  • 생선회의 품질을 결정하는 중요한 요인은 씹힘성(촉감)으로, 생선회의 단단함(toughness)은 어종, 원료어의 신선도, 조리 후의 저장조건 및 치사방법 등에 따라 달라진다. 어육의 단단함은 생선회의 맛에 직결되어 육질이 단단한 어종일수록 양질의 횟감으로 선호되기 때문에 육질을 개선하기 위한 일련의 연구가 진행되고 있다. 즉, 운동사육에 의하여 근육의 장력을 발생시키는 방법, 사육수온을 변화시키는 방법, 한약재를 사료에 투여하여 육중의 결합조직의 함량을 증대시키는 방법 및 절식사육에 의하여 양식어의 육질을 개선하는 방법 등으로, 이 방법들은 어육의 actomyosin toughness나 background toughness를 향상시키는 방법들이다.   • 맛집과 맛집 정보에 대한 관심이 높아진 현재 사용자들이 손쉽게 맛집 정보를 지도형태로 기록할 수 있는 맛집 지도 만들기 애플리케이션을 구현하고자 한다. 본 애플리케이션은 구글 지도 API를 이용해 사용자들에게 지도를 제공하며 본인의 현재 위치를 나타내 주는 핀을 간단히 터치하는 동작으로 후가, 분야, 별점 등을 간편하게 기록하고 조회하며, 데이터베이스에 저장된 맛집 정보를 분석하여 맛집의 순위를 사용자들에게 제공하여 사용자들이 적절한 맛집 정보관리를 가능하게 한다. 또한, 특별한 기능으로 친구의 맛집 정보를 볼 수 있어, 친하게 지내는 친구의 음식 취향이나 최근 선호도 등을 공유할 수 있어, 음식을 통한 친분 형성에 도움을 줄 수 있도록 구현하였다.

  • 오늘날 모바일 기기를 이용한 무선인터넷의 속도와 품질이 향상되어 언제 어디서든 인터넷을 사용할 수 있게 되었다. 기존의 인터넷에서 서비스되던 지역별 맛 집, 뮤지컬 공연 검색 등 위치 검색 서비스를 이제 모바일에서도 제공 받을 수 있게 되었다. 하지만 모바일 기기의 작은 화면과 상대적으로 느린 속도는 신속하게 원하는 주변 장소를 찾아내기 어렵게 만들기 때문에 위치기반서비스와 온톨로지를 이용하여 가깝고 또 사용자가 선호도하는 추천장소를 빠르게 제공하기 위한 방법을 연구한다.

The Preference of Americans Residing in the US for Korean Traditional Cookies (한국 전통 한과에 대한 미국인들의 선호도)

  • 본 연구는 미국에서 우리나라 전통과자인 한과의 판매 가능성과 수용여부를 파악하기 위해서 미국인 대학생을 대상으로 설문조사와 관능검사를 실시한 결과이다. 설문 시에는 적절한 양과 가격, 섭취경험, 구입의사 등에 대해서 조사하였고, 관능검사 시에는 다식, 산자, 약과, 엿강정에 대해서 색깔-모양- 냄새와 greasiness, sweetness, firmness, adhesiveness, crispiness, dryness, overall acceptance에 대해서 평가하였다. 관능검사 결과 약과는 greasiness 가 유의적으로 높았고(p<0.01), 산자와 엿강정은 crispiness 가 유의적으로 높게 조사되었다(p<0.01) 전체적인 수용도는 다식이 유의적으로 낮게 조사되었다(p<0.01). 조사대상자는 한과를 스낵(42.9%)으로 이용하겠다고 가장 많이 응답했다. 그러나 구입의사에 대한 항목에서는 시식 후 90.5% 가 구입의사가 없다고 응답했으므로 한과의 세계화를 위해서는 각 나라의 식문화를 고려하여 각 나라 사람들에게 친숙한 향과 맛을 첨가하여 제품을 생산할 필요가 있다고 사료된다.

Acceptance and Preference of Vegetables in Menus for Middle School Students (중학생의 채소류에 대한 기호도 및 메뉴 선호도 조사)

  • The purpose of the study was to investigate the basic data that could make out a menu reflected by students' preference to increase the intake of vegetable food through the cooking method of favorite vegetables. For the investigation, 585 middle school students in Seoul and Ansan area were surveyed. In the preference of food items, the meat food was more preferred to the vegetable food. Also, the reasons that students do not eat vegetable provided were 'bad taste' and 'unfavorite vegetable'. The preference analysis for vegetable showed that stem and leaf vegetables, root vegetables and fruits & vegetables were in the order of perilla leaver, celery and cabbage, sweet potato, potato, and dried radish cube and tomato, sweet pumpkin and cucumber, respectively. The preference was three kinds of vegetables that were more delicious than frequently eaten in home. The preference analysis for cooking method of vegetables showed that stem and leaf vegetables, root vegetables and fruits & vegetables were in the order of boiled rice, soup/stew, and salads, boiled rice, fried food and salads, salad, soups/stew and raw seasoned vegetables, respectively. Therefore, this study was conducted in order to increase the vegetable intake. According to the results of this study, it should be needed to develop menus integrating vegetables and its cooking methods that students preferred and disliked are needed.

Foodservice Operational System and Satisfaction of Customers with Foodservice at Youth Facilities (청소년수련시설 급식소의 운영실태 및 이용자의 급식만족도)

  • The purpose of this paper was to investigate the operational status of youth facilities as well as the degree of students' satisfaction with menus served at youth facilities. The survey was conducted from July 9 to July 31, 2013 using questionnaires. The responses of 55 youth facilities and 249 students who had experienced foodservice at youth facilities were analyzed, utilizing the SPSS V20.0 program. The results on management status of youth facilities were as follows: 41.8% of youth facilities were operated for over 10 years, and 45.5% of facilities served meals for 100 to 200 students per day on average. Meal costs were 4,450 won on average, and food costs accounted for 46.8% of average meal costs. Exactly 78.2% of facilities preserved storage type meals at a temperature under -18 degrees Celsius for more than 144 hours, as the 'Food Sanitation Act' stated. Exactly 12.7% of facilities did not hire professional dietitians and had unsupervised foodservice management. Among 19 kitchen equipments surveyed in this research, Combi steamer was the least frequent at youth facilities. According to the results, most students (38.7%) ate leftovers since the food was not tasty. Overall foodservice satisfaction was on average 3.45 points, and the four factors 'dining room sanitation' (P<0.05), 'food taste' (P<0.01), 'serving various desserts' (P<0.01) and 'temperature of dining room' (P<0.05), significantly affected overall satisfaction. As food taste was critical for customer satisfaction, it is important for each dietitian to consider customers' preferences and develop recipes and menus. Further, detailed regulation and precise guidelines for youth facility foodservice are required to enhance students' foodservice satisfaction and serve nutritionally balanced menus in a hygienic manner.

The Effects of Added Sesame Powder on the Quality of Baechukimchi (참깨가루의 첨가가 배추김치의 품질에 미치는 영향)

  • In this study, we evaluated the effects of sesame powder on the fermentation of Baechukimchi, by assessing sensory, physicochemical, and microbiological properties during up to 25 days of fermentation. The Baechukimchi, with various levels [0, 1, 2, 3, 4%(w/w)] of sesame powder, was fermented at $10^{\circ}C$. The product containing the control and 1% sesame powder evidenced the highest scores for appearance and smell. Taste and texture were highest in the 1% and 2% sesame powder, and the overall acceptability was highest in the 2% sesame powder sample. During fermentation, titratable acidity increased while pH gradually decreased. pH was higher in the sample with sesame powder than in the control, and the titratable acidity increased with increasing sesame powder content on day O. Reducing sugar increased sharply during fermentation, and then gradually decreased. In particular, the 2% sesame powder sample maintained the highest content. Total vitamin C was slightly increased at initial fermentation and then steadily decreased. The total polyphenol content and antioxidant effect of the experimental groups with added sesame powder were higher than those of the controls. Additionally, the time required to achieve maximum levels of lactic acid bacteria, as determined by log numbers of cells and total viable cells, were more delayed in the experimental groups with added sesame powder than in the controls. Our results indicated that the Baechukimchi with $1{\sim}2%$ added sesame powder was acceptable.

Quality Characteristics of JungKwa made with Ginseng and the Effects of Different Types of Sweetners (감미료의 종류를 달리한 수삼정과의 품질 특성)

  • Jungkwa is traditional food in Korea and difficult to prepare. This study proposes to use a rice cooker to simplify the process of preparing ginseng jungkwa. The following is the summary of the study. This study examined low calorie sweeteners (xylitol, oligosaccharide, stevioside, erythritol) instead of sugar for ginseng jungkwa to satisfy customers' health needs. After adding sugar, xylitol, oligosaccharide, stevioside, and erythritol to ginseng jungkwa, moisture and sugar content were measured. Based on the results, the ginseng jungkwa made with xylitol had a low moisture content, but it had the highest sugar content. The ginseng jungkwa with xylitol had average sweetness equal to that of sugar. In addition, L-values were highest with stevioside whereas the b-values and a-values were highest with sugar. Hardness and springiness were highest in the ginseng jungkwa added with sugar while adhesiveness was highest in the ginseng jungkwa added with oligosaccharide. In a sensory evaluation, the appearance, flavor, taste, texture, and overall preference were highest for the oligosaccharide added ginseng jungkwa. In the end, the best low calorie sweetener for rice cooker prepared ginseng jungkwa proved to be oligosaccharide.

Survey on Consumer Perceptions of the Sensory Quality Attributes of Apple (사과의 품질결정을 위한 소비자 인식 조사)

  • Improving quality is a very important component of maintaining competitiveness of agricultural products. However, evaluation of 'high quality' indicates it is a very abstract concept and independent of some quality attributes, leading to differences in the perception of quality. Thus, there is a pressing need to objectively define 'high quality' and to develop basic technologies for its measurement, for application in the production, storage and distribution of competitive agricultural products. To objectively quantify apple quality, a survey was conducted on consumer preferences and awareness of quality attributes including color, taste, flavor and shape. The survey questionnaire targeted male and female adults (463 persons) ranging in age from 20 to 59 years. The questionnaire was based on purchases made at a wholesale market (50.1%) or a traditional market (18.8%). The majority of purchases were as small packets (62.0%) or as individual pieces (20.5%). Apples of moderate size (fist size, 60.5%) were preferred over small (4.3%) or large (32.6%) apples. The questionnaire provided consumer data on external quality attributes including color, shape and variety. Taste attributes were evaluated in relation to the balance between sour and sweet taste, and flavors peculiar to apples.

Effect of Sarcodon Aspratus on the Physical and Sensory Properties of Cooked Chicken (능이버섯 첨가가 닭고기의 물리화학적 및 관능적 특성에 미치는 영향)

  • An instrumental analysis of cooked chicken was carried out along with sensory evaluation to find out the effect of Sarcodon aspratus on the physicochemical and senory characteristics in comparision with kiwi fruit and pear. The moisture content of cooked chicken was increased in proportion to the increment of Sarcodon aspratus, kiwi fruit and pear. In the texture, shear force of cooked chicken was decreased with the increment of Sarcodon aspratus, kiwi fruit and pear. In terms of color, L-value was decreased by addition of Sarcodon aspratus, kiwi fruit and pear. but a-value was increased by addition of Sarcodon aspratus, kiwi fruit and pear. b-value was increased by addition of Sarcodon aspratus and pear. whereas b-value was decreased by addition of kiwi fruit. There were significant differences(p<0.05) in the sensory characteristics of the samples in which control was most preferred in taste and flavor. As the content of Sarcodon aspratus, kiwi fruit and pear was increased, the score of juiciness and tenderness was increased. In the overall acceptance, score of 0.05% Sarcodon aspratus and 10% pear was not different from that of control. Therefore, it can be concluded that 0.05-0.1% addition of Sarcodon aspratus might be desirable for the improvement of texture and juiciness of cooked chicken.
