A Study on Commercial Kimichi Consumption of Housewives is Seoul and Chungbuk Area (주부들의 시판김치 사용실태 조사-서울. 충북지역 중심으로-)

  • 서울,충북지역의 주부 590명을 대상으로 시판김치의 사용실태를 설문 조사한 결과는 다음과 같다. 시판김치의 구매는 30대에서 많았고 고졸의 경우에 많았다. 직업 유무, 월수입, 주거 및 가족형태는 시판 김치 이용과 유의적인 차이를 보이지 않았지만 연령과 교육수준에 따라서는 유의적인 차이(P<0.05)연령이 낮을수록, 교육수준은 높을수록 시판김치를 이용하는 것으로 나타났다. 시판김치의 선호도는 배추김치가 73.2%로 높게 나타났고, 시판김치 구매 장소는 주로 대형 수퍼마켓을 이용하였으며, 1회 구매분량은 3포기를 구맹하는 경우가 가장 많았다. 구매 이유는 편리하기 때문과 가사와 자녀로 시간이 부족하여 구매하는 경우가 많았다. 또한 어떻게 담그는지 몰라서 구매하는 경우도 있었다. 제품 선택 동기는 주로 구맹 경험에 의해서 시판결치를 구입하였다. 광고를 보고 구매하는 경우도 있었고 재료나 점원의 권유에 의해서 구매하는 경우도 있었다. 응답자들이 가장 맣이 지적한시판 김치으 개선점은 가격이었다. 가격이 비싸다고 생각하는 경구가 많았다. 그밖에 위생명, 맛의 다양성, 분량과 용기의 개선도 필요하다고 생각하는 경우가 있었다. 향후 시판김치 구매 여부에 대해서는 73.2%가 긍정적으로 응답하여 앞으로도 시판김치를 구매할것으로 나타났다. 이상의 결과를 보면 상품화 된 김치의 이용은 젊은 세대뿐만 아니라 교육수준의 향상에 의해 주부들의 라이프 스타일이 식생화에도 반영되기 때문에 계속증가할 것으로예측된다. 그러므로 본 연구의 결과를 토대로 하여 가격면, 위생면, 맛의 다양성, 분량과 용기 등에 있어서도 한 단꼐 개선된 고품질 김치의 생산이 요구된다고 볼 수 있다.

Physicochemical Characteristics and Sensory Properties of Commercial Mukeunji Products (국내 시판 묵은지의 이화학적 및 관능적 특성)

  • The aim of this study was to investigate the physicochemical characteristics of commercial Mukeunji product along with its sensory properties. Six different types of commercial Mukeunji products were purchased through an on-line market, and each product had a different fermentation period. General commercial Baechu Kimchi was compared with commercial Mukeunji products in order to standardize quality properties of Mukeunji. As a result, commercial Mukeunji showed a lower pH value (pH 3.96, mean value) than commercial Baechu Kimchi (pH 5.92), whereas commercial Mukeunji samples showed higher acidity and salinity. Color values (L, a, and b) of commercial Mukeunji decreased as the storage period increased. Hardness and thickness of commercial Mukeunji showed a lower range compared to Baechu Kimchi. The reducing sugar content decreased as the storage period of commercial Mukeunji increased. Acetic, lactic, and succinic acids were detected in commercial Mukeunji samples, whereas citric acid and malic acid were additionally detected in Baechu Kimchi. Commercial Mukeunji samples showed lower contents of acetic and succinic acid and higher content of lactic acid than Baechu Kimchi. Commercial Mukeunji samples showed a significant difference in all descriptive sensory attributes except for bitterness. Overall intensity, sourness, moldy odor, redness, sour smell, saltiness, and carbonated taste increased as the storage period increased, whereas cabbage flavor, crispiness, sweetness, firmness, and savory taste decreased as the storage period increased.

  • Chemical compositions such as total sugar, sulfate/total sugar, protein and 3,6-anhydrogalactose content of porphyran extracted from commercial laver, discolored laver and laver waste were measured. The total sugar contents of commercial laver, discolored laver and laver waste showed 54.5%, 45.7% and 56.2%, respectively. The total sugar of the commercial laver and laver waste were showed almost similar portion although that of discolored laver showed relatively lower level. The sulfate/total sugar contents showed 17.6%, 13.9% and 17.3%, and 3,6-anhydrogalactose contents showed 13.8%, 9.1% and 13.9% in commercial laver, discoloredlaver and laver waste respectively.

  • To assess the quality of commercial sikhes, we compared physicochemical and sensory characteristics of commercial sikhe with home-made one. Six different brands and home-made sikhes were analysed for physicochemical (sugar content, acidity, color, viscosity, transparancy, texture of rice) and sensory characteristics (7-point scoring test,18 experienced panel members). Commercial sikhes (6 different companies) exhibited lower sugar content (11.6~12.5$^{\circ}$Brix) and viscosity (5.33~9.33 cP) than home-made one, whereas higher pH (5.93 ~6.87), transparency (9.1~46.5% at 558 m), Hunter L, a and b values. In the texture of rice, commercial sikhe showed higher hardness, springiness and chewiness than those of home-made one in. Sensory evaluation showed that malt and rice content, tex-ture and color of rice, and over-all preference for commercial sikhe was significantly lower than those for home-made one (p<0.05). Especially, the scores of over-all preference for 3 commercial sikhes (2.7~3.6) were much lower than that of home-made one (5.7).

  • Extractive nitrogen, free amino acids, oligopeptides, nucleotides and related compounds, quaternary ammonium bases, and guanidino compounds were analyzed to evaluate quality of anchovy sauce. The commercial products contained low proximate composition, extractive nitrogen and other extractive components, than the experimentally prepared anchovy sauce. Both samples, commercial products and experimentally prepared anchovy sauce, were rich in free amino acids, such as glutamic acid, leucine, alanine, lysine, and aspartic acid. The extractive nitrogenous components which consist of total nucleotides and related compounds, total free amino acids, methionine, isoleucine, valine, taurine, tyrosine, histidine, leucine, aspartic acid, cystine, and lysine, showed significant correlation(p<0.01) with extractive nitrogen. Possibly, seven kinds of free amino acids such as methionine, isoleucine, valine, taurine, tyrosine, histidine, and leucine, might be recommend as quality indices of standardization for anchovy sauce.

경유승용차 시판 관련 산업경제 정보

  • 대기 질 악화를 둘러싼 논란으로 지연되어 오던 경유 승용차의 국내 시판이 4월부터 허용됨에 따라 경제적 기대와 환경적 우려가 현실화되고 있음. 경유 승용차의 시판에 따라 자동차 연료가격이 조정된다 해도 경유 승용차의 국내시장 점유율은 지속적으로 늘어나 2009년에는 10 %를 넘어설 전망임. 경유 차량은 환경에 직접적 피해를 주는 미세먼지, 질소산화물등을 많이 배출하는 반면, 지구온난화의 원인으로 알려진 이산화탄소는 적게 배출하는 환경적 양면성을 가지고 있음. 현재 대기오염 방지기술이 빠르게 발전하고 있어 경유 승용차의 시판과 함께 대기오염 방지를 위한 보완대책과 기술개발 투자가 병행된다면 대기의 질이 오히려 개선될 가능성이 큼. 정부가 마련 중인 자동차 대기오염 방지대책의 핵심은 경유 가격을 선진국 수준으로 높이고 차세대 제작차 환경기준을 강화하는 것임. 대기오염 개선대책이 순조롭게 시행될 경우 승용차 시판에도 불구하고 대기의 질이 개선되어 경제와 환경의 상생 기회가 될 것으로 기대됨.

Quality Characteristics of Commercial Oiji, Korean Cucumber Pickle (시판 오이지의 품질 특성)

  • Physicochemical and sensory characteristics of commercial Oiji, Korean pickled cucumbers (six commercial and three traditionally made products) were investigated. Saltiness values for commercial and traditionally made products were 3.424-4.47 and 3.92-7,23%, and acidity and pH were 3.43-3.85 and 0.39-0.75%, respectively, Commercial products showed lower L and higher b values than traditionally made products. Redness of both products ranged from -1.47 to -3.71. Numbers of total microbial, lactic acid bacteria, and yeast in traditionally made products ($1{\times}10^{7}-1.3{\times}10^{9},\;4{\times}10^{6}-4.7{\times}10^{8},\;and\;1.3{\times}10^{6}-3{\times}10^{8}\;cfu/mL,\;respectively$), were higher than those of commercial products ($1{\times}10^{4}-2{\times}10^{7},\;1{\times}10^{4}-6{\times}10^{6},\;and\;1{\times}10^{4}-6{\times}10^{6}cfu/mL\;respectively$). Texture analysis revealed fracturability (2,103-3,010 g) and hardness (409-890 g) varied among the products above. Overall acceptability scores of commercial products C1 and C2 were highest at 7.6-8.0 compared to other products (p<0.05). From the principal component analysis, the first principal component (PC1, 79.94%) and the second principal component (PC2, 19.94%) could describe the majority of the variability. Commercial product C1, C2, C3, and C7 having high negative loadings on the PC2 axis are closely related to over-all acceptability, over-all taste, savory taste and hardness. From Pearson correlation analysis, hardness and chewiness correlated positively with saltiness, whereas over-all acceptability, positively correlated with savory and overall taste, respectively (p<0.05).

Quality Investigation of Commercial Northern Sand Lance, Ammodytes Personatus Sauces (시판 까나리액젓의 품질조사)

  • The quality characteristics of 15 kinds of the commercial northern sand lance, Ammodytes Personatus sauce (CNS) of korean traditional salt-fermented fish sauces were evaluated comparing to the traditional northern sand lance, Ammodytes Personatus sauce (TNS). The ranges of chemical compositions of the CNSs were $66.5\~71.0\%$ moisture, $19.3\~24.6\%$ ash, $4.7\~12.0\%$ crude protein, and the pH and salinity were $5.56\~6.47\%,\;24.0\~32.9\%$, respectively. Total nitrogen, amino nitrogen, total free amino acid and total ATP related compounds (sum of ATP$\~$IMP, HxR, Hx and uric acid) were in the ranges of 0.781$\~$ 1,918 g, 445.9$\~$1037.9 mg, 3,258.9$\~$6:562.6mg in 100 ml CNSs, and 4.766$\~$8.989 $\mu$mol in 1 ml CNSs. The CNSs were higher in content of moisture, TMAO, TMA and pH, but lower in content of crude protein, salinity, total nitrogen, amino nitrogen, total ATP related compounds, absorbance at 453 nm and total free amino acid than the TNSs, Both CNS and TNS samples were rich in free amino acids, such as glutamic acid, lysine, alanine, leucine, valine, aspartic acid and isoleucine in the order.

Physico-chemical characteristics and antioxidant activities in oyster mushroom (Pleurotus ostreatus) cultivated with liquid spawn (액체종균으로 배양된 느타리버섯(Pleurotus ostreatus)의 이화학적 특성 및 항산화 활성)

  • The physicochemical characteristics of oyster mushrooms (Pleurotus ostreatus) cultivated using liquid spawn (MLS) were compared with those of commercial mushrooms cultivated using solid spawn. The color intensity of the two types of mushrooms showed no remarkable difference. The hardness of the MLS-cultivated mushrooms was significantly higher, but their moisture content (86.80%) was significantly lower than that of the commercial mushrooms. Mineral contents in MLS-cultivated mushrooms (421.17 mg/100 g) were significantly higher than those in the commercial mushrooms (333.26-362.78 mg/100 g); in particular, the potassium (K) content was the most abundant in the former. The amino acid content in the MLS-cultivated mushrooms (4,695.22 mg/100 g) was about 1.4-2.0 times that in the commercial mushrooms. The essential amino acid contents and sum of aspartic acid and glutamic acid were higher in the MLS-cultivated mushrooms than in the commercial mushrooms. The ${\beta}-glucan$ content in the MLS-cultivated mushrooms was 1.1-2.3 times higher than that in the commercial mushrooms. The total phenol and flavonoid contents and the DPPH and ABTS radical-scavenging activities of the MLS-cultivated mushrooms were significantly higher than those of the commercial mushrooms; however, the reducing power showed an opposite trend. Therefore, MLS-cultivated mushrooms contained higher amounts of valuable components and higher antioxidant activities than commercial mushrooms.
