식품에 직접 첨가되는 식품첨가물들의 기능성 예측법

  • 기존의 미국 식품의약국(FDA, Food and Drug Administration)규정에 따르면 어떤 식품첨가물의 기능과 안정성을 평가하는 방법은 그때 그때 각각의 경우에 맞게 설정하여 실시하게 되어 있다. 이런 평가 방법은 포괄적이기는 하지만 과잉의 기능과 안정성 시험을 실시하는 결과를 초래해 왔다. 여기서는 새로운 식품 첨가물에 대한 안정성 시험 시 그 첨가물이 사용되는 실제 조건 하에서 체계적이고 과학적인 접근 방법에 따라 시험이 되도록 할 것을 제안하고자 한다. 체계적인 방법으로 시험하기 위해서는 새로 개발된 식품첨가물들이 사용하게 될 적용 대상 식품의 여러가지조건(pH, 수분, 가공 및 저장 온도)에서 그 첨가물의 안정성에 영향을 미치는 화학적, 물리적 주요 요인들이 먼저 결정되어야 한다. 그 다음 기능성과 안전성에 관련된 요소들이 하나의 모델 시스템으로 조직화되어 주요요인들의 측정 범위가 정해져야 한다. 마지막으로 설정된 모델 시스템은 첨가물이 실제 적용받게 되는 가공,운송, 저장 조건 하에서의 사용 조건을 고려한 상태에서 첨가물을 시험하여 기능과 안정성이 입증되어야 한다. 일단 증명이 되면 그 모델 시스템은 사용 가능성이 있는 적용 범위에까지도 그 첨가물의 기능성과 안정성을 평가할 수 있게 해준다. 이 논문에서는 식품첨가물 시험방법에 대한 체계적인 접근 방법을 설명하고 아스파탐의 예를 들어서 그 방법을 조명해 보고자 한다.

Flavonoid intake according to food security in Korean adults: Based on the Korea National Health and Nutrition Examination Survey 2007~2012 (한국 성인의 식품안정성에 따른 플라보노이드 섭취 실태: 2007~2012년 국민건강 영양조사 자료를 이용하여)

  • Purpose: The aim of this study was to examine the association of food security with the total and individual flavonoid intakes among Korean adults. Methods: Study subjects were 13,454 men and 19,563 women aged 19 years and older who participated in the 2007~2012 Korea National Health and Nutrition Examination Survey. Subjects were classified into food-secure and food-insecure groups using the answers to a self-reported question on food sufficiency of subjects' household. The total and individual flavonoid intakes were calculated by linking 24-h dietary recall data of subjects with a flavonoid database. Mean differences in dietary outcomes by food security status, and major food sources of total flavonoids were examined. Results: In this cross-sectional study, 5.8% of male adults and 6.6% of female adults were in food insecure households. Mean daily intakes of total flavonoids, flavonols, flavones, flavanones, flavan-3-ols, isoflavones, and proanthocyanidins were significantly lower in food-insecure groups than food-secure groups among both male and female adults. The differences were maintained in total flavonoids, flavones, flavanones, and flavan-3-ols after adjusting for total energy intake. Mean intakes of fruits and vegetables were significantly lower in food-insecure groups and the total flavonoid intake from fruits and vegetables was also significantly lower in food-insecure groups. The major food sources of total flavonoids were apples (20.7%), mandarines (12.0%), and tofu (11.5%) in the food-secure group, and apples (14.9%), tofu (13.3%), and mandarines (12.6%) in the food-insecure group. Conclusion: This study showed that food insecurity was associated with lower intakes of flavonoids and reduced intakes of fruits and vegetables in a representative Korean population.

Health and nutrition intake status of the Korean elderly according to their food security level: data from the 7th Korea National Health and Nutrition Examination Survey (KNHANES VII), 2016-2018 (식품안정성 수준에 따른 한국노인의 건강상태와 영양섭취현황: 제7기 (2016-2018) 국민건강영양조사 자료 활용)

  • Purpose: This study examined general characteristics, health status, accessibility to medical services, health-related quality of life, dietary behavior, and energy and nutrient intakes of the elderly at different levels of food security utilizing data from the 7th Korea National Health and Nutrition Examination Survey (2016-2018). Methods: The elderly subjects (1,721 males and 2,271 females) were divided into 3 groups (secure, mildly insecure, moderately/severely insecure) according to their food security levels. Health and nutrient status was determined using energy intake, nutrient density, the prevalence of insufficient nutrient intake, dietary behavior, and health status. Results: The elderly with food insecurities had a lower self-evaluated health status and a higher prevalence of physician-diagnosed chronic diseases such as arthritis, osteoarthritis, rheumatoid arthritis, osteoporosis for males, and hypertension, stroke, arthritis, and osteoarthritis for females. The associated financial burden was the major reason for not accessing medical services in the food insecure group. Furthermore, the food insecure group had a higher risk of impaired health-related quality of life compared to the secure group. The proportion of subjects with an energy intake below the estimated energy requirement was higher in the food insecure group and a significantly higher prevalence of insufficient intake was observed for all the nutrients (proteins, vitamin A, vitamin B1, vitamin B2, niacin, vitamin C, calcium, and iron) assessed in this study compared to the food secure group. Conclusion: This study suggests that food insecurity poses a challenge to the health and nutritional status of the elderly population in Korea and needs proper management. It would be helpful to develop food and nutrition assistance programs to ensure the food stability of the elderly population and assure quality to address gaps in their nutrient intake.

  • 본 연구는 난백의 거품형성능력 및 안정성을 평가하기 위한 표준화된 방법을 제시하였으며 제시된 조건으로 거품형성 능력 및 안정성을 평가한 경우 높은 재현성을 나타내었다. 또한 표준화된 조건을 이용하여 난백의 분말과정에서 발생하는 거품형성능력의 차이와 신선란의저장기간에 따른 거품형성 능력과 안정성의 변화를 구별할 수 있었다.

  • Although food insecurity might be associated with poor dietary intake, this relationship has not been researched in Korea. This study examined the association of food security with dietary intake from the third Korea National Health and Nutrition Examination Survey. Food security was measured by a self-reported hunger measure on the dietary situation of subjects' households in the previous year and approximately 2/3 of the subjects lived in food-insecure households. Dietary intake was based on a 24-hour dietary recall. Food insecurity was significantly associated with low nutrients intake and nutrients intake compared to dietary reference intakes (DRI) was also lower among subjects in food-insecure households. Overall diet quality based on dietary diversity score (DDS) was worse in food-insecure subjects. Food security should be considered an important issue to public health because dietary change due to food insecurity may affect health status.

Improvement of Emulsion Stability of Food Proteins by Microbial Transglutaminase (미생물유래 transglutaminase를 이용한 식품단백질의 유화안정성 향상에 관한 연구)

  • To improve functional properties of food proteins, homologous or heterologous ${\beta}-casein$ and 11S globulin(glycinin) from animal and vegetable proteins, respectively, were bio-hybridized using transglutaminase(MTGase). Susceptibility was confirmed by SDS-PAGE, particle size analyzed, and emulsion stability tested using Reddy and Fogler method, To determine how bio-hybridized protein influences emulsion stability, protein bound on oil droplet was investigated using Scanning Electron Microscopy (SEM). formation of bio-hybridized protein band was detected among homologous and heterologous proteins, with heterologous protein forming weak band in oligomer form. Homologous ${\beta}-casein$ protein showed high emulsion stability, while homologous glycinin showed almost no stability. Stability of heterologous ${\beta}-casein$ and glycinin protein was higher than that of glycinin. SEM photographs showed even distribution of bio-hybridized proteins on oil droplet improved stability.
