A Study on the Intake and Consumption Pattern of Milk and Dairy Products in Elderly Korean (일부 노년기의 우유 및 유제품 섭취 양상과 소비 성향에 관한 연구)

  • The elderly population in Korea is growing rapidly and their nutritional status is not acceptable. Data were collected from the self-administered questionnaire of 495 free living elderly, over 65years old, in Korea to asses the intake and consumption pattern of milk and dairy products. The questionnaire contains demographics, health related characteristics, and perception on milk, and consumption behaviors of milk and dairy products. Most of the elderly subjects understood that milk is good foods in terms of nutritive value and health. And 67% of the subjects satisfied with the sanitation status of milk on the markets. The kind of milk that majority of the subjects consumed was whole milk, and only 5.1% of them consumed low fat milk. Less than 20% of the subjects consumed milk everyday, living alone group consumed milk less frequently than living with others. It was found that the majority of the elderly subjects did not meet current recommendation for milk. Liquid and curd type yogurt were the major dairy products used among elderly, and the reasons were good taste and digestion. They believed that these kinds of dairy products help constipation and digestion problems. The price of milk was ranked for the first factor needed to be considered for milk and dairy products consumption in elderly korean.

Evaluation of Dietary Intake of Korean School-aged Children from Low-income Families by Comparing with the Korean Food Guide: Analysis of the Data from the 2001 National Health and Nutrition Survey (식사구성안을 이용한 저소득층 학령기 어린이의 식생활 평가: 2001년 국민건강.영양조사 자료 분석)

  • This study was conducted to evaluate the dietary quality of school-aged children from low-income families in comparison with those from higher income families. The socio-demographic and anthropometric data and one day 24-hour recall dietary intake data of 1,782 school-aged children were used for analysis from the data of 2001 National Health and Nutrition Survey. The children whose family had monthly household income 120% or lower than the 2001 Minimum Cost of Living were classified into Low Income Group (LIG), and the others were classified into Higher Income Group (HIG). The consumption levels of the food groups of the Korean Food Guide as well as the general nutritional status based on their weight and height, energy and nutrient intake were compared between LIG and HIG in elementary (n = 989), middle (n = 432), and high (n = 361) school-aged children, respectively. LIG tended to have lower weight, height, and BMI than HIG, but the difference was significant only in the weight and the BMI of the middle school-aged children. The energy intake of LIG didn't differ from that of HIG, but LIG consumed a higher percentage of energy from carbohydrate and a lower percentage of energy from fat than HIG. Some micronutrient intake was lower in LIG than HIG in case of the elementary and the middle school-aged children. The average numbers of servings of milk dairy products and fruits consumed by LIG were significantly lower than those consumed by HIG in the elementary and the middle school-aged children, and they were less than the respective recommended serving. The average number of servings of meat fish egg beans consumed by LIG was lower than that consumed by HIG in the middle and the high school-aged children, and it was also less than the recommended serving. The results suggested that the diet of children from low-income families should be intervened by strategies different from the other children in order to improve the consumption level of milk dairy products, fruits, and meat fish egg beans.

The Changes of Dietary Reference Intakes for Koreans and Its Application to the New Text Book (한국인 영양섭취기준에 대한 이해 및 새 교과서에의 적용 방안)

  • The purposes of this paper are to describe the newly established reference values of nutrient intakes: to apply the changed dietary reference intakes to the new text book based on the revised curriculum: and to contrive substantial contents in the domain of dietary life(foods & nutrition) of new text book. Dietary Reference Intakes for Koreans(KDRIs) is newly established reference values of nutrient intakes that are considered necessary to maintain the health of Koreans at the optimal state and to prevent chronic diseases and overnutrition. Unlike previously used Recommended Dietary Allowances for Koreas(KRDA), which presented a single reference value for intake of each nutrient, multiple values are set at levels for nutrients to reduce risk of chronic diseases and toxicity as well as prevention of nutrient deficiency. The new KDRIs include the Estimated Average Requirement(EAR), Recommended Intake(RI), Adequate Intake(AI), and Tolerable Upper Intake Level(UL). The EAR is the daily nutrient intake estimated to meet the requirement of the half of the apparently healthy individuals in a target group and thus is set at the median of the distribution of requirements. The RI is set at two standard deviations above the EAR. The AI is established for nutrients for which existing body of knowledge are inadequate to establish the EAR and RI. The UL is the highest level of daily nutrient intake which is not likely to cause adverse effects for the human health. Age and gender subgroups are established in consideration of physiological characteristics and developmental stages: infancy, toddler, childhood, adolescence, adulthood and old age. Pregnancy and lactation periods were considered separately and gender is divided after early childhood. Reference heights and weights are from the Korean Agency for Technology and Standards, Ministry of Commerce, Industry and Energy. The practical application of DRIs to the new books based on the revision in the 7th curriculum is to assess the dietary and nutrient intake as well as to plan a meal. It can be utilized to set an appropriate nutrient goal for the diet as usually eaten and to develop a plan that the individual will consume using a nutrient based food guidance system in the new books based on the revision in the 7th curriculum.

Dietary Characteristics of Macronutrient Intake and the Status of Metabolic Syndrome among Koreans (한국인의 대사증후군과 다량 영양소의 섭취패턴)

  • Metabolic syndrome (MetS), which is heavily dependent on dietary and lifestyle practices, is prevalent in Korean adults. Because dietary practices are unique for each race, nationality, and culture, it is important to identify Korean adult dietary practices that are associated with MetS. Macronutrient intake patterns were analyzed and compared across health status using the 2007-2008 Korean National Health and Nutrition Examination Survey data (8,143 adults who had dietary data and biomarkers related to MetS). Although intake levels were different by age, gender, and health status, carbohydrate intake was high and fat intake was low among Korean adults. The carbohydrate energy ratio was higher and the fat energy ratio was lower for subjects > 60 years old who were diagnosed with diabetes, hypertension, or MetS than those in other age groups. The main source of fat from food differed depending on the group. These results demonstrated that macronutrient intake patterns were different between age, gender, and health status subgroups. Hence, it is recommended that nutritional policy and practices aimed at controlling MetS should be based on the dietary characteristics of the target group.

The Prevalence of Obesity and it's Related Factors of High School Girls in the Large Cities (대도시 여고생의 비만실태와 식생활 양상에 관한 연구)

  • This study was accomplished to investigate the prevalence of obesity and the factors related to obesity of high school girls in the large cities from May 20 to July 10 1990. In this study, three hundred eighty nine high school girls were chosen from high schools located in Seoul and Inchon. Anthropometry including weight, height, and skinfold thickness (triceps) were measured, and dietary intakes were calculated according to food composition tables. Means of the obesity index, food pattern, nutrients intakes were compared by Pearson's correlation coefficient. Nutrient intakes of the groups categorized by tricep skinfold thickness were compared by means of Duncan's multiple range test. Prevalence of obesity was 16.7%, 3.6%, and 20.8% by criteria of skinflod thickness, BMI, and Rohrer Index, respectively. Most of the subjects had three meals and took snacks two times per day 23.9% of the subjects were taking nutrient supplements of which vitamin supplement was the most popular. Food habit of subjects such as frequency of snack and bedtime meal were positively related to fatness. Nutrient intakes of the obese groups classified by tricep skinfold thickness, tended to consume more calories than another tricep category groups. Therefore, it could be concluded that prevalence of obesity in this subject was higher than the one for the past years, and it was more profound in girls who had a poor food habits and high calorie intakes. Thus, these results suggested that a good food habits and adequate nutrient intakes are essential to prevent the obesity of high school girls.

Comparison of practice of dietary guidelines and health beliefs according to stage of weight loss behavior change among male workers (성인 남성근로자의 체중감소행동 변화단계에 따른 식생활 지침 실천 양상 및 건강신념 비교)

  • This study compared levels of health and dietary behavior practices and health beliefs according to the stage of weight loss behavior change of Korean male workers. A self-administered survey questionnaire was collected from 411 male adult workers residing in Seoul, Kyeonggi, Chungcheong region. Practices of health related behavior, including smoking, drinking, exercise, work related physical activity, and dietary behavior according to dietary guidelines were evaluated. In addition, the levels of perceived benefit, perceived barrier, perceived susceptibility, perceived seriousness, and perceived cue to action from the health belief model were measured according to the stages of weight loss behavior change. Significant differences in BMI, level of daily exercise, and practices of dietary behavior according to dietary guidelines were observed among stages of weight loss behavior change. Subjects who were in action/maintenance stage showed a more desirable level of health behavior and health belief model variables, except perceived barrier. Based on the findings of this study, it is suggested that subjects with different stages of behavior change need an appropriate specific nutrition education method and material for improvement of nutrition education efficacy.

A Study on Perceived Stress and Dietary Habits of Female College Students (여대생의 스트레스와 식생활 양상에 관한 연구)

  • Purpose: The purpose of this study was to investigate perceived stress and dietary habits of female college students and define the relationships between them. Method: A convenient sampling method was used at a university based In Seoul. Finally, 412 students participated in the study from May 1 to June 10, 2008. The questionnaires administered consisted of a Stress Scale for college students and Dietary habit scale questionnaires. The students filled out the questionnaires by themselves. The collected data was analyzed with the SPSS Win 14.0 statistics program, which was used to calculate the frequencies, percentages, ANOVA, and Pearson's correlation of the variables. Result: The major findings of this study were as follows; In general, female students were mostly stressed by 'schooling.' Stress scores were significantly different in accordance with religion. Overall, dietary habits of study participants were normal. Significant differences were observed in the dietary habits between type of residence, major, and spending money per month. There was a significant relationship between perceived stress and dietary habits. Conclusion: Stress management for female college students should be developed and nutritional education programs should be reinforced.

A Study on the Physical Status of Elementary School Children in Seoul and their Dietary Pattern (서울지역 국민학생의 체위 상태와 식생활 양상에 관한 연구)

  • Recently, childhood obesity is increasing in Korea mainly due to westernized dietary pattern. The purpose of this study is to investigate diet pattern(habit and behavior), nutritional knowledge and taste favor in normal and obese children. We carried out anthropometries and self questionaire about life style among the 5th-grader in elementary school(88 boys, 102 girls) in Seoul. The results are as follows : Physical conditions are boys’average hight and weight 142.0cm, 37.5kg ; and girls’143.7cm, 35.6kg. BMI are normal group 38.7% and abnormal group 61.3%(obese 24.2% underweight 16.1% overweight 14.0% very underweight 7.0%) A great part of obese children live in apartment house(79.5% of obese children in southern Seoul; 60.2% in northern Seoul). Obese parents have obese children. Diet behavior, diet pattern, food habit and food preferance of children are similar to their parents, especially their mothers. Preferance in taste of children follows in order of hot, sweet and mild. Especially obese children favor sweet taste more than others. The 61% of them are interested in weight control. Their nutritional knowledges are poor(4.9/10). They like more westernized food(hamberger) than korean food(In-jul-me).

  • The purpose of this study was to investigate relationship between the eating behavior, physical and mental health. For this purpose, the data was collected by using questionnaires and intervews distibuted to 293 the elderly residing in Seoul. This study was designed to observe the eating behavior(eating habit, healthy food preference, smoking, drinking), physical health(weight, height, desease and heath of the current and past, self-awareness of the health) and mental health(weight, height, desease and heath of the current and the past, self-awareness of the health) and mental health(meeting, excursion, exercise, service, activi ty, depression). The major results are: 1. The heathy elderly had the better eating habit and the non healthy tried to stop smoking and drinking for their own health. 2. There were many elderly with neuralgia and arthralgia, especially women were worse. The sleep disorder related to many disease. When physical health was bad, so was mental health. 3. More than 50 percentage of subjects had light depression, especially women and the elderly at 60-75age were more serious. The depressive elderly had no meetings, excursion, exercise, service activity and showed a hight tendency for under-weight or obesity. In conclusion, the relationship between the eating behavior and physical and mental health wa very significant, so it was necessary to provide comfortable living condition to the elderly.

당뇨병의 예방및 관리

  • 지난 30여년 동안 급속한 경제 성장과 생활 양식의 변화는 우리 사회에 많은 변화를 초래하였고 한국인의 질병 양상에도 많은 영향을 주었다. 동물성 식품과 지방질 섭취의 증가, 신체활동 감소,노령인구 증가, 생활양식의 서구화 및 도시화 등은 한국인에서 만성질환의 발생과 이환을 증가시키고 있다. 통계청의 2001년 사망원인통계를 보면 1위가 암, 2위가 뇌혈관 질환, 3위가 심장질환, 4위가 당뇨병, 5위가 간질환으로 모두 잘못된 생활습관으로 인한 만성질환이다. 이중에서도 당뇨병은 지난 1991년 이후 암 다음으로 많이 증가한 질병으로 인구 10만명 당 23.8명이 당뇨병으로 사망했으며 하루 평균 당뇨병으로 31명이 사망한다. 2002년 4월, 대한당뇨병학회의 "한국인의 당뇨병 발생 현황 보고"에 따르면 우리나라 성인의 당뇨병 유병률은 10%선으로 최소 3백만명에서 최대 5백만명 정도가 당뇨병을 앓고있다. 우리나라는 식생활의 서구화, 고령화 등으로 당뇨병 환자가 급증하고 있어 생활 양식의 개선이 이루어지지 않을 경우 앞으로 10년 안에 전체 국민의 1/4정도인 1천2백만명 가량이 당뇨병으로 고통을 받게 될 것이라 한다. 당뇨병은 당뇨뿐만 아니라 그에 따른 만성 합병증이 매우 무서운 병으로 일단 발병하면 적극적인 치료에도 불구하고 정상으로 회복되기 어렵다. 따라서 합병증의 효과적인 예방을 위해서는 특별한 임상 증상이 없더라도 당뇨병을 처음 진단 받은 날부터 주기적인 검진을 통하여 조기에 발견해 낼수 있도록 노력하여야 한다. 이와 더불어 주기적인 혈액 검사와 주치의 면담을 통하여 정상 혈당을 유지할 수 있는 혈당 조절 방법과 함께 만성 합병증을 예방할 수 있는 생활 습관 개선(금연, 금주,표준체중 유지,규칙적 운동,정상 혈압 유지,정상 혈중 지질 유지등)을 반드시 실천하여야 한다.
