A Study on the Differences in Eating Habits by Sasang Constitution Types (사상체질에 따른 식습관의 차이 연구)

  • This study aims to analyze the difference of eating habits in accordance with Sasang Constitution types. For this study, 249 persons were interviewed and surveyed, classified into Taeyang(8.4%), Soyang (19.3%), Taeeum(26.5%), and Soeum(45.8%). As for taste preference, people of the Taeeum and Soyang body constitution types tended to prefer spicy tastes while those of the Taeyang and Soeum body constitution types preferred sweet tastes. For eating habits, people of the Taeeum and Soyang body constitution types stated that they eat food relatively quickly and eat food until they feel full. They also said they normally overeat when they get stressed. The eating habits for the four groups, there was a significant difference(p<0.05) between body constitution types and eating habits. We hope that our research will provide the food service industry with helpful and new information.

Conjoint Analysis of Restaurant Attributes on Customer Intentions to Choose Restaurant (컨조인트 분석을 이용한 레스토랑의 선택 속성에 관한 연구)

  • The purpose of this study is to determine the relative importance of restaurant attributes, preference in choosing a restaurant and to find out differences between segments. The web survey was conducted among 400 customers(aged from 20~39 years old) who lived in Seoul and Kyunggi, Incheon Province, from the period of August 23 to September 4, 2009. The statistical data analyses were performed using SPSS/WIN 12.0 for the conjoint analysis. The main results of this study were as follows : according to the analysis on the attributes and the levels of restaurants, the relative importance of restaurant attributes was assessed in taste (43.46%), price(27.62%), restaurant type(18.49%) and atmosphere(10.44%). Differences were found among three segments by the cluster analysis. Relative importance of restaurant attributes was assessed in price (45.96%), restaurant type(40.00%), taste(11.93%) and atmosphere(2.11%) in segment 1, taste(50.93%), price (33.37%), restaurant type(10.75%) and atmosphere(4.95%) in segment 2 and taste(56.24%), restaurant type (22.60%), price(14.06%) and atmosphere(7.10%) in segment 3. The results of the conjoint analysis indicated that customers preferred a restaurant with 'tasty food & various menu items', 'food priced 10,000~20,000 won', 'calm atmosphere' and 'the type of family restaurant'. The customers in segment 1 preferred a restaurant with 'not tasty food & simple menu', 'food priced more than 20,000 won', 'calm atmosphere' and 'the type of fine-dining restaurant'. The customers in segments 2 preferred a restaurant with 'tasty food & various menu items', 'food priced less than 10,000 won', 'exciting atmosphere' and 'the type of fine-dining restaurant' and the customers in segments 3 preferred a restaurant with 'tasty food & various menu items', 'food priced 10,000~20,000 won', 'calm atmosphere' and 'the type of family restaurant'.

Coffee extraction temperature, extraction time and drinking temperature on the difference in coffee taste and preference study (커피 추출온도, 추출시간, 음용온도에 따른 맛의 차이 및 선호도 연구)

  • This study examined the effect of 3 evaluation factors(extraction temperature, extraction time and drinking temperature) on the 5 tastes (sour, sweet, malty, salty and bitter) of coffee. the aim of this experiment were threefold: i) to investigate the change of the 5 tastes depending on the each 3 evaluation factor ii) to examine the change of the 5 tastes depending on the extraction time, drinking temperature under fixing the group of extraction temperature iii) to research the preference for the taste of coffee depending on 3 evaluation factors. As a result, in relation to the evaluation factors, significance difference was made at the sour taste. And when extraction temperature was higher and extraction time was longer, the sour taste was felt stronger. To the contrary, when drinking temperature was lower, sour was stronger. When the extraction Temperature group was controlled, the sour and malty taste were stronger. The sour taste was stronger when drinking temperature was lower and delicate flavor was stronger when drinking temperature was higher. High preference was demonstrated at extraction temperature($98^{\circ}C$), extraction time(0 minute), drinking temperature($60^{\circ}C$) and higher malty taste.

  • 영동지역 동해안은 오징어나 명태와 같은 특정 수산물이 대량 어획되어 선어나 건조 제품으로 주로 소비되고 있으며, 이들 수산물을 원료로 몇가지 가공 제품이 생산되고 있기도 하다. 그러나, 다양한 먹거리의 등장으로 명태알포, 조미오징어의 매출단가의 하락과 함께 매출도 아주 줄어들어 영동 지역 수산업이 매우 큰 위기상황이다. 이 위기의 돌파구는 현재의 제품보다 더 고부가가치적인 신제품을 만들어 내어야만하고, 이때 특히 소비자가 선호하는 맛과 함께 즉석식과 편리성이 반드시 가미되어야만 성공을 거둘 수 있다고 본다. (중략)

Quality Characteristics of Apple Jangachi according to Cultivar during Storage (품종에 따른 유기농 사과장아찌의 품질특성)

  • Quality characteristics, such as moisture content, pH, acidity, sugar content, salinity, flavor, taste, color, and overall acceptance of apple Jangachi prepared with different apple cultivars were investigated after different times in storage. The initial moisture content of apple Jangachi was 14.19-16.94% according to cultivar. After 5 days of storage, the moisture content increased to 23.26-26.91%. The pH was 3.98-4.55 regardless of cultivar. Total acidity decreased at first and then increased slightly after 10 days in the range of 0.8% to 1.3%. The sugar content of apple Jangachi decreased from 60-68% to 27-34% on the 5th day and was maintained at 23-25% after 5 days regardless of apple cultivar. The salinity of apple Jangachi increased from 0.94-1.64% to 3.5-3.8% after 15 day regardless of cultivar. In the sensory evaluation, apple Jangachi prepared with the Gala cultivar was given the best ratings in overall acceptability.

Consumption Pattern of Ramyon by Middle School Students -Kangwon do Area- (중학생의 라면소비 실태조사 -강원도 지역을 중심으로-)

  • Consumption pattern of Ramyon (fried instant noodle) by middle school students at age of 13 ∼15 years in Kangwon-do area was surveyed by questionaire. About 67% among 866 students consumed Ramyon more than once per week. On the whole, common Ramyon was frequently consumed as a kind of substitues for supper sand between meals at home because of its convenience. The advertisement had strong effect on the selection of ramtron. Consumers considered that taste of soup is important quality factor of Ramyon In terms of the texture of cooked noodle, the most desirable was chewy and hard texture. The most undesirable was swollen and mushy texture. The most desriable and undesirable taste of soup was respectively spicy and greasy taste. At present, no significant difference in consumption pattern betsween sex were observed in most cases.

About 64% among 675 pupils consumed Ramyon more than once or twice per week. On the whole, common Ramyon was frequently consumed as a kind of substitutes for normal meal at home because of its convenience. The advertisement had strong effect on the selection of Ramyon. Especially, gummy texture of noodle and hot taste of soup are playing as a vital role in choosing Ramyon. At present, no significant differences in consumption pattern between sex were observed in most cases.

Predictive Modeling of Dental Pain Factors Using Neural Network Model (신경망 모델을 이용한 치통발생 예측 모형에 관한 연구)

  • Oral diseases may hinder people from living a healthy life by causing obstacles in the nutrition supply of the human body. This study aims at the found out the eating habits and recognition factors of people who are currently suffering from denial pain, and made a predictive modeling using neural network, which is a data mining. The oral health condition for maintaining and improving oral health has been examined and analyzed through a survey and the groups were divided based on the presence and the absence of dental pain. This study observed on eating habits, exercise and oral habits. The study results of neural network modeling input parameter was selected significant survival factors. As a result of making a predictive modeling using the neural network, the fitness of the predictive modeling of dental pain factors was 88.7%. As for the people who are likely to experience dental pain predicted by the neural network model, preventive measures including proper eating habits, education on oral hygiene, and stress release must precede any dental treatment.

Survey on Kimchi Intake Patterns and Attitudes towards Development of Functional Kimchi among Middle and High School Students in Busan Area (부산지역 중·고등학생의 김치 섭취 실태 및 기능성 김치 개발에 관한 태도 조사)

  • The intake patterns and attitudes towards development of functional kimchi among middle and high school students in Busan area were studied. Nine hundred respondents, consisting of middle and high school students, were surveyed. A total of 833 completed copies of the questionnaire were used in this research. Respondents preferred kimchi due to its 'ot taste' (49.2%) and 'alty taste' (17.9%), but they did not like kimchi due to its 'our taste' (33.8%) and 'eotgal taste' (22.9%). Most students (64.3%) consumed kimchi at home, 68.1% of students ate kimchi more than twice a day, and 27.4% of students consumed 3~4 pieces (size of a piece: $3{\timess}4cm$) of kimchi per meal. Students showed a strong desire to develop kimchi with a good taste at school food services (65.1%). They also showed intentions to increase intake of kimchi if 'aste of kimchi' (80.6%), and 'ealth functionality of kimchi' (65.2%) are strengthened. Students wanted kimchi to contain the following fruits: pears (41.3%), apples (24.6%) and pineapples (10.3%). Finally, students showed a desire to develop kimchi that helps growth and development (59.5%), weight loss (40.4%), and learning ability improvement (32.8%). This study concludes that it is necessary to increase kimchi intake in school foodservices by developing new kimchi recipes that meet students' desires and by educating students about the health benefits of kimchi.
