유아를 위한 메뉴 개발 및 평가

  • 유아기는 식품 기호도, 식사예절, 식습관 등 식행동의 기초가 형성되는 시기로서 특히 편식이 생기기 쉽고, 식욕부진과 영양과잉 등 불균형한 식품 섭취로 인한 영양문제를 초래할 수 있다. 본 연구에서는 2003년 7월 구미지역 2개 보육시설의 92명 유아들의 부모들을 대상으로 설문조사를 실시하여 유아들의 식습관과 식품 기호도를 조사하고 이를 고려하여 유아를 위한 메뉴를 개발하고 평가하였다. 개발한 메뉴는 일반식 (삼각김밥, 오징어전), 편식 (도라지강정, 브로콜리스프), 빈혈식(쇠간함박스테이크, 참치깻잎쌈밥), 비만식(참치샐러드, 닭안심깻잎조림), 전통식(떡찜, 두부선) 등 각 2가지씩 총 10가지이며, 2003년 10월 시식회를 거쳐 656명의 유아들에게 맛, 냄새, 모양, 조직감, 전반적인 기호도 등에 대해 5점 척도법으로 메뉴평가를 실시하였다. 식습관 조사결과 편식습관이 있는 경우가 70.7%였으며, 평소 싫어하는 음식에 대해서는 권유로 마지못해 먹는다가 67.4%로 가장 많았다. 성별에 따른 유아의 식습관을 분석해 본 결과 전반적으로 남녀간 유의한 차이는 없었으나 남아가 여아보다 탄산음료를 즐겨 마시는 것으로 나타났다(p<0.05). 기호도 조사결과 10가지 식품군 중 과일류에 대한 기호도(3.97$\pm$0.65점)가 가장 높았고, 채소류에 대한 기호도(2.46$\pm$0.68점)가 가장 낮았으며, 기호도가 특히 낮았던 식품으로는 곡류 및 감자류 중에는 보리밥과 콩밥, 육류 및 가공품 중에는 간과 내장, 두류 및 가공품 중에는 팥, 어패류 중에는 굴, 해조류 중에는 파래, 채소류 중에는 토란, 브로콜리, 도라지 등이었다. 조리법별로는 튀김류(3.80$\pm$0.68)가 가장 높았고 그 다음이 볶음ㆍ구이류(3.77$\pm$0.56)였으며 기호도가 가장 낮은 음식은 생채류(2.61$\pm$1.27)와 숙채류(2.85$\pm$1.13)인 것으로 나타났다. 개발한 메뉴의 선호도는 전반적으로 높았으며 맛에 대한 선호도(4.30$\pm$0.91)가 가장 높았고, 모양에 대한 선호도(3.95$\pm$0.89)가 가장 낮았다. 메뉴별 맛에 대한 선호도는 닭안심깻잎조림 (4.85$\pm$0.36)과 두부선(4.85$\pm$0.52)이 가장 높았고, 참치깻잎쌈밥(3.43$\pm$1.61)이 가장 낮았으며 냄새에 대한 선호도는 두부선(4.76$\pm$0.69), 닭안심깻잎조림 (4.64$\pm$0.53), 브로콜리스프(4.59$\pm$0.88)가 유의하게 높았고 참치깻잎쌈밥(2.95$\pm$1.24)은 유의하게 낮았다. 모양에 대한 선호도는 두부선이 4.85$\pm$0.52점으로 유의하게 높은 점수를 보였으며 쇠간함박스테이크(3.03$\pm$0.17)와 참치깻잎쌈밥(3.11$\pm$1.33)이 유의하게 낮은 점수를 보였다. 조직감에 대한 선호도는 두부선(4.80$\pm$0.56)과 브로콜리스프(4.63$\pm$0.60)가 유의하게 높게 나타났고, 참치깻잎쌈밥(3.20$\pm$1.29)이 유의하게 낮았다. 전반적인 선호도는 맛, 냄새, 모양, 조직감에서 모두 선호도가 높았던 두부선이 4.82$\pm$0.49점으로 가장 유의하게 높았으며 참치깻잎쌈밥이 3.17$\pm$1.30점으로 가장 낮게 나타났다. 음식의 맛, 냄새, 모양, 조직감 및 전반적인 기호도간에는 모두 유의한 상관관계가 있는 것으로 나타났다(p<0.01). 따라서 음식의 맛에 영향을 주는 요인은 맛 자체뿐만 아니라 냄새, 모양, 조직감 등 다양하므로 어릴 때부터 가정과 보육시설에서 다양한 식품과 조리법을 이용하여 맛있고, 먹고싶은 냄새가 나고, 부드러우며, 모양도 먹음직스럽게 조리하여 유아들의 올바른 식습관 형성에 도움이 되도록 하는 것이 필요할 것으로 사료된다.

Association of diet-related quality of life with dietary regimen practice, health-related quality of life, and gastrointestinal symptoms in end-stage renal disease patients with hemodialysis (혈액투석을 실행중인 말기 신부전 환자의 식사관련 삶의 질(Diet-Related Quality of Life)과 식사요법 실천도, 건강관련 삶의 질 및 위장관 증상과의 관련성 연구)

  • The purpose of this study was to evaluate diet-related Quality of Life (QOL) and to analyze the relationship among diet-related QOL, dietary regimen practice, health-related QOL, and gastrointestinal symptoms in hemodialysis patients. Subjects were recruited from an artificial kidney center in Seoul. The self-report questionnaire consisted of socio-demographic characteristics, diet-related QOL, compliance with dietary regimen practice, health-related QOL, and gastrointestinal symptoms was distributed. Diet-related QOL includes a 'Quality of Life and Related to Dietary Change Questionnaire', 'Satisfaction Survey', and 'Dietary Impact Survey'. According to their responses, participants had experienced the greatest difficulty with 'Dietary Impact'. In particular, the mean score for general health was low. Association of dietary regimen practice showed a positive association with 'Cost' and 'Self-care' score. In addition, diet-related QOL showed positive correlation with health-related QOL, particularly in 'taste'. Scores for 'Taste', 'Convenience', and 'Dietary Impact' were lower for subjects with constipation compared to those of subjects without constipation. Scores for 'Taste' and 'Dietary Impact' were lower in subjects with irritable bowel syndrome compared to those of subjects without the syndrome (p < 0.05). Diet-related QOL showed a positive association with health-related QOL (p < 0.05), whereas it showed a negative association with constipation (p < 0.01). In conclusion, hemodialysis patients in Korea suffer from burden of dietary regimen practice and most scores for diet-related QOL and health-related QOL from patients with gastrointestinal symptoms were low. Therefore, appropriate nutrition education considering gastrointestinal symptoms is necessary for improvement of patients' QOL during dietary regimen practice.

The Study On Quality Control of Magnetic Resonance Imaging System (자기공명영상장치의 정도관리에 관한 연구)

  • The quality control is needed to ensure the accuracy of medical information and achieved by evaluating the performance of and maintaining the system and practicing various measurements and evaluations. The Korean Institute for Accreditation of Medical Image, therefore, have held educational program for quality control of special medical equipments. The major of programs participants, however, are radiology specialists with only small number of radiological technologists from some hospitals, furthermore, the follow-up education and the share of information between participants and non-participants are insufficient in general, thus, the knowledge level of radiological technologists, regardless of their participation, is relatively low. This study carried out the questionnaire research for the 500 radiological technologists registered in Korean Society of MRI Technology, on the basis of 2008, and performed analysis for five months from May to Oct., 2008. The questionnaires were delivered by post to each radiological technologists and the response rate was 36%(n=180). The results of this revealed that the 86.7% of respondents felt the necessity of inspection on quality management, while only the 27.8% completed the educational program for manager of special medical equipment. and only the half(53.9%) had the knowledge about inspection on quality management. The completion of educational program had no correlations with sex, age, size of occupying hospital, the number of radiological technologists in occupying site and MRI laboratory, career year of general radiologist and in MRI laboratory, and the presence of biomedical engineering department in occupying hospital. The 78.0% of participants at the educational program for quality management held by the Korean Institute for Accreditation of Medical Image had the knowledge about inspection on quality management(p<.05) whereas the 43.9% of the hospitals held such program and the 54.4% of radiological technologists from those hospitals had related knowledge, which indicated that such programs held by hospitals had not effects on the knowledge level of radiological technologists. This indicates also that the contents, methods, and other conditional factors of educational programs are important for the outcome of them.

Association between Breakfast Frequency and Awareness of General School Life in High School Students (고등학생의 아침식사 섭취빈도와 전반적인 학교생활 인식도와의 관련성)

  • This study investigated the association between breakfast frequency (0~2 times, 3~6 times, and 7 times per week) and awareness of general school life (physical activity, relationships with teachers and friends, rule compliance, study attitudes, study records, and overall school life) in high school students (boys 146 and girls 155) in the Yongin region. Awareness of physical activity was higher in girls (77.4%) than in boys (65.1%). Rule compliance showed a significant difference in girls (P<0.01), whereas boys did not show any difference. Percentage of 'effective' awareness of study attitudes was 24.0% and 44.5% in boys and girls, respectively. Awareness of study records in girls showed significant difference (0~2 times 37.5%, 3~6 times 30.4%, and 7 times 52.2%) (P<0.05), whereas boys did not show any difference. Awareness of overall school life showed a significant difference in both boys (P<0.05) and girls (P<0.01). Association between breakfast frequency and general school life in boys was as follows: awareness of overall school life had the highest positive value (+0.185) (P<0.05) and relationships with teachers had the second (+0.168) (P<0.05). Girls also showed the highest positive value (+0.323) (P<0.01) for awareness of overall school life, which occurred in the following order: rule compliance (+0.316) (P<0.01)> awareness of study attitudes (+0.267) (P<0.01)> relationships with friends (+0.215) (P<0.01). In conclusion, high school students showed a high positive association between breakfast frequency and general school life, particularly in girls. Therefore, effective nutrition education programs in connection with national policy and school support are highly required to provide healthy breakfast and school life to high school students.

Major Dishes Contributing Absolute and Between-Person Sodium Intake Variations in University Students in Gyeonggi-do (경기지역 일부 대학생에서 나트륨의 주요 기여 음식과 변이 음식)

  • The objective of this study was to investigate dietary sodium sources at the dish level in 228 university students (71 men, 157 women) in Gyeonggi-do. Daily sodium intake was estimated from a validated 125-dish frequency questionnaire. In men, body mass index, systolic blood pressure, and sodium intake were significantly higher than in women. Men showed higher sodium intake from soups, fish or shellfish dishes, meat dishes, and soybean dishes than women. The dishes that most largely contributed to daily sodium intake were Napa cabbage kimchi and ramen in both men and women. In addition, relatively higher amounts of sodium from ramen were consumed in men, whereas cookies were the 5th highest sodium source in women. In both men and women, the high sodium intake groups consumed more sodium from kimchi, dishes cooked with kimchi, dishes with broth, and salted mackerel than the low sodium intake group. There were significant differences in major dishes contributing to between-person sodium intake variations between men and women. Short rib soup for men and Korean sausage for women were the largest contributors to sodium variations, which are common dishes served with salt. Men consumed more drinks and also more sodium from drinks than women. In conclusion, there were significant differences in major dishes contributing to absolute and between-person sodium intake variations in university students between men and women. Further studies on effects of gender on blood pressure, sodium and drink intake, and obesity are necessary.

Effect of Inorganic Environmental Factors on the Growth of Pinus koraiensis Seedlings (I) - The Influence of Shading on the Growth of Seedlings Grown on the Seed Bed - (무기적(無機的) 환경요인(環境要因)이 잣나무 유묘(幼苗)의 생육(生育)에 미치는 영향(影響)에 관(關)한 연구(硏究)(I) - 파종상(播種床)에 있어서의 피음처리(被陰處理) 영향(影響) -)

  • This study was carried out to investigate the influence of light intensity on the growth of Korean white pine (Pinus koraiensis) seedlings. The seedlings were grown under four different relative light intensities: 100%, 63%, 37%, and 19% of full sunlight by covering with saran screen on seed bed. The results obtained were summarized as follows; 1. The highest shoot elongation was found at 37% in relative light intensity (RLI) plot, and the best growth in root, seedling length and diameter increment appeared at 100% on RLI plot. Contribution rates of shading to growth in shoot elongation, root growth, seedling length, and diameter increment were 9.3%, 26.2%, 21.0%, and 48.7%, respectively. 2. The greatest number of one-year-old needle fascicle was found at 100% in RLI plot, whereas that of two-year-old needle fascicle appeared at 37% in RLI plot. The contribution rate of the light intensity to number of needle fascicle was 3.9% and factor of leaf age contributed to number of needle fascicle in 27.8%. The length of needles grown under different light intensities varied with needle ages. The longest length of new needles appeared at 37% in RLI plot, but old needles were not clear in influence of light intensity. The contribution rate to needle length by the light intensity was 2.5%. 3. The heaviest value of the fresh and dry weight of seedlings appeared at 100% of RLI plot then decreased with light intensity. The contribution rates to fresh and dry weight by the shading were 38% and 7.6% respectively. 4. The largest value of the dry weight of needles appeared at 100% of RLI plot and then decreased with light intensity. The contribution rates to dry weight of needles by the light intensity was 13.18%. 5. The values of T/R ratio increased with decreased light intensity and the contribution rate was 7.0%. 6. Positive correlation and linear regressions were recognized between dry weight of leaf and other factors (dry weight of shoot, root, seedling and diameter increment).

Comparison of Antioxidant Activities of Enzymatic and Methanolic Extracts from Ecklonia cava Stem and Leave (감태(Ecklonia cava) 줄기 및 잎의 효소적 추출물과 메탄올 추출물에 의한 항산화 활성비교)

  • In this study, antioxidant activities of enzymatic and methanolic extracts from E. cava stem and leave were evaluated by measuring the scavenging activities on 1,1 diphenyl 2 picrylhydrazyl (DPPH), hydroxyl radical, hydrogen peroxide and the inhibitory effects on DNA damage induced by oxidative stress of cells. Enzymatic extracts were prepared by enzymatic hydrolysis of both stem and leave using food grade five different carbohydrases (Viscozyme, Celluclast, AMG, Termamyl, Ultraflo) and five proteases (Protamex, Kojizyme, Neutrase, Flavourzyme, Alcalase). The enzymatic extracts were lower than methanolic extracts in polyphenol contents, but higher in extraction yield by approximately 30%. The enzymatic extracts were superior to methanolic extracts in DPPH and H2O2 scavenging activities and DNA damage protective effect. There were no significant antioxidant activity difference between stem and leave, but the extracts of leave were relatively better than those of stem. In this study it is suggested that E. cava stem as well as its leave would be a good raw materials for antioxidants compound extraction and enzymatic hydrolysis would be a good strategy to prepare antioxidant extracts from seaweeds.

Influences of Unilateral Mandibular Block Anesthesia on Motor Speech Abilities (편측 하악전달마취가 운동구어능력에 미치는 영향)

  • There exist patients complaining speech problem due to dysesthesia or anesthesia following dental surgical procedure accompanied by local anesthesia in clinical setting. However, it is not clear whether sensory problems in orofacial region may have an influence on motor speech abilities. The purpose of this study was to investigate whether transitory sensory impairment of mandibular nerve by local anesthesia may influence on the motor speech abilities and thus to evaluate possibility of distorted motor speech abilities due to dysesthesia of mandibular nerve. The subjects in this study consisted of 7 men and 3 women, whose right inferior alveolar nerve, lingual nerve and long buccal nerve was anesthetized by 1.8 mL lidocaine containing 1:100,000 epinephrine. All the subjects were instructed to self estimate degree of anesthesia on the affected region and speech discomfort with VAS before anesthesia, 30 seconds, 30, 60, 90, 120 and 150 minutes after anesthesia. In order to evaluate speech problems objectively, the words and sentences suggested to be read for testing speech speed, diadochokinetic rate, intonation, tremor and articulation were recorded according to the time and evaluated using a Computerized Speech $Lab^{(R)}$. Articulation was evaluated by a speech language clinician. The results of this study indicated that subjective discomfort of speech and depth of anesthesia was increased with time until 60 minutes after anesthesia and then decreased. Degree of subjective speech discomfort was correlated with depth of anesthesia self estimated by each subject. On the while, there was no significant difference in objective assessment item including speech speed, diadochokinetic rate, intonation and tremor. There was no change in articulation related with anesthesia. Based on the results of this study, it is not thought that sensory impairment of unilateral mandibular nerve deteriorates motor speech abilities in spite of individual's complaint of speech discomfort.

Workplace Friendship and Organizational Effectiveness of Dental Hygienists (치과의료기관 근무자들의 프렌드십과 조직효과성 관계 연구)

  • This study purports to measure the level of work friendship in dental clinic and examines the friendship's effect on the organizational effectiveness. Data were collected from workers who worked in dental clinic located in Seoul and Gyeonggi areas by self-administered questionnaires from early in October till lately in September, 2009 through direct interview and e-mail. Among 250 questionnaires, 240 responses were returned, and 17 copies with an inaccurate answer were excluded. Finally 223 responses were analyzed through SPSS program. The study revealed that the work friendship in dental clinic has enormous influence on job satisfaction, occupational commitment, intent to leave, stress etc. The results imply that the managers of the dental clinics need to create an organizational climate which emphasizes on a good relationship among members and have them take part in various committees or informal activities.

Chemical Characteristics of Fog at a Forested Area in Jinju (진주시 주변 산림에서 안개의 화학적 특성)

  • This study was carried out to analyze chemical compositions of the fog water of a forest area, Jinju and to provide basic information for establishing measures on the acid fog water of forest area. The results are as follows: The pH of fog water was 4.3 in 2010, whereas the pH in 2011 was 4.0. The electrical conductivity of the fog water was $477.2{\mu}s$ in 2010, and $562.7{\mu}s$ in 2011. Among the anions, the concentration of $NO^{3-}$ was the highest, which recorded 267.1 mg/L in spring season and 279.1 mg/L in summer season, followed by $SO{_4}^{2-}$ at the concentration of 177.2 mg/L in spring season and 198.6mg/L in summer season. In autumn and winter, the concentration of $NO^{3-}$ was highest as 217.7 mg/L and 237.9 mg/L, respectively and followed by $SO{_4}^{2-}$, which concentration was 164.2 mg/L in autumn season and 190.1 mg/L in winter season (p<0.05). Among the cations, the concentration of $Ca^{2+}$ was 221.3 mg/L in spring and 233.7mg/L in summer, followed by $Na^+$ at 125.1 mg/L in spring season and 131.7 mg/L in summer In autumn and winter, the concentration of $Ca^{2+}$ was highest at 196.8 mg/L and 198.8 mg/L, followed by $Na^+$ at the concentration of 97.1 mg/L in autumn and 117.2 mg/L in winter (p<0.05). The pH of the fog rain that causes acid mist showed the correlation with $Ca^{++}$ (1% of level), $EC(r=-0.9861^{**})$, $NO^{3-}$ ($r=-0.9677^{**}$), and $SO{_4}^{2-}$ ($r=-0.9510^{**}$). The regression equation on the factors affecting the generation of acidic fog rain was estimated to be a $Y(pH)=6.4627+0.9723X_2(EC)+0.9364X_4(NO_3{^-})+0.9044X_5(SO{_4}^{2-})+0.8049X_{10}(Ca^{2+})+0.6709X_8(K^+)\;(r^2=0.8787)$.
