\cdot}g^{-1}$, D.W.) while total flavonoids was highest with P. ussuriensis var. acidula (5.66 $mg{\cdot}g^{-1}$, D.W.). The contents of total polyphenols and flavonoids varied according to plant species, but in general pyrifolia lines had higher total polyphenols than total flavonoids whereas in ussuriensis lines total flavonoid contents were higher than total polyphenols. The scavenging effects of DDPH radicals was highest with highest with P. ussuriensis var. seoulensis ($RC_{50}$=1.45 $mg{\cdot}mL^{-1}$) and that of ABTS radicals was highest with P. ussuriensis var. acidula ($RC_{50}$=0.69 $mg{\cdot}mL^{-1}$). A pear cultivar "Shingo" showed highest total polyphenol content, but scavenging activity of DDPH and ABTS radicals was lowest. The fruits of P. ussuriensis var. seoulensis contained low level of phenolic compounds, but their scavenging effects on two radicals was superior. Ferrous ion chelating effect was high in P. pyrifolia var. culta (98.93%), and in P. ussuriensis var. sinensis (68.71%), but two species had low scavenging activity. The content of phenolic compounds in wild pears was not always directly proportional to the radical scavenging activity. Neither radical scavenging activity was to ferrous ion chelating activity. In conclusion the fruits of P. ussuriensis var. acidula, P. ussuriensis var. seoulensis, and P. ussuriensis var. sinensis had great potential for the development of new antioxidative functional food because their antioxidative activity is higher or at least similar to P. pyrifolia var. culta. However, due to their different levels of antioxidative effects, the development of methods of using them jointly, not singly, to obtain maximum level of antioxidants is recommended.

Quality Distribution of Korean Shingo pears (신고 배의 품질 특성 분포)

  • The quality characteristics and distribution of Shingo pears were investigated for 3 years to establish a reasonable grade Bevel of the fruits. Shingo pears were purchased from the orchards located in five main product areas, Naju, Sangju, Ansung, Ulsan and Asan pears. Quality factory such as greenness, uniformity, defects, size, weight, sweetness, firmness, pH and titratable acidity were measured with the pears. The average greenness (100-yellowness) in Shingo pears for 3 years was 25.27% with variation of 17.72-36.57%. The average height and diameter of Shingo pears were 94.95 mm and 105.61mm, respectively. The average weight was 566.13 g, The average scores of defects on the surface of Shingo pears damaged by physical stress and by insects were 1.23 and 1.03, respectively. The average value of soluble solids content was 12.22$^{\circ}$Brix. The average firmness was 0.96 kgf. The average values of pH and titratable acidity were 5.23 and 0.10 %, respectively. In the results of the study based on assortment of producing districts, ranges in greenness of the pears by cultivating area was 17.23%-32.15%. Defects caused by physical stress and by insects did not show significant differences between cultivating area. Soluble solids content of the pears was ranged from 11.67$^{\circ}$Brix to 12.94$^{\circ}$Brix.

Edible Coating Effects on Storage life of ‘Niikata’ Pear (신고배의 저장성에 미치는 가식성 코팅제의 효과)

  • In this study, edible coatings for ‘Niikata’ pears have been applied in order to provide an alternative way to control and extend market quality and shelf life during cold storage. Fruit treated with edible coatings had better effects on maintaining some quality features such as fresh weight, firmness and SSC content than non-coated fruits. However, non-coated fruits in terms of overall quality were better evaluated than fruit with edible film. It may be caused by various factors such as film thickness effect oil emulsion on fruit skin, unknown reactions between the fruit skin and functional groups in the chitosan structure and so on.

  • 배 폐과를 효율적으로 활용하여 식품소재나 이를 이용한 기능성식품 개발을 위하여 배 품종별 생장시기에 따른 이화학적 특성을 조사하였다. 나주 지역에서 생산한 풍수, 신고, 추황 등 3품종을 시료로 하여 생장시기에 따라 배 무게의 증가를 관찰하였고 표면의 착색도는 Hunter 색차계로 L, a, b값을 측정하였으며 수분함량은 상압가열건조법으로 측정하였다. pH와 가용성 고형물은 각각 pH meter와 refractometer로, 총산은 적정법으로 측정하여 citric acid로 나타내었다. 총당은 phenol-황산법으로, 환원당의 함량은 DNS법으로 정량 하였고 총탄수화물의 함량과 전분의 함량은 산 가수 분해시킨 후 DNS법으로 측정하였다. 유기산과 유리당은 HPLC를 이용하여 정성, 정량 분석하였다. 풍수 과중의 증가는 거의 직선적으로 증가하였고 신고와 추황은 생장전기에는 급속히 증가하다가 후기에는 완만한 증가를 보였다. 풍수는 L, a, b값이 모두 약간의 증가를 보였고 신고와 추황은 a값이 각각 -1.80, 4.01에서 9.22, 9.70으로 증가하였으며 L, b값은 큰 변화를 나타내지 않았다. 과피의 수분함량은 약 61%에서 79%로 증가하였고 과육의 수분함량은 76%에서 90%로 증가하였다. 풍수와 추황의 경우 과육의 수분함량은 생장초기에 이미 생장후기와 비슷한 수분함량 비율을 갖고 있는 것을 알 수 있었다. 3품종 모두 생장초기 총산의 함량은 수확시기의 함량보다 높았고 추황의 경우 성장이 진행됨에 따라 과피와 과육의 총산의 함량은 감소하다가 다시 약간의 증가 추세를 나타내었다. 유기산은 주로 tartaric acid, malic acid, oxalic acid, citric acid 그리고 shikimic acid가 검출되었고 수확시기에 3품종에서 모두 malic acid 함량이 가장 높았고 malic acid와 citric acid의 함량이 풍수와 신고에서는 약 0.3%, 추황은 0.4% 이상으로 나타났다. 또한 3품종 모두에서 총산과 같은 추세로 성숙기의 유기산의 함량이 생장초기의 함량보다 많이 감소되었음을 알 수 있었다. 배의 가용성 고형물은 전체적으로 과실의 성장이 진행됨에 따라 증가하는 추세를 나타내었다. 풍수와 신고 과피의 총당과 환원당은 거의 같은 추세로 증가하였고 성숙이 가까워지면서 환원당이 감소하였다. 배 과육의 총당과 환원당 또한 거의 같은 추세로 증가를 하다가 수확 전 20일 혹은 30일부터 총당의 함량은 계속 증가하지만 환원당의 함량은 큰 변화가 없는 것으로 나타났다. 배 과실의 전반 성장과정에 있어서 전분함량은 감소하였고 총탄수화물의 함량은 과육에서는 증가하나 과피에서는 반대로 감소하는 경향을 보였다. 풍수의 전분함량은 최고 2.19%에서 0.23%로 감소하였고 신고에서는 0.43%로 추황에서는 0.48%로 감소하였다. 배 유리당은 fructose, glucose, sorbitol, sucrose 둥 4종류의 당이 검출되었고 3품종 모두에서 생장과정 중 비환원당인 sucrose 함량은 계속 증가하였고 fructose, glucose, sorbitol의 함량(추황의 sorbitol을 제외)은 생장이 촉진됨에 따라 증가하다가 다시 점차적으로 감소하였다. 이러한 결과는 총당과 환원당의 측정결과와 일치한 것으로 나타났다. 결론적으로 배의 성장에 따라 산 함량은 감소하였고 당 함량은 증가하였다.

Changes of Fruit Characteristics by Fruit Load Control in 'Niitaka' and 'Whangkeumbae' Pear Trees on Y-trellis Training System (Y자 수형의 '신고'와 '황금배'에서 착과량 조절에 따른 과실 특성 변화)

  • This study was carried out to understand the characteristic relations fruit changes caused by adjusting the amount of the fruit load in 'Niitaka' and 'Whangkeumbae'. The average fruit weight of 'Niitaka' was 672.0 g and the amount of fruit in the range of 601-750 g was the highest, accounting for 33.8% of the production and as for 'Whangkeumbae', the average fruit weight was 477.5 g and fruit in the range of 401-600 g accounted for 72.5% of total production. The weight of the 'Niitaka' was evenly distributed in each range from below 300 g to over 1 kg and the percent of the regular shaped fruit in 'Whangkeumbae' was high as the distribution range of the fruit weight was narrow. The brix degree and the soluble solid content (SSC)/acidity ratio of 'Niitaka' had a significantly positive correlation with the fruit weight, the length, and the diameter of the fruit. The brix degree also had a positive correlation with weight and diameter of the fruit for 'Whangkeumbae'. As for the difference in fruit quality according to fruit weight for each variety, the brix degree was low in 'Niitaka' that were below 451 g and the fruit firmness was low in fruits weighing under 400 g. There was no difference according to fruit weight in 'Whangkeumbae'. The fruit size was impacted by the fleshy part and the ratio of fleshy part was higher as the fruit size became larger. The weight of the fruit, brix degree, and the SSC/acidity ratio were low while the firmness was high in light thinning treatment for 'Niitaka' and in the case of 'Whangkeumbae', the fruit weight and brix degree were both low in light thinning treatment. The brix degree was higher in bigger sized fruit in all thinning intensity for 'Niitaka', the case in light thinning treatment especially where the quality was poor due to low brix degree in fruits that weighed less than 450 g, on the other hand, there was no difference in the quality due to the fruit weight among the thinning intensity for 'Whangkeumbae'. Therefore, it is possible to produce smaller sized fruits in 'Niitaka' by controlling the thinning intensity, as it is inevitable to result in lower quality fruits, however, it is projected that we can produce small to mid-sized fruits in 'Whangkeumbae' by controlling the thinning intensity without causing the decline in fruit quality.

Physicochemical characteristics and antioxidant activity of pear vinegars using 'Wonhwang', 'Niitaka' and 'Chuhwangbae' fruits (원황, 신고 및 추황배를 이용한 배 식초의 이화학적 특성 및 항산화활성)

  • This study was to prepared vinegars using three kinds of pear cultivar with different maturities, 'Wonhwang', 'Niitaka', and 'Chuhwangbae', and investigate their physicochemical characteristics and antioxidant activities. Result showed that the firmness of 'Wonhwang' was much lower than other pear cultivars. No significant difference in soluble solid content was found among three pear cultivars. The total acidity of 'Chuhwangbae' pear vinegar was 4.89~7.98%, which was higher than that those of 'Wonhwang' and 'Niitaka' vinegars. The color of 'Niitaka' vinegar had a lower lightness and redness values, but a higher yellowness value, compared with the other two vinegars. The free sugar contents were mainly composed of fructose, glucose, and sorbitol, with the greatest content of sorbitol in all three peer vinegars. The total phenolics and flavonoids contents were 35.2~55.3 and 8.4~14.4 mg/100 mL, respectively. Antioxidant activity had a positive correlation with total phenolic contents. The DPPH free radical scavenging and $ABTS^+$ radical scavenging activity were 45.0~62.1% and 73.8~78.2%, respectively. From these results, we confirmed that immature pear cultivars such as 'Wonhwang', 'Niitaka' and 'Chuhwangbae' could be used as a raw materials to prepare vinegar regardless of maturity.
