Proximate Compositions and Selected Phytoestrogens of Iranian Black Pomegranate Extract and Its Products (이란산 흑석류 농축액과 그 제품의 성분 및 함유된 Phyto 에스트로겐류에 관한 연구)

  • Phytoestrogens are non-steroidal compounds fecund In a variety of plants, which exert estrogenic effects in animals. In this study, the physico-chemical properties of Iranian black pomegranate extract and its products as preliminarily research for the developing of natural estrogen supplement were evaluated. The chemical components of Iranian black pomegranate extracts and its product (Forever 120) were analyzed. Proximate compositions of pomegranate extracts were as follows; crude lipid 0.4%, crude protein 0.9%, crude ash 1.4% and carbohydrate 42.0%. Major amino acids of pomegranate extracts are glutamic acid (1310.0ppm), aspartic acid (896.2ppm), arginine (877.7ppm) and phenylalanine (57.5ppm). Fatty acid compositions of pomegranate extract 1ibid extracted by chloroform-methanol (2:1) were myristic (13.1%), stearic (69.4), oleic acid (6.8%) and palmitic acid (8.3%). Mineral elements were ferrous (6640.0ppm) and potassium (2550.8ppm). Vitamins were composed of ascorbic acid(20.0mg/100g), Vit. B$_1$(0.12mg/100g) and niacin (0.80mg/100g). 20 phytoestrogens and 20 estrogens of pomegranate extracts were detected Daidzein (0.29ppm), quercetin (9.75ppm) genistein (0.29ppm) and 17 $\beta$ -estradiol(0.15ppm). Above the chemical components of pomegranate extracts were compared with that of pomegranate its product or other isoflavon concentrates.

Quantity Analysis of Nutrients in Soybean Sprouts Cultured with Germanium (게르마늄을 첨가하여 재배한 콩나물에서 영양성분의 함량 분석)

  • This study was carried out to evaluate the nutritional value of soybean sprouts cultured in water with germanium. In the germanium treated soybean sprouts (GSP), the contents of moisture and ash were higher than those of control group (germanium non-treated soybean sprouts), with 88.7~90.2% and 16~24%, respectively. The contents of dietary fiber, vitamin C and total phenol of GSP were also higher than those of control group especially with more than 20~40% in total phenol being contained. Minerals of soybean sprouts were considerably increased during S-day cultivation. Of minerals, the contents of calcium and iron in GSP were higher than in the control. In particular there was no germanium in control group, but on the other hand, GSP had germanium of 159 ppm. Therefore, it may be suggested that, soybean sprout with germanium is better than soybean sprout without germanium in terms of nutrition.

Changes on the Components of Yam Snack by Processing Methods (제조방법에 따른 마 스낵의 성분 변화)

  • The study was intended to develop a yam snack to increase the consumption and the added value of the yam which has many kinds of medicinal effects and functions. Moisture content of a freeze-drying yam snack was higher than those of hot wind drying and vacuum drying yam snack. However, carbohydrate content was opposed to it. The content of soluble proteins in freeze drying yam snack was 6.43 mg/100g, and lower than that those in hot wind drying and vacuum drying yam snack. The contents of total sugar and reducing sugar were not noticeably different by processing methods. The major organic acids of yam snack were malic, acetic, acids, and acetic acid. Citric acid were rich contented in hot wind and vacuum dried yam snack, but the content of malic acid in freeze dried yam snack was higher than those in hot wind and vacuum dried yam snack. The contents of the amino acids and total amino acids showed the highest contents in vacuum dried snack and the next came in hot wind dried snack and freeze dried snack order. The content of free amino acids were not different by processing methods. Total content of vitamin C were not different by processing methods, but a ascorbic acid was higher in freeze dried yam snack than those in other. The dehydroascorbic acid contents of the hot-air and vacuum dried snack was higher than those of the freeze dried snack, Potassium, sodium and magnesium were the main minerals of the yam snacks.

Physicochemical Characteristics of Cabbage Kimchi during Fermentation (양배추 김치의 숙성과정 중에 나타나는 이화학적 특성에 관한 연구)

  • The purpose of this study was to investigate the physicochemical characteristics of Cabbage Kimchi with different kinds of jeot-kal. The Cabbage Kimchis were stored at 4${\pm}$1$^{\circ}C$ for 49 days. The pH of all samples of Cabbage Kimchis decreased during fermentation. The total acidity of Cabbage Kimchis increased gradually during fermentation and that of Cabbage Kimchis with different kinds of jeot-kal was higher than that of control. Redox potentials and reducing sugar content decreased gradually during fermentation. Total vitamin C content of Cabbage Kimchis with different kinds of jeot-kal was much higher than that of control. In color measurement, the lightness value decreased gradually, whereas the redness and yellowness values increased gradually during fermentation. The content of hot water soluble pectin (HWSP) decreased as the fermentation proceeded, but that of hydrochloric acid soluble pectin (HCISP) and sodium hexametaphosphate soluble pectin (NaSP) increased.

Composition of Vitamin A, E, $B_l$ and $B_2$ Contents in Korean Cow's Raw Milk in Korea (국내산 원유 중 비타민 A, E, $B_l$$B_2$ 함량에 관한 연구)

  • This study was performed to investigate the changes of vitamin A, vitamin E, vitamin $B_l$ and vitamin $B_2$ contents in cow's raw milk collected from dairy farms in Chungcheong-do and Jeolla-do for a year. The contents of fat soluble vitamin A and E were changed as seasonal effect, but water soluble vitamin $B_l$ and $B_2$ contents were not changed as seasonal effect. Vitamin A content in cow's raw milk was as follows [minimum ${\sim}$maximum (mean), ug/100 mL]; $35.1{\sim}59.0$ (44.4) in spring, $36.7{\sim}65.6$ (50.0) in summer, $28.7{\sim}61.2$ (46.8) in autumn and $29.9{\sim}57.8$ (43.1) in winter. In case of vitamin E was as follows [minimum${\sim}$maximum (mean), ug/100 mL]; $28.3{\sim}59.2$ (45.8) in spring, $39.6{\sim}69.9$ (58.8) in summer, $35.0{\sim}62.8$ (46.2) in autumn and $26.0{\sim}55.4$ (41.5) in winter. In case of vitamin $B_l$ was as follow [minimum${\sim}$maximum (mean), ug/100 mL]; $27.7{\sim}57.9$ (42.84) in spring, $32.4{\sim}66.1$ (49.39) in summer, $34.1{\sim}63.7$ (46.69) in autumn and $20.6{\sim}61.4$ (43.20 in winter. The amounts of vitamin $B_2$ in cow's raw milk was as follows [minimum${\sim}$maximum (mean), ug/100 mL]; $150{\sim}182$ (160 in spring, $145{\sim}185$ (163) in summer, $149{\sim}180$ (166) in autumn and $148{\sim}190$ (167) in winter.

Chemical Forms of Ca, Mg Compounds Occuring in Perilla Leaves and Their Changes after Harvest (깻잎에 있어 Ca, Mg의 존재형태와 수확후의 변화)

  • The chemical forms of calcium compounds in perilla leaves and their changes after harvest were investigated. The four types of calcium compounds extracted were as follows: water soluble calcium(F-I: mainly water soluble organic acid salts and calcium ion), IN-sodium chloride soluble calcium(F-II: calcium-pectate and calcium-carbonate), 2%-acetic acid soluble calcium(F-III: calcium-phosphate), and 5%-hydrochloric acid soluble calcium(F-IV: calcium-oxalate). The calcium content of perilla leaves was not found to vary with their age. Relatively high levels of F-l (28.4~39.5) and F-II (34.4~47.4) were found in young and mature leaves while the F-IV constituted 15.6~21.6% of the total calcium. The F-IV calcium contents of perilla. spinach and jaso were 16.8, 42.4 and 22.3%, respectively. In contrast to calcium. magnesium existed as water soluble magnesium at the highest content of 90.6% in spinach while 62.9% and 16.8% of the total magnesium existed as water soluble magnesium in perilla and jaso, repectively. The change in vitamin C and F-IV calcium content were examined for 7 days after harvest. Vitamin C content decreased slowly at the beginning but rapidly from the 4th day after harvest. On the other hand, the F-IV calcium content increased slowly at the beginning and rapidly from the 4th day of observation. This result suggests that the increase in F-IV calcium is related to the decrease in vitamin C content. This phenomena was more distinctly observed at 2$0^{\circ}C$ than 5$^{\circ}C$.

  • Human skin is continuously exposed to internal and external influences that may affect its condition and functioning. To maintain and improve skin condition, a wide variety of skin-care products is in the market. However, many of skin problems originate from internal causes, and the new insight into the relation between nutritional factors and skin is now receiving a great attention. Specific positive effects of nutrients or nutraceutical compounds on skin conditions may prove to be biologically relevant and may consequently allow for claims on products containing these compounds, resulting in the development of new functional food for optimal skin condition. In this review, these functions of nutrients and nutraceutical compounds in skin are summarized as providing a basis for the feasibility of the concept of functional foods for maintaining and improving skin condition.

The Relationship between the Refractive Power and Nutrient Intake of the Growth Period in Accordance with the Income (소득에 따른 성장기 영양소 섭취와 굴절력과의 관계)

  • Purpose: The Nutrient intake during the growth period is a critical factor for the development of the vision. In this study, we have analyzed the nutrient that has a correlation with the decrease of induced visual impairment. In addition, we investigated visual acuity and correlation of the nutrient in the higher-income youth and low-income youth. Methods: We used the Korean National Health and Nutrition Examination Survey 2010 document. The Korean National Health and Nutrition Examination Survey didn't show the clear standard of carbohydrates and fats, so we used the data from the Ministry of Food and Drug Safety standards with each 330 g, 51 g. In order to compare the correlation of nutrients and refraction, Nutrients has been classified macronutrients(energy, dietary fiber, protein, carbohydrate, fat), fat-soluble vitamins (vitamin A), water-soluble vitamins (vitamin C, riboflavin, niacin), trace minerals (iron), minerals (calcium, phosphorus, sodium, potassium) and water. Results: We investigated the correlation between refraction and nutrients on average about 328 subjects belonging to the high-income group. The fat intake was $54.21{\pm}32.60$ g, and it was about 2~10 times less than the recommended daily intake (112-540 g). Refractive power and fat intake showed a statistically significant correlation (O.D:p=0.033, O.S:p=0.029). We investigated the correlation between refraction and nutrients on average about 309 subjects belonging to the lowincome group. The phosphorus showed higher ingested by the $1118.75{\pm}501.98$ mg, and the sodium showed intake more than three times recommended intake by the $3705.24{\pm}2089.42$ mg. In addition, unlike other macro mineral it showed that was a correlation on the refraction by the 0.031. Conclusions: A broad variety of taking nutrition and good eating habits at the time of growth seems to have an effects to the good growth and vision and the senescence inhibition of vision.ave an effect to the good growth, the good vision and the senescence inhibition of vision.

Nutritional Characteristics and Some Bioactive Components Contents of Sophorae fructus (괴각(槐角)의 식품영양학적 접근 및 몇 가지 생리활성물질 함량 분석)

  • The purpose of this study is to determine the possibility of using Sophorae fructus as natural health food source. To accomplish this purpose, the contents of general and antioxidative nutrients of Sophora fructus were measured. The contents of carbohydrate, crude protein, crude lipid and ash are 75.9%, 16.4%, 2.41%, and 5.2%, respectively, while the calories of Sophora fructus was 337.3 kcal. Total dietary fiber was 15.07% of total carbohydrates. The percentages of water soluble dietary fiber to insoluble dietary fiber were 1.09% and 10.36%, respectively. The protein was composed of a total of 18 different kinds of amino acids. The contents of essential and non-essential amino acids were 2,310.91 mg and 5,218.52 mg. The K was the largest mineral followed by Ca, P and Mg, which means Sophorae fructus is alkali material. The contents of saturated fatty acids, monounsaturated fatty acids and polyunsaturated fatty acids were 24.94%, 32.40%, and 32.86%, respectively. Therefore, the amount of the total unsaturated fatty acid was higher than that of any other plant. The content of vitamin C in Sophorae fructus was higher than that of any other plant, which suggests that it could increase blood elasticity. The content of rutin, which is responsible for capillary vessel permeability, was 1.78%. The contents of water soluble antioxidative materials in 1 mL of water-extracted Sophorae fructus were $4.95\;{\mu}g$ which is comparable to 1,560.96 mmol of vitamin C in antioxidant effect. The general nutrients and other antioxidatant bioactive materials in Sophorae fructus were also potential materials for good health food. It is expected that a follow up study on Sophorae fructus through developing processed food and evaluation of their functional properties would provide useful information as a source of medicinal foods.

Physicochemical Characteristics of Onion Kimchi Prepared with Jeot-kal and Chitosan (젓갈 및 키토산을 첨가한 양파 김치의 이화학적 특성)

  • This study was conducted to examine the effects of Jeot-kal and chitosan on the physicochemical characteristics and hardness during onion Kimchi fermentation. The onion Kimchi was stored at 4${\pm}$1$^{\circ}C$ for 42 days. The study results were as follows. The pH of control onion Kimchi and the experimental groups was in the range 5.30∼5.80. The pH of the experimental groups slowly decreased during the fermentation. The total acidity of the four kinds of onion Kimchi was increased. The reducing sugar content was maximized at 4 days of fermentation after which it decreased gradually as the fermentation processed. The ascorbic acid content of control onion Kimchi and the experimental groups was increased rapidly at 21 days and then decreased. The hardness of onion Kimchi measured instrumentally was higher in onion Kimchi treated with the salt-fermented Toha jeot juice than in control onion Kimchi.
