Quality and Antioxidant Activity of Yanggaeng Containing Herbal Medicine Extracts for the Elderly (약재 추출물을 첨가한 노인용 기능성 양갱의 품질 특성 및 항산화 효과)

  • The purpose of this study was to investigate antioxidant activity of yanggaeng containing herbal medicine extracts (YH) by employing various in vitro antioxidant assays for 1,1-diphenyl-2-picrylhydrazyl free radical scavenging, 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) free radical scavenging, and reducing power. We also investigated moisture content, pH, texture profile, and sugar content, and evaluated the sensory characteristics of developed yanggaengs. Moisture content of YH was 41.54%. Sugar contents increased while pH decreased as content of herbal medicine extracts increased. Lightness was not significantly different between YH and control. However, herbal medicine extracts enhanced the redness of yanggaeng. Texture profile analysis showed that gumminess and chewiness of yanggaeng added with herbal medicine extracts decreased compared to control. Herbal medicine extracts enhanced yanggaeng's antioxidant activity, reducing power, and scavenging ability. Herbal medicine extracts enhanced antioxidant properties of yanggaeng and made it easier to swallow.

Variation of Bioactive Component Contents in Plant Parts of Paeonia lactiflora Pall. (작약 식물체 부위별 성분 함량 변이)

  • Comparative analysis of paeoniflorin, albiflorin and phenolic compound contents as bioactive components of peony was performed by Reverse Phase-High Performance Liquid Chromatography (RPHPLC) using the four- year-old peony which were different plant parts and pretreatment, such as removing or unremoving the cork layer of peony root before drying. The contents of paeoniflorin, albiflorin, (+)-taxifolin $3-O-{\beta}-D-glucopyranoside$, (+)-catechin and (-)-epicatechin were the highest in rhizome part, but those of gallic acid and benzoic acid in the leaves were higher than other parts. The contents of albiflorin, gallic acid, benzoic acid and (-)-epicatechin in the cork layer were higher than in those of the core, but the contents of paeoniflorin, (+)-taxifolin $3-O-{\beta}-D-glucopyranoside$ and (+)-catechin in the core were higher than those in the cork layer. In general, the rhizome part of peony root has been used only propagation purpose, but this part contained high contents of bioactive component. Therefore, it is needed that medicinal application of rhizome part in peony root was firmly investigated. Also, In the use of peony root for medicinal purpose, the use of peony root with cork layer can be efficient way on the practical use of useful components and the reduction of labor for removing the cork layer.

Monitoring of Color Changes and Organoleptics Properties of Chungkookjang Products during Storage for Shelf-life Establishment (청국장 제품의 유통기한 설정을 위한 저장중의 색도변화 및 관능적 특성 monitoring)

  • In order to examine the changes of commercial value during storage conditions and shelf-life of Chungkookjang, response surface methodology of SAS program was applied to monitor orgenoleptic properties and color changes to determine optimum storage conditions. Lightness (L) value of vacuum-packed Chungkookjang showed under the 1% significance probability with high influence in all conditions such as sterilized temperature, storage time and storage temperature. Redness (a) value of vacuum-packed Chungkookjang was increased during highly sterilized and storage temperatures, and was individually influenced. One of the generally packed sample also showed that significance value was influenced under 10%, during high storage temperature. Yellowness (b) value of vacuum-packed Chungkookjang showed the significance probability under 1% during storage time and temperature, and under 5% during sterilized temperature. Also, stational point showed saddle type in both packaging samples. In case of vacuum-packed Chungkookjang, compatibility of odor was influenced by sterilized temperature under 10% significance probability. But generally packed samples have an effect on storage time under 1% significance probability effect on storage time, and sterilized temperature under 5%. In case of vacuum-packed Chungkookjang, compatibility of taste was highly concerned with storage time under 1% significance probability, whereas generally packed samples were concerned with storage temperature under 5% significance probability. Overall palatability of vacuum-packed samples showed maximum value of 5.15 on sterilized temperature ($61.92^{\circ}C$), storage temperature ($6.79^{\circ}C$) and storage time (56.48 days) during storage.

신서란 섬유를 이용한 종이제조 및 물성평가

  • 현재 제지용 펄프 및 펼프 원료의 국내 자급상태는 매우 낮은 수준이다. 따라서 원료 가격변동과 환율에 따라 수익성은 물론, 원료 수급에도 큰 영향을 받게 된다. 최근 버 진펄프의 가격상승은 재생펄프 사용량과 고지수입량을 더욱 늘리고 있으며, 이들의 사 용에 따른 품질저하 개선노력도 꾸준히 행해지고 있다. 그러나 원가절감과 품질유지라 는 두 마리 토끼를 한꺼번에 잡는 것은 그리 쉬운 일이 아니며 그 효과 또한 점점 미 미해 지고 있는 실정이다. 외국의 경우 이러한 문제점들을 펄프소재면에서 접근하여 해 결하고자 하는 시도가 있었다. 중국은 벗짚펄프를 제지용으로 적용하여 오랜 시행착오 끝에 성공을 거두고 있으며, 남미에서도 수수 등을 이용한 제지용 펼프 개발에 노력과 투자를 아끼지 않고 있다. 이는 제한된 원료의 사용만으로 직면하고 있는 여러 문제점 들을 해결하기가 힘들다는 언식에서 출발한 것이며, 새로운 원료개발 자체가 그 해결방 안으로서 충분한 가치가 있음을 보여준다고 하겠다. 이와 같은 맥락에 따라 국내에서 적용이 가능한 소재를 조사하였으며 우선적으로 신서란을 선택하게 되었다. 신서란은 뉴질랜드가 원산지로 알려져 있으며 오래전부터 제주도에 자생하고 있는 다년생 초본류이다. 수많은 경질섬유(hard fiber)중에서도 경제적으로 재배되는 유일한 작물로 선박용 로프, 그물, 범포 등의 원료로 사용되었으나 현재는 화학섬유로 대체되 어 그 사용이 전무한 실정이다. 선서란은 고강도와 우수한 유연성, 탄력성 및 양호한 광학적 성질을 가지고 있으며 무엇보다 척박한 땅에서도 생장이 왕성하여 재배가 쉽다 는 것이 가장 큰 장점이다. 본 연구는 펄프용 섬유로서 양호한 기본특성을 가진 신서란 을 이용한 펄프를 기존 제지공정에 일정량 투입함으로써 얻고자 하는 종이의 일반물성 개선 및 특수기능 향상에 도움이 되는 제지용 펄프로서의 가능성을 알아보고자 하였다.이어서 몇십%의 현을 억제하지는 못한다는 결론을 도출할 수 있었다. 연구의 결과를 요약하면 다음과 같다. 첫째, 한국과 미국 패션제품의 지난 십년간의 가격 과 품질의 상관관계는 매우 약한 정(+)의 상관을 가지고 있었다. 한국패션제품의 전체 서열상관계수의 평균은 0.091이었고, 미국의 상관계수 평균은 0.192였 다. 상관계수의 수치만으로 볼 때 한국보다는 미국 패션제품의 가격과 품질간의 상관관계가 조금 높게 나타났으나, 양국간 통계적인 차이는 없었다. 또한, 한국 패션제품의 경우에는 제품군의 가격대별 상관관계를 살펴보았는데, 그 결과 1만원 미만의 저가 제품군과 330만원이상의 고가의 제품군의 경우 부(-)의 상관계수를 나타냈다. 둘째. 1990년대 한국과 미국 패션시장의 가격과 품질간의 상관계수의 범위는 제품군별. 산업범주별 로 상이한 분포를 보이고 있었다. 패션제품군별로 보 면, 한국의 경우는 가장 높은 '여행용가방(r = 0.707)' 에서 가장 낮은 '자외선 차단화장품(r = -0.58)'까지, 그리고 미국 패션제품군의 상관계수의 범위는 '팬티 스타킹'의 0.820에서 '남성용 런닝슈즈'의 -0.472까지의 분포를 나타냈다. 마지막으로, 제품의 가격과 품질에 대한 정보를 소비자가 알 경우 얻을 수 있는 소비자의 구매이득 을 추산한 결과 패션제품시장에서 완전한 품질정보를 가지고 있다고 가정한 '현명한 사람'은, 최고가격의 제품만을 구입한다고 가정한 '부유한 사람들'의 구입방식에 비해 최고 좋은 품질의 상품을 총 지불액의 비율로 보아, 한국의 소비자는 약 50% 정도를, 미국의 소비자는 약 91%나 되는 액수를 절약하여 구매할 수 있는 것으로 나타났다. 이상의 본 연구의 결과를 종합하여 볼 때 한국과 미국 모두 제품군별, 그리고 산업범주별로 상관관계가 차이를 보이고 있어, 양국의 소비자들이 패션제품 의 품질을 평가함에 있어 오로지 가격에 대한

Estimation of Shelf-Life of Commercially Sterilized Fried Rice Containing Meat (레토르트 살균한 육류 볶음밥 제품의 유통기한 예측)

  • Physicochemical, microbiological and sensory characteristics were determined during storage at 15, 25, and 35$^{\circ}C$ for six months to predict shelf-life of four fried rice retort dishes. Thiobarbituric acid (TBA) values were increased significantly and pH and acid values did not show any significant differences. Microbiological contamination levels were estimated as safe. Sensory evaluation were tested over 4 points during storage period. It maintained the commercial value during the shelf-life. TBA value as an effective quality indicator was used to estimate shelf-life with Arrhenius equation. The estimated shelf-life were 1,408 days (46 months) for beef fried rice, 1,353 days (44 months) for Ham fried rice, 1,164 (38 months) days for chicken curry fried rice and 1,182 (39 months) days for bacon tuna fried rice. In conclusion, shelf-life of all four fried rice dishes was predicted as longer than three years (36 months) at room temperature.

Antioxidative Activity of the Extracts from Browned Oak Mushroom (Lentinus edodes) with Unmarketable Quality (시장성이 없는 품질의 갈변 표고버섯(Lentinus edodes) 추출물의 항산화 활성)

  • Physiological functionality of browned oak mushroom was evaluated with focusing its electron-donating ability to DPPH radicals, scavenging ability to superoxide radicals and hydroxyl radicals, and inhibitory activity on lipid peroxidation. The results showed that overall antioxidative activities of browned oak mushroom were superior to those of raw oak mushroom with marketable quality, implying possible involvement of resultant browning reaction products in an increment of antioxidativity. The increased radical-scavenging ability was suggested to mainly be exerted by direct quenching of both superoxide and hydroxyl radicals, not by inhibition of xanthine oxidase activity and $Fe^{2+}$ chelation, respectively. Collectively, these results indicate a possible use of unmarketable browned mushroom as a material for manufacturing various processed functional foods.

Preparation and Characterization of Watermelon Wine (수박을 이용한 와인의 제조 및 특성)

  • We developed watermelon (Citrullus vulgaris Schrad) wine to increase the market for the fruit, which is currently sold only in fresh form. The pH of watermelon wine was pH 2.8~3.4, the total acid level 0.48~0.55%, and the soluble solid $5{\sim}6^{\circ}brix$ alcohol content was 9.5~10.5%. Fermentation of watermelon juice was satisfactory at both 20C and 25C. All of citric acid, malic acid, and oxalic acid were detected in watermelon wine citric acid was the most abundant. All of glucose, fructose, sucrose, and maltose were present in juice, and both fructose and glucose were used in fermentation. Electron-donating ability (EDA) was high, being 80% of the control value when watermelon wine was diluted to $400\;{\mu}l/ml$. SOD-like activities were present in both watermelon juice and wine, being 55.2% and 49.2% of control values, respectively. Nitrite-scavenging ability (NSA) was 70.2% and 53.2% of control values in undiluted juice and wine, respectively. Watermelon juice showed higher activation than did wine, but functionality neither fell nor rose after fermentation. In sensory evaluation of wine, the overall score was better than average, at 4.15, thus establishing the commercial potential of watermelon wine.

  • Dongdaemun fashion market has been successfully positioned as a main hub for non-brand fashion product distribution in Korea. One of important competitive advantages of Dongdaemun market often quoted by retail researchers is an efficiently managed network system among supply chain members. This study aimed to examine the importance of buyer-supplier relationship elements and supplier properties from buyers' perspectives (small & very small-sized fashion stores in Dongdaemun market), and to identify the determinants of the relationship length between suppliers and buyers. Survey responses of 233 stores were analyzed using EQS 6.1 for Window and SPSSWIN 10.0. The findings could be summarized as follows: First, fashion stores perceived that right delivery as the most important factor, and geographically closeness, design capability, quality, and lower price followed in order. Second, the characteristics of stores such as location, wholesaling versus retailing focusing, monthly sales, and total business length all affected the perceived importance of buyer-supplier relationship. Third, design capacity, communication, power was identified as determinants of actual relationship length with a supplier, while communication and trust were found to be determinants of future expected relationship length.

Criteria of Fruit Quality and Harvest for Production of High Quality Small and Medium-Sized Fruits in 'Hanareum' Pear (Pyrus pyrifolia Nakai) (고품질 중소과 생산을 위한 '한아름' 배의 과실 품질 및 수확 기준)

  • 'Hanareum' pear is expected to produce the high quality small and medium-sized fruits without any major changes in the current cultivation techniques, inasmuch as its basic characteristics are already included in the range of small and medium-sized fruits. Thus, we tested the possibility of utilization of 'Hanareum' pear for producing small and medium-sized fruits, while establishing the limit of minimum fruit weight for the fruits in high quality. With the results of correlation analysis, it was possible to predict the fruit weight through the observation of soluble solid contents and flesh firmness, because both factors were closely correlated to fruit weight in all treatments. Moreover, these factors were confirmed to be useful indicators of forecasting consumer preference in the sensory evaluation. The fruit marketability was excellent under the conditions that were greater than $11.6^{\circ}Bx$ and less than 25.6 N for soluble solid contents and flesh firmness, respectively. When applying these standards of fruit quality to the results of regression analysis for fruit weight, non-treated fruits fulfilled both standards when the fruit weight was higher than 436 g, and the quality uniformity was also high on this state. Therefore, the production of high quality small and medium-sized fruits was determined to be under this condition. The weight limit for GA treated fruits was 620 g, and both fruit quality and uniformity were below the weight range of small and medium-sized fruits, with 300~500 g. Thus, GA treatment was suggested to be avoided, in order to produce the high quality small and medium-sized fruits.
