Comparison of Sorption Characteristics of Several Soybean Varieties (콩 품종별 흡습특성 비교)

  • Seven varieties of soybeans(Paldal, Danyeob, Jangbaek, Baegun, Jangyeob and 2 cultivars of Local 1 and Local 2) were investigated to compare the sorption characteristics during storage of various relative humidities. The sorption isotherm curve determined at RH range of $33{\sim}92\;%$ and $4^{\circ}C$ and $25^{\circ}C$ showed that moisture contents of soybeans was higher at $4^{\circ}C$ than those values at $25^{\circ}C$ for overall water activities of 0.33{\sim}0.92$. The Paldal was the highest moisture content at $4^{\circ}C$ while that value of Baegun was the highest at $25^{\circ}C$. The change in moisture content with storage time was expressed by log(dw/dt)=b log(t)+log a and the value of (dw/dt)${\times}10^3$ was decreased logarithmically. The Paldal was comparatively the highest initial absorption rate and the value of -b in seven varieties decreased as the relative humidity increased from 33 % to 92 %.

건조방법과 온도변화에 따른 분말두부의 수분흡착특성

  • 두부는 특유의 질감으로 우리 민족의 주요부식이 되어온 전통식품으로서 국제적으로 잘 알려져있는 고단백식품이다. 두부의 원료인 대두는 전체단백질의 80∼90%를 차지하는 glycinin과 albumin등의 단백질 성분과 비단백 질소 화합물이 함유되어 있는데 가격이 저렴하면서 영양과 기능성이 우수하여 식육, 낙농제품, 계란단백질이 disulfide 결합, 수소결합 및 소수결합에 의해 응집되어 gel이 된 후 염농도 증가에 의해 침전되거나 산에 의해 등전점 (pH 4.2∼4.6)에서 침전되는 성질을 이용한다. 또한 두부는 80% 이상의 높은 수분함량 때문에 쉽게 변질되는 소지가 많으며 두부의 저장에 많은 한계성을 보이는 식품이기도 한다. 따라서 건조에 의한 식품의 저장은 식품내의 수분을 감소시킴으로써 용질의 상대적 농도를 높혀 식품내의 수분 활성도를 저하시켜 미생물 및 효소에 의한 부패나 변패 및 변질을 방지할 수 있다. 이에 본 연구에서는 두부의 안전저장과 유통을 위하여 열풍건조, 진공건조 및 동결건조에 따라 분말두부를 제조하고 수분흡습특성과 기존 모델식과의 적합성 및 평형수분함량의 예측모델을 구하여 분말두부의 활용성을 높이며 다른 분말식품에도 적용할 수 있는 기초자료를 제공하고자 하였다.

  • Interrelationship between. certain physicochemical properties of milled rice was investigated. Grain hardness and milling time were correlated with grain dimension. Equilibrium moisture content of rice upon soaking at room temperature showed a high negative correlation with the amylose content. The contents of protein, fat and ash had no relationship with hardness, milling time and equilibrium moisture content.

Effect of Accelerated Storage on the Microstructure and Water Absorption Characteristics of Korean Adzuki Bean (Vigna angularis L.) Cultivar (팥의 가속화 저장에 따른 미세구조 및 수분흡수 특성)

  • This study investigated the microstructure and water absorption characteristics of the Korean adzuki bean (Vigna angularis L.) cultivar under accelerated storage. The germination rate, acid value, redness (a*), and yellowness (b*) values showed no significant differences after three months of storage compared to pre-storage under low temperatures (4℃). However, a statistically significant difference was observed under accelerated high temperatures (45℃). In particular, after storage for three months, the germination rate and acid value were 0% and 33.63 mg KOH/100g, respectively, under accelerated high temperatures. After storage for three months, the holes, hilum damage, and spaces between the seed coat and cotyledon shortened the time and speed of water absorption under accelerated high temperatures compared to that under low temperatures. Conversely, further research is required to investigate the reason for the low rate of parallel water absorption.

  • 연료전지 차랑용에 있어서 공기 가습 및 감습의 중요성은 매우 크다. 특히 PEM(Proton Exchange Membrane)연료전지에서 수분평형은 총괄시스템성능에 큰 영향을 미치는 요소인데, 이에 관한 중요한 연구가 지금까지 광범위하게 수행되고 있다. 또한 차량과 같이 동적부하 연료전지를 활용하는 분야에 있어서, 전류의 흐름은 차량용 파워 부하에 크게 영향을 받는다. 따라서 전기적 흐름이 발생하면, 이에 따라 수분이 발생하게 되는데, 이러한 응축 수분은 예측이 되며, 수관리 시스템에서 이를 중요한 제어 기준으로 활용한다. 그러므로 적절한 제어방법을 선택하면 유입공기의 온도와 습도의 최적값을 얻을 수 있다. 따라서, 본 논문에서는 PEM 연료전지의 수관리를 위하여 수분전달 모델과 유전알고리즘(genetic algorithm)을 사용하는 제어방법에 초점을 두고 있다.

Analyzing off-line Noah land surface model spin-up behavior for initialization of global numerical weather prediction model (전지구수치예측모델의 토양수분 초기화를 위한 오프라인 Noah 지면모델 스핀업 특성분석)

  • In order to produce accurate initial condition of soil moisture for global Numerical Weather Prediction (NWP), spin-up experiment is carried out using Noah Land Surface Model (LSM). The model is run repeatedly through 10 years, under the atmospheric forcing condition of 2008-2017 until climatological land surface state is achieved. Spin-up time for the equilibrium condition of soil moisture exhibited large variability across Koppen-Geiger climate classification zone and soil layer. Top soil layer took the longgest time to equilibrate in polar region. From the second layer to the fourth layer, arid region equilibrated slower (7 years) than other regions. This result means that LSM reached to equilibrium condition within 10 year loop. Also, spin-up time indicated inverse correlation with near surface temperature and precipitation amount. Initialized from the equilibrium state, LSM was spun up to obtain land surface state in 2018. After 6 months from restarted run, LSM simulates soil moisture, skin temperature and evaportranspiration being similar land surface state in 2018. Based on the results, proposed LSM spin-up system could be used to produce proper initial soil moisture condition despite updates of physics or ancillaries for LSM coupled with NWP.

  • 가스절연개폐기의 절연물로 사용되는 에폭시가 흡습환경에 노출될 경우 절연내력은 급격히 저하된다. 에폭시 절연물에 함유되어 있는 수분은 어느 일정 온도에서는 가스 내 수분과 평형을 이루고 있지만 온도변화에 따라 수분은 이동되며 또 고전압 인가 시 절연체 표면은 열화 되어 장기간에 걸쳐 침식과 함께 Treeing 현상을 유발시킨다. 본 연구에서는 에폭시 절연물의 절연특성에 미치는 수분의 영향을 파악하기 위하여 실 계통에서 사용된 제품에 대해 AC 내전압시험 및 재료분석을 시행하였다. 분석결과, 표면의 파괴전압은 주수량에 따라 건조섬락전압의 최대 1/5까지 저하되었다.

Diffusion of Salt and Drying Characteristics of Beef Jerky (육포 제조시 염의 확산속도 및 건조 특성)

  • In this study, salting conditions and dehydration methods were investigated. Salting time, concentration and temperature could be considered to variables in salting conditions. The diffused salt amounts to beef jerky depending on time are sharply increased in two hours. This result is caused by the difference decrease of concentration gradient between bulk solution and beef jerky. The increase of salting concentration and temperature resulted also in the increase of a diffused salt. The deeper bulk concentration made diffusion to beef easily with the bigger driving force and the movement of molecules is more active according to temperature increase. Dehydration is conducted with various methods such as natural drying, cold air drying and hot air drying. Comparing with color and texture among the drying methods, cold air drying showed superior quality in color and texture. Beef jerky by cold air drying colored more reddish than other drying methods and good cutting shear stress and tensile strength. In case of hardness and chewiness, hot air drying method showed the highest value, which means the worst texture.

Cracking of Rice Caused by Moisture Migration during Storage (쌀의 저장중 수분이동에 의한 균열현상에 관한 연구)

  • Cracking of rice caused by moisture migration during storage under different relative humidity conditions was investigated for the establishment of safe storage condition of rice. Rice was cracked when a large difference in equilibrium relative humidity $({\Delta}ERH)$ between the rice and the environment was present. External and internal cracks were generated as the results of moisture desorption and adsorption, respectively. The external cracks by moisture desorption generated in all directions and shaped irregularly, while the internal cracks by moisture adsorption did in radial direction and showed a typical shape. The cracking trend could be analyzed by the Weibull function, and the cracking constant increased with ${\Delta}ERH$. The frequency of cracked rice increased linearly with In $({\Delta}ERH)$. The critical crack-inducing ${\Delta}ERH$ was $11.3{\sim}16.4%$ during desorption and $10.8{\sim}17.1%$ during adsorption. A diagram for the safe storage of rice was developed with respect to the initial moisture content and the water activity of rice.
