Status of Mixed Grain Diet by People with Diabetes in Jeollabuk-do and Sensory Evaluation of Different Composition of Mixed Grains (전라북도 지역 당뇨환자의 잡곡밥 섭취 실태 및 혼합비를 달리한 잡곡밥의 관능검사)

  • This study investigated the status of mixed grain diet by 68 people with diabetes living in Jeollabuk-do and performed sensory evaluation of different composition of mixed grains to improve the sensory characteristics based on the investigation. BMI of all subjects were measured and found that 61.7% were overweight. 94.1% of them ate mixed grains and females ate more mixed grains than males (p<0.05). Most males and females answered that they ate mixed grains for their health. Females added more mixed grains than males (p<0.01). More females (47.1%) than males said they would continue to eat mixed grains (p<0.05). 59% of them said they had eaten mixed grains for more than 3 years. 46.0% of them said they purchased mixed grains at a small mart near their houses. The mostly added grain to rice was black soybean (76.5%). RMGD-50 is composed of six mixed grains excluding nonglutinous rice and has the mixing rate of 50%. RMGD-40 has the mixing rate of 40%. Sensory evaluation was performed and RMGD-50 got lower score ($3.33{\pm}0.68$, $3.50{\pm}0.81$) than RMGD-40 in the appearances and color. RMGD-40 with Control 1 that includes more glutinous grains and Control 2 that is polished rice were compared. RMGD-40 got lower score than Control 1 in its appearances, smell and color, although there wasn't a meaningful difference. For the people with diabetes who are accustomed to mixed grains, the polished rice got the lowest score in moisture amount, gumminess and overall taste ($3.26{\pm}0.82$, $3.48{\pm}0.85$, $3.19{\pm}0.70$). It showed meaningful difference from RMGD-40 and Control 1 (p<0.01). Consequently people with diabetes preferred mixed grains that include more glutinous grains that have lower mixed ratio. So it is necessary to educate the people with diabetes about eating grains for better blood sugar management. Continual study and development of mixed grains that can help people with diabetes to control their blood sugar are necessary.

Food and nutrient intake status of Korean elderly by degree of cognitive function (노인의 인지기능상태에 따른 식품과 영양소 섭취실태)

  • Purpose: This study was conducted to examine the relationship among cognitive function, nutrition screening initiative (NSI) score, and food intake status. Methods: A total of 409 subjects aged over 60 years were recruited from the Yongin dementia prevention and control center. Mini Mental State Examination Dementia Screening (MMSE-DS) method was used to assess the cognitive function of the subjects. Information on health related behaviors and food intake was collected by face to face interview using a structured questionnaire. The questionnaires included the NSI DETERMINE checklist, food intake sheets by 24 hr recall method and by semi-quantified food frequency questionnaire. Results: Subjects were divided into low cognitive or normal groups according to the MMSE-DS result. The prevalence of low cognitive function in the subjects was 25.7%. The low cognitive group exercised less and had higher nutritional health risk than the normal group. The low cognitive group had lower consumption of polyunsaturated fatty acid and higher tendency of thiamin, riboflavin, and iron deficiency. The low cognitive group had less frequency of eating mackerel, pepper, tangerine, and watermelon and higher frequency of eating white rice and cookies than the normal group. Conclusion: The results of this study imply that the cognitive function of elderly is related to exercise behavior, nutritional health risk, and food and nutrient intake status.

Comparative Study on Dietary habits, Food Intakes, and Serum Lipid Levels according to Kimchi Consumption in College Students (대학생의 김치섭취 수준에 따른 식습관, 식품섭취실태 및 혈중지질 농도에 관한 연구)

  • This study was carried out to compare the differences in dietary habits, food consumption patterns, nutrient intakes, and serum lipid levels according to kimchi consumption in college students. The anthropometric and biochemical parameters of blood samples from the subjects were investigated, as well as a kimchi frequency questionnaire, 24-hour food recall and dietary habits. The subjects were divided into two groups according to their kimchi consumption level based on the quantitative kimchi frequency questionnaire-kimchi consumption under 50 g group and kimchi consumption over 50 g group. As kimchi consumption increased, consumption of white rice (p<0.05) and noodles increased, whereas the consumption of confections decreased. The kimchi consumption over 50 g group was more likely to eat balance meals (p<0.05), and consume fruits and vegetables (p<0.05) than the other group. On the other hand, the kimchi consumption under 50 g group was more likely to consume milk than the kimchi consumption over 50 g group. The energy and sodium (p<0.05) intakes in the kimchi consumption over 50 g group were higher compared to the kimchi consumption under 50 g group. Kimchi consumption was positively correlated with HDL-cholesterol and negatively correlated with body fat, BMI, and blood glucose level. In addition, kimchi consumption was positively correlated with cereals, meats, and vegetables intakes, and negatively correlated with milk and dairy product intakes. However, there was no significant difference between the two groups.

The Relationship Between Parental Sodium Intake and Adolescent Sodium Intake (부모의 나트륨 섭취량과 청소년 나트륨 섭취량의 관련성)

  • This study was conducted to investigate whether the parental sodium intake and the sodium intake of adolescents are consistent with each other, to identify factors affecting sodium intake of adolescent children, and to measure sodium intake at home. For this study, 405 subjects in the National Health and Nutrition Survey of 2015 whose sodium intake was measured among nutritional intake were selected, excluding elementary school students, middle school students and high school students aged 7 to 18 years. The data were then matched with the father ID and the mother ID in the youth ID. The results of this study were as follows: ${\beta}=-0.187$ for male adolescents, ${\beta}=0.192$ for older adolescents, ${\beta}=0.153$ for higher adolescents, and sodium intake for adolescents. This is because the mother usually prepares meals in Korea. On the other hand, it is predicted that parents will not be able to consider the quality of their children due to the increased number of dual-income couples.

Study on snack intakes in obese elementary students in Jeju city (제주시 지역 일부 초등학교 비만아동의 간식 섭취 실태)

  • Purpose: This study was conducted to investigate dietary habits related to weight reduction and snack intake habits of $4^{th}$ to $5^{th}$ grade elementary students located in Jeju-si, Jeju, South Korea. Methods: The $4^{th}$ and $5^{th}$ grade elementary school students (total n = 234, equally matched numbers of normal weight children and overweight/obese children (n = 117/group)) were surveyed using a questionnaire and a 24-hour dietary recall method in Oct 2015. Results: The percentage of students who experienced reduced food intake to control weight was 26.3% in the normal weight group (NG) and 77.6% in the obese group (OG). Most frequently answered meal for reduced intake was snacks in the NG and dinner in the OG. Percentages of daily calorie intake among subjects were 17.2% for breakfast, 33.8% for lunch, 29.7% for dinner, and 19.3% for snacks. Frequency of snack intake was 2.1 times a week in NG and 1.6 times a week in OG, which showed a statistical difference between body weight groups. Types of snack foods were distinctly different depending on where children consumed them, although no difference was observed between NG and OG. In addition, snack intake level of low energy and nutrient-dense foods was significantly lower in the OG compared to the NG, whereas snack intake level of energy dense and low-nutritive foods was not different between the OG and NG. Conclusion: Taken together, snack intake level with consideration of frequency and amount of snack intake showed that children in the OG consumed significantly less low energy and nutrient-dense foods compared to the NG. Therefore, nutritional education for choosing healthy snack foods for children regardless of body weight status is crucial based on family-school links.

Nutritional Status of Korean Toddlers: From the Korean National Health and Nutrition Examination Survey 2007~2009 (한국 유아의 영양 섭취 현황: 2007~2009년 국민건강영양조사를 바탕으로)

  • Purpose: The aim of this study was to investigate the feeding patterns, use of dietary supplements, and nutrient intake of Korean toddlers. Methods: We used data for 930 toddlers who participated in the 4th Korean National Health and Nutrition Examination Survey (KNHANES) from 2007 to 2009. Feeding patterns and use of dietary supplements were assessed using standardized questionnaires, and nutrition intake was assessed using the 24 hr recall method. Results: In 2007~2009, 48.7% of toddlers used dietary supplements. Most parents (95.4%) initiated a regime of dietary supplements for their children following the advice of friends or relatives. Only 0.4% of parents followed the advice given by their doctors for dietary supplements use. In the survey of nutrient intake for toddlers, the prevalence of inadequate calcium intake was 53.9% for subjects aged 1 year, 55.2% for 2 years and 65.6% for subjects aged 3 years. The prevalence of inadequate iron intake was 52.0% for subjects aged 1 year, 48.7% for 2 years and 48.4% for subjects aged 3 years. In the survey performed on feeding patterns of toddlers during the infant period, mixed feeding accounted for 57.4%, breast feeding for 32.2%,and formula feeding for 10.4%. Sixty-five percent of toddlers began weaning between 4 and 6 months. Conclusions: This study indicated that a number of toddlers were at risk of inadequate calcium and iron intake. The role of professionals in counseling for qualified dietary intake and dietary supplement use is therefore necessary for Korean toddlers.

2020 Dietary Reference Intakes of water for Koreans: establishment and future tasks (2020 한국인 수분 섭취기준 설정과 앞으로의 과제)

  • Water accounts for the largest proportion of body weight and is an essential element for the physiological functioning of the human body. According to 2013-2017 Korea National Health and Nutrition Examination Survey (KNHANES) data, the average water intake of Koreans was 2,167.3 mL/day and 62% of them did not meet the Dietary Reference Intakes for Koreans (KDRIs) for water. However, the consumption of beverages is continuously increasing. KDRIs sets the adequate intake (AI) for water, but tolerable upper intake level (UL) and chronic disease risk reduction intake (CDRR) are not provided. Compared to 2015, the AI of total water from both food and fluids in the 2020 KDRIs slightly increased or decreased according to age. The AI for children 1-2 years old, boys 6-8 years and 9-11 years old, and girls 6-8 years old decreased by 100 mL/day, while that of boys 12-14 years old increased by 100 mL/day. The AI of total water was the sum of the water intake from food and fluids reported by the KNHANES, with an extra milk intake of 200 mL/day. Therefore, it is not appropriate to use the AI of total water intakes for the reference of beverage intakes. It is preferable to consume water or milk rather than beverages containing sugar and others including caffeine, sodium, etc. when drinking fluid water. We suggest the following improvements in the future KDRIs for water: improving the adequacy of the water content ratio of Korean conventional foods, supplementing the fluid water intake survey, reflecting the current water intake status by life cycle, setting KDRIs for water for the elderly considering the physiological changes, health status and dietary habits, and promotion of research on the relationship between water intake and health for Koreans.

Use and Assessment of Home-Delivered Meal Service for Children from Low-Income Families (가정배달도시락 수혜 아동의 도시락 서비스 이용 실태와 평가)

  • The purposes of this study were to investigate consumption of home-delivered meals among children from low-income families and to assess their perception of the home-delivered meal service. A survey was conducted on 392 children who had received home-delivered meals, and 208 questionnaires (response rate: 53.1%) were analyzed using SPSS (ver 18.0). The respondents consisted of elementary school students (36.1%), middle school students (33.7%), and high school students (30.2%). Approximately half of children received home-delivered meals during their semester and vacation periods, and 52.2% of respondents shared the delivered meals with their brothers or sisters. Eighty-six point one percent of respondents consumed delivered meals within 4 hours after the meals were received at home, and approximately a fifth of respondents left the delivered meal boxes on a sink counter or table until eating. Leftover foods were kept in the refrigerator (52.2%) or on the sink counter/table (2.5%). The quality of the home-delivered meal service was assessed as 3.3 points based on a 5-point scale. 'Food safety is good' received the highest score (3.62) and 'Food taste is good' received the lowest score (3.07). The results showed that children receiving the home-delivered meal service should be provided information on proper handling and consumption of the delivered meals at home.

A Comparison Study: the Risk Factors in the Lifestyles of Colorectal Cancer Patients and Healthy Adults (대장암 환자와 건강인의 생활습관 비교)

  • 본 연구는 대장암 환자들의 암으로 진단받은 당시의 생활습관 실태를 암 병력이 없는 일반 성인들과 비교해봄으로써 대장암의 발생에 영향을 미치는 위험요인을 규명하고자 실시되었다. 연구 설계: 대장암 환자의 생활습관 실태를 파악하고, 대장암 발생에 영향을 미치는 인자를 확인하기 위하여 대장암 환자와 암 진단을 받지 않은 건강인을 대상으로 시도된 후향적 비교 조사연구(retrospective comparison survey study). 연구 대상자는 2011년 10월부터 2012년 8월까지 대장암으로 진단된지 1년 이내로 J대학교병원 내의 암전문연구센터에 내원한 대장암 환자 107명과 동 시기에 동 병원을 방문한 암환자 아닌 환자의 보호자 중 암진단을 받지 않은 일반 성인을 대상으로 빈도 짝찟기를 통해 연령, 성별 및 배우자 상태 등이 동질한 124명이었다. 연구 도구는 김화영(2011)의 생활습관 측정도구(Content Validity Index [CVI], Mean expert proportion=0.98) 를 저자의 승인 하에 사용하였으며, 관련문헌을 참조하여 수정 보완한 후 식습관, 음주 및 흡연 습관, 휴식 및 활동 습관, 스트레스 관리 및 정기검진습관 등의 5개 하위영역으로 측정하였다. 연구결과 인스턴트식품 섭취여부, 스트레스 해소정도, 육류 익힌정도(살짝 익힘/탈정도로 익힘) 및 평소 주로 먹는 음식(채식/육식 여부)이 대장암 발생에 유의한 영향을 미치는 요인으로 나타났다. 대장암환자군과 건강인군의 생활습관을 비교한 본 연구의 결과를 토대로 하여, 평소 식습관에서 인스턴트식품 등의 가공식품의 섭취를 줄이고, 스트레스가 발생(인지)될 때 이를 효과적으로 조절할 수 있도록 하며, 육류섭취 시 살짝 익혀서 먹는 습관이 실천되어야 할 것이다. 또한 평소에 육류 섭취를 줄이고 섬유질이 많은 채식 위주로 식사하도록 권장해야 할 것이다.

Anthropometric Measurement, Dietary Behavior and Nutrient Intake of the Nation-Wide College Students Attending a Nutrition Education via Internet (인터넷 영양교육 참여 전국 대학생의 지역별 신체계측, 식행동 및 영양소 섭취상태에 관한 연구)

  • The purpose of this study was to investigate the regional differences in anthropometric measurement, dietary behavior and nutrient intake among the nation-wide college students participating in a nutritional education program via internet. The subjects were 1614 college students (male: 752, female: 862) and divided into 4 regional groups. A cross-sectional survey was conducted using a self administered questionnaire, and the data were collected via internet or by mail. The nutrient intake data collected from food record were analyzed by the Computer Aided Nutritional Analysis Program. Data were analyzed by SPSS 10.0 program. Average age of male and female college students were 23.6 years and 21.0 years, respectively. Most of the male and female college students had poor eating habits, such as unbalanced meals and skipping meals. In particular, more than 60% of the male college students in Chungcheong and Gyeongsang areas had irregularity of meal time. Female students in Seoul and Incheon areas showed significantly higher consumption frequency of yellow and green leafy vegetables compared to Chungcheong and Gyeongsang areas. Female students in Seoul, Incheon and Chungcheong areas showed significantly higher consumption frequency of milk and milk products compared to Gyeongsang area. Calorie, vitamin A, calcium and iron intakes of the male students and calorie, vitamin A, vitamin $B_2$, niacin and calcium intakes of female students were lower than the Korean RDA. Female students in Incheon area showed significantly higher vitamin C and iron intakes compared to the other areas. These results provide a nation-wide information on dietary behavior and nutrient intake among Korean college students.
